FIRMA INVITADA

2012 es un año determinante para la industria turística. En estos meses vamos a comprobar de primera mano la consolidación de algunas tendencias que, como se sospecha, han dejado de ser algo que se pone de moda o que invita a la palabrería para ser parte de nuestra rutina cotidiana.

Primero de todo, experimentaremos si la recuperación del negocio turístico es fiable. Aunque el turismo ha sido la industria que mejor ha resistido las acometidas de la crisis económica, el daño no ha sido poco en términos de ocupación, facturación, gasto turístico, empleabilidad. Después de un buen 2011, esperamos materializar el aforismo: “El que resiste, vence”. Debemos felicitarnos todos los que hemos resistido (que estamos resistiendo) las inclemencias financieras y, a ser posible, hemos de recoger los frutos.

Por otra parte, ni los más apocalípticos negarán la imparable incorporación de las Tecnologías de la Información y la Comunicación. Internet, los dispositivos móviles, la geolocalización, las herramientas digitales forman parte de la toma de decisión del viajero y de la consecución de una experiencia turística plena. En Welcome&olé! adoramos el papel, pero sabemos que el visitante está hoy mucho más cerca por muchos más cauces de lo que jamás ha estado, por eso estamos desarrollando soportes satélites en las redes sociales.

a Catedral, el Real Alcázar y el Archivo de Indias forman un conjunto monumental admirable en el corazón de Sevilla. La Catedral y el Alcázar son dos testimonios excepcionales de la civilización almohade y de la Sevilla cristiana, cuyo arte estuvo muy impregnado de la influencia mora desde la reconquista de la ciudad (1248) hasta el siglo XVI. El antiguo minarete de la Giralda, que influyó en la construcción de numerosas torres en España, y, después de la conquista, en las Américas, es una obra maestra de la arquitectura almohade y se yergue al costado de la catedral. Esta iglesia de cinco naves es el edificio gótico más grande de Europa y alberga la colosal sepultura de Cristóbal Colón. En la antigua lonja, convertida en Archivo de Indias, se conservan fondos documentales inestimables de las colonias españolas en América. Además, el espacio elíptico del Cabildo, creado por Hernán Ruiz, es una de las obras arquitectónicas más bellas del Renacimiento.

Los tres edificios personifican perfectamente el español “Edad de Oro”, la incorporación de los vestigios de la cultura islámica, siglos de poder eclesiástico, la soberanía real y el poder de negociación que España adquirió a través de sus colonias en el Nuevo Mundo.

Por la integridad y autenticidad que encierra el Complejo Monumental, fue declarado Patrimonio de la Humanidad en 1987.

ogether the Cathedral, Alcázar and Archivo de Indias as a series, form a remarkable monumental complex in the heart of Seville. The cathedral and the Alcázar – dating from the Reconquest of 1248 to the 16th century and imbued with Moorish influences – are an exceptional testimony to the civilization of the Almohads as well as that of Christian Andalusia.

The Giralda minaret is the masterpiece of Almohad architecture and influenced the construction of numerous towers in Spain, and, after the conquest, in the Americas.

It stands next to the cathedral with its five naves; the largest Gothic building in Europe, it houses the tomb of Christopher Columbus. The ancient Lonja, which became the Archivo de Indias, contains valuable documents from the archives of the colonies in the Americas. Besides, the elliptical space of the Cabildo, created by Hernán Ruiz, is one of the most beautiful architectural works of the Renaissance.

These buildings perfectly epitomize the Spanish “Golden Age”, incorporating vestiges of Islamic culture, centuries of ecclesiastical power, royal sovereignty and the trading power that Spain acquired through its colonies in the New World. For its integrity and authenticity, the Complejo Monumental was declared World Heritage in 1987.

El Giraldillo. En lo alto de la torre se alza una gigantesca estatua de la Fe, en forma de mujer con vestidura clásica romana, que lleva en una mano un escudo y en la otra, una palma. Al ser una veleta giratoria se denominó giralda tanto a la torre como a la estatua. Actualmente se conoce como Giralda a la torre y Giraldillo a la veleta.

