4 TIPS FOR ASSEMBLING A SUPREMELY DELICIOUS CHEESE BOARD By Mo Frechette and Val Neff-Rasmussen FIRST THINGS FIRST: WHAT CHEESES SHOULD I GET FOR A CHEESE BOARD? The classic answer is to get a a variety. Get a young soft cheese. An aged harder cheese. Maybe a blue. Maybe a goat or sheep’s milk option. That is still a safe and delicious way to go. But it’s not the only strategy. I’ve had a great time eating two or three versions of the same cheese, aged for different amounts of time. For example, a young and extra-aged Comté. An old vs. new world pairing is fun, too. Try two clothbound cheddars, like Cabot from Vermont and Montgomery’s from England. Or a classic Swiss Gruyère and a cheese inspired by it, like Pleasant Ridge Reserve from Wisconsin. You could expand that comparison to a trio. Try three goat cheeses, one fresh, one bloomy, one hard as a rock. Or three blues. You get the idea. Or perhaps my favorite of all: just one giant piece of cheese. Get a four-pound hunk of Parmigiano Reggiano, stab it with the old, weird knife you’ve got lurking in the drawer. THEN ADD SOME ACCOMPANIMENTS Pick items with a lot of flavor. When you eat something flavorful, a little bit goes a long way. I like to go for variety. I’ll start with some sweet pairings, like fresh or dried fruits, preserves, and honeys. Then I’ll add a few savory pairings, like bread, crackers, nuts, olives, pickles, or cured meats like salami or prosciutto. There’s no “right” answer as to what you should include—it’s your cheese board, so the only “right” items are the ones you like best! DON’T GIVE ME THE COLD CHEESE Serve cheeses at room temperature—take them out of the fridge about 30 minutes before serving. I can’t place enough emphasis on this advice. A cheese at 40° and one at 65° taste completely different. The aromas expand, become more complex. More of the fat spreads on your tongue, which makes the flavor more intense. When cheese is warm you’ll eat less of it and enjoy it more. The same goes for cured meats: give salamis and hams a chance to warm up for twenty minutes and you’ll taste a world of difference. PLAY WITH THE PLATING All those old platters, the hand-me-downs and vintage shop finds—now is the time to use them. If they’re interesting, serve cheese on them, please. Slate, wood, porcelain, or cut glass are

As for the presentation, if you want to go all out do a quick Instagram or Google Image search for #cheeseboard. There are some crazy good Van Goghs of cheese out there, sharing their art with the interweb world. You could use those as inspiration to create your own masterpiece, or keep it simple and let folks dig right in. Either way, have fun with it!

INSIDE THE CHEESE CAVE

CUTTING CHEESE TO ORDER AT ZINGERMANS.COM By Mo Frechette Another installment in our Buyer’s Guide series looking at the operations side of Zingerman’s Mail Order. First things first: it’s not a cave. Cheesemongers universally refer to their cheese storage rooms as caves but these rooms have about as much in common with a cave as astroturf has in common with the field of dreams. Cheese caves are commercial coolers. Usually walk-ins, which is industry speak for a refrigerator big enough for a full sized door. Our cave is ten feet wide, twenty feet long, about the size of a short container truck. It is stark white and sits right in the middle of our warehouse, across the pick line from the bread bagging tent. Between the two they mark the two poles of our operations. Bread and cheese. Both made by hand. Cut by hand. Wrapped by hand. Traditional, practically ancient foods. We work mostly in whole wheels of cheese. That’s the way the cheesemakers make them and that’s the way we buy them. We haul them into the cheese cave and cut them open by hand. Sometimes with a big knife. Sometimes with a cheese wire: a thick steel cable with handles that the cheesemonger uses to glide through cheese like butter. And sometimes you’ve got to tackle Parmigiano Reggiano. Those 80 pound wheels have a hide as tough as a stegosaurus. They need to be coaxed open with a set of wedge shaped knives that become part of every cheesemonger’s rite of passage. Opening a wheel of parmesan is not easy. But the reward is worth it. A freshly cracked wheel’s aroma is beguiling, like you just opened a window onto a pasture in Italy. Every one who splits one stops for a moment, puts their face up to the cut surface and inhales. I wish we could bottle that scent. Fresh shards of parmesan always flake off too—cheesemonger’s treat.

