s anyone who went to Lizzie Ostrom's recent talk at Lutyens & Rubinstein will know, there's more to perfume than meets the eye. Scent is a complex communicator, but we don't on the whole understand it very well. Ostrom has quite an academic approach to the world of fragrance – while her alter ego Odette Toilette hosts perfume-themed parties for fun. Reading Ostrom's new book and meeting her led me on a perfume trail that started at Les Senteurs, a brilliantly old-fashioned store that's about as unlike a department store perfume hall as you can get. There I met perfume expert James Craven (who is a big fan of Lizzie Ostrom) and enjoyed a whistlestop tour of modern perfumery, which is how he refers to scents created since the 1870s. His theory is that as a race, the British aren't very interested in smells. And for him, scents can have value way beyond liking them, like art that you can appreciate but wouldn't

actually want to hang on your wall. He talks about scent using language you'd associate with music or colour and has a knack for predicting the type of thing any potential customer might like. I could listen to him talk all day. And I'm not alone in this – boutique perfumeries are having a small renaissance in London, with the Burlington Arcade becoming home to new stores including Frederic Malle and Penhaligons, while the opening of Creed's beautiful new Mount Street store was hosted by none other than Craven himself. So if you're interested in making sense of scent, these pages might provide a start. Enjoy November. ◆

Applying unusual artistic methods, such as weaving,

aren Knorr’s Belgravia describes through images and accompanying quotes, class and power amongst the international and wealthy during the beginning of Thatcherism in London. Produced between 1979 and 1981 the images are now available for the first time in a beautiful artist’s monograph. Measuring 35 x 28cm, printed on heavy stock and housed in a protective transparent jacket, the work describes the ‘everyday’ of a privileged minority, and while historically, portraiture of the upper classes has tended to be flattering, the combination of portraits and quotes from the subjects recorded during their sessions brings Knorr’s work closer to satire. Of the work, Knorr says: “Belgravia is a cosmopolitan and rich neighbourhood in London near Harrods in Knightsbridge with many non-domiciled residents. My parents lived in Belgravia and the second image of the series is a photograph of my mother and grandmother in the front room of our “maisonette” on Lowndes Square. Yet the photographs are not about individuals but about a group of people and their ideas

during a particular time in history. They are “non-portraits” in that they do not aim to flatter or to show the “truth” of these people. People are not named and remain anonymous.” There's a deadpan nature to the pictures and their sometimes surreal captions that makes them

at once hilarious and tragic. The characters are incredibly dated, belonging to a past that's all chinzy interiors, oil paintings and colonial animal skins, dripping with priviledge, prejudice and money. These single (non-)portraits in large domestic surroundings are infused with a loneliness, a sadness that undermines the grandeur. A new exhibition celebrates Patrick Lichfield’s vast body of work Wo r d s P e a r l B oy d

ntil his death in 2005 Patrick Lichfield was one of the 20th century’s most successful photographers. From his Notting Hill studio base, Patrick Anson, 5th Earl of Lichfield, photographed the rich and famous: he was the official photographer at the wedding of Charles and Diana in 1981 as well as at the Golden Jubilee in 2002 and famous subjects included Roman Polanski, David Hockney, Michael Caine, Joan Collins and Joanna Lumley. He also had a thing for nudes and travelled the world photographing naked models in different cities, and his villa in Mustique – near to his second cousin Princess Margaret’s – was legendary for its parties. Now a new exhibition of his work, simply titled The Best Of, comes to the Little Black Gallery in the wake of 2013’s successful Caribbean and 2012’s memorable Nudes. Exhibits span landscape, fashion, portraits and nudes and iconic images include Mick and Biana Jagger drinking champagne in a car on their wedding day as well as a Mustique group scene from 1973 that shows Princess Margaret on a chaise longue surrounded by islanders, plus lots of other familiar and not-so familiar pieces. ◆ The Best Of Patrick Lichfield comes to The Little Black Gallery from 3 November to 12 December. 13A Park Walk, SW10 littleblackgallery.com

LORD OF THE MANOR Downton Abbey has captured the hearts of millions. Absolutely meets Julian Fellowes, who made the world fall in love with period drama Wo r d s K a r e n A n n e O v e r t o n

hey say good things come to those who wait. For proof, just ask Oscarwinning writer Julian Fellowes, who created hit show Downton Abbey at the ripe age of 61. “Downton has been an extraordinary journey for me,” he says. “I mean I hate that word really, but we started off making a period drama that we hoped people would like but we didn’t know it would become a global phenomenon. Normally that doesn’t happen in any career, so of course it’s been very exciting and very amazing.” Baron Fellowes of West Stafford, to give him his full official nomenclature, grew a little closer to his phenomenally successful ITV period drama when he was elevated to the peerage in 2011 and entered the House of Lords on the same day. While Fellowes now sits on the Conservative bench in Westminster, writing and acting are pursuits he has been at for quite some time, having read English at Cambridge, earning an MA and going on to study theatre at the highly esteemed Webber Douglas Academy of Dramatic Arts. Fellowes has Kensington in his veins and his somewhat privileged lifestyle

surely comes across in the lavish trappings of Downton and its spoilt inhabitants. Moving to Blighty from his birthplace, Cairo, at 10 months old to a house on the corner of Hereford Square, the first house at Wetherby Place is where he spent his childhood in postwar London. “Right opposite our front door were bomb sites,” he recalls. As a young child he attended Wetherby School in Wetherby Place. His father was an Arabist, hence why the family lived in Egypt and he has described his father in the past as “of that last generation of men who lived in a pat of butter without knowing it. My mother put him on a train on Monday mornings and drove up to London in the afternoon. At the flat she’d be waiting in a snappy little cocktail dress with a delicious dinner and drink. Lovely, really.”

