Recipe

Bacon, egg and spinach salad with roasted tomatoes Serves 2 Preparation Time Less than 30 mins Cooking Time Less than 10 mins Ingredients 2 slices good-quality wholemeal bread drizzle olive oil 6 ripe baby plum tomatoes, halved 1 garlic clove, finely sliced 2 rashers back bacon, fat removed 2 very fresh free-range eggs 1 tsp vinegar (such as white wine vinegar) 250g/9oz baby spinach, washed 3 sprigs fresh basil, leaves torn sea salt and freshly ground black pepper For the dressing 2 tbsp extra virgin olive oil ½ tbsp sherry vinegar 1 tbsp wholegrain mustard 1.

Preheat the oven to 200C/400F/Gas 6.

Tear the bread into bite-sized pieces and scatter in an even layer over a baking tray. Drizzle with a little olive oil.

3.

Place the tomatoes onto a separate tray, scatter with the sliced garlic, placing slices on top of the tomatoes and season with pepper. Place both trays in the oven for 8-10 minutes, or until the bread is golden-brown and crisp. Set aside and leave to cool.

4.

Heat a griddle pan over a high heat until hot. Fry the bacon until charred on both sides and cooked through. Once cooked, chop into small pieces.

5.

For the dressing, place all the ingredients into a clean jam jar or a small watertight tub. Add two tablespoons of water and seal. Shake until emulsified. Season with salt and pepper to taste. (The dressing can be stored and used in other dishes as it will make more than you need for this salad.)

6.

Bring a large pan of water to a simmer and add the white wine vinegar (don’t be tempted to add salt as this will cause the egg whites to disintegrate and will ruin your poached eggs). Crack the eggs into a small ramekin or dish. Briefly whisk the water to create a vortex before gently pouring the cracked eggs into the centre of the slowly spinning water. Poach for four minutes in gently simmering water, or until cooked to your liking. Remove from the pan and drain Courtesy Sophie Wright

Spiced mackerel with horseradish potatoes Serves 4 Preparation Time Less than 30 mins Cooking Time10 to 30 mins Ingredients For the horseradish potatoes 500g/1lb 2oz new potatoes, cooked in their skins 2 tbsp olive oil sea salt and freshly ground black pepper 2 shallots, finely sliced 2 tbsp soured cream 2 tbsp creamed horseradish 2 tbsp finely chopped fresh chives olive oil watercress leaves, to serve For the spiced mackerel 8 mackerel fillets 100g/4oz butter, softened to room temperature 1 tsp cayenne pepper 2 tsp sweet smoked paprika 1 tsp ground coriander 1 tbsp golden caster sugar ½ tsp English mustard few drops Tabasco 2 tsp red wine vinegar sea salt and freshly ground black pepper 1.

For the horseradish potatoes, bring a large pan of salted water to the boil and boil the potatoes, in their skins, for 10-15 minutes, or until tender. Drain and, when cool enough to handle, cut into quarters.

2.

Heat the olive oil in a large frying pan over a medium heat, then add the potatoes and season, to taste, with sea salt and freshly ground black pepper. Fry the potatoes for 7-8 minutes, turning occasionally, until crisp and golden-brown. Remove the fried potatoes from the pan and set aside to drain on kitchen paper.

3.

Meanwhile, for the spiced mackerel, preheat the grill to its highest setting. Score the skin of each mackerel three times on each side using a sharp knife.

4.

Preheat the grill to high. Mix all of the remaining spiced mackerel ingredients together in a bowl to form a thick, spiced butter and season well with sea salt and freshly ground black pepper. Rub the butter over the mackerel fillets, then grill for 4-5 minutes, turning once, or until just cooked through.

5.

To finish the horseradish potatoes, transfer them to a mixing bowl. Stir in the shallots, soured cream and creamed horseradish and season, to taste, with salt and freshly ground black pepper. Stir in the chives.

6.

As soon as the mackerel are cooked, transfer to serving plates and spoon the horseradish potatoes alongside. Courtesy Mark Sargeant

Sticky BBQ chicken wings and drumsticks Makes 12 Prep Time: Overnight Cooking Time: 10 to 30 mins Ingredients 6 chicken drumsticks, preferably free-range 6 chicken wings, preferably free-range For the marinade: 2 tbsp clear honey 3cm/1¼in piece of fresh ginger, peeled and grated 1 garlic clove, crushed 1½ tsp Chinese five spice 2 tsp soy sauce 3 tbsp orange marmalade ½ tsp grated orange zest 1 tbsp sesame oil 1.

Slash the chicken drumsticks three to four times each with a sharp knife and place in a non-metallic bowl with the chicken wings. Mix together all of the marinade ingredients and pour over the chicken. Leave to marinate for at least 2 hours, or overnight if you can, turning occasionally.

2.

Once it has marinated, place the chicken on the barbecue over medium-hot coals and cook for about 20 minutes, brushing with any marinade left in the dish as it cooks. If it’s colouring too quickly, move to a cooler part of the barbecue to cook more gently. It’s important you cook the chicken all the way through.

