Changes at Hostaria Mazzei: New partner and chef, same focus on freshness, fish By Jananne Abel

T

wenty-five South Regent Street has long been the location of a fine Italian Restaurant. It housed the popular Sawpit Restaurant when I first started eating out in Port Chester 30 years ago. The Sawpit was the place for local residents to meet and eat on Saturday night and for politicians to get together for Saturday lunch. Eventually The Sawpit lost its appeal and wasn’t rejuvenated by a name change. In 1995 the restaurant was sold and transformed into Tony May’s Hostaria, a pricey New York City style restaurant. In September 1998 Domenico Avelluto and a partner took over the establishment and renamed it Hostaria Mazzei. After Avelluto’s partner became ill, Alberto Marranzano joined the business in November 2004. Executive chef Giovanni Sias came on board about the same time. While the focus has changed somewhat, the accent is still on freshness and the theme here is “made in Italy.” With two partners and a chef who hail from Italy, Avelluto from the Puglia region, Marranzano from Milan and Sias from Sardinia, their goal is to create an authentic Italian dining experience. While previously specializing in dishes from Puglia, Hostaria Mazzei now has a menu featuring a sampling of dishes from all regions of the country. Lots of seasonal vegetables and fresh fish Avelluto acquires himself from Hunts Point in New York City are trademarks of the restaurant, and those certainly haven’t changed. Fish filleted and baked in the restaurant’s woodburning oven are the restaurant’s standard. Varieties include gray sole, halibut, striped bass and monkfish. Fish tastes totally different baked in the wood-burning oven— which is fueled with oak--than it does if it is sautéed, grilled or baked in a conventional oven, said Marranzano. Branzino--white mild Mediterranean sea bass—is Hostaria Mazzei’s biggest seller, with the recipe changing all the time, said Sias. The whole fish is filled with an herb oil made with virgin olive oil, garlic, parsley and basil to bring out the flavor of the fish and sautéed, then finished off in the oven. Sias demonstrated the preparation and on this day was using a simple Italian recipe with potatoes, cherry tomatoes, and white wine. It can also be grilled

The Port Chester restaurant specializes in the preparation of this Mediterranean sea bass. or prepared “cartoccio”—wrapped in aluminum foil with cherry tomatoes, olive oil, salt, pepper, spices and a touch of white wine so none of the flavor escapes. If desired, shrimp, clams and mussels may be added. By request for those in the know, the restaurant will also cook branzino whole covered in kosher salt in the wood-burning oven and then fillet it at your table. Sias said he prepares 30 to 40 branzino on any given Saturday night. Another interesting fish preparation which appeared as a special on a recent Saturday night was halibut filet in “acqua pazza”— made with a touch of white wine, carrots, a bay leaf and spices--with fregula pastina from Sardinia on the side ($27). Avelluto, 52, started in the restaurant business as a busboy and only 10 years later opened his first restaurant on Manhattan’s Upper East Side called Mazzei which specialized in dishes from Puglia. It has since closed but was still open when Avelluto opened

what he called his Port Chester extension, Hostaria Mazzei, in the fall of 1998. Another Italian restaurant he opened in Dublin, Ireland still exists. Puglia, located at the heel of the Italian boot, is completely exposed to the sea and is thus known for its seafood. Avelluto, who lives next door to his restaurant in Port Chester, is known as the ultimate restaurateur who circulates among his customers and makes them feel at home. Marranzano, too, has a pleasant way with customers. At 45, the Sleepy Hollow resident has enjoyed an international career in the restaurant industry. He started as a bartender in one of Milan’s top piano bars. Since then he has worked at several restaurants in Europe and Hong King, learning all facets of the trade, and in 1985 began opening restaurants in Italy before moving to New York eight years ago. He managed a restaurant in New York City and worked with a wine distributor before linking

up with Avelluto. Marranzano brings his wine expertise to Hostaria Mazzei where he has created a list of more than 200 wines in a notebook displaying a map of Italy and the various wines from each region. Most of the varieties are from Italy with a page of Californian and Australian vintages. Bottles range in price from $25 to $600 with several in the reasonable $30 to $40 category. There are also half bottles, large format bottles and wines by the glass. The list will be constantly changing, he said, to reflect what’s available and new varieties as he learns about them. When Marranzano is on the premises, he is more than happy to help customers select a wine. Just ask for Alberto. Besides fish, Hostaria Mazzei makes its own pasta and specializes in distinctive dishes such as pasta with choidini (small hook-like mushrooms from Italy) or chestnut tagliatelle (linguine made with chestnut flour) with butter, sage and fresh ricotta cheese ($24).

Marranzano recommends lamp stew or lamb ragout over pasta (both specials) as well as the Porterhouse steak for two with potatoes and vegetable ($75), offered once a week. The red beet salad with string beans and gorgonzola cheese ($12) is always listed as a special because of its extreme popularity of late. So are the oysters and clams baked in the wood-burning oven ($12) because customers always request them. Chef Sias said the cuisine at Hostaria Mazzei is based on the freshness of the products and simple Italian recipes. Specials (several appetizers, pasta dishes, meat and fish preparations and two homemade soups) change daily according to the ingredients available. I can attest to the high quality and attractive presentation of the food at this fine Italian restaurant. Prices are on the high side for Westchester but are not unreasonable for the first-class dining experience. Portions are adequate although not tremendous. On our recent visit Gawdat Gendy of Port Chester, who has been with Hostaria Mazzei for six years, provided pleasant, efficient service and was knowledgeable about the dishes. As unique touches, fresh ricotta cheese, for which the Puglia region is known, is placed on each table along with plain focaccia, made fresh at the restaurant daily, and long, thin homemade bread sticks Marranzano called grissini.