Initially setting out to be an actor, his early career was not as straightforward as Fellowes had hoped. Moving to Los Angeles aged 31, he won a few small television roles and ironically believed his big break had come when he was considered to replace Hervé Villechaize as the butler on the TV series Fantasy Island, but the role went to Christopher Hewett instead. He eventually moved back to England and though he had relative success as an actor, it was his screenplay for Gosford Park that launched him into a different realm. The film captures the excesses and frivolities of 1930s British aristocracy and is a riveting murder mystery which won several Academy Awards, including Best Screenwriter for Fellowes. Parallels have been drawn between Gosford and Downton and there’s even a rumour that Downton was initially intended as a spin-off. Now splitting his time between homes in Chelsea and Dorset with wife Emma Joy Kitchener (Lady Fellowes), a Lady-inWaiting to HRH Princess Michael of Kent, and their son Peregrine, now 24, Fellowes reveals his affection for Kensington’s ‘next village’. “I like Chelsea,” he says. “It still has bits of madness lingering on, because I remember when it was really bohemian. When I was a child, Chelsea was full of

artists that didn’t have any money. All this business now of houses costing millions and billionaires in every corner, it wasn’t like that at all. It was kind of wild. And I think there are areas of it that keep hold of that flavour.” It’s a testament to the enduring appeal of Downton Abbey – six Emmys and a Golden Globe so far – that Fellowes knows his subjects so well. Indeed, at an age when most would consider retirement, he created his greatest masterpiece. The show is representative of a very specific time and culture but one many people relate to, a very human story filled with joy and heartbreak. Viewers feel compassion and closeness with the characters: Lady Mary’s devastation at the loss of her beloved Mathew, or the biting wit and humour of Maggie Smith’s Dowager Countess Violet. The show is loved not only by the nation but worldwide, particularly in America with several Hollywood actors clamouring for cameos. As a result, Fellowes has himself become a bit of a national treasure; following his introduction into the House of Lords, he is also expected to be presented with an International Founders Emmy.

He was immortalised in clay recently by renowned sculptor Francis Segelman, who has previously sculpted busts of the Queen and the Duke of Edinburgh. The sitting was done live as part of an event to raise money for The Stroke Association, a charity dear to his and his wife’s hearts after her father died as a result of a series of strokes. “I feel very flattered to have been asked to sit for her. I am of course curious to see what she makes of my bonce,” says Fellowes of the experience. “I am not foolish enough to think that I am a thing of beauty so I don’t think there are any harsh surprises in store, but I shall be

curious about the overall effect it gives off – will it be one of power or misery or fearfulness or whatever, because you do sort of get a notion coming out of sculptures that way.” Now the final series of Downton Abbey is airing and with one last Christmas special confirmed, rumours abound for what lies in store for one of our most successful screenwriters. Although his work seems to follow a certain formula, one wonders what he may come up with next. So far he’s not saying. He does, however, have this to say on the possible reincarnation of the show: “I keep getting told by the Daily Mail that there’s a film and that I’ve been working on a musical and all the other things, a ballet for all I know. I’m not aware of any of these things, but I wouldn’t be averse to it. I think to reinvent it in a different form could be rather fun. But the television is over. That we will not be revisiting.” It’s the end of an era then, but whether or not Downton will return in any of these guises will remain open to speculation until it inevitably does… u www.stroke.org.uk

Then again, when you debut your new luxury accessories brand at London Fashion Week, Spring/Summer ’16 had better make a statement. The former Mulberry Creative and Brand Directors, respectively, premiered their capsule collection of bags at an intimate breakfast presentation, with Hill introducing the industry’s elite to a new fashion philosophy: “I love to invite the audience into our imagination and let them share in the fun!” The brand’s name alone indicates Hill and Fendley’s significant role in dissolving fashion’s longstanding #youcantsitwithus reputation. Case in point: the emoji-like Wink and Smiley Face hardware. This playful spirit also extends to Hill and Friends’ six silhouette’d Happy range comprising glossy goat, calf and calf hair leather mini and large satchels in neon pink, leopard print, emerald green, black, toffee and oxblood hues. Absolutely meets Alison Lloyd, the woman behind Ally Capellino, as she returns to the world of clothes Wo r d s A m a n d a C o n s ta n c e

n her picture on her eponymous website, Ally Capellino looks exactly as a Grown-Up Fashion Designer should. Wreathed in a minimalist coat, she has the stature befitting of someone behind one of the go-to labels for stylish womenswear in the 80s and 90s and exactly the sort of person you’d imagine behind the accessories label that, for the last ten years, has sold pared-back functional bags to professional urbanistas who take their satchels as seriously as their coffee. Alison Lloyd, however, the small, impish woman with a shock of pink hair and battered backpack, who shakes my hand in the Ally Capellino store on Golborne Road store appears to be an entirely different person. Yet they are one and the same. She laughs at this clash of expectation and reality. “My personal style is more jokey,” she says. “A friend said dress like a toddler and that suits me, all matchy matchy.” With the pink hair, fluffy pink jumper and what looks like a neoprene skirt, Ally looks like a hipster sexagenarian.

I DON’T LIKE a bag that DOESN’T FIT STUFF in it. WHAT’S THE POINT?

