seasonal recipes Mackerel on toast Serves 4 mins Prep 45 Ready in 10 mins Ingredients • ½ cucumber, peeled, thinly sliced on a mandoline • salt • 4 tbsp grated fresh horseradish • 2 heaped tablespoon crème fraîche • 2 tsp English mustard powder

• 4 fresh mackerel fillets • salt and freshly ground black pepper • knob of butter To serve • 4 slices soda bread, toasted, buttered • 1 small red onion, thinly sliced • ½ small lemon

1. For the salted cucumber and horseradish, place the cucumber slices 2. into a colander and sprinkle with plenty of salt. Mix well and leave the contents to drain over the sink for half an hour. 3. Rinse the salt off the cucumber with cold water, then leave to drain. Gently wring out any excess moisture from the cucumber with your hands, then set aside. 4. In a clean bowl, mix the horseradish with the crème fraîche and mustard powder, making sure the mustard powder is well combined with no lumps. Set aside. 5. Season the mackerel fillets on their skin side with salt and freshly ground black pepper. 6. Heat the butter in a frying pan until it is foaming, then add the fillets skin-side down. Place a heat-proof plate onto the cooking fillets, as this will make sure they stay flat and cook evenly. Cook for 4-5 minutes, or until nearly cooked through, then turn the fillets and cook for 30 seconds, or until just cooked through. 7. To serve, place a small handful of the cucumber onto the toast. Place the cooked mackerel fillets onto the cucumber. Place a dollop of the horseradish sauce on top and garnish with a little of the sliced red onion and a squeeze of lemon. Slow cooker chickpea tagine Serves 4 Prep 30 mins Ready in over 2 h ours

Ingredients • 400g/14oz can chickpeas in water, rinsed and drained • 1 red pepper, deseeded and thickly sliced • 1 onion, chopped • 1 small butternut squash, peeled, deseeded and cut into bite-sized • pieces • 2 courgettes, cut into bite-sized pieces • 12 dried apricots • salt and freshly ground black

pepper • 2 tbsp extra virgin olive oil, plus a drizzle to serve • 2 garlic cloves, crushed • 2 tsp paprika • 1 tsp ground ginger • 1 tsp ground cumin • 500g/1lb 2oz carton passata • 2 tsp honey, plus a drizzle to serve • 1 tsp harissa paste • handful fresh mint or coriander • thick Greek-style yoghurt, to serve

1. Place the chickpeas, pepper, onion, squash, courgettes and apricots into a slow cooker and season with salt and freshly ground black pepper. Heat the oil in a frying pan, then fry the garlic and spices until fragrant, about one minute. 2. Add the passata, honey and harissa, then bring to a boil. 3. Pour the sauce over the vegetables, cover with the lid and cook on high for four hours. 4. Season to taste with plenty of salt and freshly ground black pepper. Tear in most of the mint or coriander leaves, stir through, then scatter the remaining leaves over the top. Drizzle with a little more oil and honey, then top with spoonfuls of yoghurt. recipe Mackerel with rhubarb chutney and orange and chicory salad

Serves 2 Preparation time less than 30 mins Cooking time 10 to 30 mins

Ingredients For the chutney 75g/2?oz caster sugar 25g/1oz sultanas few sprigs fresh rosemary 2cm/žin piece root ginger, peeled and finely chopped 1 shallot, peeled and finely chopped 3 sticks rhubarb 5 tbsp cider vinegar 1 orange, juice only salt and black pepper For the mackerel 2 whole mackerel, gutted, filleted and pin boned rapeseed oil, for cooking For the salad 1 orange, segmented 2 heads chicory, separated into leaves 100g/3½oz pea shoots small handful celery tops 1 tbsp chopped fresh dill rapeseed oil, for dressing salt and black pepper For the garnish 1 stick rhubarb, sliced into ribbons using a vegetable peeler 1.

For the chutney, in a heavy-based pan melt the sugar until a golden-brown caramel forms. Remove from the heat and stir in the sultanas, rosemary sprigs, ginger, shallot and rhubarb.

2.

Stir in the cider vinegar and orange juice. Bring back to the boil and cook gently for 8-10 minutes. Season with salt and pepper and set aside to cool.

3.

To make the salad, mix together the orange segments, chicory leaves, pea shoots, celery tops and dill. Dress with rapeseed oil and season with salt and pepper.

4.

For the mackerel, place the mackerel fillets skin-side up on an oven tray. Brush with rapeseed oil and use a blow torch to cook evenly. Turn over and repeat on the other side (alternatively place the fillets under a hot grill). Season with salt and pepper.

5.

