Autumn is a time of transformation in the Hunter Valley. The recent rains turned our vistas a vibrant green, and the long rows of vines transformed from their deep emerald to a multitude of red, orange and purple shades before the leaves began gracefully falling, ready for the Winter months (and a good prune!). It's a beautiful time in the Valley, and the wines that come with this particular season are as varied as the colours of the falling leaves.

This month we focus on blended wines. Blending wines of different varieties and vineyards has been practised for centuries. It involves combining different wine varietals to create a rounded, flavoursome and distinctive wine that is better than any of the wines individually. We look at the 'Blend Trend' and some of our favourite drops this month. Read more on page 28.

Brian Duncan always knew he wanted to be a chef. A man of few words and extraordinary talent, he has enjoyed a long career in some of the best kitchens in the world and as co-owner (with wife, Jen) of Hunters Quarter at Pooles Rock Vineyard, delivering an award-winning fine dining experience of elegant simplicity.

With a love of paddock to plate from a young age that pre-dates today's trend and an incomparable venue surrounded by mountains, mist and vines, it's no surprise that this restaurant offers one of the most awarded dining experiences in the Hunter Valley. Read more on page 12.

Bryan Currie is not only an award-winning winemaker, he's also a viticulturist and General Manager of Hungerford Hill, as well as vineyards in two other regions of NSW. This makes Bryan a very busy man, but we were able to catch him in a quiet moment for this issue to chat about what a day in his life looks like and to talk about winemaking and trends in the industry. Brian Duncan always knew he wanted to be a chef. A man of few words and extraordinary talent, he has enjoyed a long career in some of the best kitchens in the world, including the Dorchester Hotel (three Michelin stars) and Claridge's Hotel (one Michelin Star) in Mayfair in London as well as Level 41 and The Establishment, two of Sydney's premier restaurants. Since 2015, Brian and his New Zealand-born wife, Jen, have been running Hunters Quarter at Pooles Rock Vineyard, delivering an award-winning fine dining experience of elegant simplicity.

Brian grew up on the mid-north coast of NSW and spent a lot of time on his grandparents' farm, where they ran cattle and sheep and grew fresh produce. Here, he developed a love of paddock to plate that predates today's trend. As a young man and chef, he was influenced by this and by the classic French chefs such as Alain Ducasse and Paul Bocuse.

"My favourite place to work before Hunters Quarter was probably the Dorchester in London," said Brian.

"Everything was done properly. Not just the cooking but also the way the kitchen and staff were managed. I admire the classics and the old French chefs like Ducasse and Bocuse but also Dietmar Sawyere from

Level 41. I don't subscribe to the idea that a chef can yell at their kitchen staff. People deserve to be treated with respect. The industry is difficult enough without putting up with that sort of treatment. I was lucky to have great mentors in my early career."

After their time in Europe, Brian and Jen decided to spend weekends in the Hunter Valley, recuperating from a busy city lifestyle and drawn by the food and wine scene. When their two children came along, they moved to the valley permanently, wanting to provide a country upbringing for their kids. It didn't take long for Brian to spot the potential at Pooles Rock.

"It's a beautiful building with 360-degree views of the vines. Architecturally built by David Clarke OAM in 1988 on the historic Post Office Vineyard site that dates back to 1890. It's a rare and, I believe, incomparable site; all glass, surrounded by mountains and mist – so peaceful and quite magical. It's an integral part of the dining experience that we offer at Hunters Quarter."

The purpose-built building is of such a high standard that there was little required in terms of interior design. Everything has been kept simple with extremely high-end tables and chairs from Italy for maximum diner comfort and beautiful accent pieces in silver to make the space pop.

Jen has a background in finance and recruitment and works as the restaurant's Business Manager. During Covid, she also worked front of house. The covid pandemic generated immense change for the restaurant.

"We are an à la carte restaurant, but there is now a three-course minimum at a set price. Staffing has been an issue in a regional area, and by reducing the number of days we are open, it enables our team to have work balance for efficiency and productivity.

