You can find cheese called Parmigano-Reggiano at the supermarket retailing or $12.99 a pound and the dusty, craggy flavor will be shadow of this. Our Parmigiano comes from a hillside dairy and the cows graze outside—something increasingly uncommon among the herds that are milked for this cheese since land is scarce and the cheese is in high demand. Six New Food Finds luxuriant

Salt Cod in Olive Oil

pâté of the sea Scallop Rillettes

I’ve never really tasted anything like this. I hadn’t even heard of the Ile de Groix, the island off the coast of Brittany where scallop rilletes are made, until this summer. Nor had I heard of scallop rilletes. As far as I knew rillettes, slow-cooked in fat like a pâté, were reserved for land animals. These are similar to pâté, but instead of using pork or duck to make a rich spread, scallops are employed to make a rillette that is light and smooth, with just a touch of sweetness and an undeniable flavor of the sea. The additions are parsle , shallots and a bit of butter and cream. Spread some on open faced sandwiches for lunch or a dinner side dish, perhaps with a few capers, lemon zest and a twist of black pepper. Outstanding fast food. It seems a little odd that the seafood-loving residents of Spain and Portugal love salt cod so much. In fact, the closer to the water they live, the more salt cod they seem to eat. These people, who have access to the best fresh seafood in the world, on any given night you’ll find them cooking slabs of preserved salted fish. It stymied me until I married into a Portuguese family and started eating more salt cod. Then I realized that salted cured fish has about as much in common with fresh fish as cured ham does with a fresh pork chop. They're two completely different things. People who raise pigs like fresh pork and they like salted cured pork like ham. Why wouldn't the same be true for people who fish? The salt curing and cooking—which, here, happens as a slow confit in olive oil—creates a cod fillet that’s almost creamy. It may seem counterintuitive but salt cod is one of the most luxurious fishes you can eat. That's the main reason Iberians spend hours—and I mean hours—soaking and cooking it. Kate Quartaro took her great grandfather’s worcestershire recipe and crafted a sauce that stands heads and shoulders above the market leader, the W who shall not be named. Christopher Milz grew up in Germany but now resides in northern Michigan. A chef by trade, he fell for making oils from the region's nuts, seeds and fruit. For this oil Christopher sources wild and farm grown black walnuts from Michigan, Indiana and Wisconsin and cold-presses them. Cold-pressing is key. Like with cold-pressed olive oil, can get more oil out of the nut and hence more profit by heating it up the process, but that burns off the nut's delicate flavors. Cold-pressing yields far less oil, but its flavor is amazing: sweet, dark and nutty. Use Chris's black walnut oil as a condiment to finish soups or in vinaigrettes for salads. Sundried Wine Vinegar with Rosemary & Thyme I love sundried foods—more flavor! no electricity!—so I was pretty excited when I came across this vinegar from Messinia in southern Greece made from sundried grapes. The first grapes of the harvest are laid out in the sun for a couple weeks. Basking in the sun releases much (but not all) of the water, concentrates their flavor and increases their sweetness. The grapes are made into a very sweet wine, then converted into vinegar over the winter. During the aging, local rosemary and thyme are added— both of which, in Greece, are much more delicate than most of what I've tasted in America—and they infuse the vinegar with their soft, piney aromas. Octopus is a tricky fish to tin. We’ve never sold it and it’s not from lack of trying. I’ve probably tasted octopus from twenty different canneries. Those samples suffered a range of maladies: overly gelatinous, too cat-foody, or, they had what I refer to as “rubber hose phenomenon.” I came to Ramon Peña’s octopus with low expectations born from experience. What I tasted was a treat, a surprise that ranked at the top of my new food list when I discovered them last year. Peña’s round tin holds over a dozen slices of tentacle, suckers intact. Octopus is never a melt-in-your mouth food and these are appropriately meaty with a satisfying ticky tacky bite that never once veers to garden hose. They also possess a scent of the sea so clear it’s disarming. A tin serves four as an appetizer. And since one of those four people probably doesn't eat octopus there’s more for you. selling tinned seafood, but sardines aren't too far behind. It's surprising to me since sardines are not a big part of the popular food scene in America. One thing to know is there are actually dozens of different fish sold as sardines in the U.S. Most are either brislings from Norway or herring from the North Atlantic. While they aren't bad, they don't come close to the flavor of true pilchards like these. And unlike Norwegian sardines, these are never smoked, so the full flavor of the fish comes through. Four or five tender, perfect sardines, come nested in a tin of olive oil. We offer standard (illustrated) or extra virgin olive oil, which has the effect of making the flavor more buttery, less metallic; in a way it's less fishy. One Family's Vinegar

