Monica Kane

Contributors

Monica is a Registered Dietitian and earned her Bachelor of Science in the field of Human Nutrition & Dietetics from the University of Illinois in Chicago in 1997.

Monica has worked with adults and children in both in patient hospital and out patient settings, providing need specific medical nutrition therapy. Monica has a passion for helping achieve optimal health through realistic diet and lifestyle modification.

Nimai Malle

Nimai Malle is an avid photographer, video game developer, and entrepreneur.

Soon after moving to the Westlake area in 2004, Nimai began using his passion for photography to serve the district, support the schools, and provide beautiful memories for students and parents. Nimai is well known for photographing cheer leading and dance, school fund raising events, parties, senior portraits, and family photos.

Joe Taylor

Joe Taylor is the director of broadcasting for Number 9 Productions and provides the play-by-play commentary for all media broadcasts. In his 10th season at the helm of this production, he has seen it grow into a well respected professional simulcast that includes radio, television, Internet, mobile media, and social media.

Melissa Class

Her passion for fitness developed in her 20’s as she began her career in the medical industry. With discovering joy in helping others achieve their optimum health, her fitness journey began. She “joined� the fitness industry over 20 years ago as a group fitness instructor. With this new found passion she became a certified personal trainer, as well as a sports conditioning and nutrition specialist. She considers it to have been an amazing journey joining the OTF team in 2012.

Paul Brick

Paul started shooting sports professionally in 2008, around the time of his retirement from the Austin Police Department as a Detective in the Major Narcotics Unit. Paul has been a freelance photographer for The Westlake Picayune and other papers since that time and joined AGP in the Fall of 2016. Paul and his wife Tere raised their son and daughter, Adam and Catrina in the Oak Hill area.

Brayden Clark

Brayden just graduated from Westlake high school. Photography has been in his life for about three years, starting his sophomore year after going to ATPI (Association of Texas Photography Instructors). After his sophomore year, he was the assistant head photographer for the Westlake yearbook. His senior year, he was the head photographer for the publication shooting all events including sports and student life!

Thoughts from the Editors...

One of the biggest observations I took away from the recent WHS vs Liberty Varsity Football game was this....the WHS fans are amazing! The crowd was so begind the team and the student body was really lifting up the guys on the field to a level that was very cool! It made me proud to be from Westlake!

I also noticed just how hard our student trainers work each game, putting their hearts and souls into the needs of the players, coaches and refs at the game! Way to go trainers!

And way to go Head Trainer, Max Ozer! Job well done!

Michelle This week, I bring you the story of a little Schauzer who ran away from his human mom who was dealing with her austistic son in the car and got hit by another car.

Chewey is a sweet little guy and needs surgery to fix his leg.

I wouldn’t bring this up except that my cat had to be put down this week and it’s put me in the mood to help someone with their pet who can be saved. They’re (right now) about $2000 short of being able to fix the little guy’s leg. Time is of the essence with this type of thing... so please go check it out.

Visit the page whether or not you personally can help. The likes help to drive up visibility and maybe someone who can give a few dollars will because the visibility goes up. The average gift to him is just $46... which is not much. I spend more than that going on a date to the movies...

Think about it... here’s the link if you want to meet Chewy and read his story. I gave $100 to this and challenge 20 more animal lovers to do the same and get his leg fixed!

Todd Dodge

Todd Dodge is an American football coach and former player, and the current head coach at Westlake High School in Austin, Texas. After graduating from the University of Texas at Austin where he played quarterback for the Longhorns, Dodge went into coaching, primarily at the high school level.

At Southlake Carroll he was head coach of four 5A state championship teams in a seven-year span. He moved on to the college level as head coach of the University of North Texas football team. After coaching the quarterbacks at the University of Pittsburgh for the 2011 season, he returned to high school coaching in Marble Falls and then to Austin Westlake. GO CHAPS!

life

When it comes to food, taste is king. While it is important to eat for your health, it is overwhelmingly easy to eat foods based entirely on taste alone. Selecting fresh foods can seem a little boring when compared to the limitless packaged foods that are loaded with artificial flavors and flavor enhancers. While these foods excite the tastebuds, packaged and processed foods tend to offer minimal nutritional benefits.

Choosing fresh foods such as fruits, vegetables, lean meats and whole grains provides balanced and plentiful key components of nutrition. These key components are the macro and micro nutrients discussed last week (carbohydrates, healthy fats, proteins, fiber, vitamins, and minerals). These fresh food choices provide a more natural or pure flavor, compared to artificially flavored and processed foods. The more natural flavor might seem a bit boring in comparison. However, there are countless easy and nutritious ideas to liven up the flavor in your healthy food choices.

Using fresh or dried herbs and spices is a simple way to wow the tastebuds. These natural flavors provide so much more than just taste satisfaction. Herbs and spices also contain a wide variety of health benefits. Many everyday spices contain powerful antioxidants that can enhance the immune system and help in disease prevention. Turmeric, curry, oregano, basil, mustard, paprika, and chili powder are a few that are commonly used in household kitchens.

Other spices such as cinnamon and fenugreek can help to stabilize blood sugar levels throughout the day. Ginger and nutmeg are both known to help with digestion 64

by Monica and ease nausea, while also providing other immune enhancing benefits. Using such spices can be easy and doesn’t have to involve a “cooking commitment”. Add a pinch of fresh or dried oregano to your salads, sandwiches, and pizza for extra taste. Sprinkle cinnamon lightly onto fresh apple slices to add a warming flavor contrast to a crisp healthy snack. Make a tasty rub for grilled meats, poultry, and fish out of turmeric, paprika, oregano and chili powder.