"Our team is our family. We are incredibly proud of our staff, their commitment and the camaraderie we all enjoy. Working in hospitality can be challenging, and morale is an important component of a successful team and good customer service. During covid lockdown, we rang each other, checking in regularly and ensuring everyone felt supported. We all know that we have each other's backs, and it's wonderful. They even put our kid's extra-curricular activities in the restaurant diary so that everyone's across our commitments. We are incredibly proud of and grateful to them."

People are at the heart of Hunters Quarter – the team that delivers the service and the customers that come to dine. Humour, fun, respect and a driving need to create the best food experience possible underlines everything that Brian, Jen and the team stand for. And it's clearly working.

For the past five years, Hunters Quarter has been number 1 in the Hunter Valley on TripAdvisor, a fact that Jen is very proud of.

"When people are searching TripAdvisor for a food experience in the Hunter Valley, we come up number 1, and what's great about that is that we're slightly off the beaten track. You need to know where to find us. It's like knowing where the best underground club is in London."

The restaurant has also recently won several other awards, including "Most Relaxing Dining Destination in the Hunter Valley" with APAC Insider Australian Enterprise Awards; "Best Contemporary Dining Experience Hunter Valley" in the Luxe Life Food and Drink Awards; "Contemporary Restaurant of the Year" in the Prestige Australia Awards; and it's been awarded a hat by the Australian Good Food Guide every year since it opened.

Hunters Quarter has many options for private dining experiences with event services ranging from weddings, birthday parties and corporate functions. Food and wine packages are tailored for each individual event, and there is a dedicated events team to help with planning and execution.

When it comes to the food, the menu changes every six to eight weeks with several menus available, including à la carte, five-course degustation, vegan and a children's menu. Dietary restrictions are catered for and taken very seriously. The style of the food offerings is often reported as Modern European, but Jen disagrees and deems the style Modern Australian instead.

"There's no doubt that Brian's food is influenced by European styles and his time spent in London, but Australia is such a melting pot of different cultures with incredible variety to choose from, and I think his menus reflect that. We're Australian, and we're not trying to be anything that we're not. We don't have to. It's simple, elegant and fresh with a focus on locally sourced, in-season produce."

Brian and the team have been busy working up the Autumn menu, and regulars will be sad to hear that his signature Spanner Crab Dumplings haven't made it to the table this season.

"Brian has been trying for years to let go of the Spanner Crab Dumplings, but people really look forward to them, and we actually get emails about them," said Jen.

If it's Spanner Crab you're yearning for this season, though, you won't be disappointed with the Seared Scallops, Miso Chawanmushi, Spanner Crab, Palm Heart, Nori Crumb and Kombu Dashi as an entrée. Or for authentic autumn flavours and a touch of the Middle East, you can't go past the Hibachi Grilled Sumac Crusted Quail, Smoked White Bean, Tomato Concasse, Preserved Lemon and Pine Nuts.

This season's mains include Hickory Smoked Duck, Cauliflower Cream, Pedro Ximenez Prunes, Fioretto with Black Barley Pilaf; and Slow Braised Beef Short Rib, Grilled Onion Soubise, Parmesan Sourdough Gratin with Salsa Verde. their dessert, why not try the Chocolate Baileys Pavé, Joconde Sponge, Hazelnut Praline Ice-cream with Blackberries.

The à la carte menu comes as three courses for $110 per person. There is a choice of five entrees and five mains with three desserts. For a truly special occasion and to immerse yourself in the flavours of Hunters Quarter, you can't go past the five-course degustation menu for $150 per person. In addition to the Spanner Crab, Short Ribs and Chocolate Baileys Pavé from the à la carte menu, there's also Hiramasa King Fish Sashimi, Wasabi Yogurt, Green Papaya, Sea Grapes, Pickled Cucumber with White Soy Ginger Ponzu; Tempura Zucchini Flower, Muhammara, Sheep's Milk, Figs, Walnuts, Vino Cotta and Baby Basil; Market Fish, Celeriac Cream, Black Pearl Mushrooms, Adzuki Beans, Sea Greens with Sudachi Emulsion; and Warm Bergamot Sponge, Binnorie Mascarpone Ice-cream, Limoncello with Fire Roasted Blueberries.

