Recap of Chapter 72

Hinda ruminates about her relationship with her kids. She realizes that ever since she remarried, she’s been so busy that she hasn’t given them too much of her attention. She decides to change that.

Martin meets Dr. Jerry Skulholt. The psychiatrist tells him that he’ll need to give up his phone and get rid of any mirrors in his belongings.

CHAPTER SEVENTY THREE

Michoel was sitting on the bench near the woods, breathing in the fresh air. He wondered if Yosef, or his impersonator, would be coming soon; he hadn’t been able to infer from anyone here when that was supposed to happen.

Perhaps Hinda had sent a private investigator who would be able to get him out of here easily, which was actually good, because he was doubtful Yosef would have been able to do it. For his part, he planned to give Skulholt two weeks to work with Yosef, and then to marvel at how Yosef’s condition had improved and to ask to go home together with him. If things went according to that plan, and they would tell him that he couldn’t leave because he hadn’t yet gotten back to himself, Yosef—or whoever was here playing him—would get involved and tell them gently that Michoel had always been this way, and that there was nothing more to improve.

Now he just had to hope that they would give him some private time with whichever young man showed up. The two of them had to be completely coordinated on all fronts.

Michoel leaned back and closed his eyes. In theory, they

could not keep him imprisoned here; it wasn’t legal, even though in fact, this was what was happening. Even if he owed them payment for the treatment, they had no right to keep him here by force, especially as he hadn’t committed anything to them, and he still had no idea what they expected of him. The minute Yosef would show up here officially, they certainly would not be able to keep him hidden like they had been doing for months now.

Could he have gotten up and left without even getting their permission? Theoretically, perhaps. Practically, definitely not. The electric gate was always locked, the place was encircled by a high wall, and even if he would be able to get out, he was not physically up to walking to the nearest residential area.

Dr. Jerry approached from a distance, accompanied by two people. When they were about fifteen feet away, Michoel could discern that the one on the right was a fellow patient, and the one on the left was…someone unfamiliar to him. The young man wore a large velvet yarmulke, and his tzitzis hung down over his gray pants. Dr. Jerry didn’t even look at the bench; he spoke to the person on the right, explaining something with vigorous hand motions.

Just when someone was supposed to come here to help Michoel, a new frum person showed up? That was interesting. Interesting to the point of being strange, to be more precise.

Out of the corner of his eye, Michoel observed the trio approaching, and saw that the religious one was walking with lowered eyes, and scratching his forehead in an irritating way. His lips were soundlessly murmuring something repetitively. The psychiatrist didn’t pay any attention to this.

Wasn’t this young man a bit familiar-looking?

Michoel turned his face nearly imperceptibly toward the group, trying to concentrate on the lips of the new figure without the psychiatrist noticing.

Hey, he was whispering, "Yosef"!

Now Michoel allowed himself to fully turn toward them in an obvious manner, and stood up quickly. "Yosef!” he called out. “Yosef, how are you? It’s so good to see you!”

The young frum man stopped and looked at him. Michoel looked back. Perhaps he had been mistaken? Was it possible that Skulholt had brought this youth as bait, because they understood what Hinda had said in Hebrew? He had nothing to lose now, certainly not after what he’d said. “Yosef!” he repeated, approaching the young man with an outstretched hand. “How are you? You look a bit dazed; are you not feeling well after the flight? I remember that you don’t like to travel… Was your trip alright?”

“Yes,” the young man murmured, still keeping his eyes lowered most of the time.

“I hope that someone was waiting for you in New York, either Shimon Weisskopf or another one of our New York relatives,” Michoel said pointedly. “It’s not like your mother to send you like this!”

“Yes.” The young man smiled crookedly for the first time, and raised his eyes. Michoel discerned a flash of irritation in his eyes. “Shimon was waiting for me, and he took me to his house.”

“Great! And how are you now?”

The other man was quiet and scratched his forehead. He was also afraid of being baited, Michoel suddenly realized. Apparently, hearing Shimon Weisskopf’s name had calmed him a bit, but not enough. He had to offer more details so that the young man would realize that he was the real Michoel and not an imposter.

“Come on, Josef, can’t you be a bit more friendly to the uncle who’s been waiting for you for so long?” the psychiatrist chided with a smile.

