Thoughts from the Editors... I get a little sentimental this time of year as I feel the year coming to a close....once we hit Spring break, the rest of the year just blows on past so quickly! I have so enjoyed shooting basketball and soccer, and look forward to getting out there to shoot baseball! I was able to get out to the track event (CHAP RELAYS) and that was a blast! The athletes at Westlake are always so much fun to watch! Check out the athletic calendar and come support your Chaps of all sports!

So your child has a concussion. Now what? A concussion causes serious brain damage. Even if it doesn’t feel like you hit your head very hard, there is almost certainly an area of the brain that has been bruised, losing blood flow and therefore oxygen, without which it cannot heal. There is a growing consensus among concussion researchers that the only effective way to proactively treat a concussion is with Hyperbaric Oxygen Therapy (HBOT), which has been proven to rebuild damaged tissue as well as stimulate actual brain cell regeneration. HBOT is the administration of higher concentrations of oxygen under higher atmospheric pressure to force oxygen to dissolve directly into tissue, even without blood flow. This extra oxygen allows tissues to heal that otherwise would have remained damaged, like the brain after a concussion. Treatments last about an hour and a typical concussion protocol will call for 2 to 20 hours of treatment depending on the time between injury and treatment initiation. Paid advertisement

While cold and flu season may seem like it is behind us, the CDC details that the flu season peaks between December and February, but lingers until as late as May. This makes today the perfect time to fine tune your food selections to incorporate more immune boosting options. Loading up on the right types of immune enhancing foods is a winning strategy against this year’s harsh and long lasting cold and flu season. With all the effort put into getting ourselves in top physical condition, it is important to focus on more than just the physical body. Investing in a diet that is rich in immune enhancing foods can result in a huge pay off that pays dividends in how your cellular body prevents and fight infections. Let food be thy medicine and let medicine be thy food proclaimed Hippocrates. An ounce of prevention is worth a pound of cure cautioned Henry de Bracton and later Benjamin Franklin. Truer words have not been spoken. Fueling your body with immune enhancing foods can be simple and delicious. When choosing foods that help build up immune defenses, focus on foods that are rich in vitamin C, B vitamins, selenium, probiotics, and garlic. Vitamin C has long been known to aid in fighting the common cold. While a diet high in vitamin C will not prevent infection with the common cold, diets high in vitamin C may reduce a cold’s dura-

tion and symptoms. Sources of vitamin C are kiwi, berries, oranges, grapefruits, tomatoes, spinach, broccoli, and peppers. Diets with adequate amounts of B vitamins aid in immune function. Foods that provide a balance of B vitamins are leafy green vegetables, eggs, chicken, fish, lentils, mushrooms, and cereals or foods that are fortified with B vitamins. Selenium influences cellular function and the immune system. Selenium is a mineral found in soil and has antioxidant properties. Good sources of selenium are meats, poultry, fish, nuts, and whole grains. Probiotics promote the growth of good bacteria in our gastrointestinal tract. Probiotics aide in a healthy immune system by maintaining a balance of good bacteria in the gastrointestinal tract. A considerable portion of the human immune system is in the GI tract. Keeping our stomach healthy promotes a favorable environment for keeping our body healthy. Probiotics can be found in certain dairy products like yogurt and kefir with live and active cultures, fermented foods such as raw sauerkraut, kombucha, and raw, unfiltered apple cider vinegar, and dietary supplements. A discussion on immune boosting foods would not be complete without mentioning garlic. Garlic has long been thought of as a power food when it comes to keeping germs at bay. Garlic has powerful components that help fight infections. When the cell walls of garlic are broken by cutting, chopping, mincing, or chewing, there is a chemical conversion that creates an active immune fighting component known as allicin. The conversion from allicin is what makes garlic such a powerhouse against infection. Incorporate garlic into fresh salad dressings, sauces, spreads, soups, vegetables, and main dishes. Eating to promote a healthy immune system should be just that, eating! Countless supplements are available that claim to help boost your immune system by providing mega doses of certain vitamins and nutrients. No need to waste money on expensive supplements when Mother Nature has packed these immune boosting vitamins and nutrients 126
right into our food supply. When it comes down to it, a diet that is balanced, avoids heavily packaged and processed foods that strip nutrients, and highlights fresh fruits, vegetables, whole grains, lean meats and lots of garlic is your best defense during cold and flu season.
VAmpire chicken (Prepare 4-24 hours prior to cooking) Serves Six 2 pounds boneless, skinless chicken breasts 1 bulb of garlic (approximately 10 cloves), finely chopped 3 Tablespoons Extra Virgin Olive Oil 1 Tablespoon Sesame Oil Âź cup balsamic vinegar Juice of 2 small limes Âź tsp salt 1 TBSP dried oregano flakes 1. Place the chicken breasts inside of a large baking dish or ziplock bag. 2. Wash hands thoroughly and combine 5 of the chopped garlic cloves, 2 TBSP of the olive oil, peanut oil, balsamic vinegar, salt, and oregano in a small mixing bowl or tea cup. Stir to evenly mix. 3. Pour marinade mix on top of chicken in baking dish or ziplock to thoroughly coat. Refrigerate 4 hours up to 24 hours prior to cooking. 4. Remove chicken breasts from refrigerator and turn to evenly coat in marinade. 5. Grill chicken over medium to low heat, discarding remaining marinade or broil in baking dish with marinade in a 400 degree oven until juices run clear, approximately 25 minutes. 6. While chicken is cooking, chop remaining five cloves of garlic and combine with remaining 1 TBSP olive oil. Sautee over low heat just until garlic softens and turns yellow/gold. Drizzle on top of cooked chicken breast and enjoy with your favorite salad or side! Per 6 oz chicken breast: 185 calories, 9 g fat (1.8 g saturated/6.4 g unsaturated), 2.5 g carbohydrate, 35.5 g protein.

Jerry Jeff has lived - and is living again - the troubadour’s life. Most folks know that story how Jerry Jeff moved to Austin in the early ‘70s and reinvented himself as a Lone Star country-rocker. He became, along with Willie Nelson and Asleep At The Wheel, one of the arbiters of the
internationally famous Austin musical community. Since then, he has celebrated the music of peers such as Guy Clark and Townes Van Zandt, and served as a fountainhead and inspiration to younger musicians such as Robert Earl Keen, Pat Green, Jack Ingram, Todd Snider and a moderately successful country tunesmith named Garth Brooks.

PJ Lantzy
Coach Lantzy began his running career at Homestead High School (Mequon, WI) his sophomore year and running soon became his passion. He ran in three WIAA state cross country meets with the Homestead Highlanders finishing as a team 3rd, 9th and 2nd his senior year. He also qualified for the WIAA state track in the 3200m his senior year. After high school, he continued to run at the University of Wisconsin – La Crosse and helped win the 2001 & 2002 NCAA DIII track and field team championship, while participating in the steeplechase, 3k and 5k. Additionally, he competed on the 2001 NCAA Cross Country Championship. Upon graduating, Coach Lantzy spent four years in Mexico teaching and coaching track and field at the American School Foundation and then moved to Austin and coached at the Ann Richards School for five years. The 2017-18 school year will be Coach Lantzy’s fourth year as the WHS head Track & Field and Cross Country coach. 168