We meet at the Golborne Road store – “I love this area,” she says, “it’s still full of crazy people.” – to discuss the brand’s move back into womenswear. The shop is quintessentially Ally Capellino – designed by Rupert Blanchard, it’s all blond reclaimed wood, leather and metal. Expensive bags hang, artfully spaced. It’s minimalist, restrained, classy. Ally shows me the new coat she’s designed for A/W 2015, the sorely named ‘Cheryl’; it’s the first clothing Ally has designed since her ‘annus horribilis’ of 1999 when the company went bust and she lost everything. It’s a gorgeous coat. A drop-shouldered, collarless design made from undyed Manx and Hebridean wool woven in the Outer Hebrides. “Now there’s so much good pared-down aesthetic out there like Cos,” say Ally, “it’s all about amazing fabrics.” She found the wool suppliers by googling ‘organic wool’. She shows me the lining. “What interests me is the way it is inside and the way it is outside – I’m quite technical like that.” The coat is selling very well; one customer who bought it from the Shoreditch store said told Ally she loved it and was still wearing one from 25 years ago.

DESIGNER, SHE SAYS womenswear is something of a rebirth and the latest chapter in a story that goes like this. Alison Lloyd and her life and business partner Jonathan Platt started Ally Capellino in the early 1980s after meeting on a fashion and textiles course at Middlesex University. The name derived from a misspelling of Italian for ‘little hat’ and for the next couple of decades Ally Capellino was the brand for a pared-down, chic aesthetic. Cherie Blair wore Ally Capellino the night of Labour’s landslide victory in 1997. By the late 90s it had all got properly starry, with a vast, minimalist shop on Sloane Avenue– “so wrong for us, far too posh, too ‘ladies that lunch’,” she says now.

FASHION/ STYLE And then it all went wrong. In 1999 Ally and Platt declared themselves bankrupt and went their separate ways. Ally lost her business, her house and even control of the brand name. There were, she says, “miseries in every direction”. She had to start again from scratch beginning with renegotiating control of the brand name “that was very empowering,” she says. And she picked up consultancy work, designing uniforms for the Girls Guides and a range for BHS, “I took what was coming.” But, “I was going a bit doolally,” she says. Missing people and purpose, “I made a bag out of boredom.” It was a “a sort of bucket with handles, and it had some holes in it because I had a pattern punch left over from my fashion days.” And business took off. Ally opened her first shop in 2005 on Calvert Avenue in Shoreditch – a “far more domestic affair than Sloane Avenue”. A second followed on Golborne Road in 2011 and earlier this year a third shop opened on Marylebone High Street; it’s already the busiest in terms of turnover. Ally has obviously enjoyed the DIY, small-scale approach to her second business incarnation. She’s learnt all about the leather, the tanning and the dying herself. "It’s a dodgy business, everyone in leather is like a secondhand car salesman,” she laughs. At the time, her designs were quietly revolutionary; bags used to be much stiffer, made with lots of cardboard, glue and rigid edges. “I like slouchy,” she says. She created a more pillowy edge by turning the two edges in and then stitching it on the inside and then turning it out again. “At the time we were different to what was on the market,” she says. Her bags are as pared-back as her clothes; function is very important. “I don’t like a bag that doesn’t fit stuff in it. What’s the point?” She has consented

I DON'T NEED THE theatre to making some lovely clutches “but we don’t do bling”. As we walk around her store Ally points out a metal buckle that contrasts with a leather strap, some grey webbing that stands out from a yellow canvas bag. She remains excited by the materials she says, “the tonalness, the contrasts”. It is this purist attention to quality and details that has given Ally Capellino a cult following amongst the style cognoscenti. “We are a designer’s designer,” she says. Ally is full of dichotomies. Softly spoken and quite hesitant in conversation – she becomes more definite and politically enthusiastic on the subject of her beloved Hackney “We need controls on rent!” She’s also much cooler than most near-60 year olds. She recently starred in a Rapha campaign – the uber-cool cyclewear brand – with Liberty, shot by her daughter Agnes Lloyd-Platt, in the company of folk much younger than herself. Her jokey take on personal fashion plus her cool eye for design could possible earn her the label of English eccentric, although I’m sure she would hate that with a passion. For now, Ally is keen to do design more clothes, but she wants her business to stay as small as possible. “My motivation now is about doing it in a different way,” she says. “I did fashion shows for 15 years. It was thrilling and addictive, but it’s quite divorced from the product. I want to do clothes but I don’t need the theatre.” ◆ allycapellino.co.uk

ormer Agent Provocateur shop girl Paloma Faith has returned to her roots as the new new face of the luxury lingerie label’s latest campaign. Thirteen years after a three-year stint as a pink-clad shop girl, Faith is reunited with her old fellow shop girl, now photographer Alice Hawkins, who took the campaign pictures for AW15’s #KinckersForever. The 34-year-old Kensal Rise resident worked part-time at Agent Provocateur’s Soho branch when she was 21 and studying for an MA in theatre directing at Central Saint Martins College of Art and Design. In fact, the store is partly responsible for her subsequent career because it was there that she met Fran Cutler, who made the crucial introduction to Virgin Records. Faith said: “After a few years of serving her, she asked me what I did outside of the store and I told her that I wrote songs and performed them in clubs and pubs. She arranged that I meet with the head of Virgin who then introduced me to my manager. His first reaction was ‘your songs are terrible but you are such a brilliant character!’ So I stuck in there and tried to learn.” Hawkins’ images were inspired by Polaroids that she captured while working in the boutique. Faith, who showcases the new underwear sets for autumn, follows in the footsteps of Naomi Campbell, Kate Moss and Rosie Huntington-Whiteley in posing for the brand. u