“It’s fine, Dr. Jerry,” Michoel said. “I know him. He gets a bit overcome when he meets people he hasn't seen in a while.”

The young nodded vigorously. He was an excellent actor, Michoel decided. But he was so young… There was no way he was a professional detective. How had Hinda found him, and how had he managed to get in here under Yosef’s name?

“Come, Yosef, sit next to me so we can chat a bit,” he said in a fatherly manner. “How is your mother doing? And what about Dov, her new husband?”

“They're fine,” the boy said. He sat down at the edge of

the bench.

Dr. Jerry observed them for another long moment, and then said, “Enjoy yourselves together, and don’t forget to come back inside on time!”

“I’m happy to hear that.” Michoel waved at the psychiatrist as he continued to speak to ‘Yosef.’ “And Chani and Avigdor? I miss them all so much…”

“Everyone is fine,” the boy said slowly, following the psychiatrist and his other patient with his eyes as they moved off. He was quiet for a long while, as was Michoel, and when Skulholt was just about out of sight, he switched to Hebrew. “Az atah Michoel Perl. So you are Michoel Perl." The change was not only in the language, but also in the boy’s gaze, which suddenly became much more alert.

“I know you a bit from Yerushalayim, from the German Colony.”

“Oh, that’s where I recognized you from! Are we neighbors?”

“We were, sort of.”

“And you’re the boy my niece sent instead of her Yosef?”

“Right.”

“How is he?”

“Before I left Israel, he was hospitalized.”

“But not only because he didn’t come here.”

“That’s right.” Martin returned to English, in which he was apparently more comfortable. “There was a problem with his passport…and in any case, his mother was afraid that he really wasn’t up to traveling.”

“What was the problem?”

“They put his name on the passport—but with my picture.”

“Your picture?!” Michoel lifted his eyebrows. “How did that happen?”

“It’s a long story, which began with Yosef’s paranoia that almost ended with a complete meltdown at the embassy… The bottom line is that they mistakenly issued a passport in his name, with my picture. And Hinda and her husband were happy that I was able to come and help you.”

“I see.” Michoel looked at the boy. He had clever eyes, even somewhat sly, but Michoel didn’t want the young fellow to think that he was dealing with someone naïve. “What are you getting out of this? Payment?”

“No.”

“So then what…?”

The boy curled his lower lip. “I had to leave Israel, and they agreed that I should use Yosef's passport temporarily, on condition that I first come here, to you.”

“Why did you have to leave Israel?”

“Personal matters,” the youth replied, folding his arms.

“And why couldn’t you leave with your own passport?”

“I certainly was able to leave, but I couldn’t go into Canada, where I really wanted to go.”

“Why not?” Michoel asked, after a moment of quiet.

“You’ll forgive me if I prefer not to talk about it. My affairs shouldn’t concern you, so long as I’m able to get you out of here.”

“If you’re able to. The question is if I can trust you… How did you get to Hinda and her family?”

“I was their guest for a while,” the youth said. He stood up from the bench. “Can we please stop talking about me and talk about you instead, and about this place?”

“We’ll stop, for now,” Michoel agreed, not at all sure that he trusted this person. “Just tell me your name.”

“Yosef.” The youth smiled. “That’s all. It’s better not to confuse me with other names. I am Yosef Schorr, twentyfour years old, son of Shmuel alav hashalom and Hinda. I suffer from schizophrenia, and I came to get treatment in a place where my mother’s uncle is recovering remarkably from his own ailment.”

“Not so remarkable,” Michoel almost growled. “I agree that I’ve recovered, and that I’m much healthier and stronger than I was when I first found myself here. But I’m not at all sure that my recovery is connected to them. And whatever the case may be, this story has been going on for too long. I want to go back to Eretz Yisrael already. Did you and Hinda think of way to get me out of here?”

“Not exactly, because we didn’t know much about this place and how it works. Let me get the feel for this place for a few days, and then we’ll talk.” He suddenly noticed a figure approaching. Dr. Jerry was coming back, this time alone. “Yosef” began gnawing at his bottom lip, while nodding restlessly. “You understand, Uncle Michoel,” he said quietly, “I have to get well. I can’t see my mother so sad about me all day. Do you think if they heal me here, but really heal me, I might even be able to get married?”

“It’s very possible, if you don’t act foolishly,” Michoel replied, and finally, there was a note of admiration in his voice.