Serve a spoonful of chutney with the cooked mackerel fillets and salad. Garnish with ribbons of rhubarb. Courtesy James Martin

Stuffed paratha for kids

Ingredients For the dough 200g/7oz wholemeal flour 2 tbsp sunflower or vegetable oil pinch salt For the filling: about one cup of a mixture of the following leftover cooked potato, chopped or mashed cauliflower, carrot or squash, microwaved, steamed or boiled until soft frozen peas or sweetcorn, defrosted spring onion, chopped cooked, shredded chicken or lamb (optional) 1 tbsp unsweetened desiccated coconut, soaked in a few spoonfuls of hot water (optional) spices, such as ground cumin, cinnamon, coriander, curry powder or paprika, to taste (optional) chopped fresh coriander, to taste (optional) squeeze lemon juice Kid’s jobs: 1.

Place the flour in a large bowl and gradually pour in 125ml/4fl oz lukewarm water and the oil. Add a pinch of salt. Mix the dough together into a ball.

2.

Knead the dough for five minutes- either in the bowl or on a clean surface. The dough should feel soft and stretchy and not too sticky. Different flours absorb different amounts of water, so you may need to add a little more flour dough is too sticky or dry.

Place the dough back into the bowl and cover with the cling film. Leave to stand for about 15 minutes while you make the filling.

4.

You can make four different fillings in small cups or one big one in a bowl. Just mix together the ingredients you fancy and mash them up with a spoon or fork. Make sure you taste the filling and that you like it. Add a pinch at a time of pepper and spices, and taste.

5.

Divide the dough into four, but trim and keep a bit to one side which you can use to fix any holes that might appear when you roll out the breads.

6.

Roll out each ball on a lightly floured work surface or table. The dough should be about as thick as a pitta bread (approximately 5mm). Place two tablespoonfuls of each of the filling mixture on the centre of the rolled doughs and gather the edges together so that the dough wraps around the filling.

7.

Pat the dough to flatten carefully so that the filling is trapped inside. Roll out the stuffed parathas thinly as you can - don’t worry if some of the filling leaks out, you can ignore it or do a patch job with the extra dough.

8.

Adult’s job: Heat a large frying pan and then pour a teaspoon of oil onto the surface of the pan. Use a piece of kitchen paper to spread the oil evenly over the pan. Cook one paratha (or more if you have a large frying pan) for about three minutes on each side, or until it is starting to brown. Repeat with the other breads adding a little more oil each time. You can keep the breads warm by placing them on a baking tray in a warm oven. Serve with yoghurt, dips or alongside a curry. Cold parathas are also great for picnics or lunchboxes.

healthy living Are sweeteners good or bad? Sweeteners are added to a plethora of different foods and beverages these days such as low calorie drinks, chocolates, sweets, yogurts and ready meals but are they any good for us or are they doing us harm? Most of us swap from sugared drinks to the diet ranges when trying to lose weight, as they contain very little calories but are we right in this decision? Dieters are constantly looking for alternative ways to maintain that sweetness within their foods without consuming too many calories. Many opt for products that suggest that they are sugar free or no sugar added. ‘Sugar free’ doesn’t necessarily mean that the product is calorie free. This label can be a mask and many people assume that as there is no sugar in it, the item is not fattening. The calories are still there from the other ingredients within the product. Recent studies have shown that consuming artificial sweetener can actually increase the appetite, which is not good for someone who is trying to lose weight. Saccharin was discovered in 1879 and known as ‘the poor man’s sugar. Even back then, there were fears about the potential toxic effect this product was having on people. When you are sprinkling your sweetener onto your morning cereal or into the first coffee of the day do you consider the possible side effects that this product may cause you? By saving those extra few calories you could be putting yourself at risk of migraines, nausea

and vomiting, a change in your heart rate, depression, memory loss, vision disturbance, insomnia and seizures. Certain branded sweeteners have been linked with causing skin rashes, panic, bladder issues and diarrhoea. Sorbitol is a polyol which means that it is a type of carbohydrate which is manufactured from sugar. This has the look of sugar yet only has 30% fewer calories than sugar. The problems occur when too much of this produce is consumed causing diarrhoea, bloating and wind. Foods that are comprised of more than 10% sorbitol must carry a warning that excessive consumption may have a laxative effect. Xylitol is another low calorie sweetener that is used in many foods but also in health products such as toothpastes and some medications. It is sweeter than sorbitol and chewing gum that is sweetened by Xylitol is thought to promote dental health as it aids in neutralising plaque acidity on teeth. However, over consumption of this product leads to diarrhoea and bloating. Others may disagree with these findings and suggest that sweeteners such as aspartame, (which is up to 200 times sweeter than sugar) are safe to eat or drink on a daily basis and can in fact help to control weight and aid people who suffer from diabetes. (www.nhs. uk) This debate will continue, however, research into the products will remain. They may have been tested and proven to be safe for human consumption, but are they healthy? This discussion could go on and on.