Scents of

ADVENTURE Lizzie Ostrom – aka Odette Toilette – is dedicated to celebrating perfume with a series of entertaining events and a new book. Absolutely meets her Wo r d s P e n d l e H a r t e

izzie Ostrom has been called the ‘Heston Blumenthal of perfume” by the Daily Mail but she’s not a perfumer. It’s hard to define quite what she is, but actually creating perfume doesn’t figure. Still, her life revolves around fragrance and her new book Perfume – A Century of Scents – is an entertaining look at trends in the history of luxury smells. She’s a sort of interpreter of odour, dedicated to demystifying and celebrating perfume, and to the pursuit of fun through scent. The new book has one of the most beautiful covers ever, all orange and gold with a stylish bottle silhouette. It’s irresistible in the way that a pretty bottle of fragrance is. But that’s not to say it’s all style and no substance. It’s very much the book of the moment and Ostrom has given related talks at the V&A as well as locally at Lutyens & Rubinstein. In person, she’s likeable and warm; when she tells me about the confessional nature of some of the conversations she gets drawn into about fragrance, it’s easy to see why people trust her with their secrets. The thing about fragrance, for Lizzie, is that it’s fairly universal – we all wear at least a bit of perfume on occasion – but there’s no shared experience connected to it in the way that there is with food. ‘Wine is an established thing to talk about and a sociable pursuit, but fragrance is often very solitary. That’s something I’m working on, to make it sociable.’ This founding philosophy spawned a portfolio

of events under her Odette Toilette brand, ranging from perfume poker to vintage scent sessions to collaborations with the Tate to put smells to pictures. This all under the banner ‘purveyor of olfactory adventures’. It’s all designed to be fun as well as informative and explorative. ‘When I first started with my Scratch’n’Sniff nights we’d have a theme that wasn’t perfume-related, maybe movies or music or men, and stimulus such as a film or piece of music or a fashion piece and we’d get people to decide which scents matched which genres, all over a glass of wine. Total strangers might suddenly bond over a shared love of Charlie.’ So is she a natural nose or can we all learn? ‘I do believe that the more you smell, the more you see. It really is practice. There are materials that I 5 used not to be able to smell but if you smell habitually you become able to.’ Thinking of smell as an impenetrable but powerful language leads to a need to understand it. Finding a way of relating to fragrance has been Ostrom’s underlying aim and this has also led to an investigation of the power of odour outside the beauty industry, and her development of a special gadget that emits a low-level scent designed to awaken appetite among people in care homes who have become unable to eat. It’s called Ode. She predicts a rise in the use of smell manipulation in the near future, with corporations harnessing the communicative power of

odour. ‘You can’t use smell in a linguistic way – there’s no traffic light system for it.’ But our general lack of smell literacy leaves us open to exploitation: ‘Casinos use smell to make us stay at the slot machines and shops play music to get us to spend. We know about music manipulation but because smell is harder to verbalise, we’re quite defenceless.’ Fundamentally, it all comes down to the simple question of likes and dislikes. What smells does Ostrom like? ‘Personally? In terms of smell my favourites are lapsang souchong and anything smoky. And tar when it’s still molten, recently laid.’ With perfume, however, she’s more fickle. ‘Perfumewise, it’s whatever my current obsession is.’ She is currently waiting impatiently on delivery of her latest late-night online purchase from an American fragrance store. ‘I get bored easily. I find a new thing and think it’s just right, then after

a few weeks I’ll think, oh no. Probably because I overapply and completely drown myself in the stuff.’ Still, there are some eternal favourites. ‘I will always go back to Diorella, that’s my number one. And I’ll always have Chanel’s Cuir de Russie and Cristalle.’ Cristalle, tellingly and probably quite predictably, was her mother’s perfume. Are we all fated to end up smelling like our mothers? ‘My mother always had four bottles on the go and she’d let me choose which one she’d wear.’ But the oft-touted idea of maintaining a single signature scent doesn’t appeal. ‘I could never have just one. There’s always something new to try.’ Plus, there’s the problem of overexposure. ‘I can’t bear tuberose any more, after I overdid it with Carnal Flower at a wedding a few years ago. I kept putting more on throughout the day and now I can’t go near it.’ And then there are the fragrances we want to like, seduced by the packaging and the idea of them, a common problem, according to Ostrom. She really wanted to like Shocking, one of the most famous perfumes of the early 20th century – ‘it’s so bizarre and wonderful but never would I wear it myself.’ Her research also led

to some surprises. ‘I thought Gloria Vanderbilt would be 4 horrible. It costs about £8 but it’s a great perfume.’ And an old bottle of Jolie Madame by Balmain from the 1950s. ‘I found it in a pharmacy that had a lot of old stock and really enjoyed it.’ As an expert on fragrance, Ostrom has become the go-to person for anything to do with scent. When the Tate was looking at interpreting abstract art into scent as part of its Sensorium display, Ostrom got a call. When Fenwicks was looking for a scent for Ascot, inspired by Pimms, Ostom was there. So as the currency of fragrance becomes more sophisticated, expect to see more of her. ◆

PEARL BOYD: What are your plans for Harrods? TOM KERRIDGE: We are doing a selection of dishes that represent ‘us’. Hand and Flowers, The Coach and Tom’s Table, the new book. We are trying to put across accessible and great food served in one of the most amazing food halls in the world.