“What does not acting foolishly mean?”

“Don’t miss the train like I did.”

“You can also get married, if you want. You’re a very good man,” the boy complimented him. “You can always do it, I think.”

Michoel sighed. “I wish it would be so easy.”

“We’ll both get better, and then we’ll get out of here together to look for kallahs,” the boy promised. “I’m sure it will happen quickly.”

“Josef, are you persuading your uncle to get married?” The psychiatrist stood in front of them, looking highly amused. “He said he wants to, and we decided that we could both do it. “Sounds reasonable,” Michoel whispered.

“Often, people feel like everything is fine with them, and they start slacking off about taking their medications. So in order to be sure that you’ll stick to it, you need to pay for all the medicines in advance.”

“Okay,” Michoel agreed, while pondering the huge sums that they would demand from him.

“And then he can get married?” the boy interjected. “And me?”

“Sure. Invite us to the weddings, will you?”

Michoel studied him for a long moment. “He has lots of hope and wishes,” he said with a sigh. “Just to remember all the dreams I once had makes it worth seeing him again. Do what you can for him, Dr. Jerry, because he’s a great boy.”

“It’s what we plan to do.” The man smiled, looking extremely satisfied. “You remember the schedule I told you, Josef, right? Tomorrow at ten in my office, and then we’ll move on to a group session.”

“What’s a group session?” Michoel asked. “I’ve never participated in one of those.”

“You are a special case.” Dr. Skulholt smiled again. “We never had a group of people with exactly your condition. But we do have a group that is suited perfectly for your nephew.”

The golden days of summer have treated us to bountiful sunshine and longer nights, allowing us to revel in outdoor adventures and cherished moments with our families. As we bid farewell to the sun-kissed season and welcome the crisp embrace of Fall, it's time to shift gears and refocus on a vital aspect of our well-being - our sleep routine. While the longer daylight hours have been invigorating, the impending school season calls for a gentle realignment of our sleep patterns. Let's explore four effective ways to gracefully transition from summer's relaxed bedtime habits to a well-structured and rejuvenating sleep routine.

1) Gradual Adjustments: Instead of abruptly altering your/your kids’ bedtime, aim for a gradual transition. Start by adjusting your bedtime and wake-up time by 15-30 minutes earlier each day until school starts. This gentle approach helps

your body acclimate to the changes without causing undue stress. Teens that have been in camp for weeks, will especially need the last week of summer break to recalibrate and reset their circadian rhythms.

2) Mindful Evening Rituals: Establish soothing evening rituals that signal your body it's time to wind down. Engage in activities like reading a book, enjoying a warm cup of caffeine-free herbal tea, or practicing gentle stretches or meditation. Minimize exposure to electronic devices before bed to reduce the impact of blue light on your sleep quality. For your kids, this can mean a light bedtime snack, a hot bath and some book time. After that, lights out.

3) Optimize Your Sleep Environment: A restful sleep environment can make a significant difference in your sleep quality. Ensure your bedroom is conducive to sleep by maintaining a comfortable room temperature, using blackout curtains to block

out excess light, and getting yourself a new pillow if you need one. Some kids can benefit from a sound machine or noisemaker to block out outdoor noise, or noise from their older siblings.

4) Consistency is Key: Stick to a consistent sleep schedule. Consistency helps regulate your body's internal clock and promotes better sleep overall. Aim to wake up and go to bed at the same time every day to establish a natural sleep rhythm.

1 Slow baking it until it "falls apart with a fork and melts in your mouth". (eat brisket instead)

2 Well done. (eat chicken cutlets instead)

3 Cooking it in a pool of gravy or sauce, Especially with a base of sauteed onions (cook a roast instead)

4 Ruining steak. (ruin something less expensive;)

5 Rare or medium rare is optimal but let's start slow.

London broil is the perfect cut of meat to try as your first attempt at medium, because, be forewarned, it will be tough and dry if you cook it any more. And if you do ruin it, it is the least expensive cut of meat! That's the hack! If cooked properly this cut of beef that can feed 4 for $15 and will taste like an expensive ribeye.

INGREDIENTS:

◆ 2-3 pound London Broil

◆ 4 tablespoons olive oil

◆ Kosher or pink Himalayan salt and black pepper

◆ FORK + BOWL-ROASTED RED PEPPER VINAIGRETTE

DIRECTIONS:

1 Salt and pepper your meat on either side. Add FORK + BOWL ROASTED RED PEPPER VINAIGRETTE and 2 tablespoons of olive oil. Massage into the meat.