all day long for the 60-odd cheeses we carry. Cut a few pieces of Monty’s English Cheddar (page 3), wrap, stop. Cut a few pieces of Comté (page 11), wrap, stop. On our busiest day in December we’ll do that thousands of times. That means your cheese is essentially cut to order. It spends a few hours at most from when it’s cut to when it’s packed to ship. It sounds simple—and it is. But it’s also rare. Most companies that ship cheese these days don’t cut cheeese to order. They ship cheese that has been cut long ago—weeks, even months—and sealed in cry-o-vac. It’s not terrible, but remember that once a cheese gets cut it never gets better. It fades. Cry-o-vac slows the fading, but if it spends a long time cut in a wrapper its flavor will become a shadow of itself. Some caves are meant for aging but there’s not a lot of that going on in our cave. We try to get the cheese in and out as fast as we can. It’s difficult to age cheese properly, best to leave that to the pros—it’s an entire industry unto itself. Usually the best a cheese shop can do is try to sell it as quickly as possible since cut wheels never gets any better. It makes for a good cheese buyer’s guide tip: when you’re looking for a cheese shop it never hurts to seek one that does a decent amount of volume and keeps their cheese selection on the smaller side so they can “turn” (i.e. “sell”) them faster. ZINGERMAN’S ROADHOUSE MAC & CHEESE RECIPE The mac & cheese at Zingerman’s Roadhouse is a classic. It’s been lauded by everyone from Alton Brown to Aziz Ansari. While our classic version is made with Vermont Cabot cheddar, over the years we’ve made many, many variations, mixing in Pimento cheese, goat cheese, and many others, along with extra add ins like fried chicken, bacon, or Hatch green chiles. The not-so-secret secret is that you can use practically any cheese you like to make a good mac and cheese: goudas, mountain-style cheeses like Comté or Swiss, even a bit of blue if that's your thing. Tinker to develop your own custom blend of several with complementary flavors. Each different cheese will lend the dish a different flavor, of course, but seeing what your new creation tastes like is half the fun! Give this recipe a try with your favorite cheese and see if you can’t create a new family classic.

ZINGERMAN'S MAC & CHEESE INGREDIENTS 1 pound good short-shaped pasta, like Rustichella's penne or Gentile's napoletani (read more about both below) 1 tablespoon butter 1/8 cup diced onion

DIRECTIONS 1. Cook pasta in salted water according to package instructions. Drain and set aside. 2. Melt butter in a small pot over medium-high heat. Add onion and bay leaf and cook till onion softens, about 6-8 minutes. Remove bay leaf. 3. Whisk the flour into the onions, mixing quickly to get out any lumps. Add the milk, stirring continuously, then add the cream and bring to a simmer. Turn down the heat to low, and let simmer for a couple of minutes until thickened. Stir in the mustard and grated cheese.

1 tablespoon all-purpose flour ¾ cup whole milk 1/8 cup heavy cream ½ teaspoon Dijon mustard ¾ pound grated cheese of your choice 1 teaspoon extra virgin olive oil Salt & pepper to taste

4. In a large, heavy bottomed skillet, heat the oil over high heat until it shimmers. Add the cheese mixture and cooked pasta. Stir to combine and cook until it starts to brown, just a few moments. Season with salt and pepper to taste. Serve immediately. Serves 4

Ortiz Tunas from Biscay Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. This smooth, creamy version from the tiny fishing village of Leland (aka Fishtown) is my favorite. We worked with the maker, Lori LaClair, to come up with a recipe we all think highlights the flavor of the fish and the art of the smoke. Made with fresh caught fillets of whitefish straight out of Lake Michigan, this spread is the perfect accompaniment with crackers, some fresh (or dried) cherries, and a crisp glass of cool wine. A TALE OF TWO HAMS WHAT'S THE DIFFERENCE BETWEEN "CITY" AND "COUNTRY" HAMS?