PB: What’s your staple home recipe? TK: I’m a big fan of slow-cooked meats that take the pressure out of cooking, the sort of things that you can put in an oven and leave alone, and when you come back to them, they taste amazing. PB: What’s next for Tom Kerridge? TK: Much of the same really, just continuing to try and slowly grow the business. We are all about consistency and staff development, a little bit more television and a consumer-based programme on food, and of course, the exciting pop up in Harrods. u

PB: How will your Harrods residency differ from your usual offering? TK: It’s in the middle of the food hall so all around you people are doing their shopping. Customers will be sat at the bar, and it’s a very small choice, a three course meal showcasing great produce. PB: Is there anything you won’t eat? TK: Not that I can think of! As a chef, I’m pretty open to tasting everything. That doesn’t mean I will like it all but I’ll have a go at most things.

allow them to colour and release their oil. Once browned, remove them from the pan with a slotted spoon and set aside, with the chicken and bacon. 05 Place the pan back over a low heat and add the flour – there may be quite a lot of fat in the pan at this stage, but don’t worry. Cook, stirring constantly, for around 8–10 minutes to cook out the flour and make a thick, smooth paste. Once the paste takes on a dark golden brown colour, add the cayenne pepper and smoked paprika and cook for a further minute. 06 Add the onion, peppers, celery and garlic to the pan. Stir, increase the heat and cook for a few minutes to soften the vegetables. Throw in the bay leaves and thyme. 07 Return the chicken pieces, bacon and sausage to the pan, along with any juices that have accumulated on the plate. 08 Pour in the chicken stock and tomato juice and bring to the boil. Lower the heat and simmer gently for around 1 hour until thickened, stirring from time to time. Remove the thyme. 09 Stir in the okra and cook gently for 8–10 minutes. Now add the prawns and cook for 2–3 minutes until they turn bright pink and are cooked through. Stir in the sliced spring onions and chopped parsley, heat through for a minute then season well with salt and pepper. 10 Ladle the gumbo into warmed bowls and serve either just as it is or with some steamed rice. u

FLOURLESS DARK CHOCOLATE CAKE

umbo is a similar style of one-pot wonder to a good bouillabaisse. Created by the Creoles in South Louisiana at the turn of the 19th century, it remains just as popular today as it was then. Of course, there are many variations. Don’t be put off by the lengthy list of ingredients – once they’re in the pan, it’s not a complicated recipe. It’s just full of flavour, so give it a go.

2 large boneless chicken breasts, skinned 100ml vegetable oil • 8 chicken thighs, bone in and skin on • 4 rashers of smoked streaky bacon, diced • 500g smoked sausage or chorizo, cut into 1cm slices • 100g plain flour 2 tsp cayenne pepper • 2 tsp smoked paprika • 1 large onion, diced • 2 green peppers, cored, deseeded and diced • 4 celery sticks (tough strings removed), diced • 8 garlic cloves, finely grated • 4 bay leaves • A small bunch of thyme,

tied with kitchen string • 1 litre chicken stock • 500ml tomato juice • 200g okra, sliced into rings • 250g peeled raw tiger prawns 4 spring onions, trimmed and sliced • ½ bunch of parsley, stalks removed, leaves chopped • Salt and freshly ground black pepper M e th o d 01 Cut each chicken breast into 4 even-sized pieces. 02 Heat the oil in a large, heavybased saucepan over a medium-high heat. When hot, add the chicken thighs and breast pieces and sear for a few minutes until nicely browned. You may need to do this in batches to avoid overcrowding the pan. Remove the chicken from the pan and set aside on a large plate. 03 Return the pan to a medium heat, add the bacon and cook for a few minutes, stirring frequently, until golden and crisp. Remove with a slotted spoon and set aside with the chicken. 04 Now add the sausage slices to the pan and

GREEN CHILLI CON CARNE Ser ves 6 -8 ’ve always been drawn to the raw flavour and heat you get from green chillies and green peppers and they’re really great in this dish – mixing them with loads of fresh mint and lime makes for a lively and tasty combination. Unlike a regular chilli con carne, this one is dry in style and quite quick to make.

1kg minced pork • 1 tbsp cumin seeds • 1 tsp dried thyme • 2 onions, diced • 4 garlic cloves, finely grated • 2 green peppers, cored, deseeded and diced 8 green chillies, chopped (seeds and all) • 6 ripe tomatoes • 150ml water • ½ bunch of spring onions, trimmed and chopped • 2 tsp salt, or to taste • 1 tsp cracked black pepper • A bunch of mint, stalks removed, leaves shredded • Finely grated zest and juice of two unwaxed limes

W holemilk yoghurt tortillas M e th o d 01 Heat a large, non-stick frying pan over a medium-high heat. When it’s hot, add the minced pork, cumin seeds and thyme and dry-fry for 10–15 minutes, breaking up the meat and stirring frequently, until it’s dry, browned and crispy. 02 Using a slotted spoon, transfer the browned spicy meat to a bowl. Drain off any excess fat, keeping a little in the pan to cook the vegetables. 03 Return the pan to a medium-low heat. Add the onions and garlic and cook for about 10 minutes, stirring from time to time, until softened. Stir in the green peppers and chillies and cook for a further few minutes, then return the browned meat to the pan. Give everything a good stir and cook for another 5 minutes.

04 Meanwhile, deseed and roughly chop the tomatoes. 05 Pour the water into the pan, add the tomatoes and bring to the boil. Turn the heat to its lowest setting and let the chilli bubble away, uncovered, for around 15–25 minutes, until a lot of the liquid has evaporated. You want the mixture to be juicy but not too liquid and saucy. 06 Stir in the spring

onions, salt and pepper. 07 Finally, stir through the mint, and the lime zest and juice and allow to bubble for a couple of minutes longer. Take off the heat and leave to stand for 10 minutes to let the flavours develop before serving. 08 Spoon the chilli into warmed bowls and serve with plenty of yoghurt and tortillas, with a crisp green salad on the side if you like. u