El Giraldillo. On top of the bell tower of the Giralda there is a statue portraying Faith in the form of a woman dressed in traditional Roman clothes. She is carrying a shield in one hand and a palm leaf in the other. As this statue is a rotating weather vane both the tower and the statue were named ‘Giralda’ , derived from the Spanish word ‘girar’ meaning ‘turn’. Nowadays, the bell tower is referred to as the Giralda and the wind vane as the Giraldillo.

Una de las últimas aportaciones del arte almohade en Sevilla, la Torre del Oro, constituía el último baluarte del lienzo de muralla que arrancaba desde el Alcázar.

Muchas leyendas intentan explicar el nombre de la torre, como la de los reflejos del sol en los azulejos que presuntamente la recubrían o la que alude a los cabellos de una dama que el rey don Pedro hubiera encerrado en el edificio. Sin embargo, se la llamaba del Oro por su importancia, igual que existía otra de la Plata.

Construida en el primer tercio del siglo XIII, tiene una docena de lados y está rematada por un último cuerpo circular que fue añadido por Sebastián Vander Borcht en 1760.

En la actualidad se encuentra en su interior un museo naval con grabados, cartas marinas, maquetas, instrumentos antiguos de marear y documentos históricos.

En la torre se traza una imagen de la historia naval de Sevilla, de la importancia del río Guadalquivir y de la huella de numerosos marines ilustres.

One of the later examples of Almohad art in Seville, the Golden Tower is the last bastion of the fortified wall which began at the Alcazar. There are many legends as to the origin of the tower’s name. Some say it refers to the reflections of the sun on the tiles which supposedly covered it, while others claim it was the golden hair of a damsel which King Pedro

locked up in the building. The fact is that it was called the Golden Tower because of its importance in comparison to the nearby Silver Tower.

Built at the beginning of the 13th Century, the tower has twelve sides. The highest part of the tower was added by Sebastian Vander Borcht in 1760.

Today it is a naval museum with engravings, letters, models, antique navigational instruments and historical documents. The museum also has information regarding Seville’s prestigious naval history, the importance of the Guadalquivir River and the routes of various famous navigators.

PARQUE DE MARÍA LUISA MARIA LUISA PARK

Los jardines cedidos por la Infanta María Luisa en 1893, y acondicionados por el ingeniero francés Nicolás Forestier para la Exposición Iberoamericana de 1929, dieron como resultado uno de los parques más hermosos de España, con más de 400.000 metros cuadrados de arboleda, avenidas y glorietas donde se combinan los diseños europeos de la época con la tradición islámica.

En el interior del parque, la Plaza de América sintetiza las corrientes de la arquitectura regionalista: neomudéjar, neogótico, neobarroco.

The gardens donated by the Infanta María Luisa in 1893 and designed by the French engineer Nicolas Forestier for the 1929 Latin American Exhibition turned out to be one of the most beautiful parks in Spain, with over 400,000 square metres of groves, avenues, and arbours. In the interior of the park Plaza de America synthesises the currents adopted by Seville regionalist architecture: neo-Mudejar, neoGothic, and neo-Baroque.

La obra maestra de Aníbal González, también en el Parque de María Luisa y con motivo de la Exposición de 1929, es un semicírculo de 200 metros de diámetro realizada en ladrillo y cerámica, materiales predilectos de la arquitectura regionalista, que no sólo se consagró a los estilos mudéjar, gótico y renacentista propios de la ciudad sino también a su industria. Alrededor de la plaza

hay 48 bancos dedicados a las provincias españolas y, salvando un pequeño arroyo, cuatro puentes que representan los cuatro reinos que formaban la corona española: Castilla, León, Navarra y Aragón.

The masterpiece of Aníbal González, also in the Parque de María Luisa and built for the occasion of the 1929 Exhibition, is a semicircle 200 metres in diameter of brick and ceramics, favourite materials of regionalist architecture, which honours not only the Mudejar, Gothic, and Renaissance styles of the city but also its industry. Around the plaza there are 48 benches dedicated to the Spanish provinces, and four bridges over a small stream to represent the four kingdoms of the Spanish crown: Castile, León, Navarre, and Aragón.

l coso del Baratillo comenzó a construirse en 1761, siguiendo el proyecto de Francisco Sánchez de Aragón, y lo finalizó en 1881 el arquitecto Juan Talavera y de la Vega. Su aspecto externo es de estilo tardo-barroco apuntando ya hacia el clasicismo.