recipe Sardine Beccafico Makes 6 Preparation Time less than 30 mins Cooking Time less than 10 mins Ingredients For the sardines 6 medium-sized sardines, filleted 12-16 fresh bay leaves For the stuffing 75g/3oz white breadcrumbs, plus 25g/1oz extra for topping 50g/2oz black olives 50g/2oz capers 4 anchovies 40g/1¼oz raisins 40g/1¼oz pine nuts 20g/¾oz almonds 1 lemon, juice and zest 1 orange, juice and zest 10g/½oz fresh parsley 1. Preheat the oven to 180C/350F/Gas 4.

2. For the stuffing, blend all of the stuffing ingredients together in a food processor until well combined with a firm consistency. 3. Roll the stuffing mixture into little balls. Place one ball at one end of each sardine fillet and roll the meat around the stuffing, piercing each through the entre using a cocktail stick. Garnish each rolled sardine with a bay leaf (skewered with the cocktail stick). 4. Drizzle a little olive oil into the base of an ovenproof dish. Add the fish to the dish and scatter over the extra 25g/1oz breadcrumbs. Drizzle with a little more olive oil. 5. Born to Manage: The Autobiography by Terry Venables

After a playing career that spanned more than 15 years, and took in golden spells in the sixties with Chelsea and Spurs, it was almost inevitable that Terry Venables would move into management. Following early success with Crystal Palace and Queens Park Rangers, he was appointed to the plum job of managing Barcelona, one of the biggest clubs in Europe. The Spanish giants had been struggling, but he soon turned them around and brought them trophy success, which inevitably earned him the nickname ‘El Tel’. He returned to England to take charge of Spurs, where he helped save the club from financial troubles, and formed an ill-fated partnership with Alan Sugar. Again there was trophy success, as Venables worked with top England stars such as Paul Gascoigne, Gary Lineker and Chris Waddle, and when the England job fell vacant, he was the obvious choice for the role, leading the nation to the semi-finals of Euro 96 where they lost out on a place in the final after a penalty shoot-out. After leaving the England job, he has subsequently worked in numerous different roles. A charismatic and gregarious personality, Venables is widely viewed as one of football’s great tacticians and is the most successful English manager of recent years. His story is sure to fascinate and entertain all followers of the game, providing a unique insight based on more than 50 years at the top.

seasonal desserts Bakewell tart Ser Prep ves 4-6 30 min Read s -1 hr 10 to y in 30 min s

Ingredients For the pastry • 300g/10½oz plain flour, plus extra for dusting • 125g/4oz cold unsalted butter, cut into cubes • 30g/1oz sugar • 2 free-range eggs • 2 tbsp milk (optional) For the filling

• 225g/8oz unsalted butter, softened • 225g/8oz caster sugar • 225g/8oz ground almonds • 3 free-range eggs • 1 lemon, finely grated zest only • 50g/2oz plain flour • 1 jar raspberry jam • flaked almonds, for sprinkling

1. For the pastry, place the flour, butter and sugar into a food processor and pulse until the mixture resembles breadcrumbs. Add one of the eggs and pulse until the mixture comes together to form a rough dough. If the dough is too dry, add a bit of milk. Shape the dough into a ball and wrap in cling film. Chill in the fridge for 20 minutes. 2. Unwrap the dough and discard the cling film. Turn the dough out onto a floured work surface and roll out until large enough to line a 30x20cm/12x8in cake tin. Line the tin with the pastry, then place into the fridge to chill for a further 30 minutes. 3. Preheat the oven to 200C/400F/Gas 6. Line the chilled tart case with a sheet of greaseproof paper and fill with baking beans. Bake for 15-20 minutes, or until the pastry is lightly golden-brown. 4. Remove the paper and beans and brush the pastry all over with the remaining beaten egg. Return the pastry to the oven for a further five minutes, until golden-brown. Remove the pastry from the oven and turn the oven temperature down to 180C/365F/Gas 4. 5. For the filling, beat the butter and sugar together in a bowl until pale and fluffy. 6. Mix in the ground almonds, then crack in the eggs one at a time, beating well between each addition until smooth and creamy. Fold in the lemon zest and the flour. 7. Spread some of the raspberry jam generously across the base of the pastry, leaving a 2.5cm/1in gap around the edge. 8. Spread the filling mixture over the jam and sprinkle over the flaked almonds. 10. Bake the tart for 20 minutes, or until the filling is set and

golden-brown.

