“Bring it on, Sri Lanka” were my first words after landing at Colombo airport. New adventures were about to begin and I had no idea what to expect. My 10-day trip started off in the Capital, where I had my first tuk-tuk ride, visited the most famous temple in Colombo - Gangaramaya, chilled by Beira Lake and found some shopping gems. Straight away I fell in love with this beautiful island. Upon exploring Galle, I happened to come across an unknown village. Stopping to indulge in some fresh coconut water, I found out that this place had been the most affected village by the shocking 2004 tsunami. I was humbled by the locals who, after such a catastrophic event, still had a smile on their faces, and this experience made me stop and appreciate my life a lot more. Moving on from Galle to Tangalle, there are no words that can describe the untouched, peaceful and stunning beaches. But if you can tear yourself away from the ocean, make a point of visiting Adam’s Peak (a short distance from the town, Nuwara Eliya), where I had the best experience ever! It was definitely worth climbing 5 kilometres through the night, passing 5,500 stairs in 2 hours and 25 minutes... just to see the MIRACLE of a SUNRISE. After all those activities, I just simply couldn’t continue my exploring of the city of Kandy without making a quick stop at the Mackwoods Tea Estate one of the most mysterious and awe-inspiring landscapes I’ve ever seen. I even got a complete walk through of the tea fields and the factory itself,

followed by a complimentary tea tasting. So, I guess it wasn’t a shortstop after all, but definitely worth the time. Going through my checklist, Kandy was the last place left on my journey. I kept busy by visiting its famous Temple of the Tooth, where I saw a traditional Kandyan dance show, and did a one-day tour of Pinnawala Elephant Orphanage. As the trip came to an end, I realised that this journey to Sri Lanka had left a huge mark on my life. It wasn’t your average trip, as it taught me about life, showing me lessons in each and every city I visited in the 10 days. In the UAE, us foodies always have something to look forward to with a new restaurant, cuisine or concept cropping up almost monthly. So, we decided to investigate what food trends will be taking over the world, and therefore the UAE, in 2017.

FERMENTED FOODS Health trends always move fast, and fermented food, with its powerful gut-friendly benefits, will be one of them. A lot of people are focusing on pickling and fermenting their vegetables, with a global surge in purchases of kimchi, kombucha, polish and yucatan pickles.

HEALTHY SNACKS There is more focus now on eating five or six smaller meals throughout the day, as compared to focusing on the three main meals. So naturally the amount of healthier snack options has increased all across the world, including sweet potato fries, kale chips, avocado toast, and chia seed pudding.

HEALTHIER DRINK OPTIONS We know that currently everyone in the UAE is hyper vigilant about everything they consume. Everyone is looking for quality ingredients, locally sourced, organic food and drink options that are healthy, but also affordable. Recipes CREAMY BUTTERNUT SQUASH PASTA Ingredients: 2 1/2 cups butternut squash, peeled and cut into 1/2-inch cubes 1 tablespoon olive oil 1 tablespoon butter (vegan butter is fine as well) 1/3 cup onion, finely chopped 3 cloves garlic, minced 1 cup chicken/ vegetarian broth 1/3 cup milk (nut milk is fine as well) 1/3 cup Italian cheese blend (Parmesan, Asiago, and Romano) salt and ground black pepper to taste 1/2 teaspoon red pepper flakes 12 ounces whole grain pasta of your choice

HEALTHY RAW BROWNIES Ingredients: 60 grams of oats 250 grams of dates 3 Carrots 80 grams of ground almonds 80 grams of cacao powder Method: Blend everything in a food processor in the order mentioned above. Line a small tray with parchment paper and pour out the batter from the food processor. Spread the brownie batter and freeze for 30 minutes. Cut in cubes and decorate with fruit or nuts. Method: Warm the oil in a large skillet over medium heat. Once the oil is shimmering, add the squash, onion, garlic and red pepper flakes to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the onion is translucent, about 8 to 10 minutes. Add the broth. Bring the mixture to a boil, then reduce the heat and simmer until the squash is soft and the liquid is reduced by half, about 15 to 20 minutes. In the meantime, bring a large pot of salted water to a boil and cook the pasta until al dente according to package directions, stirring occasionally. Reserve 1 cup of the pasta cooking water before draining. Once the squash mixture is done cooking, remove it from the heat and let it cool slightly. Transfer the contents of the pan to a blender, purée the mixture until smooth (beware of hot steam escaping from the top of the blender), then season with salt and pepper until the flavors sing. In the reserved skillet, combine the pasta, squash purée and ¼ cup cooking liquid. Cook over medium heat, tossing and adding more pasta cooking water as needed, until the sauce coats the pasta, about 2 minutes. Serve the pasta in individual bowls topped with black pepper and shaved Parmesan/Pecorino if desired.

