Roasted Butternut Squash & Sage Risotto

This risotto is a creamy dish that balances sweet, roasted squash with fragrant, earthy sage. Perfect for autumn, it’s rich, flavourful, and irresistibly warming.

Ingredients

1 medium butternut squash

6 sage leaves

2 onions

5 garlic cloves

1.2l vegetable stock

400g arborio rice

1 lemon

1/2 cup vegan cream

1/4 cup pine nuts

Parmesan. cheese

Method

Pre heat the oven to 200C/180C fan/gas mark 6. Cut both ends off the butternut squash and peel with a vegetable peeler. Place the flat side of the bigger end of the butternut on a chopping board and carefully cut down the middle. Scrape out the seeds with a teaspoon. Chop the butternut into cubes about 2cm. Place in a baking tray with some rapeseed oil, salt and pepper. Place in the oven, for about 20-25 minutes.

Finely chop the onion and place in a large pan with some oil on medium heat. Stir and after a few minutes add the crushed garlic. Keep an eye to make sure the onion and garlic don't burn, when they are soft and translucent add the arborio rice and finely chopped sage. Stir and coat all the rice and then add vegetable stock about a cup at a time.

Continue to add the vegetable stock when the rice has soaked it up, stirring frequently. Stirring it frequently is what releases the starches and makes it creamy. You may find you need a little less, or a little more stock.

After about 15-20 minutes, taste the rice. It should have a bit of bite to it but be soft on the outside. Turn down to a low heat.

Take the butternut squash out the oven, it should be starting to brown and be nice and soft. Mash 3/4 of the squash with the back of a fork and add to the risotto. Add the juice of the lemon and vegan cream and stir until combined.

Toast the pine nuts in a dry pan on medium/high heat.

Serve the risotto, top with the remaining squash, pine nuts and some parmesan.

Thai Green Curry Chicken and Rice Traybake

A vibrant, one-pan meal that combines tender chicken, fragrant jasmine rice, and a creamy coconut green curry sauce. Bursting with fresh herbs and spices, it’s an easy way to enjoy bold Thai flavours with minimal fuss.

Ingredients

4 tbsp Thai green curry paste

300ml water

300ml coconut milk

2 tsp fish sauce

300g jasmine rice, rinsed well

6–8 chicken thighs (approx. 1kg), skin on, bone in, fat trimmed

200g edamame beans or peas, or a mix

To serve

100g natural yoghurt

2 tsp sweet chilli sauce

1 lime, cut into wedges

Handful chopped coriander

red chillies, finely sliced (optional)

Method

Preheat the oven to 200C/180C fan/gas mark 6. Put 2 tablespoons of the curry paste into a large roasting tray or oven dish (approx. 25cm x 35cm) and gradually mix in the water to loosen. Pour in the coconut milk, add the fish sauce and a couple of pinches of salt, and stir to combine (don’t worry if the coconut milk is lumpy at this point, it will dissolve as it cooks), then mix in the rice.

Slash each chicken thigh twice, then coat with the remaining 2 tablespoons of curry paste. Sprinkle with a pinch of sea salt flakes, then place the chicken on top of the rice skin side up and cover the dish with foil.

Bake for 30 minutes, then discard the foil. Move the chicken to one side while you give the rice a stir, then replace the chicken. Bake for a further 15 minutes, then take the tray out of the oven and mix the edamame beans or peas into the rice. Return to the oven and cook for a further 15 minutes, or until the rice is done and the chicken is completely cooked through. Taste the rice – if you’d like more heat, move the chicken to one side and stir in extra curry paste, to taste (loosen with water first, if needed). Check the seasoning and adjust with salt or fish sauce, if needed. If you like a crispier skin, turn the grill to high and grill the whole dish for a minute or two, or until the skin is crispy. Put the yoghurt into a small bowl and stir in the sweet chilli sauce.

Serve with wedges of lime, sprinkled with chopped coriander and chillies, and with the yoghurt at the table for drizzling.