2 Allow meat to marinate and tenderize for 15 min to an hour.

3 Place your steak in baking pan and cover tightly, Add an uncovered pan of water on the rack below it. Bake at 275 for about an hour. In this way, you are mimicking the properties of a sous vide, softening the toughness of the cut before cooking.

4 Remove the meat, pat it dry, and repeat steps 1-3 before searing.

5 Outdoor grill? Crank it up. Cast iron skillet? Preheat it. Pan? Sure, except do not use one that is non-stick.

BTW:

◆ I know that every expert will tell you to use a thermometer , but I just can't, maybe it's the 90's kid in me. Instead, I use my own computation, and it works. Even though cutting into the meat is considered a no-no, the final product here begs to differ.

◆ This recipe works well made in advance and refrigerated. Please don't overdo it when reheating, even taste great cold.

◆ If the reason you cook your steak till it's well done is because you like a crispy, blackened edge, you still get that by searing it on high. It's just the inside that remains moist.

◆ Leftovers are king; this meat is even great cold.

◆ Use the rest of the dressing in a side salad.

6 Coat the hot pan with just a bit of oil to grease it. Keep the flame as high as possible without the pan smoking.

7 Cook in intervals of 2 minutes, turning the meat 4 times for a total of 8 minutes sear time. If your steak is thicker than 1.5 inches, you may want to cook it for longer.

8 (see BTW) To check if your meat is ready a small center cut into the steak, not slicing all the way through. You can do this while it's still cooking.

9 The meat will continue cooking internally after you take it out of the pan, so at this point, remove it if it's slightly redder than preferred.

10 Let it rest. yes, you must. Put it on a cutting board, Give it 10 minutes minimum.

11 Slice it superrrr thinly.

The Real Deal

“It’s so gruchy,” Layala said as we walked down the avenue.

“What’s gruchy?” I inquired naively. Sometimes it seems that every time these girls came home from camp, their vocabulary expands to include another few hundred non-English, nonexistent words that are exclusively understood by other girls that had the same camp experience as them.

“So icky,” Layala translated for me.

“What’s so icky?” I asked again, feeling like I was pulling teeth.

“That everyone’s so fake here!” Layala said dramatically. “All these ladies with their perfect makeup and their spiffy sheitels. Everyone’s all dressed up just to walk out of their house to go shopping, and of course they have their brand-name bags plus every kid is dressed to kill from accessories to their socks matching their shoes.”

I looked around the street, which was bustling with people taking care of their back-to-school shopping. For the most part, Layala was right. Almost everyone who passed had clearly taken great pains to dress up appropriately for their shopping adventure.

“And you know, you have to walk not too fast so you don’t look like you’re in a mad rush, but you can’t walk too slow because then you look like you don’t have anything to do. And if you meet someone you know, you have to put on this big smile and say hi, but you can only stop to talk if you’re a certain amount friendly.”

“Whoa, Layala,” I said, laughing. “You sure have all the rules down pat. People should come to you for lessons on how to walk down the avenue just right.”

Layala ignored my kibbitzing and continued her monologue. “And your purse has to hang in just the right place and your midi skirt has to swish while you walk. Oh, and even if you hate dressy summer shoes,

you totally can’t wear sneakers except if they’re super cool.”

“So why does all this bother you so much?” I interrupted her to ask.

“Cause it’s so fake,” she repeated. “Compare this to camp. Everyone walks around wearing totally casual clothing, like whatever they want. It’s chilled. You can wear your hair all shmuchy because you just did a wacky activity and nobody cares. Everyone’s just themselves. Like, you can totally do whatever’s comfortable for you.”

As she spoke, we reached the uniform store, but the lines were so long they were literally out the door. We parked ourselves in the back of the line and continued our conversation in modulated tones, as was appropriate for being in earshot of others on the avenue.

“Oh come on, Layala,” I said, while patting a stray hair from my sheitel back into place. “You really think that camp is so much more real than being in the city? You yourself were telling me how annoying it is that you’re never allowed to walk yourself in camp, and how everyone feels a pressure to do wacky things just to impress their friends.”