9. Allow to cool in the tin before serving. To serve, cut the tart into 5cm/2in squares.

cocoa solids), melted, plus extra to serve 1 x 360g/12½oz jar black cherries in kirsch ½ tsp arrowroot or cornflour mixed with a little water to make a smooth paste 300ml/10fl oz double cream, lightly whipped

1. Preheat the oven to 170C/325F/Gas 3. Line a 12-hole muffin tray with paper cases. 2. Beat the butter and sugar together in a bowl until light and creamy. Gradually add the eggs, one at a time, until well combined. Sift in the flour and cocoa powder and mix until well combined. Fold in the milk and melted chocolate. 3. Spoon or pipe the mixture into the muffin cases and bake for 18-20 minutes, or until well risen and springy to the touch. 4. Remove the cakes from the tin and set aside to cool on a cooling rack. 5. Drain the cherries in a sieve collecting the kirsch in the bowl below. Pierce the cakes with a skewer and carefully pour about a teaspoon of the kirsch over each cake. 6. Heat the kirsch and arrowroot paste in a small saucepan until just boiling. Remove the pan from the heat and beat until thickened. 7. Using a small knife make a well in the top of each cake by removing a disk of cake 8. Pipe or spoon a swirl of cream onto the cakes, top with a few cherries and drizzle with the thickened kirsch. Just before serving, grate over some chocolate.

This Months Jobs in the Garden July is usually one of the best months weather-wise and is a time when you can sit back for a moment and enjoy the fruits of your labour in the garden. While there are still other ongoing tasks to perform in the garden, your primary concern will be assuring an ample supply of water for your plants. And, if you’re looking for things to do, you can spend some time adding summer plants to the garden, lawn care and planting autumn and winter vegetables. This is the month that you begin enjoying the harvest of your homegrown fruits, vegetables and herbs. Summer blooming shrubs should be pruned for shape after they have finished flowering. Remove any dead or diseased branches. Fertilize flowering shrubs like Rhododendrons, Camellias and Azaleas immediately after they have finished flowering with a ‘Rhododendron’ or ‘Evergreen’ type fertilizer. Dead head the developing seed pods from your Rhododendrons and Azaleas to improve next years bloom. Be careful not to damage next years buds which may be hidden just below the pod. Self-clinging climbers such as ivy and Hydrangea petiolaris should have cut away any young shoots which have become unattached, so strong winds do not peel off any further or older growth from the wall. This is especially helpful in the early years, while the plant is still trying to reach the top of its support. Remove the spent flowers and seedheads on petunias, argyranthemums and nasturtiums in pots and containers for longer flowering. Break off at a low joint with finger and thumb the flowered stems of pinks, it gives a tidier job than cutting with secateurs. Watch for the gingery spotting of rust on roses, mahonias and hypericums, and begin a programme of regular spraying with fungicide. Plants which suffer premature defoliation from rust will be weakened. To prolong their season, keep thirsty perennials such as phlox, bergamot and delphiniums well watered when the weather is dry. Lavatera bushes may need pruning to prevent them splitting in gusts of wind, or overcrowding neighbouring plants. Thin and trim stems as required, but take care not to lose the informal shape of the bush, or too many flowers. Check the growing tips of herbaceous plants for signs of aphids, which multiply rapidly in the warm weather. Brush them off carefully or zap them in the evening with a jet of water. Feed agapanthus and dahlias. Start with a general purpose fertiliser, and follow it in a week’s time with something high in potash, such as tomato feed, watered in, to promote good flower development.

At the club on the 19th July, the children will be able to handle artefacts from the past and do their own archaeological investigations. The exhibition will include an overview of what archaeology is and give local examples of sites from the different archaeological periods. The Museum will, as usual, have a presence at the Ashby Show on July 13th . If you will be there do come along to say hello to us and see our stall. In our Loudoun Gallery, to coincide with the 100th anniversary of the outbreak of the First World War, we will stage a special exhibition running from the beginning of August until the end of the year. In June we welcomed two local schools to the museum, both of them linking the visit with the Castle. On June 11th Dame Catherine’s School from Ticknall spent a fascinating morning exploring our galleries and on June 25th Viscount Beaumont’s School from Coleorton had an enjoyable and informative visit. With this in mind we welcome Jeff Humphries, a new volunteer, to help with Education co-ordination. The Charnwood U3A group will be combining a visit to us on 8th July with a guided tour round St. Helen’s Church. Several of our loyal custodians have had to call it a day due to ill health so if you have two hours a fortnight to spare we would love to you to come along and talk to us about joining our friendly team. Finally one of our trustees is researching the Mammatt family who lived in Ashby from the early 1800s and would welcome any information from readers about them, in particular Edward (died 1835) and his sons John and Edward (died 1851 and 1860).
