'Nduja Artisans ’Nduja

Eating 'nduja for the first time always counts as a significant experience. I pretty much guarantee you’ll remember it. First off, it's spreadable meat—very memorable in and of itself. A pork spread that’s spicy, slightly sweet, buttery, powerfully porky yet as smooth in texture as homemade strawberry jam. Chicago’s Antonio Fiasche is a fifth generation 'nduja maker whose grandfather still lives in Calabria, Italy, not far from 'nduja’s hometown Spilinga. Tony uses only pork from sustainably raised old-school Berkshire hogs, a proprietary blend of five different chiles, and ages his 'nduja for months. What to do with it? Spread it on toast or a burger, mix it into tomato sauce or scrambled eggs, eat it with crackers, cheese, and pickles, cut it with some ricotta and make a sauce. M-NAN 6 oz piece Was $20, NOW $12

cAlabria via chicaGo Spicy Calabrian Salami

In the southern Italian region of Calabria chiles are peppered (pun intended) into just about every dish from pastas and pizzas to fish and meat. Though this salami comes from Chicago, the flavor is direct from Antonio Fisache’s Calabrian family roots. Tony starts with heritage Berkshire-breed pork from pigs that live outdoors, roaming and rooting without ever being given antibiotics or hormones. He blends the pork with Calbrian chiles to make an inch-thick silky-smooth salami with serious—but never overwhelming—heat. The spicy side is tempered with a deep, smoky sweetness. pulLed POrk a la franÇaiSe Pork Rillettes

minor MIRacle Pork Liver Pate

SAVE $5!

Think of rillettes (ree-yets) as France’s version of pulled pork. This one comes from upstate New York, not Paris, but the style is all French. It’s made with heritage-breed, pasture raised hogs that get no antibiotics or hormones. The ham hocks and hams are smoked over applewood for about a day. The meat is shredded by hand and mixed with verjus (vinegar from unripe grapes), maple syrup, mustard, and spices. Finally it’s jarred in the traditional manner—under a protective layer of lard that naturally preserves it until you're ready to eat. And you will be. The flavor is rich but bright, and supremely porky. Serve rillettes in an appetizer spread with pickles and crackers, toss some on a pizza or into a pasta dish, or warm them up and spread 'em on crusty bread with cheese or jam. M-RIL 6 oz jar Was $15, NOW $10 SHIPS 2 BUSINESS DAYS

Even Heather Sanford, who makes this pate, acknowledges that it’s hard to make liver taste good. It takes a lot of work, a lot of care, and a very good recipe. But when she’s done, it’s not just good, it’s tremendous. Made with heritage-breed pork that Heather and her husband Brad raise and pasture at their farm in upstate New York, plus ingredients like local eggs, heavy cream, and a slew of savory spices like white pepper and nutmeg. It’s super silky smooth with a deep, earthy richness. Eat it on crostini or a slice of apple with something tart–a slather of real Dijon mustard (online) would be great—and pickles for the best five-minute Thursday night dinner you’ve had in months. parmesan's exception

Farmhouse Parmigiano-Reggiano

Not all the wheels that bear the world famous Parmigiano-Reggiano name are created equal. You can find cheese called Parmigano-Reggiano at the supermarket retailing or $12.99 a pound and the dusty, craggy flavor will be shadow of this. There are big differences from one to the next and they start with with the land. Our Parmigiano comes from a hillside dairy and the cows graze outside—something increasingly uncommon among the herds that are milked for this cheese since land is scarce and the cheese is in high demand. The rules behind Parmesan allow the animals to spend their whole lives indoors eating half their diet in imported feed. The animals do none of that. Further, the high altitude makes for plenty of diversity in the grasses, herbs and flowers growing in the cows’ pastures. This means that the milk—and therefore your cheese—has more complex flavors. We cut each piece to order so you know it hasn't been in the cold case for a week waiting for you. Get a big hunk (they last longer). You can really taste the difference. "Most assuredly not the other white meat." Ed Levine, Serious Eats the new american chops Heritage Meat Kit

Whenever I get to taste a food that is made traditionally, when beforehand I’ve only had its commercial counterpart, I’m stunned. Recently my mind has been blown by fresh meat. In particular, pork and beef we’re getting from heritage breed animals raised outdoors without hormones and antibiotics—the way every animal was raised in America a century ago. Less than 1% of our country’s meat has a pedigree like this. After tasting meat from many farms, I can tell you they all don’t taste great—sometimes you pay for the animal husbandry but don’t get the flavor. We've done that work for you (I know, tough job, right). What we have here is extremely tasty. Two thick porterhouse pork chops, a gigantic cowboy cut ribeye, and a pound of ground beef, shipped frozen for a night—or a week—of grilling you’ll never forget. Arkansas Peppered Ham A full jacket of peppercorns balances the pork’s natural sweetness in a way that’s pure genius. Spain’s Ibérico hogs are the heirloom of heirloom hogs, the standard against which all great pork is measured. They are the black footed pigs of Southern Spain, the ones who roam wide in the Dehesa, foraging, rooting, eating acorns by the bushelful. They make the most prized cured meats in the world. In fact 99% of the time you find their pork cured (below), not fresh ready to roast or grill. So lucky us. We've got a limited supply of tender shoulder that, when roasted to medium rare (they cook up just like pork loins, simply roasted for less than an hour), will make you swear you’re eating some crazy cross between a cow and a pig. It’s not. It’s all pig. And you’re in heaven. M-ISH about 1¼ lbs, boneless Was $100, NOW $75 FREE SHIPPING

"The most astonishing thing about it was the fact that the taste of meat was so directly present. I have slices of both Italian prosciutto and Columbus felino salami in the fridge, and I couldn't help but notice after trying the Bellota loin [below] how dominant the taste of the curing process was in these other two. It was like realizing the difference between genius and talent." John Thorne, Simple Cooking