I could see Layala was thinking about that. She didn’t answer right away.

“Yeah, there’s still pressure in camp, not everyone is totally comfortable to be themselves,” Layala admitted. “But still. This is much more fake.”

“What’s wrong with fake?” I asked, playing devil’s advocate.

“I don’t know, it’s just annoying,” Layala said. “I like it much better without all these fake smiles and made-up faces. Can you imagine any of the ladies here waiting on line with us laying in the grass and having a DMC about the stars? Totally not.”

“Well, because obviously the city isn’t the right place for looking like you don’t mind getting your white top dirty,” I said reasonably. “But I’m pretty sure there’s enough people who would do that here, yes.”

Layala looked at the line ahead of us. “And jump into a lake fully dressed, and act crazy at 2 am in the middle of the night?”

“Well, Layala,” I said, looking her up and down pointedly, “do you look right now like someone who would do all those things?”

Layala looked down self-consciously, at her brandname jewelry, tucked in top to a swishy midi skirt and her dressy summer shoes.

“No,” she admitted, losing steam for a moment. She paused.

“Okay, but I have to do it here in the city! Otherwise, I just wouldn’t be normal. But if I could live in the

country all year round and never have to be so fake, I would love it!”

As we started edging into the store, our conversation took a more mundane turn as we discussed the finer details of the uniforms we were there to buy. Philosophy would have to wait while the urgent matters of life were attended to. ***

It was going to be another two o’clock night, at least. I looked at the clock in despair while listening to Layala’s enthusiastic jabbering to her friends. Usually Layala helped me put the kids to sleep and straightened up a bit, then spoke on the phone for a little while before going to sleep. But in her postcamp FOMO, she spoke to her friends all day and night while promising me she was helping with half of her attention.

I didn’t mind, not so much. She’d come home on such a high from camp, and it made me happy to see her so wrapped up in it. I knew that once school started, she would settle down to her normal responsible self.

Meanwhile, though, she seemed to have completely forgotten about our 11 o’clock no-phone-calls-to friends rule. I hated to pry her off the phone, but she did have a lot of sleep to catch up on.

I decided to wait until a lull in the heated conversation before inserting a gentle reminder to keep an eye on the clock. But as I listened with a half an ear, and continued cleaning the kitchen, Layala’s conversation only got more intense.

"I know, a lot of girls are like totally different people in camp and in school,” Layala was saying. “It’s so weird when you see both sides to them, and you’re like, which one is the real you? Are you shy or are you confident? When are you faking it?”

I couldn’t hear her friend’s reply, but soon enough Layala was talking again. “No, come on. One of them has to be the real her. You can’t have two such totally different personalities in one person. I mean, that almost sounds like a personality disorder,” she giggled.

That made me tune in. It sounded vaguely similar to the discussion we’d had outside the uniform store today. Why was Layala getting so hung up on being real?

Luckily for me, her friend had to hang up the phone just then, so I got my daughter and my help back for a few minutes until the next phone call came in. I was itching like anything to ask Layala about her conversation with her friend and maybe open up another discussion, but I kept my lips sealed. Layala deserved her space, and that included not letting on when I overheard her conversations with her friends.

"So sorry, Ma," Layala said, her cheeks flushed with the energy of her social interaction. “I totally was planning to help, I just had to pick up for Fraidy.”

“No problem,” I said sincerely. Then I remembered that I had an important favor to ask her for.

“By the way, Layala,” I said as she started wiping the dishes I’d washed, “do you think you can make sure to stay home tomorrow?”

“Tomorrow? I think so. Why, where are you going?”

I swallowed a smile. Here I was working so hard not to invade my daughter’s personal space, but apparently, moms didn’t get the same kind of personal space allowance. Definitely not after said daughter had been in camp for eight weeks straight and felt like she now needed to make up for lost time.

“We’re having a N’shei meeting, with a speaker for Elul. Rivky Silver is hosting,” I said, preempting her next question.

“So nice,” Layala said. “I totally didn’t even chap it was Elul. Rosh Hashanah is in like, what, three weeks?”

“You’d better start realizing,” I wag my finger playfully at her. “Because you’re going to be plenty busy shopping for wardrobes for all the kids, plus helping me cook a whole bunch of seudos.”

“Kay, sure, I like shopping,” Layala said promptly. But a disturbed look entered her eye.

