There are now a few farmers in America offering heritage breed turkeys. You might even have some available where you live, which would be excellent news and you should order early from your local farmer. Heritage birds are in sharp contrast to the modern Thanksgiving turkey, which is a bit of a monster.
The modern broad breasted white, as it’s known, was bred to produce a lot of white breast meat as quickly as possible. As everything else got pushed aside in favor of that goal: out went its disease fighting genetics, out went its ability to survive on its own, out went its flavor. Commercial turkeys taste like salt and water, with very little turkey flavor to mention.
Not so with these heritage KellyBronze turkeys. They are full-flavored birds, rich with flavor and never mooshy in texture. They spend their lives at Judd Culver’s farm in Crozet, Virginia, at the foot of the Blue Ridge Mountains. They receive no antibiotics or hormones. They are pastured, roaming free range, and protected from predators by a pair of guard llamas. Really! Their names are Silk Buttons and Sequoia. They may sound sweet, but if any predators come sniffing around, they’re quick to stomp on them.
At the end of the turkeys’ days, they are processed on the farm. Judd prepares them in a style called “New York dressed.” It’s the old way turkeys were processed on farms. They are cleaned without water, hung to age like steak. These might seem like small differences, but the flavor will blow you away. This turkey is so tender, so flavorful, it’s so different from what we’re used to it shouldn’t even be called by the same name.
None of these flavors are extreme. This is the kind of turkey that everyone at the table is going to enjoy. For many, it’ll be the first time they’ve tasted the real thing, and they’ll be fighting for seconds.

Most of the time when we’re talking about olive oil we celebrate the big, bold, peppery, and grassy side of the flavor spectrum—so this delicate beauty from the far northeastern corner of Greece is something of note. In the hill country of central Texas they’re doing a lot of things right when it comes to pigs. For one they’re raising 100% Ibérico-breed pigs from Spain, which are justifiably famous for their flavor. The pigs root and roam and live their lives outdoors for eighteen months—forever in the commercial pig world. They gobble up acorns, mesquite beans, and more which marbles the fat and supercharges the flavor. After curing the loins for 60 days with prickly pear nectar, salt, and smoked paprika, it’s a lean, delicate, slightly sweet tidbit with a savory/umami undertone. It works on every charcuterie tray you could create, and all the cheeseboards, too. A must for salume lovers.

Our friends at Broadbent Hams in Kentucky are doing prosciutto their own way, using humanely-raised Berk shire and Red Wattle pigs from Missouri to craft their Italian-style prosciutto with a distinctly Southern, smoky twist. Rubbed with spices and salt, lightly smoked, and aged for over a year, the meat develops a bold, earthy, and salty flavor. The extended curing makes it a bit firmer than traditional prosciutto, with a deep reddish-brown color beautifully marbled with white fat. The flavor is incredible — the fat just melts on your tongue, leaving a subtle, lingering smokiness that you’ll crave more of.

KM39 Cheese from Spain
In rural Galicia in northwest Spain, it’s com mon to find young, soft cow’s milk cheeses, but KM39 takes a different path. Named for the nearby kilometer marker along the Camino de Santiago, KM39 is made with local pasture-fed Rubia Gallega cow’s milk from farms within 30 kilometers. Aged for 18 months, this hard cheese is often compared to Parmesan, but that barely scratches the surface. It’s intensely complex: bright tropical pineapple notes up front, rich brown butter and caramel in the middle, and a nutty walnut finish. And did I mention the delightful crunchy crystals? Cailletier Olives from France
From the legendary olive oil producer Alziari (find the oil on page 26), these Cailletier olives are the same variety used in their famous estate oil and carry the DOP designation from Nice. Fire-Roasted Soy Sauce from Taiwan
Family-run soy sauce brewery Yu Ding Xing in Xi Luo, Taiwan, makes this sauce from a blend of black and yellow soybeans, wheat, salt, sugar, mirin, and licorice. After fermenting in the sun in terracotta vats for six months, it’s finished over a wood fire to stop the fermentation process. It’s sweet, complex, and rich with a bright anise note while still having the trademark soy sauce salty-umami kick. More full-bodied and sweeter than other soy sauces, it’s best kept for finishing or dipping. It plays especially well with Chinese-five spice. If you want to swap it into marinades or stir fries, cut it with a little bit of water or balance it with rice vinegar.

Charles Wekselbaum was raised in a Cuban/Jewish/ American household with a ton of food and even more traditions woven throughout his upbringing and life. He started making salami in 2010 in Brooklyn and I probably started talking with him shortly thereafter. I liked him immediately. Don’t tell the other salamis in our cured meat lineup, but this one is a standout—and the personal favorite of Bill Miner, chef and owner of Il Porcellino Salumi in Basalt, Colorado. Made from humanely-raised pork, the salami is seasoned with Calabrian chiles, juniper berries, coriander, and fennel seeds. Ever heard of “Ibérico de Bellota” salami? The famous Spanish cured meat that cost hundreds of dollars a pound and is only found at the most special restaurants and shops? Well that famous pig—the Black Footed Iberian pig—has moved to Texas and they’re lovin’ it. Turns out the hill country of central Texas is the perfect stand-in for the Spanish dehesa where these pigs usually root and roam. Stateside, they munch on the acorns of live oak trees, prickly pear cacti, mesquite beans, and anything else they can find. The wild diet makes for luscious, delicious salami with richly flavored fat that melts in your mouth. Made in the style of a classic Spanish Salchichón with a touch of white wine and a hint of Mexican oregano, this thinly sliced salami is bright, porky, rich and wonderful.