Décor

This large establishment seats 250 with private banquet rooms and a lovely décor of mahogany, hard wood and terra cotta tile floors, a beautiful wood-burning oven decorated with cream and blue tiles and a copper hood. Guests are greeted by fresh flowers sitting on the bar as you enter and two potted trees. The rich looking serpentine bar with stools covered in blue and deep red velvet is separated from the main dining room by a wood and glass divider. New hanging lights have recently been added. While the dining room gets lots of natural light during the day, unusual large ceiling fixtures covered with cream colored cloths light it up at night in addition to small candles on the tables. Tables are covered with champagne cloths and matching napkins and set with white dishes. They are complemented by wooden chairs with deep blue fabric seats. Please turn to page 7R

Philip Mazzei was an Italian-American in the time of Thomas Jefferson who was his mentor for 17 years. An adjacent dining room used as needed for overflow or for private parties of 70-80 people is carpeted and decorated with mirrors and prints as well as a large tapestry. Here the chair seats are covered in classy navy, red and beige striped fabric. In addition, the Equestrian Room accommodates private parties of 40-50 or a group of 24 at one large table.

Dinner for four

My husband and another couple enjoyed a pleasant Saturday night dinner at Hostaria Mazzei. A basket of the homemade focaccia, bread sticks and ricotta cheese for spreading was brought to our table before the meal. We had a great table by the front windows where we got extra illumination from the lights outside the restaurant. Here navy and white striped curtains at the windows are pulled back and the blinds are pulled up to provide the maximum exterior light. To go with our meal we selected Pinot Grigio Pierpaolo Venezia Giulia 2003 ($32) which turned out to be an excellent choice. Dry and crisp with flavor but no bite, it was pleasing to all. The consensus on the two tricolor salads ($7 each) was that, although completely fresh with a nice homemade oil and vinegar dressing, they were bitter. Insalata Mazzei ($8), consisting of iceberg lettuce, red onions, tomatoes and gorgonzola cheese with oil and red wine vinegar, on the other hand, proved to be a re-

freshing, delicious combination as was the arugula salad with cherry tomatoes and shaved parmesan cheese ($8). For entrée, the sautéed Atlantic salmon fillet crusted with mustard and bread crumbs ($25), one of four fish specials, brought a large piece of tender moist fish enhanced by delicate flavors which did not overpower that of the fish. It was served with a small mound of mashed potatoes and a fresh, tasty chopped vegetable mélange. I couldn’t have asked for a better meal. Another in our party went with sautéed salmon fillet with spumante wine sauce served with sautéed zucchini ($22), a menu item. Homemade tagliatelle with shrimp ragout ($17), chopped shrimp with tomatoes over a spiral linguine, was also good, something a little different for shrimp lovers like me. I found the homemade ravioli stuffed with ricotta and spinach ($17) delicate but the tomato sauce it was cooked in somewhat acidic. All desserts are made on the premises. Based on the recommendation of our waiter, who provided efficient but not overbearing service, we went with the cherry parfait crusted with hazelnuts ($8) for four to share. It was nicely presented in a small crock with a slice of dried orange and a piece of strawberry as well as a sprig of mint. This sweet treat was light with a taste of cherry and the crunchiness of hazelnuts. Other dessert offerings include chocolate cake with vanilla sauce, crème caramel with sage and ricotta (very particular to this restaurant), dried fruit pie with cold sabayon marsala and petite cheesecake with strawberry compote. Menu, Valentine’s Day

While there is, of course, a dinner menu, I recommend what Avelluto told me back in March 1999: order the daily specials. They’re made with the freshest seasonal ingredients. The menu includes hot and cold appetizers ranging in price from $8 to $12. Examples are tuna carpaccio with zucchini crudité in a lime dressing ($12), calamari salad with chick pea cream ($11) and wild mushroom pudding with cheese sauce ($10). Entrées range in price from $16 for spaghetti San Giovanello with vine-ripened tomatoes and Sicilian capers to $32 for grilled veal chop with roasted tomatoes. Fresh gnochetti from Sardinia with sausage ragout and sliced pecorino cheese ($19), veal scaloppine with lemon sauce served with sautéed string beans ($21) and sautéed prawns with vernaccia from Oristano, served with spinach pudding ($28), are among the entrées not previously mentioned. Although it’s not well promoted, you can also get pizza at Hostaria Mazzei. Alfonso Carusone, who hails from Naples and has been in the pizza busi-

ness for a generation, joined the staff at Hostaria Mazzei as the pizza chef about a year ago. For Valentine’s Day, the regular menu will be available as well as romantic specials created by the chef such as heart-shaped ravioli. “There is no set menu because our customers don’t like that,” said Avelluto. Prices on the lunch menu are slightly lower with hot and cold appetizers ranging from $9 to $11, salads from $7 to $8 and entrées $12 for spaghetti to $20 for grilled beef sirloin served with roasted tomatoes.

Hostaria Mazzei is open for lunch Monday through Friday from noon to 3 p.m. and for dinner Monday through Friday from 5 to 10 p.m., Saturday from 5 to 10:30 p.m. and Sunday from 4 to 10 p.m. Plenty of free parking is available in a private shared lot adjacent to the restaurant. I agree with Marranzano’s philosophy that a restaurant should always be a new experience, constantly changing to keep it interesting. With a new wine list, chef, menus and a new partner in the last year or so, Hostaria Mazzei has definitely changed, but it has also maintained its focus on quality, freshness and fish.