As much as I love prosciutto from Italy and country ham from America it's Iberico ham I'd stop anything to eat. Both are sliced paper thin, set in a tray ready to eat. Six New Food Finds luxuriant

Salt Cod in Olive Oil

pâté of the sea Scallop Rillettes

I’ve never really tasted anything like this. I hadn’t even heard of the Ile de Groix, the island off the coast of Brittany where scallop rilletes are made, until this summer. Nor had I heard of scallop rilletes. As far as I knew rillettes, slow-cooked in fat like a pâté, were reserved for land animals. These are similar to pâté, but instead of using pork or duck to make a rich spread, scallops are employed to make a rillette that is light and smooth, with just a touch of sweetness and an undeniable flavor of the sea. The additions are parsle , shallots and a bit of butter and cream. Spread some on open faced sandwiches for lunch or a dinner side dish, perhaps with a few capers, lemon zest and a twist of black pepper. Outstanding fast food. Keep a couple jars in the cabinet for late night snacking or to satisfy impromptu guests. P-SRL 100 g jar $15

It seems a little odd that the seafood-loving residents of Spain and Portugal love salt cod so much. In fact, the closer to the water they live, the more salt cod they seem to eat. These people, who have access to the best fresh seafood in the world, on any given night you’ll find them cooking slabs of preserved salted fish. It stymied me until I married into a Portuguese family and started eating more salt cod. Then I realized that salted cured fish has about as much in common with fresh fish as cured ham does with a fresh pork chop. They're two completely different things. People who raise pigs like fresh pork and they like salted cured pork like ham. Why wouldn't the same be true for people who fish? The salt curing and cooking—which, here, happens as a slow confit in olive oil—creates a cod fillet that’s almost creamy. It may seem counterintuitive but salt cod is one of the most luxurious fishes you can eat. That's the main reason Iberians spend hours—and I mean hours—soaking and cooking it. The salt cod in this jar, on the other hand, takes all of two seconds to prepare. Turn the lid, turn out the fish, feast. P-COD 200 g jar $25 SHIPS FOR FLAT RATE

a novel take on balsamic Beer Balsamic Vinegar

Move over grapes, beer is here. Hungary has the latest, greatest take on balsamic vinegar and it’s a hopped up version made from beer. Krizsta and Reiner Pödör started making vinegars using traditional balsamic methods more than 50 years ago. After lots of trial and error, they came up with a balsamic they loved—and then, on a bet made in a pub, they took it a step further and experimented with adding an Austrian dark beer to the mix. The resulting beer balsamic is malty, earthy, bright and tart yet balanced with a deep sweetness. It’s well beyond gimmick and just plain delicoius. Great for drizzling on roasted meats or steaks, in vinaigrettes, on bruschetta, or sprinkled on bar food. V-BBL 100 ml bottle $25 SHIPS FOR FLAT RATE

beer heritage

Col. Pabst Worcestershire The (unsurprising) secret to this sauce is beer. Kate Quartaro took her great grandfather’s worcestershire recipe and crafted a sauce that stands heads and shoulders above the market leader, the W who shall not be named. She makes it in small batches, starting with Milwaukee’s own Lakefront Brewery beer (not her grandfather's namesake, sorry). She blends more than twenty different ingredients, from tamarind and curry to ginger and garlic, then brews it all together. Worcestershire sauce is one of those ingredients that, if you’re like me, you may throw into all sorts of dishes and never mention it. The Col. Pabst recipe is far less salty than that other one you’ve experienced, and is far more complex. It’s a little bit beery, sweet, spicy, tangy and magical. P-PWS 8 oz bottle $18 SHIPS FOR FLAT RATE

These plums from western Colorado are the product of lacto-fermentation. It’s the same process that produces saurkraut, kimchi, and pickles and it’s a technique that’s been around for nearly ten thousand years in recorded history. The folks at Ozuké use less salt than the traditional Japanese-style process and that lets the tangy and sweet flavors of the plum come through with each bite. But make no mistake, these plums are wild. Imagine biting a lemon, nibbling a plum, then taking a swig of salt water and you’ve almost got it. The first smell is a blast of fall, redolent of toasted pumpkin seeds and roasted nuts. Each bottle is made with the seeds of nearly ten squash, and the oil is intense and rich, which is why I think of it as the foie gras of oils. Just a drizzle over a salad—nothing else needed—and the dish is transported. It's also outstanding poured on soup, especially if it's made from squash. Try some with avocado, blue cheese and toasted walnuts too. O-BSS 6.3 oz bottle $20 SHIPS FOR FLAT RATE

cold preSsed in COLD mIchiGAN Black Walnut Oil

Christopher Milz grew up in Germany but now resides in northern Michigan. A chef by trade, he fell for making oils from the region's nuts, seeds and fruit. For this oil Christopher sources wild and farm grown black walnuts from Michigan, Indiana and Wisconsin and cold-presses them. Cold-pressing is key. Like with cold-pressed olive oil, can get more oil out of the nut and hence more profit by heating it up the process, but that burns off the nut's delicate flavors. Cold-pressing yields far less oil, but its flavor is amazing: sweet, dark and nutty. Use Chris's black walnut oil as a condiment to finish soups or in vinaigrettes for salads. Drizzle over warm pasta for an amazing flavor bomb. Like the pine nut oil (facing page) it's pressed to order for us and we only keep a small amount on hand so supplies are limited. delicate DolOmite Quince Vinegar

