seasonal recipes Nduja and potato hash Serves 4 mins Prep 30 Ready in ins 10 -30 m Ingredients • 300g/10oz new potatoes • 2 tbsp vegetable oil • 1 onion, sliced • 75g/3oz nduja (available from Italian delis and specialist online retailers) • 1 red chilli, chopped

• 200g/7oz Serrano ham, chopped • 1 tbsp capers • 100g/3½oz butter • 8 free-range eggs To serve • 4 slices French bread • 1 tbsp chopped fresh parsley • chilli sauce

1. Place the new potatoes in a saucepan, fill with water and bring to the boil. Turn down the heat and simmer until the potatoes are tender. Drain and set aside. 2. Heat one tablespoon of oil in two heavy-based frying pans set over a medium heat. Divide the onion between the two pans and fry gently for 10 minutes, or until soft and goldenbrown. 3. Add half the nduja and chilli to each pan and cook for three minutes. Stir in equal amounts of the Serrano ham, cook for a further three minutes. 4. Add half the potatoes, capers and butter to each pan. Let the potatoes brown - keep turning them every so often with a spatula until crisp all over. 5. Make two holes in the mixture in each pan. Crack two eggs in each hole, cover with a lid and cook for three minutes until set. 6. Meanwhile, toast the bread on a griddle pan until crisp. 7. Spoon the hash onto four plates, giving each person two eggs, and sprinkle over the parsley. Serve with the toast and chilli sauce on the side. Courtesy Simon Rimmer

Merluza à la Gallega Serves 4 Prep 30 mins Ready in 10 to 30 mins Ingredients

• 50ml/2fl oz olive oil • 2 onions, sliced thinly • 6 garlic cloves, sliced • 2 tsp paprika • 3oz cured chorizo sausage, cut into cubes • 1 x 15cm/6in pimientos de padron or other tiny green peppers (or 1 • large pepper, diced)

• 900g/2lb floury new potatoes, scraped and halved lengthways • 85ml/3fl oz dry white wine, such as Albarino • 300ml/10fl oz water • 8 x 100g/4oz or 4 x 225g/8oz hake steaks • salt and freshly ground black pepper

1. Heat the olive oil in a terracotta cazuela or a shallow flameproof casserole. 2. Add the onions and garlic and cook gently until soft. 3. Add the paprika and fry for 2-3 minutes, then add the chorizo sausage and green peppers and fry for another 3-4 minutes. 4. Stir in the potatoes, then pour in the wine and water, season with some salt and pepper and simmer for about 10 minutes, until the potatoes are just tender and the liquid has reduced a little. 5. Season the hake steaks well on both sides. Put them on top of the potatoes, cover and simmer for 8-10 minutes, until the hake is cooked through. Courtesy Rick Stein

Who is Tom Ditto By Danny Wallace We join the action just as our ‘hero’ Tom, (early thirties, reads the ‘news’ on the radio) finds out that his girlfriend has NOT left him. Tom, I have not left you. But I am gone. Please carry on as normal. Love always, Hayley Has Hayley gone or hasn’t she? Is she coming back? If she has gone, but is coming back, when is she coming back? And what is he supposed to bloody do in the meantime? And what if she’s never coming back?? Trying to work out what’s happening to his confusing life, Tom tries to track Hayley down. In doing so, he stumbles across a strange and eccentric group of people with an irregular and highly-addictive hobby.Next, he’s being followed, but he’s not sure by whom. And then he also almost loses his job at the radio station in the now infamous ‘Jam Nazi’ episode, which of course, you know about.Above all, Tom is trying to work out who everyone is. Because who is Hayley? Who is this new girl following him around the supermarket? And who, for that matter, is TOM DITTO?

recipe Smoked haddock chowder with leeks and sweetcorn

Serves 4 Preparation time less than 30 mins Cooking time 10 to 30 mins

Ingredients 1 good slice butter 3-4 medium leeks, roughly sliced 1 small handful tender fresh thyme sprigs 1 corn on the cob a couple of handfuls of new potatoes, cut into bite-sized chunks a couple of undyed smoked haddock fillets milk, enough to cover the fish 2-3 fresh bay leaves a sprinkling of black peppercorns a good handful fresh flatleaf parsley, roughly chopped 1.