M e th o d 01 Preheat the oven to 140°C/ Fan 120°C/Gas 1. Lightly grease a 23cm springform cake tin with butter and line the base and sides with non-stick baking parchment. 02 Put the butter and chocolate into a large, heatproof bowl and place over a saucepan of barely simmering water, making sure the bottom of the bowl is not touching the water. Allow to melt, then stir until smooth. Remove the bowl from the heat and cool slightly. 03 Using a freestanding mixer fitted with the whisk, or an electric hand mixer and bowl, whisk the eggs, egg yolk and sugar together until the mixture is light, fluffy and increased in volume. Carefully pour in the melted mixture and fold gently with a spatula to combine, trying not to knock out any air. 04 Pour the cake mixture into the prepared tin. Bake for about 40–45 minutes until set. It will soufflé up a little and a crust

will form on the top. Remove from the oven and leave to cool in the tin – the cake will settle and sink down in the centre. 05 Once it’s cooled, press down and flatten the surface a little with a palette knife – this helps to give it a lovely, soft and gooey texture. Release the sides of the tin and peel away the parchment from the sides of the cake. 06 Invert a serving plate over the top of the cake and turn both over, to release the cake onto the plate. Remove the tin base and the baking parchment. 07 Either serve the cake just as it is, with cream or crème fraîche, or finish with any combination of whipped cream, raspberries, toasted nuts and grated chocolate. u

way from the bustling, well, politely buzzing Brompton Road (this is Chelsea, after all) lies My Hotel’s My Chelsea. The in-house restaurant, My Kitchen, offers a fusion of modern British fare and Mediterranean and North African cuisine. On today’s menu: crushed avocado on rye toast (with poached eggs added) and eggs Kaletine – My Kitchen’s riff on the classic eggs Florentine – which are enveloped by a decadent, creamy hollandaise sauce and sit perched on of-the-moment wilted kale and an English muffin cushion. Sadly the side order of sweet potato fries, lightly dusted in parmesan cheese and rosemary salt, arrives cold – something even their perfect ratio of crunchy exterior, mushy inside could not fix. Still, My Kitchen’s other patrons seem to be enjoying their My Continental Breakfast Board, which features smoked cheddar, Manchego and cream cheese, bircher muesli, fruit salad and a croissant. On the drinks front, the peaceful café’s Bloody Mary impresses my brunch guest. Yet with no soy milk on offer, I’m left to seek my caffeine fix elsewhere. Thankfully My Kitchen’s bright, Scandi-influenced British décor and maple butter-covered blueberry and ricotta pancakes provide ample distraction. Though adventurous diners may be disappointed by the lack of said Mediterranean and North Africaninfluenced breakfast options, a morning meal at this pretty boutique hotel is lovely nevertheless. ◆

here is no shortage of Japanese restaurants in London. Nor is there a limited range of fine dining options in Mayfair. But thanks to Tokimeite’s highly anticipated arrival to Conduit Street, you won’t want to go anywhere else. Aside from a decadent brown and gold-toned interior designed by the esteemed Yasumichi Morita, and wonderfully attentive waiting staff who demonstrate what it really means to give good service, that’s not why you’re here. You’re here because you want to see Yoshihiro Murata showcase his seven Michelin star-winning skills. Boy, does he deliver. Murata’s menu highlights his mastery in kaiseki, the highest level of Japanese cuisine, via flakey, near creamy rare confit marinated salmon and Tokimeite sumiyake Wagyu steak: thinly sliced, melt-in-yourmouth authentic Japanese Wagyu beef

from Zen-Noh-approved suppliers. The velvety Wagyu rei ribeye shabu shabu and its tangy ponzu jelly illustrates Murata’s umami expertise – especially when consumed in tandem with a Takara Fizz, Tokimeite’s take on the peach bellini – where the tempura moriawase’s delicately battered, terrifically crisp prawns and vegetables should not be underestimated. Theatre arrives in the form of sashimi nanashu, a glorious red lacquer box spouting ethereal tufts of smoke and protecting the seven kinds of sashimi within. As you finish the meal with moist, brownie-like chestnut cake or oozey apple tartin with a salted caramel smear you finally appreciate Tokimeite’s meaning, which describes the feeling of anticipatory ‘butterflies.’ Why? Because this is precisely how you feel about your next visit. ◆

ELYSIA AGNEW: First of all, how did your career start and what inspired you to go into contemporary embroidery? LOUISE GARDINER: I live and grew up on a dairy farm in Cheshire and when I was 14 I started selling milk out of the window so I think thatâ&#x20AC;&#x2122;s where my entrepreneurial skills kicked in. From then on I had my own business, and when I went to art college I immediately started putting on exhibitions, inviting everyone I knew to enjoy my work. I am a very intuitive and spontaneous person so I donâ&#x20AC;&#x2122;t tend to plan, the concepts behind my work are often about grabbing the moment. They are very much about the feelings and emotions of life, rather than just about flowers and leaves. EA: You made the jump from designing cards and wrapping paper to the embroidery of luxury products, why? LG: When I was younger I did lots of humorous and figurative work, so those designs were then developed into a card

I AM living proof that EMBROIDERY CAN BE FAST and FURIOUS range. This helped support my career as a young artist. Now with more experience I have moved into luxury products, so I’m working with silk scarves and velvet poufs and cushions. EA: Tell us about the two-metre quilt you embroided for the Liberty window this year. Louise Gardiner in her studio working on an embroidered and studded silk artwork.