3.

If you’re unsure, pierce a drumstick with a skewer: if the juices are still pink, carry on cooking. Eat as soon as they’re cool enough to handle, with the sticky sauce all around your mouth and fingers. Isn’t that what barbecues are all about?

4.

The chicken can also be cooked in the oven for perfect picnic food. Preheat the oven to 200C/400F/Gas 6.

5.

Transfer the chicken into a roasting tray with a couple of spoonfuls of marinade. Place in the oven for about 50 minutes, turning occasionally and basting with the marinade and juices until thoroughly sticky and golden, adding extra marinade to the tray if necessary. Once the chicken pieces are cooked, eat them when fresh and hot, or leave to cool before packing up for a picnic or packed lunch. Courtesy Jo’ Pratt

Get your fill of Vitamin D It’s that time of year again, the sun is shining brightly (hopefully!) in the sky (hopefully), and flowers turn their heads to absorb as much of the sunlight as they possibly can. Seasonal fruits are at their best, ripe and tasty and kids are playing out later as the nights are longer. Summer time, what a wonderful time of year, everyone feel better when the sun is shining, we smile more, greet people we see with a happy face and comment on how lovely the weather is. In the air there is the aroma of barbeques slowly cooking the meats and the clink of glasses as the wine bottle is opened. Laughter, picnics and days out is what summer is all about. But why do we feel much happier when the sun is shining? Why do we want to go out, smile, do all those little jobs around the house and garden that we put off all winter? Well the answer is Vitamin D. It is an essential vitamin to ensure healthy bones as it absorbs calcium and phosphorus from our diet. We get the most of our Vitamin D from sunlight however; it is also available through some foods that we eat so an 24

abundance of healthy, fresh foods is essential. The foods that contain Vitamin D are: cod liver oil, oily fish especially mackerel, oysters, ham and other meats, eggs and mushrooms. It is added to margarines, breakfast cereals, dairy and soya products. So eat cereal for breakfast, have a ham and mushroom omelette for lunch and eat as much oily fish as you can. When we are out in the sunshine we feel happier, our mood is lifted and life doesn’t seem quite as hard. The warmth of the sun on our bodies reduces those aches and pains that have been niggling over the wet, cold months. We socialise more, walk around more and generally feel better. Vitamin D aids in bone and tooth formation and supports muscle and nerve function, and studies have shown that vitamin D helps to prevent osteoporosis. Don’t however, rush out to buy huge doses of Vitamin D supplement, taking too much can be toxic, so if you feel that you have a deficiency it is important to speak to your doctor. On average, eating the correct foods and getting out when the sun is shining is all you will need. But remember not to be out too long in the sun’s rays.

WORTHY WINES FRANCE Beautiful and wonderful places await all who visit France. Fabulous coastlines, glamorous resorts and bustling cities are amongst the different aspects, of France, to be enjoyed. Quaint villages and a wealth of customs give pleasure to many. France is also well-known for excellent wine productions which include superb reds and whites. As the French say, “To love France, is to love life”. Château Roumanières is located in the Languedoc region and grows several grape varieties, for the productions of their exceptional wines. The history of the buildings can be traced back to the 13th century. The climate and sunshine hours play a huge part, along with the soils, plus expertise and love, in the production of the wines, which are the end product of growing vines in this much sought-after area. Château Roumanières en Blanc, IGP Pay’s d’Oc, is very popular, having a good bouquet and being easy and most pleasant for everyday drinking. En Rosé, IGP Pay’s d’Oc, is in the same range and likewise is also most popular and, for some, adds that little ‘extra something’ to al fresco dining. These are refreshing wines and most agreeable on the palate. L’instant, Coteaux Du Languedoc, is again, favoured by many, has plenty of fruits in the pleasant bouquet and on the palate. Les Garrics, Coteaux

Du Languedoc, has a wonderful garnetred colour and a superb bouquet. This wine exudes fruits on the nose and in the excellent mouth-feel. A well-balanced and elegant production. Le Chant des Pierres, Coteaux Du Languedoc, is another superb wine, from the same producer. Intense and well-balanced, this is very impressive palate-wise, which leads enticingly to a long finish. Lastly, my surprise-Pampl’Ice. This production is made using a blend of light red wine and grapefruit extracts and is most worthy of a place in the stock of wines. Pampl’Ice, is a favourite with me. I find this wine refreshing, great as an apéritif and very good to accompany starters, plus other dishes. I am most pleased to have located Château Roumanières’ excellent wines. Recipe