Colorado Green Chile Salami
The most important ingredient in any food (and the one most often ignored) is time. For the meat mavens of Denver’s River Bear American Meats, it’s the most important step in salami making. For this particular salami, they start exclusively from Angus beef. They grind the beef with Hatch green chiles from New Mexico, garlic, white wine, and toasted cumin seeds. Then they add starter culture to the mix (like in making cheese) which starts to develop the rich, robust flavors right away. Not all cultures behave the same, and this one moves slowly. In comparison, fast-acting cultures tend to leave salamis and other cured meats with a high, acidic, tangy type of flavors. The mix is stuffed into natural casings and then allowed to slowly ferment and then slowly dry— which adds even more depth to the flavor and creates a softer tex ture—before being wrapped up and sent along to folks like us. of the chile comes through, beautifully balanced and beyond delicious.

Old Kiev Salami
Based on a classic recipe, Inessa Lysenko and her team at Red Bear Provisions in Chicago make this salami from heritage breed, pasture raised pork. The grind is coarse with plenty of snowy-white flecks of fat. The meat is mixed with garlic, pepper, salt, and that’s about it. The flavor is surprisingly complex thanks to the wood smoke it receives before being hung to dry for a few weeks. The resulting flavor has only the slightest hint of smoke, but enjoys a sweetness and depth you don’t often find in other salume.

Full disclosure: the price on these fruit cakes may cause sticker shock. While England's national holiday cake has become a cheap industrial laughing stock, these are another species altogether. Each cake is crafted by Robert Lambert from rare citrus that he candies himself. A slice cut thin while the cake is cool—I recommend serving it chilled—looks like a stained glass window and is a taste revelation.
White Rare Citrus Fruit Cake
Robert’s classic cake, based on his grandmother Flora’s recipe. It’s by far the best of its kind I’ve ever tried. It features blood oranges, bergamots, Rangpur limes, rare Japanese shekwasha, and more. Each cake is soaked in cognac and aged for a few months, then garnished with a slice of candied fruit and a cedar sprig, all wrapped gently in cheese cloth. It tastes fresh, clean and lively. Comes in a muslin bag.
Robert starts by candying exotic citrus like Buddha’s hand citron, bergamot, blood orange, Texas lemon and white grapefruit peels. He adds hazelnuts, pecans, walnuts, dark raisins, prunes, black figs soaked in Poire William eau de vie—oh yes, there’s more—dates, cardamom, cinnamon, nutmeg, 10-year-old Port, and candied ginger. Spreading out like the cap of a wild mushroom, the thin, golden crust surrounds a snow white, soft, savory crumb filled with lots of holes (we work hard to put the holes in). This is the traditional bread of Puglia—the heel of Italy’s boot—and the best one to eat alongside a pasta dinner. Recommended for ripping and dipping in olive oil.

1. When will it arrive?
The first installment typically ships right away, but you can set it to arrive whenever you would prefer when you check out online or over the phone. Later installments generally ship out every 4 weeks, but that can be adjusted during check out, too.
2. Can the recipient change the shipping dates? Yes, absolutely! Whether for travel, convenience, or any other reason, the dates can be changed by you or your recipient at any time. Just give us a call at 888.636.8162 or send us an email at service@zingermans.com and we’ll take care of it.
3. Can the recipient update the shipping address for specific installments?
You bet! Just call or email us and we’ll adjust the address as needed.

Those contents aren’t online, but if the suspense is killing you, just call or email and we can help out!) Tinned Smoked Oysters
There’s little middle ground for raw oysters on the half shell: folks generally can’t wait to slurp them down, or can’t imagine wanting to eat them. These tinned smoked oysters from Willapa Bay in Washington State are a more approachable entry point for the oyster curious, and a treat for the oyster lover. Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Cheddar was originally wrapped in cloth, not dipped in wax. Cheddars aged in cloth have a complexity and length of flavor that’s unmatched by wax. The wheels we get are made by Cabot Farms in Vermont, and then aged at Jasper Hill Cellars. The Jasper Hill team specially selects wheels just for us with a beefy, brothy flavor. Giorgio Cravero’s family has been aging Parmigiano Reggiano in Bra, Italy since 1855. The cheese we buy comes exclusively from the San Pietro dairy, located high in the hills above Modena. The meats we built our deli on. Every week we sell thousands of pounds of our corned beef and pas trami, much of it piled high on Zingerman’s Jewish Rye bread (find it on page 16) and nearly as much sliced up for our customers to take home and have for dinner. Both have been made for us in Detroit since we opened our doors in 1982.
The first cut corned beef is our most popular deli meat by a country mile. Pastrami, the spicy cousin to corned beef made from the fatty navel cut of beef and cured with a load of spices like black pepper and clove, is a cult favorite.

Potato Knish
The knish is a Jewish pastry stuffed with savory filling wrapped in flaky, buttery dough. We’ve been making them at Zingerman’s Deli since 1982. The inside is made of mashed Yukon Gold potatoes, onions, and herbs. The outside is a tender, flaky, handmade crust crafted from Zingerman’s fresh farm cheese. Our delicious German-style holiday cake is a long-standing Zingerman’s holiday tradition for folks looking for unique dessert ideas, great gifts, and fine food for weekend brunch. Italian Apricots in Syrup
Soft, tender apricots, hand harvested and rushed into a simple syrup bath within hours. The speed is important, it protects the texture and flavor of the fruit. The longer they wait around, the more their texture breaks down, the mushier they get. But that’s the only rushing allowed. The apricots take their time once they reach their bath, allowing the sugar to slowly soak into the fruit, preserving them and freezing their flavor at its peak. An elegant gift. The pumpkin spice truffles from Fruition Chocolate in New York are both a trick and a treat. The trick is how much flavor they pack into each quarter-size truffle—a cross-section looks like the layers of Earth’s core. At the center is lightly spiced, chewy handmade butternut squash caramel.