By Val Neff-Rasmussen Let’s start with the basics. A ham is the meat of the leg—nearly always the back leg—of a pig, from its ankle to its rump. If you were to go to the butcher shop and ask for one that was raw, you’d be getting what’s called a fresh ham. You could cut it up and cook it like any other fresh meat. But in the US, we almost never buy fresh ham. Instead, practically all hams we buy are cured. The method of curing has a huge impact on its flavor and how you eat it. There are two methods for curing ham: a wet cure, and a dry cure. (If those sound familiar, you’re not wrong! These two methods are also both used for curing bacon.) A wet cured ham is cured with a saltwater brine. Traditionally, you’d soak the ham in the brine for a few days or weeks, until the salt had penetrated the ham fully. In industrial settings, that process is sped up by injecting the hams with brine. After curing, the hams may be smoked. Before they’re sold, they’re typically cooked. These are the hams you’d buy at the supermarket and heat in the oven. The industry term for this style of ham is a city ham. A dry cured ham is also cured in salt, but instead of a brine, the raw ham is coated in dry salt, then aged for months or years. All that time curing results in ham that has a very different texture than a city ham. Instead of being juicy and sweet, a dry cured ham tends to have a firmer texture and a saltier, deeper flavor. Dry cured hams are common in the US across a band of Appalachia from Tennessee to Virginia, where they’re called country hams. American country hams are typically smoked, adding an additional level of savory flavor. Dry curing is also used for many of Europe’s most famous hams, including Spain’s jamón Ibérico, France’s jambon de Bayonne, and Italy’s prosciutto di Parma. These hams are generally not smoked (though in some corners of Europe you do find smoked hams, like northern Italy's speck). Thanks to the long curing time, dry cured hams are safe to eat without any cooking. In the southern US, though, often they do get cooked. The first step is to soak the ham (or a few slices of it) in water for several hours to remove some of the salt. This is vital: without soaking, a big mouthful of this ham is overwhelmingly salty. After soaking, the ham can be heated in the oven or fried up in a pan. It can make for good eating, but it's a very different experience than cooking a city ham: it'll still always be firmer and saltier. Across the Atlantic in Europe, I've never heard of anyone cooking dry cured hams other

than adding a few bits to boost the flavor of a sauce or stuffed pasta filling. Instead, the most common way to eat those hams is sliced paper thin and served at room temperature, maybe alongside bread or a few crackers and a good glass of wine. This is a great way to eat American country hams, too. So which method is better? It depends on what you want the ham for. For a special holiday meal, the city ham is your best bet. WHAT TO LOOK FOR IN SALAMI By Mo Frechette YOU CAN’T HAVE A SALAMI WITHOUT MOLD So says Stefano Bencista, the 8th generation of the Falorni family to make salami at the famouns Maccelleria Falorni in Tuscany. Downy white mold is as essential to salami flavor as blue mold is for blue cheese. Every good salami has mold on it at some point. It’s a sign the salami is aging well. Among other duties, mold protects the fat from going rancid. If you’re buying one without mold it was probably washed off at some point. It may grow back. If it bothers you, you can wash it off too. A little vinegar mixed with water does the trick. You don’t need to eat the mold if you don’t want to, but it won’t hurt you either. SLICED TO ORDER A whole salami keeps its integrity. It stays moist and sweet. As soon as you slice a bit off the air starts to change the flavor. The great taste fades, even if you wrap it in plastic or paper. We ship all our salamis whole so the flavor stays intact. Slicing is easy. Don’t be worried about slicing thin pieces. Many salami lovers—me included—think a little thicker is better. DON’T BE MISLEAD BY VISIBLE FAT Just because you see more fat in one salami than another doesn’t mean it has a higher fat content. It often means it was ground a little more coarsely. Most good salamis are about a third fat, give or take. SMALLER IS BIGGER Smaller salamis usually have more intense flavors. In a similar way that petite wine grapes have a higher skin to fruit ratio and therefore more tannins, small salamis have a higher rind to meat ratio and the rind exerts an intensifying affect on the flavor. Smaller salamis also expel moisture faster which intensifies their flavor.