Vegans are also well catered for with a menu that features the Tempura Zucchini Flowers from the degustation menu as well as Herb Crusted Gnocchi, Ratatouille, Olive Pangrattato with Basil Oil; and Spiced Malt Friand, Toffee Caramel Pears, Oat Milk Sorbet with Brown Sugar Crumble for dessert.

"When people come into our restaurant, we want to extend our hospitality in the truest sense of the word," said Jen. "We welcome you into our family, where we will look after you, let you relax, escape, celebrate and immerse your senses in the food, the wine and the spectacular views. We want everyone to feel completely relaxed when they leave."

And when it comes to the future, the couple has no plans to move.

"We don't miss the city at all," said Brian. "We love the Hunter Valley, the beautiful building we get to call our restaurant and the magical landscape that we get to work in. But, most of all, we're proud of our team and their dedication to us and to our clientele. We're here to stay."

Two Drunk Cowgirls are makers of handmade gifts such as funny signs, custom designs, dream catchers, key holders, air fresheners, horseshoe gifts and beer bottle openers (to name just a few!), all using lasers, timber, horseshoes and twine. They’re regulars at Handmade in the Hunter Markets in Pokolbin, and this month we caught up with one of the dynamic duo (Kelly) to find out about what they do.

Can you please tell us how you came up with the idea for Two Drunk Cowgirls?

The idea came about for a couple of reasons: I have a daughter with an unusual name (Elouara), and as a little girl, she always wanted a door sign with her name on it for her bedroom. This, of course, was impossible! I was working for a law firm at the time, and the stress of the commute and long hours was taking its toll, so my husband suggested I quit the job and do something I loved. So we searched around and found a laser for sale, purchased it, and the first thing I made was the sign for my (now adult) daughter.

How long have you been running Two Drunk Cowgirls - and how did you start?

Two Drunk Cowgirls is now in its third year as a small business. A few people saw my daughter’s sign and asked me to make something for them. One of those people was to become the other Drunk Cowgirl. We were sitting at my place drinking wine one day, and I showed her how I make stuff. She started helping me, and we have been ‘wining and twining’ since. We both compete in horse events and are wine lovers, so Two Drunk Cowgirls seemed like the perfect business name!

What are your most popular products, and who buys them? Our most popular products are our beer bottle openers. They all have silly slogans on them, and some are a little bit risqué, but people love them! We also sell a lot of our horseshoe designs. Most of our customers are overseas holidaymakers or Sydney people visiting the Hunter. We also take orders for personalised products.

How are your products made/what materials do you use and why?

We have two lasers running off two laptops; we burn the design onto the Timber (which takes about 8 hours per design) and then spend about an hour on each to decorate it.

What do you like most about Handmade in the Hunter Markets?

It’s a “one of” market, meaning that no two stall holders sell the same thing; this is not just great for us as sellers but also for the customers as they will see something different at every stall.

Family Legends Drive Local Distillery Success

The Hunter Distillery, located in the heart of Hunter Valley wine country in Pokolbin, has a philosophy of using only the highest quality ingredients, coupled with traditional methods and the latest production technology, to produce an uncompromising range of top-shelf spirits. Their success as the region's first distillery has led to industry growth, even though owner Joe Slupik was told that a distillery in the heart of wine country could never work.

The story of Hunter Distillery begins in Poland before the Second World War when Joe's grandfather supported his local community as a 'honey doctor'. He would distil liquor and add honey and other beneficial natural ingredients to make a tonic. He taught his daughter everything he knew. During the war, Joe's grandfather, the still and all the alcohol were taken in a raid. After the war, Joe's mother migrated to Australia, finding herself in the Greta Migrant Camp. Joe was always fascinated by his mother's stories about the distilling process and its importance within the family legends.

Joe grew up in Branxton and ran Maitland Fabrications, working across the region on new builds and maintenance, often within the wine

industry. It wasn't until his mother passed that Joe thought about the family history of distilling.

"It was at Mum's funeral when I was giving the eulogy and sharing the family stories about distilling in Poland that the idea took hold," said Joe.

"People approached me after the funeral and suggested I start a distillery in my mother's honour. So, in 2010, I did just that. I already had the 100 acres in Pokolbin and could certainly build the required structures. I didn't have much to lose, and I had confidence in the location. I built the Hunter Valley Cheese Factory building at the McGuigan Cellar Door and understood its ability to draw customers from Sydney."