why we carry the vinegar of one balsamic maker While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic: La Vecchia Dispensa. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel—both of which contribute to more intense flavors. Although aged for only 25 percent longer than the 8 year balsamic, the intensity of flavor is almost double. As you move up the age range—to 16 year and 30 year—the liquor thickens, the sweetness enhances, the caramelization takes you on a wild ride of flavor.

Europeans go gaga for asparagus that’s snow white and thick as a thumb. In season, there are restaurants in Spain that devote whole menus to it. It’s tender and mild, the green-grass flavor we're used to is absent. In its place there’s a fine floral aroma, subtle and mild, and it sports a texture as soft as squash. White asparagus’s season is diabolically short and it doesn’t travel well—two conditions that have historically conspired to keep it for locals only. There is a canning tradition though. One of the best sources we’ve found for tinned white asparagus is in Spain’s Navarre valley. Serve warmed with a simple butter sauce or at room temperature alongside cured ham. Italy's independent regions have their own wine styles, their own cuisine, and, to go with it, their own preference for how an olive oil should taste. In the south, on the ankle and heel of Italy's boot, the oils have a distinctive red-pepper zing. They lean toward the bolder side.

The olive oil with Zingerman’s label is created by Marina Colonna on her ancient estate in the Molise, a little over 100 miles due east of Rome. Made from hand picked Peranzana olives pressed the same day they’re taken from the tree, it's hugely flavorful. The latest vintage has pleasing aromas of green tomato and freshly cut grass. Pugliese oils get little credit on the international oil scene. But hidden in the shadows of the huge industrial producers are artisans like the Pellegrino family. I visited their farm a couple of years ago, and I keep coming back to their full-flavored extra virgin olive oil again and again. Roi Olive Oil from Liguria On the Italian Riviera, delicacy, not strength, brings an oil acclaim and honor. Roi is one of the best Ligurian oils I’ve tried. It’s been made in the mountain town of Badalucco by the Boeri family since 1900. Mellow yet rich in its unfiltered state, it’s delicately delicious, feathery light and perfect for pesto making. Podere di Pillore From the hills above Florence. Oil-maker Alberto Passigli gets the big picture and the details of olive-oil making right. The olive groves are on well-drained slopes and pruned vigorously by his foreman who’s been tending the trees for over five decades. Made entirely from Alberto’s own organic olives, the oil is stored in a series of traditional, antique terra cotta vessels, some over 100 years old. It’s hand bottled to order with labels printed at the venerable Florentine shop of Pineider, the source for Dickens’ stationery. The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. French Mountain Bread has a chestnut colored crust nearly a quarter inch thick, a dense wheaty crumb inside and a toasty, long lasting flavor. It’s totally terrific for toasting. Traditional Jewish rye bread is still an endangered American species. Graham Kirkham is the only person on this earth making truly traditional farmhouse Lancashire cheese, one we’ve carried for over two decades. Traditional Lancashire has a distinguishing feature, one that Graham is diligent about retaining. It’s made from three different days’ curd, not one. Graham selects among the three different days and mixes them by feel. He chops the curd, stuffs it by hand into a cloth-wrapped mold, presses them in one of his 19th Century hand presses, then butters the outside of the cloth before aging. The Lancashire that Neal’s Yard Dairy selects for us is classically “floofy.” That’s one of those terms that’s tough to understand until you eat a piece. It kind of describes the taste and texture in the same word. It’s remarkably appropriate. I find it hard to separate the flavor from the mouthfeel myself. It’s crumbly and creamy, mellow and tangy all at the same time, with hints of lemon and yogurt. When the flavor is really big, Graham calls that particular cheese a “Floofy monstah” (fluffy monster), which means it’s as soft as a pillow in your mouth, bursting with flavor. Usinger’s has been making sausages in the same building on Old World Third Street in Milwaukee since 1880, and they haven’t changed a single recipe since. Their smoked liverwurst (also known as braunschweiger) is exceptionally meaty and smooth.