The Trentino-Alto Adige region of northeastern Italy is an incredibly diverse area, with cuisine rooted as much in Austria as in Italy. In fact it was part of the Austria-Hungary Empire until just the last century and today many of its residents speak German, not Italian. The food of the region, like its people, is heavily influenced by both countries, and this vinegar is a perfect example. Using fresh quince grown in their own orchards, the folks at Pojer E Sandri vineyard have created a bright, balanced vinegar that stands up to strong flavored dishes as well as more subtle and delicate cuisine. Fantastic with light fish or bold pork and outstanding in vinaigrettes. V-QUI 250 ml bottle $45 SHIPS FOR FLAT RATE

sun SplashEd vInegar

Sundried Wine Vinegar with Rosemary & Thyme I love sundried foods—more flavor! no electricity!—so I was pretty excited when I came across this vinegar from Messinia in southern Greece made from sundried grapes. The first grapes of the harvest are laid out in the sun for a couple weeks. Basking in the sun releases much (but not all) of the water, concentrates their flavor and increases their sweetness. The grapes are made into a very sweet wine, then converted into vinegar over the winter. During the aging, local rosemary and thyme are added— both of which, in Greece, are much more delicate than most of what I've tasted in America—and they infuse the vinegar with their soft, piney aromas. What you get is slightly sweet, herbaceous, and highly delicious. A marinade vinegar par excellence. V-RMY 250 ml bottle $18 SHIPS FOR FLAT RATE

Zingerman’s Buttercream Cakes

The pastry magicians at Zingerman’s Bakehouse love baking cakes above all else. Wedding cakes, birthday cakes, coffee cakes, everyday cakes—whenever there are cakes to bake you can bet they’ll be excited and what comes out of the oven will be incredibly tasty. The fondant cakes are the show-stoppers, with their intricate decorations (see our birthday cake, p. 38). Coffee cakes are our ever day best sellers (p. 34). But here in Ann Arbor, special occasions are marked most often by buttercream cakes. The showpiece on each cake is traditional buttercream frosting. Swiss style, it's made by whipping fresh eggs and sugar into a meringue, then mixing in real Wisconsin butter and Madagascar vanilla. Our cakes are also marked by what they don't contain: no artificial anything, no mixes, no shortening. These are the ingredients your grandmother would use when she baked. Each cake is six inches in diameter, four inches high, about 1 ¾ lbs and serves 6-8. Ships frozen. Defrost and serve at room temperature for maximum flavor and attractiveness.

Spanish line-caught tuna Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourthgeneration family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—never netted—cleaned at sea and quickly tinned in good olive oil. The olive oil is key. It adds flavor and makes the texture silky over time, unlike water, which tends to leach flavors from the fish. Spectacular stuff. Kosher.

they got it right Octopus from Ramon Peña

Octopus is a tricky fish to tin. We’ve never sold it and it’s not from lack of trying. I’ve probably tasted octopus from twenty different canneries. Those samples suffered a range of maladies: overly gelatinous, too cat-foody, or, they had what I refer to as “rubber hose phenomenon.” I came to Ramon Peña’s octopus with low expectations born from experience. What I tasted was a treat, a surprise that ranked at the top of my new food list when I discovered them last year. Peña’s round tin holds over a dozen slices of tentacle, suckers intact. Octopus is never a melt-in-your mouth food and these are appropriately meaty with a satisfying ticky tacky bite that never once veers to garden hose. They also possess a scent of the sea so clear it’s disarming. A tin serves four as an appetizer. And since one of those four people probably doesn't eat octopus there’s more for you. I understand that the name may put you off. Eels just don’t sound appetizing. I assure you they are, far more luxurious than you can imagine. This tin has four flakingly tender eel fillets, lightly smoked. Milder than mackerel or sardines, they have a texture that reminds me of salmon crossed with sea bass. Amazing stuff, with the kind of out-of-fashion packaging that belies the high quality of fish within. Eat them on their own, forked out of the tin. Or top a green salad with a couple fillets, capers, Marash red pepper and lemon zest. An unparalleled late night snack. P-EEL 105 g tin $18 SHIPS FOR FLAT RATE

Superior sardines Portuguese Ramon Classic Sardines Peña Little Tuna is our topSardines

selling tinned seafood, but sardines aren't too far behind. It's surprising to me since sardines are not a big part of the popular food scene in America. One thing to know is there are actually dozens of different fish sold as sardines in the U.S. Most are either brislings from Norway or herring from the North Atlantic. While they aren't bad, they don't come close to the flavor of true pilchards like these. And unlike Norwegian sardines, these are never smoked, so the full flavor of the fish comes through. Four or five tender, perfect sardines, come nested in a tin of olive oil. We offer standard (illustrated) or extra virgin olive oil, which has the effect of making the flavor more buttery, less metallic; in a way it's less fishy. To some folks who are used to a briny, edgy flavor they will come off as softer, rounder. P-SAR 125 g classic (illustrated) $7 4 or more $5.50 each P-SEV 110 g extra virgin $9 4 or more $7.50 each

The Portugese call these “sardinhas”—little sardines. They’re about half the size of a typical tinned sardine. While the fish’s dimensions are reduced the flavor is not. They’re every bit as rich and even more silky textured. Ramon Peña hand packs their tins with flair, the fish so artfully laid out you’ll feel totally comfortable bringing a just-opened tin to the table to snack from directly. Razor clams, named for the way their shell resembles a straight razor—are the red headed stepchild of the clam world. Littlenecks, manilas and cockles get all the attention. Razor clams languish, rarely seen on restaurant menus or at the fish monger’s. Lucky for us Ramon Peña specializes in overlooked sea creatures, especially ones that are tasty. And razor clams are indeed tasty. Their shape makes their texture a bit different than a regular clam, more like octopus or squid. The flavor is deep and briny. Tinned simply in olive oil these are a great gift for a curious seafood seeker. P-RCL 138 g tin $39

One Family's Vinegar

why we carry the vinegar of one balsamic maker While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic: La Vecchia Dispensa. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel—both of which contribute to more intense flavors. Although aged for only 25 percent longer than the 8 year balsamic, the intensity of flavor is almost double. As you move up the age range—to 16 year and 30 year—the liquor thickens, the sweetness enhances, the caramelization takes you on a wild ride of flavor.