Today the family-run business employs around fifteen people. Joe is also supported by son Colin and daughter Theresa, making the craft a fourth-generation family tradition. Hunter Distillery has won multiple international awards, including at the London Spirit Show and the San Francisco World Spirits Competition and is one of the few distilleries that make its own alcohol. The spirits produced include Gin, Vodka, Liqueurs, Schnapps Brandy and Rum. Products are blended with natural botanicals and with 100% rainwater. All of this happens on-site at Hunter Distillery Pokolbin.

"We are always endeavouring to source ingredients of the highest quality, including for our Mystery Blue Gin, which is created using natural colour. We use the butterfly pea flower to create a distinctive hue, and it is one of the best sellers. Hunter Distillery's most awarded Gin, however, is the Copperwave Gin which has developed a strong following over time," said Joe.

"New exciting products are currently being developed, so watch this space!"

Hunter Distillery navigated the Covid pandemic well, with the tasting experiences permanently changed as a result. Tastings are now seated but still feature the distinctive test tubes with six spirits of choice at 4ml each, which is currently only $5 per person.

With so many flavours of liqueur to choose from, there is always something new to try. Flavours include the traditional Butterscotch Schnapps, Chocolate Mint, Hazelnut and Strawberry but also the more adventurous Chilli Schnapps, Lychee, Mango or Turkish Delight liqueurs.

The Vodkas feature several flavours, including Coffee, Caramel and Lemon Myrtle, as well as the more traditional offerings of Apple and Raspberry.

"Our products and tasting experiences perfectly complement the food and wine scene here in the Hunter, and we're proud to be a part of driving repeat visitation into our region," said Joe.

"It's a source of great pride for me to be able to continue a long-standing family tradition from Poland to the Hunter, from our family to yours, and to be a leader in this burgeoning industry and craft."

Annual Exhibition Set to WOW Visitors

Morpeth Gallery’s annual Feathers & Fur Wildlife Art Exhibition has become one of the most noteworthy events in the art calendar, often referred to as the ‘Oscars of international wildlife art.’ But here in the

painting at their easels across the June long weekend (10 to 12 June). Entry is free, and the exhibition will be open between 10am and 5pm daily.

Each artist will have new paintings and exclusive merchandise available. The Hunter Valley Finch Club will also be showing their fantastic collection of finches during the exhibition, with artists working alongside the finch breeders so that visitors can appreciate the pint-sized birds on canvas and in real life.

“Live finches are normally very difficult to see in the wild. They are small birds and fly very fast, travelling up to 14 kilometres to their feeding grounds. And when you only weigh 10 grams, you are tiny and difficult to spot,” says Gallery Owner Trevor Richards.

“However, at Morpeth Gallery over the June long weekend, you can see these beautiful birds both in real life and in paintings.”

Playing an integral role in helping to increase awareness of endangered species, the Feathers & Fur Exhibition also utilises the power of art to celebrate wildlife, support awareness and raise funds for endangered species across Australia.

“It seems fitting that we take a step back and reflect on the sheer beauty and diversity of our natural world and what could be lost if we do not truly appreciate the value of the world around us,” says Trevor.

Amongst the artists in residence will be Australia’s finest wildlife artist, James Hough. James is the official artist for Australian Geographic and has also been awarded two gold medals for the best wildlife painting in the world. James says that his close interaction while painting many endangered species has helped further open his eyes to the importance of the conservation effort needed for the future.

Also exhibiting is Stephen Jesic, who has won the best wildlife painting in the world five out of the last eight years, and Natalie Jane Parker, whose artworks appear on plates, mugs, trays, tea towels, and jigsaw puzzles sold around the world.

MAITLAND GAOL PLAYS HOST TO NEW ARTIST IN RESIDENCE RACHEL MILNE

Maitland City Council and Maitland Gaol are excited to welcome well respected artist Rachel Milne, as she embarks on a period of artistic residency at the historic gaol. Milne is a professional fine art painter, specialising in figurative and observational oil painting, in the style of the impressionists. Originally from the United Kingdom, Rachel now lives and works in Newcastle and is currently represented by the King Street Gallery on William, Sydney and the Sophie Gannon Gallery in Melbourne.