Although Sicilians use the term “pesto” here, the ingredients have little to do with what we know as pesto, the basil-based sauce from the Italian Riviera. There, the Genovese use basil, olive oil, garlic, pine nuts and cheese. In Trapani, a small town south of Palermo in western Sicily, pesto means superb Sicilian almonds, local tomatoes, fresh basil, garlic and olive oil, no cheese. The basil definitely takes a back seat to the almonds and tomatoes, making it very different—and very good. Rustichella Pasta For much of my life pasta dishes were on my personal “meh” list. If they were loaded up with enough other tasty ingredients (and made Partner and pastry mastermind by someone else) I’d eat them without major kvetching. The Martelli family makes these pastas in the tiny Tuscan town of Lari, which is on the way to nowhere and out of the way from everywhere. The Martellis do everything right that most commercial pasta makers do wrong. They insist on using only the hardest durum wheat flou , extrude their pasta through traditional bronze dies, which makes the pasta grip the sauce, and take their time drying the pasta. Commercial producers dry their pasta in a hot blast furnace in a matter of minutes. With Martelli, it happens in a warm room over two days. Time is the key, since the slow dry makes the texture more chewy and the flavor more intense, the taste more like bread than raw wheat. Cook Martelli in heavily salted water till it’s al dente, just slightly firm. Piquillo pimientos are to peppers what Parmigiano-Reggiano is to cheese: the undisputed sovereign. However, buyer beware: there are many versions sold these days and almost all of them are packed with peppers roasted on gas grills, not wood fired grills. There’s a huge difference in flavor. In the same way that home barbecue tastes better when it’s done with wood, roasted piquillos improve when they get a dose of smoke. Gasroasted peppers are fine. Pomegranate sauce is a syrup-like reduction of pomegranate juice and sugar thathas a really unique, tartsweet flavor and is colored a gorgeous, deep reddish purple. It’s as thick as maple syrup with sweet and sour flavors that combine the bestof balsamic vinegar with lush fruit. Great as an ingredient in an array of Middle Eastern dishes, it’s the sort of addition to sauces and stews that adds enormous depth of flavor but no one can ever identify. Dottato ig Molasses

n fall the Rao Family receives daily deliveries of dottato figs from small family farms around Cosenza in Calabria, in Southern Italy. They cook down the fresh figs in copper kettles, reducing them to more than half their original volume, much like how American maple syrup makers work. Wild ine Cone & Bud Syrup

Eleanora Cuanacia harvests young cones and buds each spring from mugo pines among the Dolomites in northern Italy. She stores them in the sun till fall. They slowly expel syrup. In the fall she cooks the syrup down over a low fire with sugar till it's hazel brown and smells deeply of resinous pine. Into the bottle, off to us. Mugolio is like a rosemary maple syrup. Sorghum Molasses

The Yoders are an Amish family that plow their Kentucky farm with a team of mules and the family works the land without machine. The cane is cut and pressed to extract the juice, then it's boiled and evaporated in a process similar to the production of maple syrup. Sorghum molasses is sweet with exceptional depth. Notes of burnt sugar and caramel are there, and the flavor is very long lasting. It's a great topping on biscuits or bread. Across Southeast Asia they make Srikaya (coconut jam) or, as it's known, Kaya. In Malaysia, the name means “rich” But a more detailed translation might also include "smooth," "creamy" and "more please." This version is made closer to home, in San Francisco. Cristina Widjaja modeled her jam on her mother's recipe. She slow cooks coconut milk, egg yolks and sugar. Its flavor is surprisingly complex for something with so few ingredients. Rangpur limes are sometimes called smoky limes, and for good reason. When you open a jar a tart, brush-fire aroma hits you immediately.