LG: It was a commemorative project to celebrate 140 years of Liberty, and as always with a lot of big projects, the deadline was extremely short. I had just 20 days to complete the quilt. I think I am living proof that embroidery can be fast and furious. I delivered the quilt and then collapsed. It was then displayed in the window where I actually spent one afternoon doing live demos, which was fun. Passers-by were looking very perplexed, but the feedback was great, I got a few smiles and I blew a few kisses. EA: What can visitors expect from this exhibition? LG: I am quite literally working myself to the bone creating new pieces for the show. There are big silk quilts and gorgeous new cushions and ridiculously large poufs. It’s going to be a show that really celebrates embroidery

as a contemporary and beautiful medium. It’s going to showcase the fact that stitch is up there in creating atmospheric and exciting work. Also, I think it’s a real celebration of colour and my own personal joie de vivre. It’s a very positive exhibition, really encouraging and hoping to inspire creativity and joy. Textiles are often left in the corner of the art world, but for me the challenge is to promote them as an exciting medium. We are surrounded by textiles every day. They are such an important part of our lives. It’s a very special medium. EA: What is next for you? LG: I am very much focusing on the exhibition because it’s the first time I have exhibited a solo show and it might only be a small gallery but it is a very beautiful gallery in such a fantastic location. But I have recently been commissioned by a celebrity, I can’t tell you who yet but it’s for a really brilliant client. Given the addictive nature of smartphones, should they be allowed in our schools? With a possible ban in the offing, Absolutely looks at the evidence Wo r d s A M a n d a C o n s ta n c e

hat’s your child like with a smartphone? Does removing it feel like stealing a banana from a starving monkey? Given their addictive power over our children, what place do they have in our schools? That’s what the government’s education advisor, Tom Bennett, has been tasked with finding out. As part of a wide-ranging inquiry into discipline in schools, he’s investigating the effect of mobile phones in classrooms and whether they should be banned. Bennett says: “Technology is transforming society and even classrooms – but all too often we hear of lessons being disrupted by the temptation of the smartphone. Learning is hard work and children are all too aware of this. So when there's a smartphone in their pocket offering instant entertainment and reward, they can be easily distracted.” More than 90 per cent of teenagers now own mobile phones – the majority of which are smartphones– yet there is now compelling evidence that academic results improve when phones are banned from schools. A recent study from the London School of Economics found phone-free classrooms showed sustained academic improvement with test results boosted by six per cent. The research, published last May, found that banning mobile phones from classrooms could benefit students’ learning by as much as an additional week’s worth of schooling over an academic year. The report also suggested that banning phones would most help low-achieving children and those from the poorest backgrounds. There is currently no official government policy about mobile

SMARTPHONES – like NUCLEAR WEAPONS – cannot be disinvented. WE MUST find ways to CONTROL THEM phone use in schools and school rules differ widely. One third of schools ban mobile phones outright - GCSE results at Ebbsfleet Academy in Kent have almost doubled since the school banned smartphones in 2013 - with a further fifth limiting their use in lessons; other schools allow phones on the school premises, provided they are kept on ‘silent’ all day. Boarding schools have an additional set of challenges. Heathfield School in Ascot has dealt with it by giving girls aged 11-13 old-fashioned mobile phones with no internet access, apps or camera; they can only ring or send text messages. Pupils are allowed smartphones in

Year 9 but have to hand them in before they go to bed. Last month, the head of Ofsted, Sir Michael Wilshaw, called for headteachers to ban mobile phones from secondary schools but not everyone agrees. Brian Lightman, general secretary of the Association of School and College Leaders, says: “Smartphones are powerful technologies which most people use in their working lives therefore schools must teach young people to use them responsibly. John Moule, warden at Radley School, says: “The use of mobile phones is encouraged if the teacher wants them used. It can be extraordinarily helpful in a lesson to have several internet searches going on or for an experiment to be videoed.” Andrew Halls, head of King’s College School in Wimbledon, says smartphones “can be a huge distraction but, like nuclear weapons, they cannot be disinvented. As schools, we have to find ways to permit them but to control them. A screenshot of the board can be a useful revision tool.” As yet, Bennett is undecided about a blanket ban. “My personal recommendation is that schools think very cautiously and carefully before allowing them.” He is concerned that children are getting access to the technology too young. “People ask me, ‘When should I give my child a smartphone?’ and I say, ‘Whenever you’re comfortable with them viewing pornography’, because their curiosity will take them there. “My personal belief is that I don’t think a child should have a smartphone until they are 16, unless it is under adult supervision.” ◆

Following a warm greeting by friendly staff, we are whisked off to our villa. The whole process is seamless and stress-free from start to finish. Because service is paramount at Amandari: the perks of your stay include a return car service into Ubud whenever the mood strikes, and (parents, take note) four hours babysitting per day. The resort is very much grounded in its Balinese roots and its surrounding community too – local schoolchildren come here to practice Balinese dance (you might be lucky enough to catch a performance one evening during the week), and villagers use the resort’s grounds for their daily tasks.

Due to generous spacing between villas, we don’t see or hear any of our neighbours at all.

here’s a farm tour every Saturday, which takes in the goats (they have their own trampoline), rabbits and pigs as well as ducks bred on the River Avon for shooting. Sammy breeds ponies so pony grooming is on offer. For children there are rope swings and a climbing net; hammocks are slung between trees; fishing for trout is an option. u

idgham Farm is one of only two sites in the UK to offer log cabins, though more are set to open. On the edge of the New Forest in Hampshire, this is a beautiful location due to its acres of insanely beautiful woodland and stylishly laid out hillside tents; cabins are at the top of the site and you’ll probably need a 4X4 to get all the way up. We didn’t, and we arrived after sunset to proper no-moon rural darkness so farm owner Sammy Sykes kindly drove us and our luggage all the way. The best time to visit, she says, is spring because of the huge expanse of bluebells everywhere, but we would love to see the forest in snow-covered glory. u

DON’T FORGET

uxurious as they may be, these are log cabins in a forest. There is no electricity. On waking up, you light the fire and always keep a large kettle on the stove for the washing up. It’s hard to beat an evening spent playing cards by candlelight in a log cabin. u