En su Museo se exponen fondos relacionados con la propia historia de la Corporación nobiliaria que es propietaria de esta Plaza de Toros: la Real Maestranza de Caballería de Sevilla, así como numerosos objetos relacionados con la fiesta de los toros.

A través de una visita guiada se accede a la Plaza de Toros, la Sala de Pinturas, el Museo Taurino, la Capilla de los Toreros y el Patio de Caballos. Con una duración de 45 minutos, el recorrido ofrece al

eville’s Baratillo Bullring started to be constructed in 1761 according to the project by Francisco Sánchez de Aragón and was finished in 1881 by the architect Juan Talavera y de la Vega. Its exterior shows the style of the Late Baroque and early Classicist period.

Inside its Museum there are exhibits related to the history of the Noble Order which is the owner of the Bullring: ‘La Real Maestranza de Caballería de Sevilla’, as well as numerous objects associated with the art of bullfighting.

Through a guided tour you access the Bullring, the Board of Paintings, the Bullfighting Museum, the Chapel of the Bullfighters and the Patio de Caballos. With a duration of 45 minutes, the tour offers visitors a detailed knowledge about the peculiarities that make up one of the oldest bullrings in the world, and a chronological view on bullfighting and its relationship with the Maestrante Corporation.

de la caridad DON MIGUEL MAÑARA. El Venerable siervo de Dios Miguel Mañara nació en Sevilla en 1627. Tras la muerte de su esposa entra en una profunda crisis moral y dedica su vida a los pobres, para los que construye el Hospital, que funciona desde 1672 hasta el día de hoy, siendo actualmente una casa de acogida de ancianos sin recursos.

DON MIGUEL MAÑARA. The Venerable Servant of God, Miguel Mañara, was born in Seville in 1627. Following the death of his wife he suffered a profound moral crisis and decided to dedicate his life to the poor, building the Hospital which has carried out its functions ever since 1627 and which is currently a shelter for the elderly in need of aid.

l recorrido turístico comienza ya en

la propia fachada, de gran elegancia y belleza decorativa. En su interior la visita nos guía hacia una ruptura con el presente que comienza en el doble patio, de gran belleza y diáfana luminosidad. En él se sitúan dos fuentes en las que se disponen esculturas de la Misericordia y la Caridad, obras del siglo XVII. En los muros del patio se encuentra un conjunto de paneles de azulejos holandeses, que muestran pasajes de la Biblia.

Pero el gran valor artístico se encuentra en el interior de la iglesia. Algunas de las obras de arte que destacan de su interior son las Postrimerías o Jeroglíficos de la Muerte, dramáticas y terribles representaciones de la muerte realizadas por Valdés Leal y el conjunto completo de pinturas de Murillo, representando Obras de Misericordia, seis en total.

En el Presbiterio se sitúa el impresionante Retablo Mayor, de intenso barroquismo, realizado por Pedro Roldán, Bernardo Simón de Pineda y Valdés Leal, que plasma la séptima obra de Misericordia: enterrar a los muertos.

La visita al monumento sigue con la Sala de Cabildos, estancia del s. XVII donde todavía hoy se reúne la Hermandad, con obras de Zurbarán, Pedro de Camprobín, Valdés Leal, y donde se unen la arquitectura gótica de las Atarazanas con el esplendor del barroco clásico sevillano.

Al final, se puede descansar en el bello Patio de los Rosales, jardín enmarcado entre arcos de las Atarazanas, donde están conservadas las rosas que plantó en vida Miguel Mañara.

