Thoughts from the Editors... As we begin coming to the end of our sports year, we think about how fun this season has been for ALL Westlake sports! So many amazing feats have been performed this year and in so many different sporting venues! We have one last issue of Chaps Illustrated coming in May and then we will retire this magazine. Jerry and I have so enjoyed creating this cool digital Westlake High School sports magazine and we hope that you have enjoyed it as well. Many of you have told us how much you loved it... thanks for the input!

So your child has a concussion. Now what? A concussion causes serious brain damage. Even if it doesn’t feel like you hit your head very hard, there is almost certainly an area of the brain that has been bruised, losing blood flow and therefore oxygen, without which it cannot heal. There is a growing consensus among concussion researchers that the only effective way to proactively treat a concussion is with Hyperbaric Oxygen Therapy (HBOT), which has been proven to rebuild damaged tissue as well as stimulate actual brain cell regeneration. HBOT is the administration of higher concentrations of oxygen under higher atmospheric pressure to force oxygen to dissolve directly into tissue, even without blood flow. This extra oxygen allows tissues to heal that otherwise would have remained damaged, like the brain after a concussion. Treatments last about an hour and a typical concussion protocol will call for 2 to 20 hours of treatment depending on the time between injury and treatment initiation. Paid advertisement

In 1933, the first Mens’ SEC basketball championship game was played. The two teams: Kentucky and Mississippi State. The winner? Kentucky, 46-27. Kentucky goes on to repeat the win in 1939, 1940, 1942, 1944, 1945, 1946, 1947, 1948, 1949, 1950, 1952, (no tournaments from 1953 to 1979), 1984, 1986, 1988, 1992, 1993, 1994, 1995, 1997, 1998, 1999, 2001, 2003, 2004, 2010, 2011, 2015, 2016, 2017, and 2018. For those keeping score, that’s 31. This is as many as ALL other winners of the tournament put together (28.) The number #2 number of wins goes to Alabama and that’s just 6 of them. It really is the age old question. While there is no way to definitively prove the answer, there is much recent discussion naming the egg as the one to come first. Regardless of the answer, there are so many things to be said about the “Incredible, Edible Egg”. In the 1980s, eggs got a bad rap because of their cholesterol content. So much focus was put on the cholesterol contained in the egg, (just under 200 mg cholesterol per one large egg) that the amazing nutritional benefits of the egg were pushed far to the wayside and forgotten. While Americans continued to eat eggs, they did so with a shadow of regret and dietary guilt. Today, we can look at the egg the way we should look at all things in our diet, completely with a balanced perspective to nutritional pros and cons. The science of the nutritional quality of the egg is indisputable. 1 large egg 78 calories 5 g total fat (1.6 g saturated/0.7 g polyunsaturated/2 g monounsaturated) 187 mg total cholesterol 0.6 g carbohydrate 6 g protein Issue 70 • April 9, 2018 • chapsillustrated.com

Eggs provide the most biologically available source of protein, outside of mother’s milk for breastfeeding infants. The protein in an egg has all of the essential amino acids that humans need and that is most completely absorbed by the human body. For comparison sake, the egg’s biological value is 94 (100 being highest value), while beef ’s biological value is 74. What this means to you and me is that the egg packs the highest protein punch available in our food supply. Not to mention the fact that the egg provides a vast array of vitamins (especially B vitamins), minerals, iron, and choline – a nutrient that is essential for brain function and memory. While it is true that Americans are recommended to consume 300 mg or less of cholesterol per day for heart health, there certainly is a strong argument and wiggle room to incorporate eggs into one’s diet. Eggs can be eaten in addition to several nutrient dense, lower cholesterol foods throughout the day to make for a hearty, healthy diet. Think whole grains, low fat proteins, and color rich vegetables and fruits. When looking at the nutrient content provided in an egg, it is important to note that while all of the fat and cholesterol are contained in the yolk, the completeness of the protein comes from the combination of the white and the yolk. Consuming just the whites of the egg will provide a cholesterol free, fat free and low calorie addition to your day, but will not provide the nutrient choline or the full amino acid profile necessary for that high biological value protein that is provided from consuming both the egg yolk and the egg white together. Complement your egg with a few leaves of steamed spinach and a lean slice of Canadian bacon on top of a whole grain English muffin. Scramble up one whole egg with one egg white, a splash of skim milk, sautéed sweet potato chunks and your favorite diced vegetables for an amazingly flavorful, delicious, and nutrient dense entrée. **When cooking eggs, be sure to use non fat cooking spray or olive oil in place of butter to keep the meal low in unnecessary fat and cholesterol** Hard boil a few eggs to keep in the refrigerator for a protein complement to your salad or a thoughtless, quick, and protein 110

rich snack to have with a few whole grain crackers for those on the go type of days. While we cannot say which truly came first, we can say “go right ahead and enjoy a few eggs throughout the week”. Eggs are a superb and nutrient dense protein source whether eaten for breakfast, lunch, snacks, or dinner. Anyway you eat them, the nutrients provided in the egg tip the scales back to balanced, allowing room for a little cholesterol that goes a long way in the nutritional profile of your daily diet.

BREAKFAST CUPCAKES Breakfast Cupcakes Yields 8 breakfast cupcakes 8 large eggs ½ cup low fat milk Dash salt and pepper 8 slices Canadian bacon or ham, cut into small pieces ½ cup shredded swiss/mozzarella/or cheddar cheese Non fat cooking spray 1. Preheat oven to 350 degrees 2. In a medium bowl, whisk eggs, milk, salt, pepper until well blended 3. Spray 8 muffin cups with non fat cooking spray 4. Spoon 1 TBSP cheese into bottom of each muffin cup and top with Canadian bacon pieces 5. Evenly pour egg mixture into each muffin cup 6. Bake 15-20 minutes, until thoroughly cooked in the middle 7. Enjoy with fresh fruit and whole grain toast! *can be baked and refrigerated in advance for quick and easy breakfast that only needs to be reheated in oven for 10 minutes or microwave on 50% power for 1 minute 1 cupcake: 155 calories, 9 g fat (4.1 g saturated/3.8 unsaturated), 2.2 g carbohydrate, 14.5 g protein

He became, along with Willie Nelson and Asleep At The Wheel, one of the arbiters of the internationally famous Austin musical community. Since then, he has celebrated the music of peers such as Guy Clark and Townes Van Zandt, and served as a fountainhead and inspiration to younger musicians such as Robert Earl Keen, Pat Green, Jack Ingram, Todd Snider and a moderately successful country tunesmith named Garth Brooks.

PJ Lantzy

Coach Lantzy began his running career at Homestead High School (Mequon, WI) his sophomore year and running soon became his passion. He ran in three WIAA state cross country meets with the Homestead Highlanders finishing as a team 3rd, 9th and 2nd his senior year. He also qualified for the WIAA state track in the 3200m his senior year. After high school, he continued to run at the University of Wisconsin – La Crosse and helped win the 2001 & 2002 NCAA DIII track and field team championship, while participating in the steeplechase, 3k and 5k. Additionally, he competed on the 2001 NCAA Cross Country Championship. Upon graduating, Coach Lantzy spent four years in Mexico teaching and coaching track and field at the American School Foundation and then moved to Austin and coached at the Ann Richards School for five years. The 2017-18 school year will be Coach Lantzy’s fourth year as the WHS head Track & Field and Cross Country coach. 138