NATURAL CASING “The casing is to the salami what the cask is to the winemaker,” one salami maker told me. Chalk up another wine similarity! Natural casings—that’s a nice way of saying intestines—allow the exterior mold to penetrate better and let the salami breath and expel moisture. WHAT’S UP WITH “UNCURED” SALAMI? If you see "uncured" on a label it doesn't mean the salami is raw. It means it was cured with the nitrates in celery juice, not mineral nitrates. Same chemical but for whatever reason it gets called "uncured" on the label.

Salami Cheat Sheet A FINE SALAMI… …has a short ingredient list with no corn syrup. …is glowing pink on the inside, but not too red (in which case it might be artificially colored). …leaves the knife blade clean, not greasy. …has a sweet, porky smell. …has clean flavors with no chemically or powdered garlic aftertaste. …is without sourness, a telltale sign of a bad cure. WHEN SERVING SALAMI… …slice to order to prevent drying and oxidization. …I’m a big fan of slicing salami slightly on the thicker side. …if you serve it at room temperature you’ll get a lot more flavor than if it’s eaten cold straight out of the refrigerator. (That's true of most traditional foods, not just salami!)

WHAT TO LOOK FOR IN A GOOD BOX OF CHOCOLATES By Val Neff-Rasmussen REALLY GOOD CHOCOLATE It probably comes as no surprise that the first step to making a really good box of chocolates is to use really high quality chocolate. Here are a few ways you can suss out quality, without an advanced chocolate degree. Look. Good chocolate is glossy. Avoid any chocolates that are dull or dusty. The chocolate likely bloomed, meaning that the crystalline structure of the chocolate has gone out of whack due to storage issues. This happens to all chocolate eventually, so if you have good chocolate it's best to eat it within a few months or so. After chocolate blooms it's not unsafe to eat, but it has a gritty, dry texture and the flavor is diminished. Texture. Good chocolate has a nice snap to it—especially dark chocolate. Cheaper chocolate is waxier. It bends before it breaks. (You can try an experiment to see this for yourself: get a good, bean-to-bar chocolate bar and a Hershey's bar, and try breaking off a square of each. Pay attention: how does each chocolate feel? How does it sound?) After that initial snap, better chocolate should melt evenly on your tongue. By contrast, poorer quality chocolate often feels sticky or tacky in your mouth. Taste. Most important of all, good chocolate will have a nuanced flavor. It should complement the flavor of the fillings, and the flavor should last in your mouth for a long, long time. REALLY GOOD FILLING(S) What you put inside of a chocolate bonbon is just as important as the chocolate itself. Sometimes, that means focusing on just one filling. Take the boxes of chocolates on the facing page. Nearly all of them started with a single extraordinary local ingredient and covered it in chocolate. That’s not to say you can’t find good boxes of chocolates that have mixed flavors—a few of my favorite chocolatiers making great assortments are J. Patrice (see their chocolates on the facing page), Chocolat Moderne, and Bon Bon Bon ( find both of their chocolates at zingermans.com). But when you have something really special, like the extraordinarily aromatic citrus of Calabria in southern Italy or the notably rich and

nutty walnuts of Périgord in southwestern France, a coating of good chocolate can make them swoon-worthy. NOTHING ELSE It’s always a good bet to look at the ingredient list when you’re evaluating any food. Boxes of chocolate are no exception. Artificial ingredients like vanillin are suspect, as are and any unpronounceable ingredients. One exception is soy lecithin, which is widely used by excellent chocolatiers in very small amounts to help the chocolate keep a smooth texture. You generally want to avoid added fats, too, though you'll want to make an exception if there’s a cookie or caramel component to a filling where butter may be in play.

Chocolate Cheat Sheet A GOOD BOX OF CHOCOLATES… …should have a glossy appearance. …should have a good snap in the texture. …should have full, complex, long-lasting flavor. …should have fillings that burst with flavor and complement the chocolate. …shouldn’t have artificial additives, unpronounceable ingredients, or added fats. …should be stored at room temperature, away from the potential melting power of sunlight. …should be eaten within a few weeks—or a couple of months tops.