3/4 cup self-raising flour

45g finely grated carrots

375g cream cheese, softened

1 1/2 tbsp caster sugar

3/4 tsp ground cinnamon

1/3 cup raisins, chopped

Candied walnuts

1/3 cup caster sugar

20g butter

1 cup walnuts

Method

Preheat oven to 200C/180C fan. Grease a 25cm x 30cm swiss roll pan and line with baking paper. Sift the flour and mixed spice 3 times.

Using an electric mixer, beat the egg whites in a large bowl until soft peaks form. Gradually beat in the sugar, 1 tablespoon at a time, until thick and glossy. Add the egg yolks, 1 at a time, beating until combined. Beat for 5 minutes or until thick and pale. Pour the hot milk down the side of the bowl and sift the flour mixture over the top. Use a spatula to gently fold together until just combined. Sprinkle over the carrot and gently fold through. Pour onto the prepared pan and level the surface with a spatula. Bake for 8-10 minutes or until golden and springy to touch and a skewer inserted into the centre comes out clean.

Place a piece of baking paper on a clean surface and sprinkle evenly with the icing sugar and cinnamon. Turn the cooked cake out onto the sugar and cinnamon. Peel away the paper that was lining the pan. Carefully roll up the cake, starting at a short side. Set aside on a wire rack to cool completely.

Meanwhile, beat the cream cheese, sugar and cinnamon with an electric mixer until smooth. Stir through the raisins and set aside.

To make the candied walnuts, place the sugar in a large frying pan over medium heat. Shake the pan over the heat until the sugar melts and becomes golden. Add the butter and swirl the pan until melted. Add the walnuts and toss to coat well. Transfer to a tray lined with baking paper. Set aside to cool. Coarsely chop

Unroll the cake, spread evenly with the cream cheese mixture and then re-roll. Serve sprinkled with the candied walnuts and cut into slices.

Things That Go Bump in The Night

As the first real-life couple to star in 2:22 - A Ghost Story, Stacey Dooley and Kevin Clifton are relishing the chance to work together again. It's been seven years since they took the Glitterball Trophy on Strictly Come Dancing. "And that feels like a really long time ago," says Dooley now.

The presenter, journalist and actress starred in the smash-hit thriller for a limited run at the Gielgud Theatre in the West End in 2024. She played Jenny, a young mother who along with her husband Sam has recently moved into a house that they are in the process of renovating. Every night at precisely 2:22am they hear strange and disconcerting sounds in a nerve-shredding thriller that The Guardian has hailed as "A slick, chilling romp of a play".

Written by Danny Robins and premiering in 2021, it was one of dancer and musical theatre star Clifton's favourite plays even before he saw Dooley in it. "So that was another reason for us to say yes to the tour," he says.

The couple are parents to two-year-old Minnie and they'll be taking her on the road with them when they embark on the 2:22 tour from early August until late November, with Stacey admitting: "Of course, travelling the country with a two-year-old will bring its own stresses, but it's great that we can all be together as a family."

She smiles. "Kev and I have very different approaches. I take my work seriously, but he really throws himself into things, so he'll be examining and dissecting every line of the script."

Dooley and Clifton are speaking ahead of rehearsals. "And I think the first day or so in the rehearsal room will be interesting," Kevin

muses. "There's the real you when you're hanging out with your mates or your family, then there's the work version of you, and it feels odd when friends or family see the work version of you because they're used to the real you. Stace knows everything about me and the way I am in normal life, so for us to become these different characters with each other will be quite funny until we relax into it."

It's a very different dynamic to the one they had on Strictly, with Stacey noting: "Kev was the expert in that instance and he knew Strictly inside out. I felt incredibly well looked after and it was like a teacher-student relationship." With 2:22 Dooley has done the play before and it's Clifton's first non-musical. "So it's like a role reversal," she says.

Has she given him any pointers? They both laugh as Stacey jokes: "I've told him 'Listen Kev, I'm very happy to nurture new talent, so if you have any questions or concerns don't hesitate to ask!'"