undergrOund hit Spanish White Asparagus

Europeans go gaga for asparagus that’s snow white and thick as a thumb. In season, there are restaurants in Spain that devote whole menus to it. It’s tender and mild, the green-grass flavor we're used to is absent. In its place there’s a fine floral aroma, subtle and mild, and it sports a texture as soft as squash. White asparagus’s season is diabolically short and it doesn’t travel well—two conditions that have historically conspired to keep it for locals only. There is a canning tradition though. One of the best sources we’ve found for tinned white asparagus is in Spain’s Navarre valley. Serve warmed with a simple butter sauce or at room temperature alongside cured ham. Italy's independent regions have their own wine styles, their own cuisine, and, to go with it, their own preference for how an olive oil should taste. In the south, on the ankle and heel of Italy's boot, the oils have a distinctive red-pepper zing. They lean toward the bolder side.

Peranzana from Molise

La Spineta from Puglia

The olive oil with Zingerman’s label is created by Marina Colonna on her ancient estate in the Molise, a little over 100 miles due east of Rome. Made from hand picked Peranzana olives pressed the same day they’re taken from the tree, it's hugely flavorful. The latest vintage has pleasing aromas of green tomato and freshly cut grass. The flavor has notes of artichoke and black olive. It finishes with mild green-olive bitterness and a bit of a peppery tickle. O-ZIN 500 ml $29

Pugliese oils get little credit on the international oil scene. But hidden in the shadows of the huge industrial producers are artisans like the Pellegrino family. I visited their farm a couple of years ago, and I keep coming back to their full-flavored extra virgin olive oil again and again. It’s especially good in spicy pasta dishes or any place you want a really robust olive flavor. The more I use this oil, the more I like it. O-SPI 500 ml bottle $25 SHIPS FOR FLAT RATE

In Northern Italy, near the sea, lighter oils are preferred. The olives are picked late, when they are black and sweet.

Roi Olive Oil from Liguria On the Italian Riviera, delicacy, not strength, brings an oil acclaim and honor. Roi is one of the best Ligurian oils I’ve tried. It’s been made in the mountain town of Badalucco by the Boeri family since 1900. Mellow yet rich in its unfiltered state, it’s delicately delicious, feathery light and perfect for pesto making. Its subtle, lingering flavors leave you smiling long after you’ve tasted it. I use it for dressing fresh fish or a delicate salad. O-ROI-500 500 ml $25 O-ROI 1 liter $40

In Central Italy, Tuscan oils are often bold and grassy. Podere di Pillore is softer this year, though, with just a whisper of pepper.

Podere di Pillore From the hills above Florence. Oil-maker Alberto Passigli gets the big picture and the details of olive-oil making right. The olive groves are on well-drained slopes and pruned vigorously by his foreman who’s been tending the trees for over five decades. Made entirely from Alberto’s own organic olives, the oil is stored in a series of traditional, antique terra cotta vessels, some over 100 years old. It’s hand bottled to order with labels printed at the venerable Florentine shop of Pineider, the source for Dickens’ stationery. It’s one of the only oils in Tuscany that was bottled in 2014 after a disastrous harvest. O-POD 500 ml $45 SHIPS FOR FLAT RATE

roadhouse bread french mouNtain

The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. Excellent with cream cheese and smoked salmon. B-ROA 1½ lb handmade loaf $9 SHIPS 2 BUSINESS DAY

NAturaL sour staRters!

I’d have a tough time picking between this and Farm Bread for top spot on my European-style favorites list. French Mountain Bread has a chestnut colored crust nearly a quarter inch thick, a dense wheaty crumb inside and a toasty, long lasting flavor. It’s totally terrific for toasting. We offer it in two sizes, a ¾ kilo loaf (about 1.65 lbs) that’s good for munching and a 2 kilo (about 4½ lbs, illustrated) work of art. I love the 2K loaf. A good foot and a half across and four or five inches high, it’s decorated with a hand-cut “Z.” The size is significant because bigger loaves almost always taste better. Our most popular bread. Spreading out like the cap of a wild mushroom, its thin, snow white crust surrounds a soft, savory crumb filled with lots of holes (we work hard to put the holes in). This is the traditional bread of Puglia—the heel of Italy’s boot—and the best one to eat alongside a pasta dinner. Also recommended for ripping and dipping in olive oil. Heat it up and the crust gets crispy crackly fantastic. B-PAE 1½ lb handmade loaf $9 SHIPS 2 BUSINESS DAY

cinNamon raisin

A cinnamon raisin bread with substance. A chewy, solid loaf where the flavor of the dough supports the freelancing of the Red Flame raisins and the racy scent of Indonesian cinnamon. Sweetened and moistened with a hint of clover honey. Makes sensational Sunday morning toast. B-CIN 1½ lb handmade loaf $10 SHIPS 2 BUSINESS DAY

"Zingerman's Bakehouse makes a chocolate cherry bread that can be used as the base of the best French toast you've ever had in your life." Ed Levine, Serious Eats

pecan raisin

This bread has been like a chain reaction—someone serves it for brunch, and the next week their guests are calling us and buying it for themselves. Calling it dense is an understatement: a half pound of big, juicy Red Flame raisins and toasted pecans are baked into every loaf. The New York Times says our Pecan Raisin Bread "redefines the category." B-PEC 1¼ lb handmade loaf $16 SHIPS 2 BUSINESS DAY

chOcolate CHerRy choCOlate sOurdough Craquelin

A chocolate lover's fantasy come true— the best Belgian and French chocolate and dozens of dried Michigan cherries. After a few minutes in the oven the chocolate chunks melt a bit and the aroma of cocoa fills the air. Spread it with a bit of sweet butter or set a scoop of vanilla ice cream on top of a warm slice. You'll be sitting in front of the most decadent dessert you've had in years. B-CHO 1¼ lb handmade loaf $18