Mike Baudinette, Destination Manager at Maitland Gaol, says they ‘could not have been happier when Rachel reached out to see if she could create works of art at the gaol. The space is full of amazing and quirky features, and it takes a special talent to represent them as Rachel does’.

‘Our visitors on tours of the Gaol are both surprised and delighted to see Rachel painting in a cell block. It is a special thrill to briefly watch an artist at work’, says Mr Baudinette.

'I want to shine a light on buildings that play an important role in our society and are rarely seen, under a process of change or just underrepresented in figurative painting,’ Ms Milne says.

‘Maitland Gaol has such a long history that I am hoping to do justice to, and it feels like a real privilege to have the chance to create a series of work with this residency.’

When it comes to boutique vineyards, family is often the lifeblood of the operation. From growing the grapes and making the wine to serving in the cellar door to managing the books, it’s usually all hands on deck at a family-owned and run winery. For almost 30 years, this has undoubtedly been the case for one of the region’s best-kept secrets – Tintilla Estate – a picturesque 25-hectare estate located at the heart of Hunter Valley wine country on Hermitage Road, Pokolbin.

The vineyard, winery and olive grove were established by Sydneybased vascular surgeon Robert Lusby in 1994 and have grown into an award-winning destination producing distinctive, individual, single vineyard wines and olive products.

A truly unique experience, at Tintilla, you can take a seat across the table in their tasting room and sip from a large Riedel glass while eating a cheese platter with an assortment of Tintilla condiments, all whilst looking out over the magnificent rolling vineyards. Olives are also an important element of this grand estate, with over 500 olive trees planted in parts of the property that were unsuitable for grapes.

Interestingly the olives were planted in 1994 before the vines, with the picturesque site surrounded by native trees and lined by olive trees. Sold exclusively from the Cellar Door, varieties such as Manzanillo, Sevillano, Verdale, jumbo Kalamata and a small-berried Tuscan variety named Frantoio, are handpicked, debittered and fermented before bottling with various traditional herbs and spices.

At the Tintilla cellar door, the visitor will gain insight into an array of European olives and an education on the Hunter region and its produce. From season to season, the produce will vary, with Tintilla producing its fine olives and luscious chilli tomato relish, fig jams, caramelised vinegar and a vincotto, which incorporates unused tasting wines and the juice from pressings in their respective productions.

Not surprisingly, though, Tintilla’s wines are the main attraction at the Estate and were also the inspiration for its name.

Bryan Currie is not only an award-winning winemaker, he's also a viticulturist and General Manager of Hungerford Hill, which includes Sweetwater and Dalwood Estate vineyards, as well as vineyards in the Hilltops and Tumbarumba regions of NSW. This makes Bryan a very busy man.

We caught up with Bryan to find out what a day in his life looks like and to talk about winemaking and trends in the industry.

Vintage in the Hunter Valley usually takes place from mid-January to the end of February. Bryan's vintage season goes considerably longer because straight after Hunter Valley vintage, Hilltops begins then Tumbarumba follows, with the process not fully complete until late April to May. Unsurprisingly, Bryan has not had an Easter holiday for 25 years.

"During vintage season, my day begins with tasting all the fermenting wines," said Bryan. "I do this every single morning when my palate is fresh. I can then decide what work needs to happen in the cellar. There are so many variables to take into consideration.

"Winemaking is not like making a widget; there's no recipe to follow. It all depends on what wine you're trying to make, and that determines the entire process. I decide what I want to make by talking to staff and customers, considering what's selling and keeping an eye on trends. Winemaking is a fashion business. Wines and varietals go in and out of fashion.

"I made a rosé in 2002, and everyone told me I was a weirdo. No one drank it. Fast forward twenty years, and people are drinking lakes of the stuff. But Hungerford Hill is 55 years old, and our customers expect high quality and consistency. It's important to create wines that are also recognisable, on brand and that continue the traditions. It's a balance.