Well, an examination of the new Q7, launched this summer, will give us a number of useful pointers, as it is a good distillation of what makes brand’s cars so appealing – and why cars with those four rings on the nose are so darned popular these days. Starting at the outside, the first thing you notice about the Q7 (apart from its sheer size) is its clean, unfussy exterior design. More angular than the previous first-generation model, it cuts an imposing dash on the road – especially with that large grille – but the proportions belie its size when you look closely at it, particularly in profile. It’s not easy to make an SUV look good, but Audi’s designers have pulled it out of the bag. Step inside the Q7 and you get to the heart of why Audi has become such a successful carmaker.Audi interiors are widely accepted as among the best in the car business, their combination of high-quality materials, well-executed ergonomics and practical, intuitive technology having huge appeal to buyers. The Q7 is a case in point: Audi has turned the luxury dial up a couple of notches, using soft leathers, Alcantara, wood and aluminium to crate a modern, cossetting environment in the car. The cabin is also brilliantly packaged. Despite the Q7 being shorter and narrower than previous models, there’s more space inside, with extra headroom and shoulder-room. The second-row seats also move forward and back, so if you need to use the third row seats, even adults can manage to squeeze in.

Sweepingly elegant from first sight, Alchemi Group drew inspiration from the brick and render buildings surrounding Westbourne House, to re-invent the drab exterior with elongated Petersen Koluma brick sections, creating incisive definition between floors. Laura Marino says: “We aspire to always use the best quality materials for all of our developments, which is why we flew out to the Petersen factory in Denmark with the Stiff + Trevillion team. We felt it was important to see first-hand the level of craftsmanship that goes into the beautiful bricks before specifying them for the project.” The mix of contemporary flair and homage to the past is also reiterated in the timeless sophistication of

t would seem that we cannot get enough of Huf Haus, the pre-fabricated German homes made famous by the Channel 4 TV series Grand Designs. The company recently built its 200th in the UK and yet, such popularity is hard to fathom. The Huf Haus does not fit the accepted norms for a classic new-build luxury home. As London’s leafier suburbs bear witness, these tend to be Georgian, Victorian or Arts-and-Crafts influenced designs.

Just how much the Huf Haus is a design departure can be seen at the company’s new showhouse overlooking the Brooklands motor racing circuit in Surrey. It’s a fitting place to have built it – Huf Haus is the Audi of house building as the company delights in embracing both Vorsprung (‘progress’) as well as Technic. The latest great leap forward, as featured within the show home, is insulation so efficient that the property has zero fuel bills, the company claims, helped by a heating system that runs off the power of melting ice. The Huf Haus is also popular because it is so modular. Peter Huf, chief executive of the company, says: “The layout of the property safeguards absolute flexibility and while a family might outgrow a standard family home, the layout of the HUF accommodates growing families and their changing needs.” But it’s the speed of their construction that has made the Huf Haus a growing trend. A traditional build can take a year or more and requires an architect, designer,

planning consultant and an army of builders. A Huf Haus normally takes only a week to make watertight, 12 to 14 weeks to fit out and just a handful of technicians to build. The company has been heading up Europe’s ‘pre-manufactured’ home revolution since the early 1960s and it now exports to China. But Huf Haus got its big break here back in 2003 when Channel 4’s TV programme Grand Designs featured Greta and David Iredale, a retired couple who were building a four-bedroom Huf Haus in Waltonon-Thames. Overnight the fortunes of the company were transformed, helped by presenter Kevin McCloud’s ecstatic marvelling over the ‘German spaceship’; its engineering quality; the ‘construction superheroes’ who put it up and the fact that it took just four days to build against a six-day schedule.

There is just one downside to the Huf Haus – the expense, which can work out more than a traditional build. While the entrylevel Huf Haus, the Modum, costs approximately £300,000 to build the bigger Huf Haus designs start at £500,000 – and that’s excluding the cost of the land. But the good news is that, once built, a Huf Haus can be worth 5-10% more than its traditional counterpart of the same size, making up for the extra construction cost. u For more information visit

My career in property started at a young age of just 17, where I was offered a job in the lettings department working for a well known agency in Tunbridge Wells. I immediately enjoyed the camaraderie and what the industry provided, so I have this company to be thankful for: it showed me the direction of where I wanted my career to start. Even though I was still very young, I threw myself in wholeheartedly to real estate and realised that this was definitely what I wanted to be doing. After a year of working in the industry, all of my friends were finishing their A-Levels, my parents upped sticks and moved to Devon, so I decided to head off to travel the world. I felt it was the right time to go and explore before settling into my career in property, otherwise Iâ&#x20AC;&#x2122;d never get the opportunity.

EVEN THOUGH I WAS VERY YOUNG, I THREW MYSELF INTO REAL ESTATE AND REALISED THAT THIS WAS DEFINITELY WHAT I WANTED TO BE DOING.

I had a fantastic time visiting many countries, relishing the culture, visiting close family who reside in Australia, and generally following the sunshine being the sun worshipper that I am. But all good things must come to an end, my clothes needed washing, the money ran out and I just longed for a good home cooked meal, so I had to return to England and start my search for a job. I was very lucky that the company in Tunbridge Wells offered me my old position and I stayed there for six months. But as my parents had already moved, there was not much left for me in Kent and I moved to London seeking a position in estate agency.

I have always been very keen in making a career for myself and earning my own money. My first job in London was as a Property Manager in West London, where I stayed for three years and then moved to a large international corporate company in Chelsea where I started as a Lettings Negotiator. I was quickly promoted to Senior Lettings Negotiator and started to make my way up. However, my branch manager at the company had moved to Farrar and within months I was offered a position to start in the Lettings Department. I loved that Farrar was, and is, an independent company. Having felt very involved from the beginning and a key member of the team, I worked my way up to being a Senior Lettings Consultant valuing properties in the Royal Borough of Kensington and Chelsea. I have been at Farrar for eight years now and have seen Fulham Road change in many ways and it will be interesting to see what happens in the next eight years. u