In a deep pan, heat the butter until melted, add the leeks with the thyme and cover with a circle of greaseproof paper big enough to tuck down a little over the leeks. Cover with a lid so no steam escapes, and cook gently for about ten minutes.

2.

Run a sharp knife down the sides of the corn to remove the kernels and add them to the pot with the potatoes, which will add some body to the chowder.

3.

Replace the greaseproof paper and the lid and continue to cook for a further ten minutes.

4.

Meanwhile, place the smoked haddock fillets in another shallow pan and pour in the milk, enough to just cover the fish. Add a bay leaf or two and a sprinkling of peppercorns. Bring to a gentle simmer and cook the fish for eight minutes or so, being careful not to overcook it.

5.

Lift the lid of the pan containing the leeks and remove the greaseproof paper, and ladle in the poaching milk of the fish without the bay leaves or peppercorns, followed by large chunks of haddock, removing any bones as you go.

6.

Bring to a simmer and finish with a good sprinkling of chopped parsley before taking the pan to the table for the food to be served into bowls. Courtesy Nigel Slater

recipe Tandoori lamb wrap Serves 5 Prep Time overnight Cooking Time less than 10 mins Ingredients For the marinade 150ml/5fl oz Greek-style yoghurt ½ small onion, roughly chopped 1 garlic clove, peeled and chopped 2.5cm/1in piece fresh ginger, peeled and chopped 2 tsp each garam masala and ground cumin 1 tsp ground coriander ½ tsp ground fennel seeds ¼ tsp freshly ground black pepper 1 tbsp vegetable oil 2 tbsp fresh coriander leaves ½ tsp red chilli powder, or to taste 2 tsp lemon juice 1 tsp salt, or to taste For the lamb 400g/14oz lamb (leg meat is ideal), bones removed, cut into 2cm/1in cubes and pierced with a fork 2 tbsp melted butter, for basting To serve 5 ready-made flour tortillas, wrapped in foil and placed in the oven for the last five minutes of cooking ½ onion, finely sliced 2 tomatoes, finely sliced 1 Little Gem lettuce, finely sliced 100ml/3½fl oz green chutney, mixed with 3 tbsp yoghurt, to serve

You’ll need ten wooden skewers, soaked in water for half an hour

1.

Place all the marinade ingredients into a food processor and blenduntil smooth. Pour into a large bowl and stir in the lamb cubes. Mix well and leave to marinate in the fridge for as long as possible, preferably overnight. Bring back to room temperature an hour before cooking.

2.

Preheat the grill to medium. Thread the lamb cubes onto the skewers leaving a space between each piece and place under the grill. Cook for around 5-6 minutes, turning halfway through cooking, until tender. Alternatively, cook in an oven preheated to 200C/400F/Gas 6 for eight minutes. Baste with the melted butter and cook for another minute or two for slightly pink meat, or longer if you want the lamb well done.

3.

Divide the lamb pieces into five equal portions and place each portion in the centre of a warmed tortilla. Top with a handful of the sliced vegetables and a spoonful of chutney. Roll up and serve. Courtesy Anjum Anand

healthy living Bananas Have you ever sat and thought of the health benefits of that banana you are eating? You eat them because you are hungry, you like the taste and they are supposed to provide you with a slow release energy. But have you really thought about what else that delicious fleshy fruit is doing to your insides? Bananas have a high level of tryptophan which converts into serotonin. Serotonin is the happy hormone that we need to make us feel happy and in high spirits. As bananas contain tryptophan they can be part of the treatment people need to overcome depression. Feel tired and shattered after a strenuous workout? Combat this by eating two bananas before you exercise, they help to give you energy and also sustain your blood sugars. Do you suffer from muscle cramps at night-time? Eat a banana to help to combat this. This also works for people who experience muscle cramps during workouts. Bananas contain iron which helps to prevent anaemia and potassium which helps to lower blood pressure. If you are feeling tense, stressed and anxious eat a banana, they are an excellent food to help to calm and relieve stress.