"After my tasting each morning, I head out to the vineyards, checking on the condition of the fruit, tasting it for the balance of acid and sugar, keeping an eye out for disease or pests as well as the evenness of the ripening. I'm looking for the best moment to pick the fruit.

"Lunch is usually spent in front of the computer. I'm obsessed with the weather, using several forecasting sites to look at long-range forecasts. As the fruit ripens, extreme weather events cause devastating

damage.

"I tackle my paperwork after lunch and then go back to tasting for things that are close to finishing. I get home late – easily 12-hour days. And it's seven days per week until it's finished. I get my weekends back in the second half of the year, but with bottling and blending, it doesn't really quieten down until October, and then peak sales time hits.

"You have to love what you do. My kids have watched me work, and none of them wants to follow me into the wine industry. My eldest is studying law, though, and there are plenty of lawyers in the wine industry! I tell them to follow their hearts and to do what they love.

"In terms of trends, there are a lot of new varietals coming through. It's a little bit about climate change and experimenting with hardier varietals, but it's also about differentiating your brand. The market is stagnant, so to increase your sales, you need to take sales from someone else.

"There's also a trend toward lighter, medium-bodied wines, softer, easier drinking wines. The industry is splintering with more niches. There's the natural wine movement advocating minimal intervention, biodynamic, and organic. Health and wellness are having an impact on the market, and zero or low-alcohol wines are gathering momentum, albeit from a very small base. There are radically different and divergent things happening, similar to what happened with beer and the proliferation of craft brewers.

"I find it's not sustainable to push too many varietals, so I've settled on Fiano and Tempranillo. The wines are outstanding and very high quality. I'm also blending. In the 60s and 70s, blends disappeared, but some of the best wines in the world are blends. Crafting a unique blended wine says more about the region than a single variety. It's uncopiable and protects you from the competition. It's unique and speaks of place like nothing else can."

The Art of Wine Blending

From Cabernet Merlot and Shiraz, Tempranillo to Semillon Sauvignon Blanc and Vermentino Chenin Blanc, winemakers worldwide are becoming more adventurous and innovative with their blending techniques – creating wonderfully unique wine blends to entice the palate.

There's nothing new about blending wines of different varieties and vineyards at any stage of the winemaking process to create a finished wine. Blending wines has been practised for hundreds of years. It involves combining different wine varietals to create a rounded, flavoursome, and distinctive wine that is better than any of the wines separately on their own. Wine blends are popular because of their variety and profusion of flavour. However, most people are unaware that some of the world's most famous wines are blends.

At its most basic, winemakers blend wine made from different grapes to add more complexity to the flavour and texture of the wine, and many excellent wines, whether from Rioja, Bordeaux, Champagne, California, South Africa, or Australia, thrive on blending. Wines can be blended from multiple vintages of the same grape from the same vineyard; the same grape variety from a different region; two or more different grape varieties; or a combination of red and white grapes.

Some of the world's most renowned and greatest wines are made from a blend of grapes rather than a single varietal. These include the great Bordeaux and Rhône red blends of France and the Super Tuscan wines produced in Tuscany. It's also no secret that Penfold's Grange, Australia's most revered red wine, is a Shiraz Cabernet Sauvignon blend made with grapes from various South Australian wine regions. Another example is Champagne - this famous sparkling wine blend uses two or more grape varietals. However, the grape varieties of Pinot Noir, Chardonnay, and Pinot Meunier are the only ones allowed to be used in French Champagne.

Both reds and whites can be made from blends of varietals. Sometimes, they may even blend whites and reds to create the best possible combination of aromas and flavours. An example of this is

blending the white Viognier variety with Shiraz – resulting in changes to the wine's final colour intensity and flavour. Perhaps the most famous white wine blend (at least in Australia) is Semillon Sauvignon Blanc. Sauvignon Blanc is more aromatic, juicy, and intensely flavoured, while Semillon adds a richer body, lower acidity and slightly savoury notes.

In Australia, Shiraz and Cabernet Sauvignon are two main red grape varieties that form the base of most red blends, and these are often blended to produce some of the greatest Australian wines ever made. These wines are complex and robust, with incredible ageing potential. Often the two varieties are taken from different regions to create extra levels of ripeness and layers of complexity.