It’s simple: our sourdough bread stuffed with chunks of dark Belgian chocolate. Like most of the school children I know, I like to rip off a hunk and eat it as soon as I open the bag, but it's best when you pop it in the oven for about fifteen to twenty minutes. Your rooms will fill with sensuous smells—warm chocolate, good bread. Eat it as is. Or spread a layer of fresh ricotta or cream cheese on top. This is one loaf that's very hard to keep around the house. B-XSB 1 lb handmade loaf $10

The national bread of Belgium. It’s a buttery brioche rolled up with fresh orange zest and sugar cubes soaked in Grand Marnier®. The additions form a sweet swirl inside each slice like a cinnamon roll and their dark orange flavors seep into the surrounding dough. Some of our crew call it “coffeecake bread” which gets to the spirit of the loaf, though its texture is much lighter. B-QUE 1½ lb loaf $25

pePpered bacon farm

parmesan pepPEr heretic's loaf

We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and Tellicherry black pepper. Every bite has a bit of sourdough tang and a lot of the sweet, smoky meatiness of bacon, plus a little spice. I’m sure it makes great sandwiches, but I’ve never had a loaf around long enough to try. B-BAC ¾ lb handmade loaf $14 SHIPS 2 BUSINESS DAY

new mexico green chile & cheDdar

My Italian friends would probably think this bread is heresy, but that’s their loss. It’s a natural for me because I love bread, parmesan and good black pepper. There’s a quarter pound of parmesan in every loaf, along with a load of cracked black peppercorns. Leaves your mouth pleasantly aroused from the heat of the pepper and salivating from the savory sweetness of the parmesan. It’s fantastic when toasted. B-PEP 1¼ lb handmade loaf $16

I love this bread: savory, lusty, delicious and dangerously close to addictive. Softly spicy, fire-roasted New Mexico green chiles and raw milk Nor'easter Cabot cheddar blended into the Bakehouse’s tangy Farm Bread. Great on its own or as an accompaniment to dinner. It’s especially good if you give it about twenty minutes in a 325 degree oven before you break it open so it’s nice and steamy when you crack the crust. B-CHI 1¼ lb handmade loaf $15

Traditional Jewish rye bread is still an endangered American species. Twenty-two years after we started baking them in Ann Arbor you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. They’re the breads I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

Very traditional, very dense and chewy German bread with a very loyal following in Ann Arbor and around America. Made from rye meal, rye flour, sunflower seeds, sea salt, yeast and rye sour, the Vollkornbrot is chewy, malty and really delicious. Wheat free. B-VOL 2 lb loaf $7.50

cofFeECake Club

Our coffeecakes aren’t built on any secrets. They’re also not built from too much sugar, shortening or other shortcuts that mar the flavor of many “gourmet” pastries that look nice but taste bland. These are the product of great ingredients, solid recipes and a lot of tender care. They’re our most popular gift.

With this club you can send our top-selling coffeecakes over and over, month after month. They’ll have the opportunity to try each flavor, one per month. Just as they start to miss the one they finished off a couple weeks ago, a new one will show up. Your delicious gift will arrive in our printed gift box for up to six months, making your succulent sentiments hard to forget. A subscription makes a great professional present. Each cake is nosher-sized, serves 5-7, and lasts for many days, even after they've taken the first bite.

Either way, it will be something that will be like electricity to a curious cook or food lover. We’ll include information on who made it and how to use it. The value of each installment may be more or less than the average, but we promise that over the course of every three months you’ll more than get your money’s—and tastebud’s—worth.

Catalog design rules say you should put your best-sellers up front, on the first few pages. And here they are, buried deep inside. That won't stop them. Our coffeecakes have such a magnetic attraction I sometimes think I could write about them with invisible ink and they'd still be our top sellers. Edible nostalgia rolL redemption Banana Bread & Chocolate Chunk Banana Bread

Cinn-ful Cinnamon Roll Gift Box

The diabolical pastry enablers at Zingerman’s Bakehouse have focused their dark magic on classic banana bread. Like our hugely popular sourcream coffeecake and magic brownies, banana bread instantly conjures up nostalgia for home baking. The thing is, this loaf tastes better than what mom used to make (no offense intended moms, it’s just hard to beat our Bakehouse). There are no nuts in these loaves, just the classic charms: flour, cane sugar, real butter and fresh eggs, a touch of Madagascar vanilla and two freshly peeled bananas per loaf. Chocolate chunk banana bread is the same story, with the addition of huge chunks of chocolate. Wrapped in tissue, each loaf comes packed in its own colorfully illustrated box. Serves 5-7. G-BNA classic banana bread, gift boxed $20 G-BNC chocolate chunk, gift boxed $20

Almost anyone can make a cinnamon roll smell good while it’s baking, even among the cell phone kiosks at the mall. Unfortunately, most have little more than aroma to offer. You won’t taste much beyond sugar and cinnamon. The real challenge is to fashion a cinnamon roll that tastes as good as it smells. These fit the bill. Warm them up, break one open and put your nose up close. You’ll smell sweet butter, Indonesian cinnamon, real vanilla. But the real treat is next. Take one bite. That’s all you’ll need to forget the litany of cinnamon roll disappointments life has dealt you. With serving instructions. Nuts and Marcona Almonds About ten times more flavorful than the California almonds we’re used to. These are the nuts you'll find in tapas bars across Spain, served at the start of meals, the end of meals or during a bout of afternoon sherry sipping. P-MLM 4 oz bag $9 P-MLM-8 case of 8 $60

