Ritgrund Bergö

Bergö is an island with unique characteristics located in the municipality of Malax, at the southern end of the Kvarken Archipelago. Bergös picturesque boat houses remind us of the significance of fishing throughout the ages. Ritgrund is a barren lighthouse island located in the northern part of the outer Kvarken Archipelago, between the islands of Mickelsörarna and Valsörarna. Burträsk is located in Västerbotten, Sweden by the Burträsket lake. Västerbotten cheese has been manufactured here since 1872. Attempts to make the cheese elsewhere have not succeeded in re-creating the unique flavour.

TARTAR ON TROUT FROM BERGÖ WITH RITGRUND WHITEFISH ROE AND VÄSTERBOTTEN CHEESE CREAM 6 servings Tartar on trout with dill and whitefish roe –6 – dl diced, boneless trout fillet –1.5 – tbs sugar –1.5 – tbs salt –1.5 – tbs dijon mustard –4.5 – tbs cut dill –1 – tbs lemon juice –1.5 – tbs sour cream –whitefish – roe –dill – for garnish Mix salt and sugar with the diced fish and let it stand for half an hour. Then add mustard, dill, lemon juice and sour cream, stir thorougly. Place the mixture in a line on tin foil, then roll into a sausage shape some 3 cm thick. Keep in the freezer for about two hours. When serving, cut the roll into discs some two cm thick. Serve with drained whitefish roe.

Västerbotten cheese cream –3 – eggs –2 – tbs dijon mustard –1 – tbs vinegar –½ – tbs water –1 – clove of garlic –2 – dl grated Västerbotten cheese –2.5 – dl vegetable oil –sugar – –salt – –freshly – ground black pepper Mix the eggs, mustard, vinegar, water, pressed garlic and cheese and blend in the oil. Add salt, pepper and sugar to taste. There will be some cheese cream left over. Save it and enjoy another day.

Sour tomato fillets –2 – tomatoes –0.5 – tbs dijon mustard –1 – tbs vegetable oil –0.5 – tbs white vinegar –0.5 – tbs honey –freshly – ground black pepper Scald the tomatoes, remove the core and cut them into slices which are then filleted. Mix all the ingredients. For serving: –Dill – –Sour – tomato fillets –Crutons – from a nice dark bread, such as the Malax loaf