El recorrido puede completarse con la Visita de la Galería Alta (previa cita), donde se encuentra una parte importante de la colección pictórica de la Hermandad, así como estancias privadas como la Biblioteca, Sala Alta de Cabildo o Coro, desde donde se disfruta de una visión única de la Iglesia.

he façade itself is noteworthy, with its elegant lines and outstanding decorative beauty. The interior takes us on a journey into the past, starting with the striking and luminous double courtyard. Here you will find two fountains with sculptures of Mercy and Charity which date from the 17th century. The walls of the courtyard are decorated with a series of Dutch ceramic panels depicting scenes from the Bible.

However its greatest artistic wealth is to be found in the interior of the church. Art works which stand out in its interior include the Hieroglyphs of Death, dramatic and terrifying representations of Death painted

by Valdés Leal, and a complete a series of six paintings by Murillo which represent the Acts of Mercy.

The Presbytery houses the impressive Main Altarpiece. This intensely Baroque work by Pedro Roldán, Bernardo Simón de Pineda y Valdés Leal represents the Seventh Act of Mercy, burial of the dead.

The visit continues with the Chapter Hall, which dates from the 17th century and is still used for meetings of the Brotherhood. La temporada formativa del MBF, de septiembre a junio, aglutina un variado y amplio abanico de posibilidades para vivir y sentir el arte flamenco en sus más variadas versiones: clases maestras, lecciones para profesores de baile, lecciones de cante flamenco y guitarra, clases de ritmo, historia del flamenco e historia del arte, grandes personajes del arte flamenco, lecciones de cultura española, clases y grupos de trabajo sobre gestión cultural y de ocio, nueva museología, participación en conferencias y simposios, etcétera.

n año más, Sevilla se brinda al visitante con mucho más que su clima privilegiado, sus infraestructuras turísticas de primer nivel, su gastronomía y su manera de vivir los días. Una vez más, la capital de Andalucía reúne un buen puñado de novedades que serán del agrado del viajero.

En el apartado más festivo, las tradicionales Fiestas de la Primavera y la Navidad son los dos momentos principales del año. En el profesional, destaca la inauguración de la ampliación de Fibes con un auditorio habilitado para 3.500 congresistas o para espectáculos, aunque en mayo también se celebra una importante reunión de la industria aeronáutica: ADM, Aerospace & Defense Meeting.

Los amantes de la cultura y los espectáculos vivirán otra intensa temporada en la que sobresalen conciertos como el de Bruce Springsteen (13 de mayo) o la Bienal de Flamenco entre septiembre y octubre. En el plano deportivo, la principal atracción será el Open de España de Golf, también en mayo.

El público general asistirá a interesantes novedades: el Museo de la Cerámica, la consolidación de los cruceros, la reapertura del Hotel Alfonso XIII tras su rehabilitación, los primeros pasos del Pabellón de la Navegación... Todo ello en el vigésimo aniversario de la Expo’92.

or yet another year, Seville offers its visitors much more than just a privileged climate, top-class tourism infrastructure, delightful gastronomy and the city’s unique approach to life. Once again, the Andalusian capital offers up a treasure trove of new attractions which are sure to delight one and all.

In terms of festivities, the traditional spring festivals and Christmas are the two most important seasons of the year. Highlights in the professional sphere include the inauguration of the extensions to Seville’s Congress and Exhibition Centre, FIBES, which includes an auditorium with a capacity of 3,500 for both trade fairs and performances. In May there is also an important event for the aerospace industry: ADM, Aerospace & Defence Meeting.

The cultural season is equally intense, with highlights such as the concert by Bruce Springsteen on 13 May and the Biennial Flamenco Festival in September and October.

Meanwhile, the main sports attraction will be the Spanish Golf Open, also taking place in May. Other new and interesting options for the general public include the Ceramics Museum, the consolidation of cruise tourism, the reopening of the Alfonso XIII Hotel following its refurbishment and the initial activities of the Navigation Pavilion... Importantes números con los que se confirma la tendencia de recuperación del turismo.

En este soberbio escaparate se presenta cada año el destino Sevilla, con una nutrida representación de empresas turísticas, instituciones y profesionales atentos a las últimas tendencias. Compartiendo espacio con todas ellas en el expositor de Andalucía, Welcome&olé! lleva a Madrid sus soportes, con los que presenta la capital andaluza a los más de 2,5 millones de viajeros que la visitan cada año.

itur is one of the leading international trade fairs for the tourism industry, as is evident from the results of the last edition: 10,434 exhibiting companies from 166 countries/regions and 209,260 visitors, including both professionals and the general public and a total of 7,726 journalists from 59 different countries. These impressive figures are further confirmation of the steady recovery of the tourism industry.