A banana can help to lower your body temperature. Have you been bitten by a bug? Try rubbing the bite with the inside of the banana peel as it will relieve itching and irritation cause by the bite. Feeling health conscious and trying to quit smoking? Bananas contain high levels of B-vitamins as well as potassium and magnesium to speed recovery from the effects of withdrawal.

Worried about calcium being lost from your bones? You have guessed it, eat a banana.

And bananas are not just good for health, if you have a leather hand bag or leather shoes, rub the inside of the banana skin onto the leather and polish it up for a wonderful shine.

Have digestion problems? Bananas are high in pectin which aids digestion and also act as a pre biotic which helps to stimulate the friendly bacteria in the bowel. In addition to this they produce digestive enzymes to assist in absorbing nutrients.

If all of this is not enough to tempt you into eating a banana, then slice one up, put it into a dish with a couple of scoops of ice-cream, top with cream and sprinkle with chopped nuts. Lovely and perfect as a summer pudding.

WORTHY WINES : CROATIA The continental climate of Croatia is to be found in the southern part of central Europe. Croatia has Zagreb as its Capital. The viticulture of Croatia dates from some 2,500 years ago. These days Croatian wines are receiving the backing that they justly deserve and with long-term investments now being made into their wine industry, these wines, including many award winners, can be located and enjoyed globally, including in the UK. The Bolfan winery utilises biodynamic processes. Having a 100% natural method of vine growing is all part of this process, to produce outstanding wines with natural bouquets and an intoxicating freshness. The Bolfan range of wines appeals to me, with Rizling, Sauvignon and Pinot being amongst many choices of wonderful productions. A light, fruity bouquet drew me to the Pinot Noir, Bolfan Primus. This full-bodied red wine has softness, too, as a feature, which is, in part, the outcome of barrel-ageing. A powerful wine, this will pair with many dishes, including beef and tuna, etc. The Sauvignon Bolfan, I found aromatic, with tropical fruits being detected in the bouquet. Again, a fullflavoured wine, having an excellent balance and a most acceptable palate, with a superb finish. Another splendid wine, by this fine wine producer, which will match with many dishes. Impressive wines, from a multi award-winning, dedicated winery.

These wines pair extremely well with numerous dishes, including fish, seafood and white meats. Vinarija Dingač Plavac (Plavac Mali), is an excellent red wine production. Throughout the course of the day Robin Hood and Maid Marian will be telling tales of daring adventure and thrilling heroics as they take on the Evil Sheriff of Nottingham, trying to beat him and his schemes and plans. To keep you all entertained throughout the afternoon will be attractions of many kinds including a Bouncy Castle, a children’s treasure hunt in a wooded/gladed area, games galore, a welly throwing competition, stalls, Hog Roast, (a veggie alternative for those of you who don’t eat meat!), hot and cold drinks, an ice cream stall and bar. recipe Spicy lamb burgers with coriander, tomato and yoghurt relish Makes 8-10 Preparation Time 30 mins to 1 hour Cooking Time 10 to 30 mins Ingredients For the burgers 1kg/2¼lb minced lamb (it’s best not to use extralean mince as the fat will help bind the burgers and keeps them juicy when cooked) 2 garlic cloves, crushed 1 medium onion, finely chopped 1-2 tbsp mango chutney 3cm/1¼in piece of fresh ginger, peeled and grated 1 red chilli, de-seeded and finely chopped ¼ tsp ground turmeric 1 tsp coriander seeds, crushed 1 tsp cumin seeds, crushed flaked sea salt and freshly ground black pepper oil, for brushing flat bread, pitta bread or burger buns, to serve For the relish 6 ripe tomatoes, quartered, de-seeded and diced 200g/7oz tub of Greek yoghurt bunch of fresh coriander, roughly chopped 1 small red onion, finely chopped squeeze of lemon or lime juice

1.

Place the minced lamb in a large mixing bowl and add the garlic, onion, mango chutney, ginger, chopped chilli, turmeric, crushed coriander and cumin. Season well with salt and pepper and mix by hand until combined. The burgers can be briefly mixed in a food processor until just starting to hold together, but be careful not to over-work the mixture.

2.