And will he listen to her advice? "I'm going to have to! But you would anyway, wouldn't you? With colleagues, the whole idea is to share ideas and to listen." Plus Stacey points out that for her it's a different cast and a different director in Gabriel Vega Weissman. "It's going to feel new for me as well. It's as much a learning curve for me as it is for him."

In the edge-of-the-seat story, Jenny is convinced the house is haunted but Sam is having none of it. When their old friend Lauren and her new partner Ben come round for dinner, belief and scepticism clash and they agree to stay up until 2:22 to try and find out what's really going on.

For Stacey, Jenny is a relatable character. "We can either see parts of ourselves in Jenny or we've got pals who remind us of her. She's a mum who's just trying to find her feet. She's a teacher, so she's got a lot going on work-wise. And she's a mum, so I can relate to her on that level too. When you have a baby you're like 'Oh, God, who am I apart from Mum?'"

Kevin sees Sam as an equally recognisable character. "We all know at least one Sam in our circles - someone who's a bit of a know-it-all, who has read a few things on social media and now considers himself an expert."

Dooley was drawn to the play the first time around because of parallels with her own life. "I had just had a little girl and we had just moved house, so I could totally understand where Jenny was coming from. But Jenny's probably a bit more placid than I am and a bit sweeter. I don't think I'm patient enough to be a teacher."

And is Kevin anything like Sam? "I don't think so but maybe

I used to be. When I was in my early 20s I liked going against the grain of everyone's opinions. For example, if you'd told me you liked a particular pop song I'd say 'Well, that's because they've taken it from another song from the 70s and it's actually not an original idea'. I've grown out of that now."

Getting to tour together in a play was one of the main draws for a couple whose busy schedules often keep them apart. "Kev is on tour a lot and he'll be all over the place," Stacey says, "and if I'm at work often my locations are further afield. The timing is right and it's probably the last time we can do something like this before Minnie will be three or four, and we'll be thinking about preschool and stuff like that."

Kevin smiles again. "We're striking while the iron is hot."

I was staying in the Sir Francis Terry Courtyard Suite, a suite that perfectly captures the hotel’s balance of history and comfort. The suite is divided into two generous spaces: a warm and restful bedroom, and a lofty lounge brimming with character. The bedroom, bathed in soft golden tones, is crowned by a large bed, dressed in a richly patterned throw that’s framed by antique side tables, traditional prints and lighting that creates a soft, gentle ambience and as the sunlight filters through the sash windows you know you’re cocooned in a space that blends timeless elegance with comforting warmth.

The lounge is equally impressive, with high ceilings and exposed beams that add both grandeur and rustic charm. Comfortable sofas in warm, inviting fabrics, a patterned rug, and period furniture create a sense of homely sophistication. Lamplight, framed artworks, and a writing desk complete the picture, the ideal space that’s as suited for quiet reading as it is for unwinding with a glass of wine after a day of exploration.

The house itself is alive with history. Beyond the sweeping staircase and panelled hallways, the outside space unfolds across 20 enchanting acres of gardens and parkland, lovingly restored and replanted since the 1980s. Meandering walks lead past classical urns and winding paths, offering glimpses of roe deer at play, busy beehives, and nesting birds gather around the tranquil lake. Tucked away behind clipped hedges and through leafy archways are secluded benches and hidden clearings, secret pockets of calm where you can just pause, sit quietly, and simply embrace the peace. Within the historic walled kitchen garden, herb beds mingle with flowering shrubs and sweeping herbaceous borders, while an array of fruit trees that include apples, pears, plums, peaches and greengages supply the chef’s kitchen with inspiration for delicious desserts.

Dining at Middlethorpe is an experience to be savoured. The evening began in the drawing room,

where a perfectly chilled glass of wine and delicate hors d’oeuvres awaited. Surrounded by fine paintings, beautiful antiques, and the glow of a twinkling chandelier, we lingered awhile, pursuing the menu with quiet anticipation before heading into the oak-panelled, candlelit dining room.

The restaurant has twice been awarded ‘Restaurant of the Year’ in the Visit York awards and still retains 2AA Rosettes, so you can see why we were slightly excited to be experiencing this culinary journey.

