Hunter Valley Christmas Lights Spectacular Returns with New Attractions

The Hunter Valley's Christmas Lights Spectacular is underway and runs until 26 January, transforming Hunter Valley Gardens into a festive wonderland with over 4.5 million lights across eight acres. New attractions this year include the HO HO Harvest area, The Evergreen Tavern, and interactive Nutcracker Storytime. Each December, just beyond the quiet little village of Broke in the Hunter Valley, the landscape softens into a sea of fragrant purple, reminiscent of the lavender fields of Provence, France. This exquisite sight is the Hunter Lavender Farm, open to the public for just four precious weeks per year. This season is open from 6 December to 4 January, and it’s a fleeting window of beauty that has become one of the most enchanting seasonal experiences in the region. Visitors come to walk among the blooms, breathe in the scent of summer, and enjoy a slower pace in the country. For many, it’s become an annual pilgrimage.

Around 30 per cent of visitors to Hunter Lavender Farm are returning guests - lavender lovers who’ve become part of the farm’s story, eager to see how it grows and changes each year. This year

marks the farm’s fourth lavender season, and with it comes a fresh theme: “Summer Smiles in Bloom.” This year’s theme celebrates the joy and colour of summer in full bloom - a time to wander, taste, and smile among the lavender fields.

“We wanted this year’s theme to capture the happiness that lavender brings,” said founder Marianne Villanueva. “It’s about creating moments that make people smile, whether it’s walking through the rows, enjoying a cocktail under the summer sun, or finding the perfect handcrafted gift.”

For Marianne and her husband JR, the sight of their farm bursting with colour is more than a seasonal spectacle; it’s the living result of years of hard work, courage, and vision.

Their story begins far from the Hunter Valley, in the countryside of Zambales in the Philippines, where they both grew up surrounded by nature. The pair first met in high school but followed separate paths for many years. Marianne eventually migrated to Australia in her twenties,

building a successful corporate career in finance. JR followed several years later, and in 2014, they married in the Hunter Valley - the very place that would later become the heart of their new life together.

It wasn’t until 2018, on their honeymoon in Provence, France, that the seed of Hunter Lavender Farm was planted.

“When we both saw lavender as far as our eyes could see, he was just as captivated as I was,” said Marianne.

“It was surreal, and the memory has become an inspiration for our farm today.”

In 2019, during a weekend visit to the Hunter Valley, Marianne and JR came across a 14-acre property in Broke surrounded by vineyards and olive groves. They saw the potential straight away.

“We wanted something unique that would complement the charm of the area while being sustainable,” said Marianne.

“Lavender felt right - it’s beautiful, therapeutic, and thrives in this environment.”

They got to work transforming the land, clearing and planting by hand with two small children by their side. What began with a bold one-acre planting of 4,000 lavender bushes has since flourished into 15,000 plants across several varieties, which has become a testament to their hard work and faith in their vision.

“We took a gamble and planted big from the start. Everyone told us to start small, but we went with our instincts, and it paid off. Basically, go big or go home!

“We’re focused now on the continuing health of our plants, the efficiency of our maintenance and sustainability, and how to produce more flowers. We may increase the number of plants sometime in the next few years, but for now, we optimise what we’ve planted.”

Hunter Lavender Farm opened to the public for the first time in December 2022, and its popularity was instant. Each summer since, the farm has welcomed more visitors, added new experiences, and introduced a fresh seasonal theme to celebrate the lavender in bloom.

In 2022, the theme was “Summer at Hunter Lavender Farm,” a simple invitation to wander the fields and experience the farm's beauty for the first time. 2023 brought “Family Fun in Full Bloom,” encouraging families to enjoy the lavender season together, while 2024’s “A Sensory Journey” invited guests to immerse themselves in the colour, scent, flavour and benefits of lavender.

fragrant. This season, “Summer Smiles in Bloom” promises to be the most vibrant yet and highlights the sheer joy of the experiences on offer.

More than just a beautiful place to visit, Hunter Lavender Farm has become an authentic sensory experience. It’s a celebration of scent, taste, and sight that captures the essence of summer in the Hunter Valley.

Guests can start their visit with a Lavender Field Walk, winding through rows of soft purple blooms buzzing with bees and filled with the fragrance of fresh lavender. It’s the perfect moment for photos, reflection, or simply soaking up the peaceful atmosphere. To maintain that sense of serenity, visitor numbers are capped at 75 per time slot. For those looking to capture the magic, sunset photo sessions offer golden-hour light over the fields, and professional photography sessions have become a favourite for couples and families alike, celebrating special life moments or simply capturing precious memories.

Where there’s lavender, there are bees, and the farm has embraced this natural connection. With Australian invented beehives, visitors can discover the fascinating world of honey production through two hands-on experiences: the Honey Harvest Experience ($65) or Beekeeping for Beginners ($115). Participants suit up in protective gear, light a bee smoker, and explore an active hive to see firsthand the inner workings of a buzzing colony, finishing with a taste of freshly harvested honey.