Divide and shape the mixture into 8-10 burgers. If you want to check the flavour, fry a small burger in a drop of oil before shaping the rest and, if necessary, add extra flavourings or seasoning.

3.

Place the burgers on a cling film-covered tray and keep them in the fridge to relax for at least 30 minutes. They’re ideal made the day before cooking.

4.

To prevent the burgers from sticking, brush with a little oil before barbecuing over medium-hot coals for about 5-6 minutes each side.

5.

Mix together the tomatoes, yoghurt, coriander, onion and lemon or lime juice and season to taste with salt and pepper. Serve with the burgers, either inside the bun or as adipping sauce.

Ingredients • 200g/7oz selfraising flour (white or wholemeal) • 2 free-range eggs • 150ml/5fl oz milk • 1 tbsp butter, for cooking

• 2 bananas, sliced or 2 large apples, cored and sliced into 1cm/½in rings • or a handful of frozen soft fruits (or a mixture) • ½ tsp cinnamon • 2 tsp caster sugar

Ingredients

water or orange juice • 100g/4oz caster sugar • 1kg/2lb 3¼oz strawberries, cleaned and sliced For the cheesecake layer • 2 sheets gelatine • 1-2 tbsp of lemon juice • 350g/12¼oz cream cheese • 225g/8oz caster sugar • 300g/10½oz thick Greek-style yoghurt • 1 tbsp of vanilla extract To serve • whipped cream • sprigs of mint

2. Kid’s job: Knock the egg gently on the work surface to crack it – cracking on a flat surface will create less little bits of shell. Pull the egg open over a small bowl. Pull out any bits of shell that have fallen into the bowl. (Wash your hands after handling eggs.)

For the biscuit layer • 150g/5¼oz crushed digestive biscuits • 2 tbsp melted butter • 2 tbsp caster sugar • ½ tbsp freshly grated lemon zest, very finely chopped • 6 tbsp orange juice or juice from the strawberries For the strawberry layer • 1 tbsp lemon juice • 1 tbsp water • 2 tsp cornflour, dissolved in a little cold

3. Kid’s job: Add the eggs and a little bit of the milk to the sifted flour and stir with a whisk or fork. Add the rest of the milk bit by bit, mixing as much as you can to get rid of any lumps. Leave the mixture to stand for a few minutes.

1. For the biscuit layer, mix all the biscuit ingredients together and reserve. 2. For the strawberry layer, place the lemon juice and water into a small saucepan and mix in the cornflour well.

4. Kid’s job: Gently stir in the fruit that you want to use. Dip the apple rings into the batter so they are coated on both sides. Be careful – they are fragile!

3. Bring to the boil and when the cornflour is dissolved, mix in the sugar and the strawberries.

1. Kid’s job: Sift the flour into a large bowl.

5. Adult’s job: Melt a teaspoon of butter in a frying pan over a medium heat. 6. Adult’s job: Carefully drop four large spoonfuls of the fritter batter onto the frying pan making sure you leave space around each spoonful as the fritters with spread as they cook. Apple rings will make one fritter each. 7. Adult’s job: Cook for 3-4 minutes on one side. You should see bubbles forming and the mixture should begin to set around the edges. 8. Adult’s job: Carefully flip over the fritters and cook on the other side until they are goldenbrown and cooked through this should take another 3-4 minutes. Repeat until you have used all of the batter mix, adding a little more butter each time you add more fritters to the pan. 9. Kid’s job: While the fritters are cooking, mix the cinnamon and sugar together in a small bowl. Sprinkle the cooked fritters with cinnamonsugar and tuck in.