“So what don’t you like? The cooking?”

“What? No, I don’t mind cooking,” Layala said distractedly.

I didn’t press, knowing that it probably wouldn’t take Layala more than five minutes to share what was bothering her.

“We had this girl in camp,” she said without preamble, “she was in my bunk and I think she’s… well maybe it’s lashon hara, but she always asked really weird questions by shiur. Like how come ladies can’t do this and ladies can’t do that, and everyone always teased her that she’s totally a feminist.”

“That sounds strange for a girl in such a heimishe camp,” I said noncommittally.

“Totally! It was so weird. I don’t know what her issue is. But really, after a whole summer of being with her,” a sheepish look comes into Layala’s eyes, “what do you think Ma? How come when you say Elul you right away think of shopping and cooking?”

“Hey, I started talking about Elul because I’m going to a shiur,” I protested lightly.

Layala smiled. “So I guess the shiur is going to have to answer that question!” she said.

“Well, you know the answer, don’t you?”

“Yeah,” Layala admitted. “That we’re supposed to be

thinking about the reason why we’re shopping and cooking. But really Ma, let’s be real. Shopping and cooking are just not these major inspiring things to do. Listening to shofar every day in shul is much more inspiring than making honey cake.”

I wasn’t sure how to answer her, and for a moment I wondered for the umpteenth time why I’m the mother of a teenager, who’s supposedly figured life out already, when I feel like I’m basically still a teenager myself.

“I guess it depends what’s more real to you,” I said slowly, not knowing myself what I was trying to get to. “What you’re doing, or why you’re doing it. If you only see what you’re doing, then yes, it’s just shopping and cooking. But if you realize why you’re doing it, it’s not so different from listening to shofar in shul.”

Layala looked confused, and I figured I probably got too deep for her. Actually, what I just said was a little too deep for me also. Hashem must have put those words in my mouth, because there’s no way I could have thought of that answer myself on the spot.

“Oh,” Layala said. “I think I get it.”

She put away the last Corelle bowl with a clink, and just at that moment, the phone pealed merrily again to the tune of Nutcracker. I didn’t know which one of Layala’s friends had that ringtone, but apparently Layala did, because she lunged for it.

“Fraidy probably came home now,” she threw over her shoulder as she retreated to another part of the house where she could talk in peace. Never mind that she knew I could still hear every word she said. After Layala listened to and commented on all the details of Fraidy’s expedition to the grocery for her mother, it sounded like the girls headed right back into a similar discussion to what they’d been in middle of before their phone break.

Her friend must have made a comment like, “I wonder which one is the real her.”

Layala said, “I guess it depends what you consider the real part of her, what she does or why she does it.”

I listened to her, flabbergasted. She’d listened, internalized, and applied the new concept I had just by mistake given her an education on in the space of a few minutes.

Apparently, there was more depth than I realized in my daughter, whom I’d thought was just missing camp and covering it up with fancy philosophy. She’d immediately grabbed onto the puzzle piece I’d handed her and fitted it in to her understanding of life.

Now it was up to me to do the same and incorporate the words I’d said into my own life. •

PASTRY PERFECTION

CLASSIC VEGETABLE TURNOVERS

Sometimes, we just need a favorite old classic to make everyone feel at home.

Yield: 28 turnovers

Ingredients:

1 24 oz. bag frozen California Blend vegetables

1 yukon gold potato, cubed

2 eggs, whisked

½ cup breadcrumbs

1 teaspoon salt

1 teaspoon black pepper

½ teaspoon garlic powder

1 teaspoon onion soup mix, optional

28 small puff pastry squares, slightly thawed

1 Egg, beaten for egg wash

Everything bagel seasoning

Directions:

1. Preheat oven to 375° and line 2 baking sheets with parchment paper. Set aside.

2. In a medium pot, add the frozen vegetables and cubed potatoes. Cover with water. Boil on high, then lower heat to medium and cook for ½ hour, until potatoes are fork tender.

3. Remove from heat and drain the vegetables & potato in a colander. Return to pan and mash until smooth. Add the eggs, breadcrumbs, salt, black pepper, garlic powder, and onion soup. Mix with fork until combined.

4. Place 1 heaping tablespoon of filling into the center of the puff pastry. Fold over into a rectangle or triangle. Place on the prepared baking sheet and pinch ends with fork. Repeat with the rest of the puff pastry.