At the heart of the experience is the Lavender Bar, where visitors can cool off with a lavender-infused cocktail, or the ever-popular lavender gelato, now available in new flavour combinations. This season’s menu features summer-inspired treats that highlight the farm’s essence - think lavender lemonade, lavenderinspired matcha and coffee creations. The farm shop and distillery have also expanded their retail display this year, featuring their handcrafted lavender products including pure lavender essential oils, bath and body products, candles, dried lavender, lavender sachets, eye pillows, heat packs, and even gourmet food products like lavender tea, lavender simple syrup, lavender rock candy, and lavender honey. There are

several themed gift packs available, too. This year sees the launch of their Australian Lavender and Botanicals collection, inspired by Australian native flora. Visitors can learn how essential oils are distilled on-site.

More than just the beauty and magical experiences, there are strong therapeutic reasons to visit the farm and enjoy its products. “Before we moved to the Hunter Valley, I worked in a high-pressure corporate job, and lavender was my go-to for calming the mind and recharging the body,” said Marianne. “It’s always been about that connection between mind and body, and everything we create, from our products to our experiences, is rooted in that principle.”

This focus on wellbeing inspired the Lavender Labyrinth, a unique meditative experience based on ancient labyrinth-walking traditions. Guests follow the winding path to the centre, setting an intention as they move. This mindful, movement-based meditation helps clarify thoughts, ease tension, and deepen the sense of calm and joy that comes naturally from a visit to the farm.

Building on the farm’s focus on wellbeing, the Yoga in Lavender Bloom experience on New Year’s Eve has quickly become a highlight of the season. Introduced during our very first season, the session combines a 60-minute yoga flow with a sound bath, set among the fragrant blooms. The response was extraordinary, with guests describing it as “the most beautiful way I’ve ever started a new year,” “I felt so connected to myself and nature,” and “an experience I’ll never forget.” Marianne says the event complements the farm’s therapeutic ethos perfectly.

“It’s all about slowing down, connecting with yourself and the natural world, and letting the lavender work its calming magic. We’re thrilled to offer it again this year.”

In the world of Hunter Valley wine, few names resonate quite like Tamburlaine Organic Wines. With 60 years of winemaking history behind it, the Pokolbin-based producer has been led for the past 40 of those years by Managing Director Mark Davidson and General Manager Lou Davidson, who have built a reputation for innovation, integrity and quality, crafting organic wines that are as thoughtful as they are awardwinning. But while wine remains at the heart of Tamburlaine's story, the team has been quietly distilling something new behind the scenes - a spirit with a name as playful as its origins: Herding Cats Gin.

“It really started as a bit of a happy accident,” said Samantha Elliott, Tamburlaine’s Executive Director of Branding, Digital Sales & Marketing.

“In 2020, during the bushfires, some of our grapes were severely affected by smoke taint. The resulting wines couldn’t be used for our table wines, so our distiller, Tim, suggested we might be able to distil them into a neutral spirit and remove the taint - and it worked! From there, he began experimenting with botanicals, and our gins were born.”

That moment of serendipity has since evolved into a full-blown venture that’s every bit as principled and innovative as Tamburlaine’s winemaking philosophy.

“Just as we grow our grapes organically and handle every stage of winemaking ourselves, we wanted to apply the same ethos to gin,” said Samantha.

“Tamburlaine is one of the very few gin producers in Australia to distil their own neutral spirit from scratch.”

Neutral spirit is a distilled alcohol that’s been purified or “rectified” through a column still to reach around 95% alcohol by volume, removing all flavour compounds, producing a clean canvas on which gin’s botanicals can truly shine.

“In most cases, gin producers buy neutral spirit, either grapebased or wheat-based, from one of two major commercial distilleries in Australia. We use our own organic wine that is not up to our high standards for use in our table wines instead, which would otherwise go to waste. It’s a sustainable approach and gives us complete control over quality and origin.

“The name Herding Cats came from the idea of trying to make the ‘perfect’ gin. With so many possible botanicals and infusion options, it’s basically an impossible task - like herding cats! But that’s the fun of it. Our gins are meant to be a joyful experience, enjoyed in a cracking G&T or cocktail where the botanicals really shine through.”

Infused Gin, bursting with passionfruit and ginger, or That’s Amore, an Italian-style blend of olive, thyme, and lemon. Try Beachcomber Vodka with hand-foraged kelp and native saltbush or explore the fun flavours of Double Dutch Gin (coriander, cardamom, citrus, and juniper), Sunday Bloody Sunday Gin (blood orange and lemon myrtle), and Gingle Bell Rock Gin, a festive nod to Christmas cake and mulled wine. Each spirit showcases Tamburlaine’s craftsmanship, innovation, and the unique character of the Hunter Valley, earning multiple awards at the 2024 London Spirits Competition and Australian Gin Awards.

While the distillery may be the newest arm of the business, Tamburlaine’s winemaking credentials continue to speak for themselves. The past twelve months have been particularly golden.