Using fresh heat in everyday eating can naturally wow one’s tastebuds. Mother Nature has provided the gift of fiery spice with a bountiful array of peppers. Milder palates can enjoy flavor enhancement without heat by choosing sweet bell peppers. A bit of heat can be enjoyed by sampling from Anaheim and poblano peppers, which are low on the Scoville scale (used to measure and order a pepper’s level of heat). More intense heat can be found in jalapeño and Serrano peppers.

Topping out the heat index, peppers like habanero and ghost peppers are sure to challenge one’s fiery tolerance.

Peppers are a great addition to sandwiches, salads, sauces, dressings, stir fries, and side dishes and a great way to naturally add flavor to foods while enhancing nutrient intake. Peppers not only bring the heat, but also provide important nutrients such as fiber for digestive health, potassium for muscle function, and cancer fighting antioxidants in the form of vitamins a, b, c, and e. Whether craving spice with a little or a lot of heat, peppers are a delicious, nutritious, and sure fire way to liven up food choices.

In today’s drive thru, convenience, and vending machine lifestyle, pure flavor has been masked by additives, preservatives, and artificial ingredients. Pure flavor from whole foods and natural sources such as herbs, spices, and a variety of peppers drives taste satisfaction in a direction of optimal health, vitality, and nutritional success. Don’t be afraid to step outside the box of packaged, artificial flavors and into a world of pure, delicious, and natural eating.

Spice Rubbed Pork with savory peach sautEe Spice Rubbed Pork with Savory Peach Sautée 1 tsp oregano 1 tsp paprika ½ tsp cumin ½ tsp turmeric ½ tsp chili powder ¼ tsp sea salt 4 boneless pork loin chops (4oz per chop) 1 tbsp olive oil 2 large, ripe peaches 2 cloves garlic (minced) ½ cup diced red onion 1 Serrano pepper (diced) 1 red Fresno pepper (diced) ½ cup cilantro (finely chopped) 2 tsp olive oil Preheat oven to 400 degrees.

In a small bowl, combine the dried oregano, paprika, salt, cumin, turmeric, and chili powder. Stir until evenly mixed. Rub to coat equal sides of the pork chops. Place pork chops in a deep baking dish and drizzle lightly with olive oil. Roast in oven for 24-30 minutes, turning pork chops half way through cooking time. Remove from heat and let stand five minutes before serving.

While pork is roasting, cut peaches into large chunks. Dice red onion and hot peppers. Finely chop washed and dried cilantro leaves. Finely dice 2 cloves of garlic and add to olive oil in a lightly heated skillet. As soon as garlic begins to yellow, add peaches, peppers, and onion and Sautée for five minutes until softened (not mushy) and warmed through. Remove from heat and sprinkle with cilantro. ***for less pepper heat, substitute poblano and sweet red pepper in place of Serrano arms red Fresno pepper*** Serve pork and peaches with your favorite whole grain and enjoy!

up on the card.) The basic operating system for someone who has never done this before is probably best to start with one called NOOBS. NOOBS is actually the installer program which contains Raspian. You could also pick other selections and download them from the internet and install.

To find the information about NOOBS, go to raspberrypi. org/downloads/noobs and you will find what we’re talking about right there.

After downloading and installing (or merely inserting the card provided if your kit comes with a micro-SD card already pre-installed with Raspian, you merely need to boot up the system after connecting a USB mouse, keyboard, monitor via HDMI, and the power supply. The network connection is not required to start up the system.

When you have booted the system, you wll see the OS.

This week, let’s start our look at the Raspberry Pi. Depending on which kit you buy, and from which vendor, your kit may look more or less like the one pictured above.

The kit itself comes disassembled and you put all the pieces together and it becomes a tiny computer. One side of the case has the power adapter input, and HDMI output, and the audio jack.

The rear of the case has actually 4 USB ports and an ethernet port. If you have purchased the Raspberry Pi 3B, you should have built-in wifi (from most vendors.) The opposite end of the case has the exposed micro-SD card slot where you will insert the micro-SD card containing the operating system that you (may or may not have to download and set

Before going too far, we should also mention that Microsoft also has some skin in this game. They have a special version of Windows 10 IoT Core which is a slimmed down version of Windows 10 that you could install. There’s actually a very cool project that is out there to create a “magic mirror” using the Raspberry Pi running this Windows version. For less than $500 you can create a mirror that recognizes your face and gives you some key bits of info. The photo on the facing page is a mock up by Microsoft of what that magic mirror might be like in your home.

Perhaps during this season we’ll create a project to do a mini magic mirror using an old monitor I have laying around.

In any case, boot up your Raspberry Pi and we’ll pick up there next week!

Magic Mirror by Microsoft powered by a Raspberry Pi. Resources for learning about Raspberry Pi can be found on raspberrypi.org/resources/learn.

There’s a great unofficial tutorial for the Raspberry Pi that can be found at makeuseof.com. It covers all the basic topics: what is it, what’s inside, what do you need to buy, setting it up, and getting to grips with the GUI on the Pi. I would suggest using this if you had any issues getting the OS set up or getting your kit put together and successfully powered on.

If there’s anyone who would like to pursue building a large scale (like this image above) magic mirror for your home and would be willing to foot the bill for the materials to do it, I would love to work on this as a weekend (or two-weekend) project with you after the football season is over This looks really cool, but what you’re looking at behind the mirror is going to be a large LED display (TV) that gets the bezel peeled off and mounted to a frame that will need to be

built into the wall behind this mirror to give this effect. It would make a great project for a new house or something in a bathroom remodel... but the timing would have to be such that we could do it in January/February.

Everything you need to do this is already available online including some of them that have complete lists of parts, etc. for doing the project (on github.) So if you’re already a “maker” then you should feel free to jump in without me, but please, consider letting us come shoot the finished results and talking with you about the project to include in a future issue.
