CARAMEL TIRAMISU

Tiramisu is one of my favorite milchig desserts to throw together. This caramel version is so delicious, you can eat the entire thing yourself.

Layer in individual glasses for neater presentation.

Ingredients:

20-22 lady fingers (I used Shneiders)

1 cup strong coffee

1/4 cup confectioners sugar

4 tbsp milchig caramel, divided

8 oz whipped cream cheese

1/2 cup sugar

1 cup heavy cream

Direction:

In a flat bowl, combine coffee, confectionary sugar and 2 tbsp caramel. Mix well until everything is incorporated.

Remove 1/4 cup of the mixture and place in a large bowl.

Add cream cheese, the other 2 tbsp caramel and sugar. Beat until smooth and creamy.

Add heavy cream and beat until soft peaks form. Transfer to a piping bag fitting with a standard tip or a ziplock bag.

Dip each lady finger into the coffee mixture for a few seconds until mixture gets soaked into the cookie.

Layer lady fingers and cream until glass is full.

LEMON CHEESECAKE MOUSSE WITH WHITE CHOCOLATE TOPPING

This simple dessert is so refreshing and belongs on everyone’s table. This can either be made in individual cups and served chilled or served as slices. To get neat slices, freeze the mousse and slice when frozen. The slices will stay in its form when defrosted but can’t be sliced without being frozen.

Ingredients:

1 sleeve honey graham cracker, crushed

1/2 stick melted butter

2 8oz whipped cream cheese

Juice of two lemons+ zest from one lemon

1 tsp vanilla extract

3/4 cup sugar

1 cup heavy cream

Chocolate Topping:

2 bars white chocolate, chopped 1/2 cup heavy cream

Directions:

Line a 9” springform pan with parchment paper. Combine crushed graham crackers and melted butter and press into pan.

In a large bowl, beat cream cheese, lemon juice, vanilla and sugar until creamy.

Add heavy cream and beat until stiff. Pour into pan and freeze for 3-4 hours.

For the topping: Heat heavy cream in a small saucepan until bubbling. Pour over chopped chocolate and mix until smooth and thick.

Pour over frozen mousse and freeze overnight.

STRAWBERRY CHEESECAKE COOKIES

These cookies and so buttery and soft, full of flavor and best of all, it freezes beautifully. You can make double the cheese filling to top the cookies as shown in the picture.

Ingredients:

2 1/4 cups all-purpose flour

1 tsp baking soda

1 tsp salt

1 cup unsalted butter, softened

3/4 cup granulated sugar

1 cup brown sugar

2 large eggs

1 tsp vanilla extract

1 cup frozen strawberries, chopped

1 bar white chocolate, chopped

For the cheesecake filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 tsp vanilla extract

Direction:

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

3. In a large bowl, cream together butter and sugars until light and fluffy. Beat in eggs and vanilla extract.

4. Gradually mix in the flour mixture, then stir in diced strawberries and white chocolate.

5. In a separate bowl, mix together cream cheese, granulated sugar, and vanilla extract until smooth.

6. Scoop tablespoon-sized balls of cookie dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

7. Make a small indentation in the center of each cookie and fill with a small amount of cheesecake mixture.

8. Bake for 14-16 minutes or until lightly golden brown.

9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

S’MORES MILKSHAKE

This milkshake has a unique flavor from the roasted marshmallow fluff. It’s a great summer treat and it’s good out of the fridge as well.

Ingredients:

3 cups vanilla ice cream

2 cups chocolate ice cream

3/4 cup marshmallow fluff

1/2 cup milk

Toppings:

Chocolate syrup

Whipped cream

Graham crackers

Marshmallows

Directions:

Spread marshmallow fluff in a disposable pan. Place in oven on broil mode. Broil for 2 minutes. Mix and broil another two minutes until nice and charred. Keep a close eye on it as every oven works differently and it burns easily. Alternatively, you can use a blow torch for more control.

Place all ingredients into a blender and blend until smooth. Top with toppings and enjoy.
