Weekenda was founded by Georgia’s father, Pete Smith, and grew from a single holiday home in Kangaroo Valley to a thriving business managing over 260 properties across the Hunter Valley, Central Coast, Lake Macquarie, and Newcastle.

“Weekenda began almost by accident,” said Georgia.

“Our neighbours noticed that it was booked much more often than theirs, so they asked him to start managing their properties. It developed into a genuine, in-demand business that sold to Alloggio in late 2023.”

Georgia began her own journey working in reservations and property management while studying at university, eventually moving into trust accounting and revenue management. She visited the U.S. annually to attend short-term rental conferences, bringing home insights and innovations that would help professionalise the Australian market. Her contributions helped Weekenda lead the way in adopting cutting-edge systems, such as keyless entry, guest compendiums, dynamic pricing tools, and integrated property management software. She helped transform Weekenda into a professionally run, tech-driven business long before most others had caught on.

“I fell in love with the work,” Georgia reflects.

“It’s a people business. It’s about building relationships — with owners, with guests, and with the local tourism ecosystem. Holiday homes are so much more personal than hotels or long-term rentals. You’re managing someone’s home and someone else’s holiday all at once. That means doing it with care, heart, and detail.”

When her father sold Weekenda to Alloggio, Georgia continued working with the company. But by 2025, she was ready to step out on her own — and bring her own vision to life.

“I wanted to create something here that felt authentic, personal, and future-focused.”

With the launch of Hunter Holidays, Georgia is doing things differently. Her new venture is focused, agile, and built from the ground

up with the guest and owner experience at its core. It’s also deeply rooted in the region she calls home.

“I moved to the Hunter Valley ten years ago,” Georgia says. “I’ve got three young kids now and I just love the lifestyle — the space, the community, the landscape. Even though I grew up in Sydney, my grandparents lived on a property on the north coast, and I loved it there. I always knew that I was a country girl at heart. This is home now. I wanted to create something here that felt authentic, personal, and future-focused. Something that delivers real results for owners and unforgettable experiences for guests in the heart of this wonderful community.”

When Chef James Orlowski moved Estancia to its new home at Adina Vineyard & Olive Grove earlier this year, he wasn’t just relocating a restaurant — he was planting roots.

Having already cultivated a loyal following for Estancia’s bold Latin American and Mediterranean-inspired menu, the move to Lovedale

marks a new chapter — one with more space, more potential, and more connection to the community and landscape that surrounds it.

“We’re not chasing fine dining,” says James. “We’re offering great food that’s approachable — something between the pub and the white tablecloth. It’s casual but considered. You can settle in, let the kids run around, and enjoy yourself without feeling rushed.”

Now open five days a week for brunch, lunch, and early dinners — with special themed evenings Thursday to Saturday — Estancia is filling

a unique niche in the Hunter Valley. For locals and visitors alike, it offers a welcome landing spot after a day of tastings, a relaxed venue for a family meal, or a long, flavour-packed lunch with friends.

Set among Adina’s 55 hectares of vines and olive groves, the restaurant is currently operating from a shared space in the estate’s original cellar door, which has been extensively refurbished. By midSeptember, Estancia will be a dedicated dining space with an extended deck, a beautiful private dining room, and a layout better suited to James’ vision of relaxed, high-quality hospitality.

In parallel, Adina is also preparing to launch The GT Room —a new addition to the estate. This private, purpose-built space is designed to celebrate the elegance of classic motoring while showcasing the best of the Hunter. It brings together estate-grown wines, Mediterraneaninspired dining, and relaxed luxury accommodation in a setting that’s refined yet warmly welcoming.

The GT Room has been designed as a destination for drive-day stopovers, collector gatherings, corporate retreats, and weekend escapes. A place where guests can enjoy good food, great wine, and exceptional cars in a beautifully curated space surrounded by vines and olive groves. Estancia will be the caterer for functions and events held in the space.

In the meantime, guests can still enjoy alfresco dining on the deck, the expansive views, and snack on some charred vegetables and a plate of smoky grilled meats fresh off the parilla.

True to its roots, the menu is still anchored by fire, flavour, and generosity. Expect dishes like ceviche with bright citrusy zing, handmade pasta tossed in slow-cooked ragù, and Estancia’s signature Sunday parilla — a Latin-style mixed grill cooked over open flames.

There’s now a stronger lean towards modern Australian cuisine, too, with plenty of vegetarian options and lighter snacks designed to suit the pace and palate of Hunter Valley afternoons.

“We’ve added things like steak frites night and pasta banquets to bring in different crowds,” says James. “Some families come straight after school, others roll in after a day at the wineries. We’re giving people reasons to come back — and to stay a while.”

