Balsamic Buyer’s Guide

Imagine you’re making a broth from scratch. When you start, it’s thinner and lighter in flavor. As it simmers, the liquid gets progressively thicker and the flavors get more and more intense. The same thing happens as balsamics age, only it takes years instead of hours. In general, a younger balsamic will have a consistency similar to wine and a bright, acidic flavor. As balsamics age for years at ambient temperatures in wooden barrels, each summer’s heat evaporates a bit of the liquid, giving the vinegar a thicker, more syrupy consistency and a sweeter, more complex flavor. Try a sip from a couple of different bottles and you’ll taste the difference right away. One age isn’t “better” than another—instead, different ages of balsamics are ideal for different uses in the kitchen.

two ways to try the full range from La Vecchia Dispensa Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with those from the Tintoris. tradizionali balsamics from acetaia del cristo Balsamic vinegar has been made in attics all around Modena, Italy, for centuries. Balsamic barrels were (and still are!) made to celebrate the birth of a daughter, and later used as her dowry. Such a precious resource was eaten only rarely, and then only on the richest of foods: sizzling roast meats or sumptuous stuffed pastas. Today, though, practically all balsamic on the shelf bears only a fleeting resemblance to these treasured family heirlooms. Our balsamics from Acetaia del Cristo in San Prospero, just north of Modena, Italy, are the traditional product, aged for decades, judged in a blind tasting to make sure they meet the local standards of excellence. Only a tiny amount is released each year, so our quantities are very limited.

The Regal Rarities Tradizionali Balsamics from Acetaia del Cristo These are the vinegars about which legends have been woven. Tested by a panel of judges, the qualifiers in Modena are graded gold and white. During the decades-long aging process, the vinegar is shifted from barrels of one type of wood to the next. Cherry, chestnut, oak and mulberry all leave their imprint on the flavor of the vinegar.

The result is an almost unbelievable concentration of sweet-sour flavor in a dense, intense, brown-black vinegar that hints of berries, grapes, vanilla. There is nothing like it in the world. An amazing treat you'll always remember. All traditional balsamics from Modena are bottled in Ferrari designer Giorgio Guigiaro's streamlined, sexy bottle, then gift boxed. One of my absolute favorite winter meals is chicken simmered all afternoon in the slow cooker with a jar of this Panang curry sauce, served over rice. Seasoned with lemongrass, shallot, Thai basil, garlic, ginger, chile, and a pinch of sugar, the sauce is a little spicy, a little sweet, a little tangy, and a lot delicious. It’s also great for simmering veggies, tofu, meat, or just about anything else for 20 minutes on the stovetop for the quickest, most flavorful meal in town.

Mancini Farmstead Pasta from Italy In the Marche region of central Italy, the Mancini family grow the durum wheat, mill it into flour, mix it with a bit of water to make the dough, extrude the dough through bronze dies (giving the pasta a rough texture that can grab sauces), then dry it for nearly a day. The finished pasta is nutty and toothsome. The unique short and wide tubular shape called Mezze Maniche is great for creamy sauces and pasta salads.

Blonde Japonica Farmstead Rice from California This rice is grown, milled, and packaged all on the same family-run farm in northern California. Japonica Rice is a medium grain rice originally from Japan. Chico Rice uses the haiga-mai style for their blonde rice, semi-polishing it by removing only part of the bran layer. In keeping more of the grain than regular white rice, it has a great balance between the creamy texture of white rice and the flavors and nutrients of brown rice. It’s a little nutty, a little sweet, a little earthy, and creamy with a long-lasting flavor. Mandala is the work of cheesemaker Vanessa Alcoléa, who crafts this raw milk farmstead cheese on Bela Vista Fazenda — Good View Farm — a little over a hundred miles from São Paolo.

Llagar de Oles Farmstead Cider Vinegar from Spain In Asturias in Northern Spain, the Martínez Sopeña brothers grow all their own apples and ferment them into cider using only the wild yeasts found on the skins - no added yeast, sugar, or other flavors. Then they make cider vinegar using the traditional Orléans method in castaño (chestnut) wood barrels. After five months of aging, the vinegar is bright, apple-y (of course), super dry, and tannic. It reminds me of a crisp white wine vinegar, and is great for the same uses: salad dressings, quick pickles, and marinades.

Farmstead Goat’s Milk Caramels

from Vermont

In 2008, after losing their teaching jobs in the financial crisis, husband and wife Louisa Conrad and Lucas Ferrell were looking for a new start. Louisa found a oneyear internship on a goat farm, and, in a surprise twist, Lucas fell in love with the goats and decided to make a career out of raising them. In 2010, they set down roots in Vermont, launching Big Picture Farm to raise some seriously happy goats. Today, their herd of 45 goats live on 100 wooded acres.

I’ve visited a lot of dairy farms, but I’m not sure I’ve ever seen any animals that are better treated than Lucas and Louisa’s. At most farms, even ones doing excellent, artisanal work, most new babies are weaned from their mothers when they are very young, so the milk is available for cheese making. At Big Picture Farm, the kids

are never weaned from their mothers—instead, the goats are milked only once per day, to make sure the babies still get enough to eat. It decreases the amount of milk available to work with, but it’s fantastic for the goats.

To make a living farming, Louisa decided to turn their milk into caramel. She started without a recipe or guidance. She tested out batches on her local farmer’s market crowd, tweaking the production when she got feedback that the caramels were too chewy, or too hard, or too sticky. After two years, she had it down pat. The texture is soft, silky, toothsome. And the flavor is sweet and buttery, with a bass line of burnt sugar.

Vermouth Vinegar from Spain

It’s rare to find vinegar made from vermouth because it’s a longer, more expensive process than making regular wine vinegar. But the extra effort yields a unique condiment that captures the herbal, fruity essence of this favorite Spanish tipple. The process begins by making vermouth, a bittersweet fortified wine infused with herbs, spices, and botanicals. The vermouth is slowly fermented into vinegar using the Shützenbach method which creates a smooth, delicately flavored vinegar.

Finally, a little bit of the wine and grape must is added in before it’s aged for a year in French oak barrels. The aging softens and balances the flavors, delivering a bright, lively vinegar with a sweet finish. It adds a complex depth of flavor, so I often substitute it for red wine vinegar to elevate dishes from humdrum to stellar. Perfect for marinades, vinaigrettes, and drizzling over fish or roasted vegetables.

Fire-Roasted Soy Sauce from Taiwan

First, a little geographic soy sauce primer. While Chinese and Japanese soy sauces are made with yellow soybeans and wheat, traditional Taiwanese soy sauce is made with black soybeans.

That may not sound like a big difference. But because black soybeans have a higher protein content, the soy sauce they produce has a deeper, richer, almost chocolatey umami flavor. To balance that intensity, Taiwanese soy sauce has a touch of sugar added.

Family-run soy sauce brewery Yu Ding Xing in Xi Luo, Taiwan, blends soy sauce making traditions by using black and yellow soybeans, wheat, and sugar. Their sauce is inoculated with Japanese koji, sun-brewed in terracotta vats for six months, then roasted over a wood fire to stop the fermentation process. Seasoned with mirin and licorice, it’s sweet, complex, and rich with a bright anise note. More full-bodied and sweeter than other soy sauces, it’s best kept for finishing or dipping. It plays especially well with Chinese-five spice. If you want to swap it into marinades or stir fries, cut it with a little bit of water or balance it with rice vinegar.