Every year, an important delegation comprising tourism companies, institutions and professionals from Seville takes advantage of this imposing showcase to promote the city as a tourist destination and catch up on all the latest trends. Welcome&olé! will be with them in the Andalusian stand, along with the publications we use to present the Andalusian capital to the more than 2,5 million tourists who visit our city each year.

The magazine itself will be available to visitors in the stand, but we will also be participating and interacting intensely with both professionals and the general public attending the fair through social networks such as Facebook, Twitter and LinkedIn, along with constant updates of our blog.

l Metropol Parasol no es solamente uno de los edificios más vanguardistas de Sevilla, sino también un mirador de la ciudad histórica, una plaza pública en el centro comercial y de ocio y un reclamo museístico a través del Antiquarium, situado en la plata sótano del complejo. Todo eso se conocía, pero desde el 30 de octubre, además, las llamadas ‘Setas de la Encarnación’ son el lugar donde hacerse con insólitas piezas de bisutería, bolsos de asta de toro, acuarelas, tartas de gominolas, juguetes, jabones naturales, flores preservadas, tocados o ropa, todo ello de la mano de los artistas y artesanos de Sevilla. Así cada domingo y día festivo en horario de 10.00 a 15.00 horas.

En efecto, la galería del Metropol alberga cada semana los puestecillos de unos 35 artesanos que muestran sus virtuosas creaciones a unas 6.000 personas por jornada, completando la ya de por sí interesante oferta de este novedoso espacio.

De este modo, Parabellosol, que es como se denomina el mercado de artesanos, se mira en el espejo del londinense de Portobello. Aquí se encuentran “artesanos de distintos sectores y con productos diferentes a los que se pueden encontrar en las tiendas cercanas”, explica María Porres, impulsora del mercado, que puntualiza: “Como los domingos y festivos no hay comercios abiertos, los visitantes de Sevilla pueden comprar en el mercadillo de artesanía”.

Su disponibilidad y lo original y exclusivo de sus productos ha hecho de Parabellosol una cita de referencia en la oferta comercial sevillana.

etropol Parasol is not only one of the most avantgarde constructions in Seville, it also offers a viewpoint overlooking the historic city centre, a public square in the heart of the city’s shopping district and a museum of Seville’s early history on the basement floor of the complex. While all of this is well-known, ever since 30 October the so-called ‘Mushrooms’ of La Encarnación are also the site of a craft market with jewellery, handbags made from bull’s horn, watercolour paintings, cakes made with sweets, toys, hand-made soaps, dried flowers, headdresses and clothing, all made by local artists and on sale every Sunday and on public holidays from 10:00 until 15:00.

A total of some 35 different stalls display their creative wares to 6,000 people every day, yet another attraction in this already fascinating space.

This initiative has been dubbed Parabellosol, a Sevillestyle recreation of the famous Portobello market in London.

According to the market organiser, Maria Porres, “here you can find people working in unique sectors with products that are quite different to those on offer in nearby stores.”

She also adds that “as other shops are not open on Sundays and public holidays, visitors to Seville have the chance to buy that special something at this craft market.”

Both this fact and the original and exclusive nature of these products have made Parabellosol an essential stop for shoppers in Seville.

astrosol, el restaurante y centro de reuniones que corona el Metropol Parasol de la Plaza de la Encarnación, ha sido un éxito instantáneo. La fórmula de las tapas y el espacio para eventos a 30 metros de altura en pleno centro de Sevilla ha funcionado a la primera.

De entrada, el local mirador es espectacular, con más de 1.100 metros cuadrados entre interior panorámico, exterior y una exclusiva pasarela donde todo gira en torno a la gastronomía.

a gastronomía forma parte de la cultura y de la forma de vida de un destino, es algo que llena de curiosidad al visitante. Es una forma como ninguna otra de conocer una cultura, de ahí que ya no es raro escuchar eso de rutas gastronómicas o de turismo gastronómico. Además, tiene gran incidencia en la satisfacción final del visitante.