The family-run ethos is very much in evidence here. James’ wife, sons, and daughter all lend a hand, whether in the kitchen or front of house. His culinary inspiration is deeply personal as well. A decade

living and working in Peru shaped his palate and passion, with some of the dishes — particularly the desserts — coming courtesy of his ItalianPeruvian mother-in-law, a pastry chef whose recipes are now house favourites.

“It’s always been about cooking with soul,” he says.

“We use fire, smoke, seasonal produce, and a lot of love.”

The move to Lovedale has only strengthened Estancia’s connection to that ethos. The fertile surroundings allow James to grow herbs and vegetables on site, and the welcoming spirit of the local business community has been a major bonus.

“Lovedale feels like the gateway to the Hunter Valley,” he says.

“It’s accessible — for visitors and locals — and Adina itself is like a little hub. You’ve got the villas, the day spa, the cellar door, the olive tastings… it’s a great place to spend the whole day.”

For Adina, the partnership is part of a larger evolution. After the long and successful run of Emerson’s Restaurant, attracting a new, dynamic venue was a key goal of the estate’s broader refurbishment strategy.

“We were thrilled when James reached out,” says Adina’s Marketing Manager, Paul Sutcliffe. “His food and vision were a perfect fit. Estancia complements everything we’re working towards here — relaxed luxury, seasonal produce, and a strong sense of place.”

But for James and the Estancia team, the focus remains simple: good food, good wine, and good company.

“This is just the beginning,” he says. “We’re building something real — something grounded. Whether it’s wine on the deck, a steak straight off the fire, or a long lunch with friends, we want people to feel at home.”

Intouch: You live and work on the land - how does that personal experience shape the way you work?

Tyson: Living it makes a difference. I’ve been the one out in the paddock fixing a broken fence in the rain or chasing stock that has slipped through a gate. I’ve felt that panic when a storm rolls in and the water is rising. That first-hand understanding changes the way you talk to buyers. It’s not anecdotal, it’s real. I can sell the experience, not

just describe the property. Whether it’s pointing out riding trails you’ve actually ridden, or explaining how the land performs through seasons, that lived experience is something I can pass on with genuine insight. And people feel that.

What drew you to real estate, and why rural real estate in particular?

Real estate found me. But the journey into acreage and lifestyle properties was intentional. It resonated deeply with who I am. These are the properties I love selling and the people I enjoy working with. They’re my people. I truly believe rural and lifestyle properties cannot just be described; they need to be felt. That takes storytelling. Yes, the campaign needs to be strong and strategic, but more importantly, it has to connect. That’s where the magic is, when the right buyer feels something.

You’ve recently joined McGrath Rural after years of running your own agency. What made the timing and the brand the right fit?

After 14 years in my own business, I wanted to be able to sit across the table from my owners and honestly say, I can bring you a national

and global audience and deliver on that promise. McGrath allows me to do that without compromising the personal service and relationships that matter to me. It’s not about walking away from what I’ve built, it’s about evolving it. With McGrath, I have the tools and the reach, but also the freedom to keep doing things my way, with care, substance and authenticity.

What do you think builds trust in a real estate relationship, especially in the rural sector?

Trust is not something you can pitch; it is something you earn, quietly, over time. In the rural sector, people are naturally more cautious. They have often built their properties from scratch or lived there for decades. That deserves respect. I don’t push or overpromise. I turn up, do the work, and keep showing up. That’s how you build trust, through consistency and care, not noise.

From boutique Airbnb’s to working farms and equine estates, you have sold a wide range of properties. What is your approach when it comes to marketing such unique assets?

Most buyers today are not set on a suburb; they are wrapped up in a dream. They are chasing a feeling, a change, a story they want to step into. But the major web portals do not always help them find it. They are built around boxes and postcodes, not passion. My approach is to uncover the true essence of a property and tell its story in a way that helps the right buyer discover it, not by chance, but by design. I want it to stop them mid-scroll and make them feel something, even if they didn’t know they were looking for it.

What is something most people don’t realise about buying or selling rural property?

They underestimate how much emotional attachment can cloud price expectations. It’s understandable; for many, this is a lifetime of memories, effort and identity. But when emotion starts steering the ship, it can delay the right result. A good agent helps separate the sentiment from the strategy, not by being cold, but by being clear. Most rural owners want a straight shooter who is willing to have the right conversation at the right time. The best outcomes often come from having those honest discussions early. Part of that is helping people accept that while you may never be able to fully transfer your love, history and effort to the next buyer, you can make sure it is fairly rewarded in the result. It’s delicate. One party is emotionally invested; the other is imagining a future. My job is to help them meet somewhere in the middle.