Smoked haddock chowder with leeks and sweetcorn Serves - 4 Prep Time Less than 30 mins Cooking Time 10 to 30 mins Ingredients 1 good slice butter 3-4 medium leeks, roughly sliced 1 small handful tender fresh thyme sprigs 1 corn on the cob a couple of handfuls of new potatoes, cut into bite-sized chunks a couple of undyed smoked haddock fillets milk, enough to cover the fish 2-3 fresh bay leaves a sprinkling of black peppercorns a good handful fresh flatleaf parsley, roughly chopped 1. In a deep pan, heat the butter until melted, add the leeks with the thyme and cover with a circle of greaseproof paper big enough to tuck down a little over the leeks. Cover with a lid so no steam escapes, and cook gently for about ten minutes. Run a sharp knife down the sides of the corn to remove the kernels and add them to the pot with the potatoes, which will add some body to the chowder. Replace the greaseproof paper and the lid and continue to cook for a further ten minutes. 2. Meanwhile, place the smoked haddock fillets in another shallow pan and pour in the milk, enough to just cover the fish. Add a bay leaf or two and a sprinkling of peppercorns. Bring to a gentle simmer and cook the fish for eight minutes or so, being careful not to overcook it. 3. Lift the lid of the pan containing the leeks and remove the greaseproof paper, and ladle in the poaching milk of the fish without the bay leaves or peppercorns, followed by large chunks of haddock, removing any bones as you go. Bring to a simmer and finish with a good sprinkling of chopped parsley before taking the pan to the table for the food to be served into bowls.

Hazelnut tarts with white chocolate & strawberries Serves makes 24 Cooking time including chilling Ready in 1 hour Ingredients For the tarts 180g plain flour 60g icing sugar 1 tbsp chopped hazelnuts 90g butter , chilled and diced 1 egg For the filling 150ml double cream 200g white chocolate , chopped 12 small strawberries , halved

These mini tartlets are a great entertaining idea, when you want a little sweetness instead of a large pudding 1. Put the flour, sugar and hazelnuts in the food processor with a pinch of salt. Add the butter and process to fine breadcrumbs. With the processor running, add the egg and whizz until the dough forms a ball. You may need to add a splash of cold water if it doesn’t come together quickly. Roll the dough out thinly on a floured work surface. 2. Use a pastry cutter to cut 24 small circles about 8cm across. Press each into a mini muffin tin and put in the freezer for 20 minutes. 3. Heat the oven to 180C/fan 160C/gas 4. Bake the tart cases for 15 minutes. 4. Heat the double cream in a glass bowl set over simmering water. Add the chopped chocolate and whisk constantly until incorporated. Spoon into the cooled pastries. 5. Chill for an hour and then top with a strawberry half.

This Months Jobs in the Garden Hopefully, temperatures are rising and your garden should be just about ready to bloom. Here we outline those key jobs for June to keep your garden at its very best... Its vital to keep you garden hydrated during the summer months, particularly in hot spells. Focus on the areas that need it such as young plants and vegetables and make sure they get a thorough soaking. Mulching will help maintain the moisture around plants but be sure the soil is moist before you mulch as it keeps water out as well as in. Keep on top of weeding regularly, pull out annual weeds making sure you remove from the root to avoid regrowth. Mow the lawn regularly, keeping the blades at the lowest setting, and trim the edges for a neat finish. If your lawn is looking a little tired use a liquid fertiliser to perk it up. This is another job that should become routine to extend the life of the flowering period in your garden. Removing fading flowers on perennials as soon as possible ensures new growth and flowers later into the season. Use secateurs to trim the plant back to just above the strongest buds. This will ensure new growth from the lower half of the plant and give it a healthy bushy shape. Theres little chance of frost now so you can fill your borders with some fantastic bedding plants. Remove any spring bedding and keep the fertiliser to a minimum. Water plants well an hour before planting and give them a soaking afterwards too. Its really important to keep on top of the watering throughout the summer. Check roses for signs of blackspot, aphids and leaf-rolling sawfly damage. Dead head, Remove weeds, water during dry spells. Control weeds to prevent them competing for moisture and nutrients. Keep an eye out for early aphid attacks, and deal with them appropriately, either by squashing small colonies, or by using pesticides on larger infestations. Bulbs and Herbaceous Plants. Stake tall or floppy plants. Plant out summer bedding and seed-raised plants, if not already done so. Make sure they are well watered in and keep moist during dry weather. Thin out direct sowings of hardy annuals. This is best done in two or three stages at fortnightly intervals. Final spacing should be between 10-20cm (4-8in). It is not too late to direct sow a few fast growing, late-flowering hardy annuals such as Calendula, Godetia and Clarkia. Perennials such as Actaea (hollyhock). Stake tall perennials to prevent wind damage to flower spikes. Cut back dead bulb foliage if not done already. It is important to wait until the foliage dies down naturally, as cutting back too early can lead to a no flowering plant next year. Gaps in herbaceous borders are best filled with annual bedding. Cut back clumps of spring-flowering perennials such as Helleborus, Pulmonaria and Doronicum . Plants will stay more compact and will flower better next year. On the Lawn. Regularly mow lawns to keep them in shape - removing ‘little and often’ is the key to a good quality sward. Add grass clippings to the compost heap in thin layers. Apply a high nitrogen summer lawn fertiliser if not done last month to encourage a healthy-looking lawn. Move garden furniture and other objects regularly to allow grass to recover and prevent yellow patches.