“Very recently our 2024 Reserve Cabernet Franc won Best Organic Wine and Best Other Red Single Variety trophies, and our 2024 Reserve Orange Cabernet Sauvignon took home Best Cabernet Sauvignon at the NSW Wine Show. That follows on from last year’s ‘Best Wine of Show’ for our 2023 Orange Syrah, which also claimed Best Organic Wine and Best Shiraz. Our 2025 Wine Lovers Off-Dry Riesling just won Best Semi-Dry Riesling at the Canberra International Riesling Challenge, and our 2024 Reserve Malbec was named one of Australia’s top Malbecs by Young Gun of Wine.”

Add to that the Best Shiraz trophy for the 2024 Point 65 Syrah at the Orange Wine Show, plus another 20 medal-winning Tamburlaine wines, and you begin to understand why the team is heading into their 40th vintage with such energy and optimism.

“We’ve just released our latest Reserve range wines, which are at least as good as last year’s trophy winners. And we’ve also disgorged our special 60th anniversary edition of ‘Alannah’ Méthode Champenoise, our flagship sparkling wine, made in the traditional Champagne method. It’s a wine we’re incredibly proud of, and it truly rivals the best Champagne has to offer.”

Innovation is a word that crops up frequently in any conversation about Tamburlaine. From pioneering organic viticulture in the 1980s to their award-winning non-alcoholic range and eco-friendly packaging, the winery has always been one step ahead of the curve.

Their popular Jack Squat non-alcoholic wines have just undergone a major reinvention in collaboration with the University of Adelaide.

“The new range has no added sugar, which is quite unusual for an alcohol-free wine, and we’ve worked hard to improve the mouthfeel so it’s more wine-like. The demand for zero-alcohol products has more than doubled in Australia since 2020, and we see it as a permanent shift in the market. We’re proud to offer an enjoyable alternative for those who can’t or choose not to drink alcohol.”

On the lighter side, the team is also trialling ready-to-drink (RTD) cans of their Half Cut low-alcohol piquette, another example of Tamburlaine’s willingness to experiment and evolve.

Tamburlaine’s commitment to sustainability runs deeper than organic vineyards and recycled barrels. Their Lizard Drinking collection,

launched recently, brings the same eco-conscious mindset to packaging.

“Lizard Drinking was initially a trial responding to growing ecoawareness. The bottles are made from existing plastic that would otherwise end up in landfill, no virgin materials, and they’re fully recyclable, including the label and lid. They’re also about one-tenth the weight of glass, so transport produces far fewer carbon emissions. Members love them, especially for camping, caravanning, boating or picnics. They’re smashproof, lightweight, and even stackable. We’ve even seen people reuse them as drink bottles or ice packs!”

Importantly, the initiative doesn’t replace traditional glass bottles; it simply gives consumers a choice.

“There’s a time and place for both. We love being able to offer options that suit people’s lifestyles and values.”

With summer on the way, Tamburlaine is preparing for one of its busiest and most joyful seasons. New gift packs have just been launched in time for Christmas, featuring a gin sampler (three 200ml bottles of their most popular Herding Cats gins and a jigger), curated wine bundles for every palate, stylish cooler bags, and even a non-alcoholic Jack Squat pack for those who want to keep the celebrations light.

Wonnarua Range Launches

Latitude 32 Wines has released its Wonnarua Range, created in partnership with the Wonnarua People, the Traditional Custodians of the land on which the winery stands in Pokolbin.

The collaboration reflects Emma’s philosophy that wine begins with the land itself, shaped by thousands of years of Wonnarua custodianship. Ten per cent of all profits from each bottle will be donated directly to the local Aboriginal Land Council, supporting cultural, environmental and community-led projects.

Each label features artwork by local Wonnarua artist Brooklyn Burgess, depicting pathways, watercourses, landforms and cultural connections that existed long before viticulture. Her artistic interpretation appears on the back label, ensuring her voice remains present on every bottle.

PETERSONS WINES Sparkling Shiraz

Nestled on basalt-rich slopes at Mount View, Petersons Wines is celebrated for its premium whites like Semillon and bold reds such as the iconic Back Block Shiraz.

TASTING A vibrant ruby-red wine offering lifted aromas of berries, dark chocolate, and spiced aniseed. The palate is rich with ripe blackcurrant and strawberry jam upfront, followed by notes of black pepper, jube-like sweetness, cardamom, and clove through the mid palate. It finishes softly with a long, dry, and cleansing back palate.

PETERSON HOUSE 2023 Picpoul Blanc

Traditional bottle fermentation, on lees for one year, Slightly herbaceous on the nose. There is a floral note mixed with fresh apples.

TASTING The first impression is a mix of some citrus fruits, herbaceous cut grass and the mouthfeel of the yeast from bottle ageing. In the mid palate the citrus subsides, and the grassy and nutty notes are more prominent. The finish has some of the crisp acid of granny smith apples and the flavours of a stewed golden delicious.