For those considering a lifestyle shift to acreage, what advice would you offer them?

You won’t really know if you’ll love it until you are living it. If you feel the pull, jump in and follow the dream. You’ll soon work out whether

you feel like a ‘slave’ to the property as some describe it, or if, like me, your mind starts to race with the next project or improvement. When that happens, it’s no longer a job, it’s a passion, and you start leaving little pieces of your personality in the place.

The biggest advice I would give is to look beyond the obvious. The hidden gems are often sitting just outside the spotlight, suburbs that don’t show up in the top searches but are full of surprise, value and soul. Get back to the old-fashioned way of exploring. Jump in the car, fill the tank, stay overnight in a town you’ve never heard of, and see what you find. That’s when the magic happens.

And if time is not on your side, find a good agent who genuinely understands what you’re chasing. A gentle nod toward a suburb you might never have considered could change everything. Or consider working with a buyer’s agent who can cast the net wider than the well-known names. Because sometimes, the dream you’re looking for is sitting just around the corner.

Finally, what drives you? What is the most rewarding part of what you do?

For me, it is about discovery and connection. I still get that spark of excitement when I find an unexpected gem at the end of a quiet country lane. Then comes the reveal, a stunning estate I’ve never seen before. That moment never gets old.

On a personal level, I find real joy in seeing beautifully crafted landscapes, thoughtful architectural elements and artistic touches. I have a deep appreciation for people who create spaces that reflect their own identities, and I always feel fortunate to walk through those gates and be trusted to help tell their story.

One of the things that means the most is completing the circle. When a buyer who purchased through me years ago comes back as a seller, and I get to see how they have transformed the place, how they have left their own mark, it is a real honour. Being part of that full journey is incredibly rewarding. It is more than just a transaction. It is a shared chapter in someone’s life.

The Dux doesn’t follow. It leads. Crafted only in exceptional vintages, The Dux is a master blend of the finest Shiraz parcels across the Latitude 32 estate and selected grower vineyards. Meticulously matured in premium French oak and blended barrel by barrel, this wine is built to impress and made to last.

TASTING Deep crimson in hue, it opens with lifted aromas of cherry, plum and subtle violet, layered with hints of cedar, pepper and oak spice. The palate is silky yet firm, with black fruits, savoury earth, and graphite, with a whisper of cured meat.

FOOD MATCH Chargrilled meat or a hearty wild mushroom risotto with plenty of parmesan cheese.

Meerea Park

XYZ Shiraz

The XYZ brand wines constitute modern styles of Hunter Valley Semillon, Chardonnay and Shiraz. Sourced from the ‘Lochleven’ vineyard in Pokolbin, the handpicked and vineyard sorted parcel of Shiraz was crushed and then fermented in two tonne open fermenters with daily plunging and pumping over. Maturation was 18 months in French oak puncheons.

TASTING A bright dark crimson colour, aromas of dark fruits, plums and blueberry jam. The French oak adds spice and complexity. The tannins are silky and fine with an impressive length of flavour for an entry level wine, the end result of a great vintage.

2023 Reserve Malbec

2022 Heavy Metal

Heavy Metal is one of the best known Hungerford Hill wines. The 2022 vintage is a Shiraz Cabernet blend coming from the Sweetwater vineyard. Due to the terroir of Sweetwater this wine will be captivating and layered.

TASTING With hints of ripe blackberries and dark cherries coming through from the Shiraz and the Cabernet bringing cassis notes. The two together include nuances of tobacco and dried herbs.

Medium to full body, the dark fruits from the nose transition over to the palate with a well integrated tannin structure.

FOOD MATCH Meat, meat and more meat! A nice charred grilled steak or a juicy lamb roast.

The Still House Tempranillo is sourced from a one and half acre block on the Ben Ean Vineyard. This planting is believed to the be oldest planting of Tempranillo in the Hunter, planted in the mid 1990’s. Tempranillo is a variety that is wonderfully suited to the warm climate of the Hunter Valley.

TASTING With vibrant red hues balancing out the lifted, perfumed, floral and savoury nose with fruit aromas. Upfront flavours of blood plum and raspberry give a mid-weight and gamey mouth feel. The mid palate is spicy with flavours of dried herbs.

The carefully handpicked Shiraz fruit comes off Elbourne’s 40 year old “H.A.E” single vineyard of only 4 acres. 2019 proved to be a high-quality red vintage in the Hunter, with dry and hot growing conditions. Only 250 dozen produced and is affectionately named after Adam Elbourne's son Hugo Arthur Elbourne!

TASTING The intense blackberry fruit colour has a bold palate of dark cherry, plum, good spice and chocolate notes. High quality French oak barriques frame the tannins superbly (25% new French oak).