La gastronomía sevillana es tradicional, con un producto excepcional por su enclave y diversa por su propia historia, pero sobre todo tiene una gran vocación universal: hay una fiebre mundial por las tapas, unas de nuestras formas tradicionales de comer. No obstante, para poder explicar qué es Sevilla, más que a través de un bocado lo conseguiría a través de un sorbo, una cerveza Cruzcampo, auténtico estandarte de nuestra gastronomía y nuestra forma de vida. Aunque sería injusto olvidar las aceitunas, el adobo, los guisos de vigilia, las tortas de aceite o la repostería de conventos...

Por otro lado, el gran dinamismo que experimenta Sevilla, con escuelas de hostelería, concursos de chefs, nuevos itinerarios gastronómicos, congresos, ferias comerciales, etcétera, que construyen un destino más atractivo, estimulan al visitante e incitan al profesional y

Por tanto, si la formación es fundamental en cualquier sector, para los nuevos trabajadores técnicos de la hostelería es simplemente una necesidad. Desde La Escuela de Hostelería Gambrinus intentamos abarcar esas realidades ofertando cursos tanto de técnicos en restauración como cursos de gestión para encargados y empresarios.

Y, por supuesto, dada su relevancia en la industria turística, es importante una formación de varios temas específicos que por lo general entran dentro de turismo, tales como idioma o la cultura

y usos de los países visitantes. Si el turismo se nutre, nunca mejor dicho, de la gastronomía, es lógico que tengamos asignaturas y campos parecidos que ayuden a una comunicación más fluida y que sirvan para aunar esfuerzos.

astronomy forms part of the culture and lifestyle of a destination and is a source of fascination for visitors. It is perhaps the best way to learn about a culture so it is not uncommon to hear of gastronomic routes and gastronomic tourism, and it also has a major influence on the overall satisfaction of our visitors.

Seville’s gastronomy is traditional, with exceptional products due to its location and the diversity of its history, but above all it has a very universal approach: there is currently a worldwide obsession with tapas, one of the most traditional ways of eating here. However, in order to explain the essence of Seville you require more than just food; you also need a Cruzcampo beer, a flagship of the local gastronomy which represents our way of life. Also worthy of mention are the olives and other pickles, the different stews and the oil cakes and other convent sweets.

On the other hand, the dynamic growth of cooking schools, competitions, new gastronomic routes, conferences, trade fairs and so on makes Seville a more attractive destination, drawing visitors and encouraging professionals and food companies to involve themselves more in the process.

Training is fundamental in any sector, and in the case of new workers in the food industry it is quite simply a necessity. The Gambrinus School of Gastronomy seeks to embrace all of these developments by offering both cooking courses and management courses for restaurant owners and managers.

Naturally, training is important in various other specific areas within the tourism field, such as the languages, culture and customs of our visitors’ home countries. While tourism is undoubtedly fostered through gastronomy, it is logical for us to also have courses of this nature to help ensure more fluid communication and a combined effort towards the common goal of tourism promotion.

l Muelle de las Delicias está llamado a convertirse en uno de los focos turísticos predilectos de Sevilla.

Adelantándose a las actuaciones que harán de este espacio un punto de encuentro de cruceristas con otros viajeros y con los propios sevillanos, la oferta culinaria de calidad está creando dependencia de este enclave privilegiado. Ahí está Nantara Puerto, un nuevo restaurante y centro de eventos que despliega su saber hacer gastronómico “a la orillita del río”, como gusta decir por allí.

Con una impactante puesta en escena, simulando la estructura y ambientación de un buque en 500 metros cuadrados de interior y mil metros cuadrados de terraza, el restaurante Nantara Puerto viene a enriquecer la oferta gastronómica de la ciudad y a proponerse como lugar de reunión para las ocasiones más variopintas, teniendo entre sus avales, además del buen trabajo y mentalidad innovadora de sus responsables y su equipo humano, un entorno que concentrará las miradas de ciudadanos y visitantes que, por tierra o por río, se acerquen a conocer este mágico escenario.