Sweet Treats with Collagen

If you’re feeling like you’re craving something sweet, but don’t want to deal with the post-treat guilt, try out these easy recipes using the Vida Glow natural collagen supplements.

Stir until the oil and chocolate have melted before removing from the heat and setting aside to cool slightly. 3) Using a handheld mixer or a blender, beat together the eggs, sugar, and vanilla extract for about 2 minutes, until smooth and pale. Add the melted chocolate mixture and mix until well combined. Reduce the speed to low and add the cocoa powder, Beauty Blend, and salt, mixing until it’s well combined and scraping down the sides of the bowl as necessary. The batter should be thick and smooth. 4) Pour the batter into the prepared pan, spreading it evenly with a greased spatula. Bake for 25-30 minutes, until the centre is set. Remove from the oven and let cool in pan for about 15 minutes. Cut into squares and serve.

HONEY OAT FACIAL SCRUB

BROWN SUGAR AND COFFEE BODY SCRUB

Ingredients: 1/4 cup oat powder 4 tablespoons honey 1 tablespoon jojoba or olive oil

Ingredients: 1 cup packed brown sugar 2 tbsp coarse coffee beans 1/2 cup coconut oil

Instructions: In a glass jar, mix together the oat powder, jojoba oil, and honey. Stir until well combined. Store in a cool, dark place. Take approximately half a tablespoon of the mixture in your hand and add a few drops of water. Scrub the skin gently, letting the oatmeal do the work of exfoliating. Lightly massage all over your face for several minutes. Remove with a warm wash cloth or warm water.

Instructions: Combine brown sugar and coffee in a small bowl. Add coconut oil and combine. Store in an airtight container. Take around half a tablespoon of the mixture in your hand. Scrub the skin gently, letting the sugar and coffee do the work of exfoliating. Rinse in the shower with warm water.

What Happens to Your Facebook Profile When You Die? No one ever wants to think of their own death let alone what they will do with their Facebook page. This is why in 2015, Facebook created a policy through which you can designate a ‘legacy contact’, which is a person you trust to take care of your Facebook profile and make an announcement of your death. They also have the opportunity to respond to new friend requests, update cover and profile pictures, and archive your posts and photos. They don’t, however, have the authority to read your private messages. So, do you have a plan for your Facebook page? If not here are your three options.

1: MEMORIALISING YOUR ACCOUNT

If you have a designated legacy contact then that person can take control of your Facebook profile when you are gone and take care of things on your behalf, no questions asked. However, if you don’t have a legacy contact, there are a few ways in which to handle your Facebook page after you pass. One of which is to have it memorialised, which either you or anyone else can request. When an account is memorialised, only confirmed friends can see the timeline or locate it in the search bar. The timeline will no longer appear in the suggestions section of the home page, and only friends and family can leave posts on the profile in remembrance. Once an account has been memorialised, it is completely

secured and cannot be accessed or altered by anyone. The request can be filled out and then Facebook handles the memorialising, notifying the requestor via email once it is complete.

2: HAVE YOUR ACCOUNT REMOVED/ DELETED

Another way in which your account can be managed is to have it completely removed. In order to do so your loved one can submit a request to Facebook so that it can completely delete the timeline and all associated content for good, so no one can view it. All pictures and posts originating from the profile in question will be removed after being verified from Facebook.

3: LET AN APP HANDLE YOUR LAST MESSAGES

Facebook allows a third party application called “If I Die,” through which you can create a video, message, or text message that can be scheduled to send after you pass. Adding the application on Facebook allows you to have it personalise a profile page for you. You can leave a video directly through the application. Once you schedule a message your friends have the opportunity to leave a response.

I remember one of the families telling me how they lost their daughters because ISIS sold them. There were some really horrible stories and they really hurt me, but I was just glad that I could do something for these people and be their voice. I am honoured to be WFP’s Celebrity Partner and I love how active and great they are, but what is important to me is that I can be the voice of millions of people who are suffering in silence. By giving them a voice I hope to spread awareness as to what is happening and hopefully help reduce the burden they carry. I worked hard to build my name but a name has no value unless you use it to make the world a better place.

How did you get started? When I was a little girl a team from the Iraqi TV came to visit our school to choose students with high grades to participate in their TV show called “Cinema for Kids.” During the show, the organisers noticed how interactive and natural I was on screen and they told me how much potential I had. Then when I turned sixteen the Iraqi media organisers came to me again and gave me a job opportunity as an English radio presenter. However, at that time, my parents thought that I should focus on school and on being a dentist. At that age, I agreed, but when I later came to Dubai I tried to show my family that I could do both and managed to do so right up until I decided to focus mainly on media. This was when I officially become a part of Al Arabiya TV. With god’s grace things only got better, and that’s where it all started. What does your daily routine as a News Anchor/ TV Presenter entail? We have a wonderful production team at MBC, who prepare everything well in advance. In the meantime, I do my hair and makeup, then I sit with the team so they can brief me on the person that I will be interviewing. I then call the guest to know more about them, as I want all my interviews to be sharp, informative and perfect.

