PREPARING FOR THE

"BIG GAME" aybe you lost a bet. Maybe you drew the short straw. Maybe you have demanding family in town. Maybe you just like athlete asses. Or... maybe you just really like football. Hey, it happens. But for one reason or another, you have ended up responsible for hosting a viewing of the "big game." That means food. And you aren't about to serve your sister's 7-layer dip, nachos or... well, whatever else those people nosh on in between first downs and sideline interviews of hotties.

First, let me say this. I am a huge football fan and have been since I was young. If hosting for the big event, I tailor snacks to the guests. But if I am going for a mixed crowd with some sense of tastes beyond some sisters' 7-layer dip, I go Greek – well Greek/Middle Eastern. Hey, they were athletic, butch and they frequently... let it all hang out! Base your snacks on the football standards of chips and dips. Kick it up a Greek notch and even the hard-core football fans won't be disappointed. Mine never have been, even if sometimes I am just waiting for the commercials and halftime wardrobe malfunction potential.

BEST EASY HUMMUS From Her Majesty Ina Garten at foodnetwork.com To me, the hot sauce is optional, I replace with white pepper to taste and increase the garlic. • 4 garlic cloves • 2 cups canned chickpeas, drained, liquid reserved • 1 1/2 teaspoons kosher salt • 1/3 cup tahini (sesame paste) • 6 tablespoons freshly squeezed lemon juice (2 lemons) • 2 tablespoons water or liquid from the chickpeas • 8 dashes hot sauce Turn on the food processor fitted with the steel blade and drop the garlic down the feed tube; process until it's minced. Add the rest of the ingredients to the food processor and process until the hummus is coarsely pureed. Taste, for seasoning, and serve chilled or at room temperature.