Nut Spreads Jeff Koeze's Cream-Nut from Michigan Made in Grand Rapids to a hundred year old recipe. Jeff sources incredible Virginia peanuts, brings them up north in one ton sacks, then blanches them to remove the skins and keep them from going rancid (a common flaw in a lot of natural peanut butters). He roasts them in vintage coffee roasters, grinds them smooth, then adds a bit of salt±—no sugar. The result is not an air whipped, sweet concoction but a natural, intense, velvety, mouthwatering sensation. P-BUT 17 oz jar smooth $9.50 P-CRU 16½ oz jar crunchy $9.50 SHIPS FOR FLAT RATE

Pic’s from New Zealand Pic takes peanuts from Australia’s South Burnett region, roasts them in small batches, adds a pinch of salt and calls it good. We call it really, really good. Pic’s smooth variety isn’t the whipped supermarket stuff, but it s a tad smoother than most specialty butters we’ve tried. Give the whole jar a stir to mix back in the peanut oil that can separate. Spread on a bagel and feel the high oleic, high protein, cholesterol-free power of New Zealand peanut butter! P-PPB 13.4 oz jar $15 2 or more jars $12 each

Peanut butter—been there, done that? How about walnut? It's got it all: a fluffy, light texture complemented by a toasty warm flavo . On top of ice cream it’s almost like chopped nuts and Fluffernutter® in one. (I mean that as a compliment, all you Fluffernutter® haters) P-WBB 8½ oz jar $25 SHIPS FOR FLAT RATE

Pistacchiosa Cream I've tasted a dozen pistachio spreads over the last decade and this one is my favorite. From Antonio della Corte and Anna Marie Conti in Rieti, smack dab in the center of Italy. Using famed Sicilian pistachios and excellent olive oil, you’ll see why I was impressed the minute you open the jar. All you smell is sweet, nutty pistachios. Then wait till you taste it. Luscious and and lingering, this spread is great straight from the jar but don't eat it all. If you’re a baker mix it with pastry cream or whipped cream for a luscious cream puff filling. Spoon it over cheesecake, or lay some on top of a fresh goat cheese for a tongue-stopping appetizer. P-PSP 250 g jar $28

Hazelnut & Chocolate With a texture somewhere between mousse and fudge it's like the adult's version of Nutella. A devastating spread for toast. P-IHZ 320 g jar $25 SHIPS FOR FLAT RATE

Obscure Classics There are some foods we’ve been carrying for a decade or two—or three—that are perennial hits. There are other foods that take a road much less traveled. They have been with us for a long time and retain a loyal following, but chances are you may have never heard of them. I don’t want to say they’re cult foods. I reserve that word for foods that inspire a lot of passion but aren’t for everyone. I'll save those for another catalog. These are not that kind of food. These anyone can like. These anyone WILL like. They just need a shot. Give one a try. You won’t be disappointed.

the national spicy spread of tunisia Harissa

Harissa is a spread of dried chiles, garlic, tomatoes, caraway and coriander and extra-virgin olive oil. It's more or less the national condiment of Tunisia and, tucked away in our customer's refrigerator's across America, has become an increasingly common ingredient here, too. You can get busy in the kitchen mixing harissa with eggs, with potatoes, with couscous or whipped into a fresh vinaigrette for salads. Goes great on grilled meats too. Or use it as a condiment instead of an ingredient and spread a thin layer on your next sandwich or hamburger. Mix some into a vegetable dip to add depth. It's versatile, it lasts and lasts in the fridge, it's a classic. P-MMH 185 g jar $16 SHIPS FOR FLAT RATE

oNe oF england's OrigInal cheEses Kirkham’s Lancashire

Graham Kirkham is the only person on this earth making truly traditional farmhouse Lancashire cheese, one we’ve carried for over two decades. Traditional Lancashire has a distinguishing feature, one that Graham is diligent about retaining. It’s made from three different days’ curd, not one. Graham selects among the three different days and mixes them by feel. He chops the curd, stuffs it by hand into a cloth-wrapped mold, presses them in one of his 19th Century hand presses, then butters the outside of the cloth before aging. The Lancashire that Neal’s Yard Dairy selects for us is classically “floofy.” That’s one of those terms that’s tough to understand until you eat a piece. It kind of describes the taste and texture in the same word. It’s remarkably appropriate. I find it hard to separate the flavor from the mouthfeel myself. It’s crumbly and creamy, mellow and tangy all at the same time, with hints of lemon and yogurt. When the flavor is really big, Graham calls that particular cheese a “Floofy monstah” (fluffy monster), which means it’s as soft as a pillow in your mouth, bursting with flavor. westErn sIciLy’s SEcret sauCe

Usinger’s has been making sausages in the same building on Old World Third Street in Milwaukee since 1880, and they haven’t changed a single recipe since. Their smoked liverwurst (also known as braunschweiger) is exceptionally meaty and smooth.

Although Sicilians use the term “pesto” here, the ingredients have little to do with what we know as pesto, the basil-based sauce from the Italian Riviera. There, the Genovese use basil, olive oil, garlic, pine nuts and cheese. In Trapani, a small town south of Palermo in western Sicily, pesto means superb Sicilian almonds, local tomatoes, fresh basil, garlic and olive oil, no cheese. The basil definitely takes a back seat to the almonds and tomatoes, making it very different—and very good. A unique spread that’s easy to use for everything from pasta to seafood—a staple in Trapani—to bean soups. P-PTR 180 g jar $13

Toasted Pecan & Cranberry Walnut Pies Our two most popular pies are baked at Zingerman’s in a flaky all-butter crust and feature loads of toasted nuts and natural brown sugar. Toasted Pecan has so many pecans—whose flavor really comes forward when toasted—that there’s barely enough room to fit them in, let alone any of the caramelly brown-sugar custard. Cranberry Walnut has brown sugar custard, made with real butter, vanilla and Mauritian brown sugar, mixed with a generous amount of toasted walnuts and tawny cranberries inside an all-butter crust. Onion Rye Bread