Apart from Shiraz, Cabernet Sauvignon's main blending partner is usually Merlot, sometimes with lesser amounts of Cabernet Franc, Malbec, and Petit Verdot. Each of these blending partners brings something unique to Cabernet-based blends: Merlot adds richness, along with plum and violet characters; Cabernet Franc gives an aromatic lift and pepper, spice, and red berry characters; Malbec gives weight and dark fruit flavours while Petit Verdot delivers fragrance and rich dark fruit flavours.

Australian Shiraz makes a great red blending partner and provides numerous flavour and texture options that are multiplied exponentially by the variety of regions and blending possibilities. There are many Shiraz Grenache blends now available, and many feature Mourvèdre. These blending partners come together to make medium to full-bodied, spicy, complex wines that age well.

Sangiovese is another wine that is often blended with Shiraz. Shiraz's bold and robust nature enriches the savoury nature of the Sangiovese grape, coming together to create a rich and complex wine.

When it comes to food, red blends are incredibly versatile and pair with a variety of different dishes. From a selection of cheese and fruit or tapas to Mediterranean-style favourites like paella and rich plates of pasta, there are plenty of delicious food options to complement a red blend.

Australian blends taste better than ever, and winemakers are becoming more adventurous - producing modern Australian wine styles with intricate and exciting flavour combinations.

2022 Primera Shiraz

Tempranillo

A blend of Hilltops and Hunter Valley fruit, this wine shows off the best of the two varieties (70 % Shiraz, 30% Tempranillo).

TASTING The palate is medium weight in structure, with cherry and plum flavours, with a touch of pepper and bay leaf savouriness and finishing with soft tannin and oak. These aromas are melded on a bed of vanillin oak characters from time spent in one- and two-year-old barrels.

FOOD MATCH This wine would be a good accompaniment for stews, lamb shanks, pizza, and BBQ dishes.

CELLARING Cellar for 3 to 5 years.

2020 LDR Vineyard Shiraz Touriga

De Iuliis Wines were the first in the Hunter to plant Touriga in 2010, as it thrives under hot and dry conditions which suit the warm maritime climate of the Hunter.

TASTING This unique and iconic blend has savoury regional Hunter structure from the Shiraz and the Touriga adds an irresistible aromatic lift. The palate is rich and complex with ripe plums, blackberries and savoury spice. The finish is rounded out by soft and fine-grained tannins.

FOOD MATCH This 2020 LDR Vineyard Shiraz Touriga will pair well with any rich meat dish. But our favourite meal to enjoy with this wine would have to be slow-cooked lamb shoulder with salsa verde and pearl cous cous.

CELLARING The wine is in a great spot now, though this wine will develop gracefully over the next 5 years.

2021 McLaren Vale Shiraz

Viognier

Shiraz Viognier is a blend of two grape varieties. The Shiraz provides the backbone of the wine, with its bold, spicy, and dark fruit flavours, while the Viognier adds floral aromatics.

TASTING Aromas of blackberry, dark cherry, and plum, with hints of violet, black pepper, and baking spices. The pallet displays a full-bodied nature with rich, ripe fruit flavours of blackberry, blueberry, and black currant, balanced by savoury notes of black olives, smoked meat, and dark chocolate. The Viognier contributes a silky texture and a touch of acidity, making the wine smooth and well-rounded.

FOOD MATCH Hearty meat dishes, such as grilled lamb or beef, as well as rich, creamy cheeses.

CELLARING Cellar for 5 to 7 years.

Tranquil Vale

Tranquil Vale Shiraz Cabernet

This wine is a bold blend of our Estate Grown Shiraz with a carefully selected parcel of Cabernet Sauvignon from the prestigious South Australian region of Langhorne Creek.

TASTING The nose is complex and full, showing notes of cassis, black cherry, earth, cigar box, capsicum, orange zest, cocoa and nutmeg. This richness continues on the palate with dark stone fruits, cassis, blood orange, spice and vanilla on the finish.

FOOD MATCH Moussaka, lamb or anything cooked over fire.

CELLARING The lovely fruit flavours in this wine make it delightful for drinking now, but it will continue to develop for the next 5 to 7 years.