4. Heat gently to dissolve the sugar. Remove from the heat, and allow to cool and thicken. 5. For the cheesecake mixture, soften the gelatine in the lemon juice and a spoonful of water if needed, for 3-5 minutes. 6. Heat the mixture gently over a low heat in a small saucepan until the gelatine is completely dissolved. 7. Meanwhile whisk the cream cheese and the sugar in a mixer or blender on medium speed. 8. When the sugar is dissolved turn down the speed and add the yoghurt and the gelatine. When the mixture is blended together add the vanilla extract. 9. To assemble, place the biscuit layer into the base of six wine glasses, add a good dollop of cheesecake mixture, then add some strawberries. Chill the mixture for a few hours and top with whipped cream and a sprig of mint. Serve immediately. Courtesy Paul Rankin

This Months Jobs in the Garden Lawn maintenance - Mowing and edging regularly will set off your borders brilliantly and make the garden look well maintained even if there are a few weeds in the beds! Mowing should be done at least once a week at this time of year. Dead heading - Dead heading those plants which will flower for longer if the old flowers are removed (e.g. some roses, bedding plants). Weeding - It is important to take out weeds before they flower and send seeds around the garden. Hoe borders regularly to keep them down. Cutting back – Cut back hardy geraniums, alchemilla and delphiniums to ground level when they finish flowering, then new fresh leaf cover will grow and (hopefully!) new flowers will appear later in the year. Plant supports - In early June (if you missed it in May) get your plants supports in before the plants flop over and make the job twice as difficult. Cut at least a third off sedums and some other late flowering perennials as this makes them bushier and less likely to flop open before the flowers appear. Summer bedding - June is ideal for planting out your tender perennials and bedding plants, but make sure you have watered the plants before and after you plant them, to give them the best possible chance. Move plants outside – With the risk of frost gone, now is the best time to place tender plants such as agapanthus and citrus plants outside. Fruit thinning - It’s good to fruit thin for a number of reasons, instead of getting a large quantity of smaller fruit you’ll get a fair amount of good sized fruit. Thinning also helps keep the fruit healthy and stops the tree from becoming depleted, so it’s less susceptible to pests and disease. Fruiting on trees tends to follow a four year cycle of heavy cropping, followed by a very poor year (as the tree recovers), the next 2 years the size of the crop increases until it hits the ‘bumper’ year again, by fruit thinning you’re managing this cycle, eliminating the extremes, to ensure there’s a reasonable crop each year. Cut your box hedging - Avoid cutting during very hot and sunny weather due to these plants being susceptible to sun scorch. When doing this at home you can avoid this sun scorch by spraying the foliage with water before cutting, but being aware that this should not be done when using electric hedge cutters due to the risk of electrocution! Don’t forget your veg plot - Pinch out sideshoots on tomatoes and harvest lettuce, radish, other salads and early potatoes. Enjoy the fruits of your labour.

Neighbours (2014) Kelly and Mac are settling down in a quiet neighborhood with their newborn child, until the frat brothers move into the house next door. Teddy is the President, and Pete is his right hand man, and they’re quick to accept friendship when Kelly and Mac introduce themselves as the neighbors. Night after night, Mac asks Teddy to lower the fraternity’s noise, even accepting the invitation to the party one evening. When Teddy goes back on his word to keep the partying down, Mac calls the police to deal with the problem. The police quickly blame Mac for their presence, and the war begins. As the family feuds with the frat brothers, things get hilariously dangerous and the fraternity end ups on thin ice with their college. After receiving their final warning and being placed on probation, Mac and Kelly pull a prank so ingenious that Teddy and Mac are forced to respond.

Ashby museum entered the following for a County Heritage Award and were pleased to win. Ashby Museum in a Digital Age Ashby Museum and its volunteers have increasingly embraced the use of digital resources to become more inclusive and accessible. In particular the museum has developed its involvement in social media such as Facebook and Twitter; has developed more interactive exhibition rooms, included video clips about local heritage on you tube and the museum’s website. The museum is now leading the regional development of bar codes to aid object retrieval from the museum’s collections. We remind you that the Bowls Club display will end at the end of the month. This year, in celebration of the 125th year, Ashby Bowls will host matches against Bowls England, Midlands Counties Bowling Association and Leicester Bowls Association. There will also be a Celebration Match against 6 local bowling Clubs. The display in the Museum has run from May 9th and gives a full history of the club illustrated with photos, memorabilia and various items of interest. The summer programme of walks has already begun with a general town history walk and the next one, which will take place on Tuesday 17th June, is called ‘A Thousand Years of Ashby’s History’. The Kids’ Club on Saturday June 7th will feature the Tudors and will run from 1 p.m. to 4 p.m. This is free but children need to be accompanied by an adult.