8 Grain 3 Seed Bread

Onion Rye caught my eye while I was still in high school and new to the ways of gastronomy. Its poppy seed studs were so rebellious... so punk. And that faux-hawk of caramelized onions on top of the loaf...out in the open. So dangerous. Thrilling. Like it was staring me down, daring me to ask it to dinner; James Dean, Johnny Depp, and Daft Punk looked conformist next to this scoundrel. I was excited and worried, simultaneously. What if my family hated all that onion? But then, something happened. Onion Rye’s table manners were impeccable. Every course went flawlessl . My family loved Onion Rye when I brought it to dinner. We dunked, dipped, smothered, slathered, nibbled, gnawed, and sopped the night away. Onion Rye was perfect. It was daring enough to make every day exciting, but refined enough for the most formal dinner part . It’s been a long, long time since Onion Rye and I first met, but w ’re happier than we’ve ever been. B-ONI 1½ lb loaf $9

I love our 8 Grain 3 Seed Bread…Why? Although there are so many grains and seeds, it still seems like a sinful treat because the honey sweetens it. When I eat it, I feel like I've made a healthy choice. The crust is hearty, the interior is still pretty soft and chewy especially when you pop it in the toaster. My favorite way to enjoy it is toasted and topped with a little cream cheese and a some Early Glow Strawberry Preserves. I also like to top with Koeze peanut butter. Sometimes I go wild and melt cheese on top! B-8GR 1¼ lb loaf $10 SHIPS 2 BUSINESS DAY

Paesano Bread If I had only one word to describe Paesano Bread, it'd be “utilitarian.” Yes, that's not a very sexy depiction, but Paesano's strongest quality is that it's a multi-functional, pragmatic workhorse of a bread. The interior is thoroughly permeated with air-pockets. It's those pockets that make Paesano so versatile. They allow the bread to become infused with the flavors of whatever you serve it with. It's perfect for sopping up leftover spaghetti sauce, for dunking in soup, or as a companion to cheeses or salami. It's sturdy enough to hold a sandwich together, but with a flavor subtle enough to not overwhelm your favorite sandwich makings. My sister slices off the top of the loaf, hollows out the inside, fills it with meats, oils, and roasted vegetables, puts the top back on, and slices the loaf to serve at parties. It's always a hit. Plus, Paesano is wonderful to eat just by itself—all the better to appreciate its soft, chewy texture. B-PAE 1½ lb loaf $9 SHIPS 2 BUSINESS DAY

Rustichella Pasta For much of my life pasta dishes were on my personal “meh” list. If they were loaded up with enough other tasty ingredients (and made Partner and pastry mastermind by someone else) I’d eat them without major kvetching. But they were at Zingerman’s Bakehouse never on my top 10 list of dishes to cook myself and I reluctantly ordered them in restaurants. Rustichella pasta made me a believer. I’m not sure what inspired me to even consider them. I admit that I was pretty skeptical and was so down on pasta that all I usually heard when people explained why they were better was blah, blah, blah. I didn’t need another tasteless carbohydrate in my life. Wow, are they better than most! This pasta is truly like a diffe ent food. It has flavo , really good flavo , and I love the chewy texture. For me they transform the simplest of pasta dishes into full flavored cravable” foods and add an entire new level of flavor and textures for the more complicated ones. Coop's Salted Caramel Sauce

Kifli Hungarian Cookies

A friend of mine said it best after her first taste of Coop's Salted Caramel Sauce: "Oh my god...this is what I always wanted salted caramel to be, but it never was...but now it is!" I shared my jar with her, and we ran out of clean spoons. It worked out okay, you can always substitute a butter knife for a spoon. Just to gild the lily, we even drizzled a little on top of some dulce de leche gelato. At the end of the evening, when I asked my friend if she'd like to take a jar home with her, she resisted for all of about two seconds before snatching it up. I bet there aren't any clean spoons at her house now, either. P-CSC 10.6 oz jar $16

I always saw these boxes marked "kifli" sitting in our Mail Order warehouse. I couldn't see inside the box, so I always wondered “what is this?” Then one day I was at a staff event and they were sitting on the table as a snack: little crescent moon desserts that were sent down from the stars. I couldn't believe how buttery and almondy they were, exactly in balance. And then with a dusting of powdered sugar goodness on top—it just works. All I could think of the whole meeting was crumbling them over ice cream. Soon after that I led a tasting of them with our crew here at Mail Order and now we have a whole new group of kifli converts. Macroom Irish Oatmeal

Eating this for the first time is like taking your first promenade in Paris, France, when all you’ve known is Paris, Texas: you realize just how good oatmeal can be. The Walton family has been milling oats in Ireland since the 1700s, and they still use old stone wheels, which I think leave the oats better tasting than steel-cut. The result is a coarse meal that has its natural oils still intact, making the meal darker than other oatmeal. Facts aside, the most important thing is the way it tastes, extremely good. the tuscan pasta standard Martelli Pasta

The Martelli family makes these pastas in the tiny Tuscan town of Lari, which is on the way to nowhere and out of the way from everywhere. The Martellis do everything right that most commercial pasta makers do wrong. They insist on using only the hardest durum wheat flou , extrude their pasta through traditional bronze dies, which makes the pasta grip the sauce, and take their time drying the pasta. Commercial producers dry their pasta in a hot blast furnace in a matter of minutes. With Martelli, it happens in a warm room over two days. Time is the key, since the slow dry makes the texture more chewy and the flavor more intense, the taste more like bread than raw wheat. Cook Martelli in heavily salted water till it’s al dente, just slightly firm. If it s your first time trying it keep the recipe simple: return it to the pot, and add just a bit of good olive oil or butter, some grated Parmigiano-Reggiano and freshly ground Tellicherry Pepper. woOd fire rOAsted makes a huge difference Wood Fire Roasted Piquillo Peppers