El restaurante se organiza en tres zonas diferentes, la de restaurante a la carta, la barra para tapas y raciones y una magnífica terraza para restaurante y raciones.

l jamón ibérico de bellota de primera calidad distingue desde 1934 a este restaurante familiar del emblemático Barrio de Santa Cruz. Su atmósfera tradicional, de toros y fiesta, recrea la Sevilla antigua con murales del pintor Palomar. Son aclamados sus huevos fritos con patatas y jamón, chacinas variadas, presa y solomillos ibéricos, ensalada y bacalao frito.

CARNES DE CAZA Seasonal dishes. Game meats

L

a temporada de caza comienza en el mes de octubre y se prolonga hasta la cuaresma.

Solo durante este periodo llegan a los restaurantes las piezas frescas de caza mayor y caza menor de los cotos andaluces, ya se trate del ciervo o del venado, del jabalí, de la perdiz, del conejo o la liebre. El tramo sevillano de Sierra Morena, en muncipios como Cazalla de la Sierra, Constantina o Las Navas de la Concepción, es rico en esta actividad cinegética que deja en los fogones animales salvajes muy diversos, cuya alimentación natural depara carnes muy especiales.

Como primera característica, en efecto, se trata de sabores fuertes, con mucha personalidad. Por ello, se aconseja su maridaje con vinos tintos potentes. También los da la tierra, por ejemplo los grandes tintos que se están haciendo en Andalucía, como el Finca Moncloa de González Byass, o en la Sierra Norte los Colonias de Galeón de Cazalla de la Sierra y Fuente Reina y Zancúo de Constantina.

Por otra parte, por lo general se trata de carnes duras, que requieren ser guisadas. Aunque los ciervos y jabalíes jóvenes admiten su preparación a la plancha, lo habitual es usar las carnes de caza en calderetas, mechados y maceraciones. Por ejemplo, el lomo de jabalí, macerado unos días en vino tinto o en cerveza, se ablanda y se erige como un auténtico manjar. Carne magra de cerdo alimentado con hierbas aromáticas y frutos de la sierra.

Por lo demás, los cortes son los mismos que las carnes más tradicionales (solomillo, lomo, jamón...), con la salvedad de tratarse de despieces menores.

Finalmente, aunque no menos importante, hay que destacar que tanto por la alimentación como por los hábitos de estos animales salvajes, se trata de carnes que cuentan con muy poca grasa. Por ello, al guisarlas hay que proporcionarles jugo (con aceite de oliva o manteca de cerdo, por ejemplo), pero constituyen de todos modos un auténtico festín de carnes muy magras, muy proteínicas.

he hunting season starts in October and continues through to the Lent period.

It is only during this time that restaurants receive fresh big game and small game meats from Andalusian game preserves, whether deer, boar, partridges, rabbits or hares. Municipalities such as Cazalla de la Sierra, Constantina and Las Navas de la Concepción in the Seville part of the Sierra Morena ranges are popular hunting zones for a whole range of animals, with their natural feeding habits giving rise to their truly special flavour.

To start with, all these meats are characterised by their strong

and highly unique flavour. Consequently, they are best matched with strong red wines. Good Andalusian reds include Finca Moncloa by González Byass, Colonias de Galeón from Cazalla de la Sierra and Fuente Reina and Zancúo in Constantina.

In addition, generally speaking they are all quite tough meats which require stewing. While venison and young boar meat can be served grilled, it is more common to find them in stews and marinades. For example, if a wild boar loin is left to marinade for a few days in red wine or beer it softens, transforming into a veritable delicacy: lean pork raised on aromatic herbs and the fruits of the earth.

In all other respects, the different cuts are the same as more traditional meats (tenderloin, loin, ham, etc…) with the exception that they all tend to be smaller.

Last but not least, it should be noted that due to their feeding habits and the lifestyle of these wild animals, they tend to have very little fat. That’s why they need a little liquid when they are stewed (using olive oil or pork lard, for example).

The end result is a protein-packed festival for the senses.