The menu was a true celebration of seasonal British produce. Starters included Sea Bream with citrus tartare, som tam and green curry, its delicate flavour complemented effortlessly by the lively citrus tartare. Venison with beetroot and barbecue celeriac, a rich, layered dish where deep, robust flavours met subtle, charred sweetness.

The mains were another explosion of delicious flavours with the Stone Bass paired with leek, potato and brown shrimp perfectly cooked and literally melting in the mouth and the leeks and potatoes adding delightful texture and taste. Tender pork enhanced with an Earl Grey flavour, sauerkraut and burnt apple added depth of flavour to the pork making it utterly delicious.

Dessert was just as appetising a modern reimagining of garden rhubarb with custard, alongside the delicate sweetness of strawberries with elderflower and white chocolate, both full of delicate flavours made it the perfect end to our culinary dining delight.

After the most restful night’s sleep, York itself beckoned, and a morning wandering around the city’s famously crooked medieval street The Shambles. It was like stepping straight back into history, with its timber-framed shops and hidden alleyways, all a reminder of the city’s rich past.

Back in the serene sanctuary of Middlethorpe, afternoon tea awaited us in the drawing room, where tranquil views over the lawns set a peaceful scene. Delicate sweet treats, warm scones, and tiers of finger sandwiches were laid out alongside fragrant loose-leaf teas, each bite and sip a gentle indulgence, inviting you to slow down and savour the moment.

A glass of fine wine enjoyed on the terrace overlooking the gardens was the perfect way to spend our last evening at Middlethorpe, savouring the stillness, the beauty, and the sense of stepping outside of time.

The restaurant The Idler, headed up by Chef Jay Campbell, offers modern British cuisine with a Mediterranean twist, plus creative cocktails and selected wines available at the bar (also open to non-

With plush banquette seating along the perimeter and a central open kitchen featuring a marble top and wrap-around bar with bespoke bar stools, that area feature eclectic artwork, parquet wooden flooring and repurposed vintage furniture in an array of contemporary fabrics. The on-site Deli offers freshly baked goods and gourmet sandwiches throughout the day, with quality products available to purchase for those wanting to make the most of their inroom kitchen.

The July London Victoria's "neighbourhood key" acts as a backstage pass to curated events, sweet deals across all properties, and dining perks. Inviting neighbourhood businesses and locals, the hotel will soon launch community groups, including reading and running clubs, with the aim of allowing guests to foster real, genuine and long-lasting connections.

The property will hold BREEAM Excellent certification and more accreditations, with multiple initiatives to limit operational emissions - sustainability is at the brand's core.

The July's in-house design team worked closely with interior architecture and design studio Fettle to create a design concept that reflects The July's brand values of flexibility and comfort, highlighting the local area and its history. Referencing Art Deco architecture throughout, the design draws from Victoria's rich architectural heritage with subtle, playful nods seen through 1930s inspired furniture and materials.

Each beautifully designed guest room functions seamlessly for long stay guests with spaces to relax, dine and work, featuring Art Deco inspired detailing and bespoke lighting including brass and metal pendant lighting and fluted bedside lights. Every room includes a multifunctional oak joinery unit that seamlessly integrates wardrobe, storage and full kitchen. The bathroom chequered tile pattern is inspired by the Lutyen's Page Street building nearby The July.

Rich and colourful, the adventurous material palette includes oak, recycled timber terrazzo, textured glass block and natural marbles. The refined green theme is inspired by the neighbouring royal parks, while various levels of bespoke lighting - many designed especially for the project to ensure the style, size and design is unique to the space - keep the apartment-hotel intimate and residential. The July brand has strong sustainability values, and this was central to many material decisions made for the scheme.

Market Halls food hub, countless restaurants, dazzling theatre productions like Wicked and Hamilton, superb rail connections… Victoria lends itself to all types of London tourist. Reach Gatwick's terminals within a respectable 30-minutes, while Brighton's seaside awaits at the end of a 60-minute rail journey.