How did you get involved with the United Nations World Food Programme? The whole thing started when ISIS took over the largest cities in Iraq, like Mosul and Saladin. It was a shock as overnight millions of respectable families became refugees and internally displaced people (IDPs). I then started to receive hundreds of messages on my official Facebook page from people telling me how they are living with no food, shelter or healthcare. The people told me how they were struggling and asked me to help them, and that’s when I started to think about how I could help. After this, I called some of my friends and one of them was a businessman who supported me and asked to purchase whatever was needed. I remember I took clothes, food, blankets, and when I came to Iraq the World Food Programme (WFP) was also visiting the same camp that I was at. I met with the head of WFP and she told me how active they were when the whole crisis started and how they managed to cover the needs of millions of people. I really liked what she said, and how active they were on the ground. When I went to Iraq I remember meeting with families and they spoke to me about how they struggled just to be safe. I have met with Yazidi women who have walked nonstop for days without food or water just to get away from ISIS.

Tell us about the time you reported from Iraq in 2015, how was that experience? Back in 2010 when I was working with Al Arabiya TV we created a new TV show, which was the first of its kind. It was the first debate show that was launched from Baghdad, because for once the political diversity allowed different parties to use their voice and also to debate publicly on screen. In 2010, Baghdad was the most dangerous place for journalists to work, but we didn’t think about that. We worked there for thirtythree days with passion and even succeeded so much so that The New York Times wrote about the show. It was such a historical moment for us, and I would love to thank Al Arabiya for such a wonderful opportunity. Do you have any advice for women? My advice for women would be to find your passion, your purpose, and your message. If you don’t have a passion or message then your priority now is to find it. Believe in yourself, don’t wait for others to believe in you. Don’t wait for approvals from the community to believe in yourself. Anita Williams

UAE’s Beloved Jazz Artist Anita Williams is a Dubai Based Irish Vocalist and Jazz Performer who is on a mission to inspire the good folks of the UAE to fall in love with Jazz. Williams has been performing Jazz in Dubai since 2008 and is also working on releasing her new album, which is scheduled to launch early next year. When listening to Anita you experience smooth, swinging sets of jazz, perfect for a classy evening of entertainment. We had the opportunity to talk to her about her true love and how it all started. Tell us about yourself? Well, I am an Irish jazz vocalist/artist and quite eccentric, in a good way I hope. I am very passionate about my work and my love of Jazz has taken over my life. I trained to sing in London at 18 with the famous voice coach Glynn Jones, who taught me a lot about the business. He is basically the best teacher any young teenager could have! I then went back to Dublin, and went on to have my two beautiful sons. Jazz went on the back burner for a while and I ventured into TV and radio as a presenter. But, Jazz came calling again and after a short improvisation course in Dublin Newpark school of Jazz, my love of singing Jazz started all over again, but this time the fire in my belly was bigger and brighter. I knew then it was my calling in life. So here I am today spreading my passion to all those who will listen. When and how did you get into Jazz? To be very honest I truly believe I was born with this gift. Jazz is not something you turn around one day and start singing. For me, it is the most passionate form of storytelling and no one does it better than Ms Billie Holiday herself…my idol. It was her song, “You’ve Changed” that changed my life forever. I know it sounds quite cliché, but it is true! To sing jazz I really do believe you have to be an old soul and have lived life quite a bit. A lot of heartaches is involved, but singing is the best therapy you can ever have.

What kind of message do you wish to spread with Jazz? A wonderful new film has hit our screens recently, La La Land. It has taken the world by storm, and I am thrilled. It truly tells my story. To all Jazz lovers out there, go see this film. I am an old school Jazz head, as one would say, and I try so hard to keep it alive and real. There are a few of us in Dubai, but not enough, so hopefully my performances will become an inspiration for young musicians on a journey of self-discovery. What is your favourite song to perform? An impossible question to answer, but if I really had to choose, “Don’t Explain”, by Billie Holiday. would be top of the list. I actually get a lump in my throat when I sing it and I don’t know how I get to the end of the song without breaking down. Where can people listen to you perform live? Do you perform at specific locations and times? At the moment I perform at Music Hall - Zabeel Saray, Palm Jumeirah every Thursday and Friday from 10 pm onwards. This is set at an amazing location and is a very classy and elegant experience. The performance is breathtaking and continues to attract jazz lovers week after week. Recently I have partnered up with Le Petit Cafe in Jumeirah to introduce a unique concept of weekend ‘Breakfast and Sunset Jazz’ sessions. I perform along with a saxophonist and a guitarist every Friday from 4 pm to 6 pm and Saturday morning from 11 am to 1 pm.