Piquillo pimientos are to peppers what Parmigiano-Reggiano is to cheese: the undisputed sovereign. However, buyer beware: there are many versions sold these days and almost all of them are packed with peppers roasted on gas grills, not wood fired grills. There’s a huge difference in flavor. In the same way that home barbecue tastes better when it’s done with wood, roasted piquillos improve when they get a dose of smoke. Gasroasted peppers are fine. But wood-roasted peppers are magnificent, the beech wood smoke imparts umami richness and amplifies the flavor. Wood-fire roasted piquillo pimientos are always more expensive since wood roasting is a finicky process, but the return on flavor you get with your extra dollar is extraordinary. Lay a rose-red piquillo on a white plate in a pool of Peranzana olive oil (p. 25) , and you’ll have an hors d’oeuvre as luscious to look at as it is to eat. P-FRP 8.1 oz jar $18 SHIPS FOR FLAT RATE

Sorghum Molasses

The Yoders are an Amish family that plow their Kentucky farm with a team of mules and the family works the land without machine. The cane is cut and pressed to extract the juice, then it's boiled and evaporated in a process similar to the production of maple syrup. Sorghum molasses is sweet with exceptional depth. Three Rare Jams

Coconut Jam

Across Southeast Asia they make Srikaya (coconut jam) or, as it's known, Kaya. In Malaysia, the name means “rich” But a more detailed translation might also include "smooth," "creamy" and "more please." This version is made closer to home, in San Francisco. Cristina Widjaja modeled her jam on her mother's recipe. She slow cooks coconut milk, egg yolks and sugar. Its flavor is surprisingly complex for something with so few ingredients. It is deep and sweet like coconut custard, with a texture like lemon curd, which can give you some idea of the ways you could employ it in the kitchen. P-CJM 8 oz jar $17 SHIPS FOR FLAT RATE

Rangpur Lime Syrup

This syrup pours easily—like honey—and doesn’t leave sugar crystals as it dissolves in iced or hot drinks, making it excellent for cocktails. It’s become a stealth ingredient in my mojitos and margaritas. A Rangpur lime syrup gin and tonic, anyone? Add it to yogurt. Drizzle over grilled fish. Drop a splash in a vinaigrette. Rangpur Lime Marmalade

Rangpur limes are sometimes called smoky limes, and for good reason. When you open a jar a tart, brush-fire aroma hits you immediately. The flavor of the marmalade is not too sweet, not too bitter, very fresh and tangy. Robert Lambert, the citrus master who makes it, cuts the fruit peel fine so it has a smooth texture. It makes a standout after-dinner treat when you pour a some over a wedge of gooey cheese, like brie. Lately I’m really loving it in savory dishes, too. Try mixing it with soy sauce and dijon mustard into a marinade for pork or chicken. I say all this knowing 99% of you will put it on toast in the morning, which I wholeheartedly support too. Easter's Unusual Eggs magic hazelnut eggs Chocolate and Hazelnut Stuffed Easter Eggs

A magic trick moonlighting as an Easter sweet. It started its life as a perfectly proper egg. Then the insides were removed, deployed for dinner, the shell rinsed. Next it was filled with two ounces of enchi’s supremely luxurious hazelnut and chocolate gianduja, the most popular sweet of Italy’s Piedmont. The shell was decorated and remains perfectly intact. It cracks and peels just like a hard boiled egg, albeit an egg laid from a chocolate chicken. Dispense them into Easter baskets if you must, but make sure to hoard a couple for the Easter Bunny. the baconest eggs Bacon Chocolate Easter Eggs

My five year old daughter asked me where bacon chocolate eggs came from. I confessed I didn’t know, but I bet it’s the most delicious animal that ever lived. In truth, these chocolate-y, bacon-y eggs come from Vosges Haut-Chocolat in Chicago. Pieces of hickory smoked bacon are folded into soft, buttery caramel then covered in dark chocolate and formed into half an egg. The salty-sweet combination is for more mature tastes (at least that’s what I told my daughter) so I'll give you full leave to snatch them all and hoard them for yourself. veruca's gOlden eGg Golden Chocolate Egg

Roald Dahl's Veruca Salt was a spoiled brat who wanted lots of things, in particular golden eggs. She could have saved everyone a lot of trouble if her dad had known about these. Then again. From the aptly named Veruca Chocolates in Chicago comes this spectacular chocolate egg filled with salted caramel, chocolate-peanut ganache and a crunchy salted pretzel center. The egg is hand dipped in edible gold luster dust making it desirable to any Veruca Salts you might have lurking in your family. P-GLD 4 oz egg, golden chocolate $15 SHIPS FOR FLAT RATE

bunny flop Easter Fondant Cake

Fondant frosting makes a gorgeous cake. It shapes like potter’s clay and holds color like a fresco. All those tilting, day-glo cakes you see that are so alluring—all fondant. Unfortunately, most of the cake’s engineering stops at decoration. The meat of the cake, so to speak, is bland and pointless. Our popular carrot cake—loads of carrots, toasted walnuts and more—has a handmade vanilla fondant frosting that really tastes good. It's decked out with a clumsy bunny. Easter Ham Berkshire Hickory Smoked Ham

Berkshires are an old breed of pig that was raised for full flavo , long before pork was marketed as the other white meat. They were the workhorse pig of most farmers, producting marbled, flavorful meat. They were almost entirely replaced by the bland Standard White breed. A few farmers are raising them again and we’ve got our hands on some succulent Berkshire Easter hams. Maple sugar cured, smoked over hickory, they have a rich flavor that comes from the meat, not just salt, sugar and smoke. Your guests will notice how good it tastes. Prepare to serve seconds. Raised in the Midwest under the direction of Heritage Foods, the pigs are not confined, have access to the outdoors to root and roam, and never receive antibiotics. Shipped frozen. May arrive still frozen and need a day to defrost. M-BHC 4-5 lbs, boneless, serves 10 $65 SHIPS FOR FLAT RATE