5. Brush the turnovers with egg wash and sprinkle with everything bagel seasoning.

6. Bake for 20 minutes until golden brown. Remove from oven and serve with onion sauce.

TIP: These freeze great! Store between layers of parchment paper for easy defrosting. Enjoy.

Crisp and flaky, with a savory, soft filling, these elegant spinach & mushroom bites are perfect as a Yom Tov side.

Yield: 24 bites

Ingredients:

3-4 tablespoons oil

1 small white onion, diced

1 teaspoon sugar

2 teaspoons salt

1 teaspoon black pepper

2 cloves garlic, chopped

1-8 oz. can mushrooms or 6 fresh white mushrooms, finely diced

12 oz. (½ of a bag 24 oz. bag) frozen chopped spinach

2 tablespoons mayonnaise

½ cup plain breadcrumbs

½ tablespoon soy sauce

1 teaspoon Dijon mustard

24 mini puff pastry squares, slightly thawed

1 egg, beaten for egg wash

Flaky salt, for topping

Directions

1. Preheat oven to 375° and line 2 baking sheets with parchment paper. Set aside.

2. In a colander, run the frozen spinach under hot water until thawed. Drain and set aside.

3. In a medium pan, heat the oil over medium-high heat. Add the onions, sugar, salt, and black pepper, and saute until onions are light golden. Add the garlic, mushrooms, and drained spinach and mix until combined. Cook for about 5-8 minutes.

4. Remove from heat and add the mayonnaise, breadcrumbs, soy sauce, and dijon mustard. Mix with fork to combine.

5. Place 1 heaping tablespoon of filling into the center of the puff pastry. Fold over two corners of the pastry and twist or fold over. Make sure they’re tightly sealed, or they will open. Place on the prepared baking sheet and repeat with the rest.

6. Brush the pastries with egg wash and sprinkle with flaky salt.

7. Bake for 20 minutes until golden brown. Remove from oven and serve with onion sauce.

TIP: These freeze great! Store between layers of parchment paper for easy defrosting. Enjoy.

VELVETY ONION SAUCE

Ingredients:

5-6 tablespoons oil

1 white onion, finely chopped

1 teaspoon sugar

2 teaspoons salt

¼ cup frozen tricolor peppers, finely diced (you can sub with ½ fresh red pepper)

1 clove garlic, crushed

1 ½ tablespoon flour

1 cup water

Black pepper, to taste

Directions:

1. Heat oil in a medium saucepan. Add the chopped onions, sugar, and salt, and cover the pan. Let simmer on low-medium heat for about 20 minutes, stirring often. Once onions are caramelized, add the diced peppers and garlic. Cook for another 2-3 minutes.

2. In a cup, dilute the flour in 1 cup hot water. Add to the pan and mix with a fork. Season with black pepper to taste. Let simmer for about 5 minutes on low until the mixture is smooth and creamy. Serve hot.

CHICKEN MARSALA BOUREKAS

An elevated twist on the beloved classic, this chicken marsala hybrid is sure to become a favorite all year round.

Yield: 12 pockets

Ingredients:

1 lb. chicken cutlets, cut into very small nuggets

1 cup flour

½ teaspoon salt

¼ teaspoon black pepper oil, for frying

1 white onion, diced

1- 8 oz box mushrooms, diced

¼ cup white wine or marsala wine

½ cup chicken soup (or ½ cup hot water with 1 teaspoon chicken soup mix)

12 large puff pastry squares, slightly thawed

1 egg, beaten for egg wash

Black sesame seeds, for topping

Directions

1. Preheat oven to 375° and line 2 baking sheets with parchment paper.

2. In a large Ziplock bag, add the flour, salt, and pepper, and chicken nuggets. Seal the bag and shake until chicken is fully coated.

3. Heat 3-4 tablespoons oil in a large frying pan and add the chicken pieces. Cook on both sides until golden brown. Remove from pan and set aside.

4. In the same pan, heat an additional 3-4 tablespoons oil and saute onions until golden. Add the diced mushrooms and cook until soft.

5. Stir in the wine and chicken soup and bring to a boil. Add in the chicken and let simmer for about 2-3 minutes until the sauce is thickened.

6. Remove from heat and let cool.

7. Place about 1 ½ tablespoons of chicken mushroom filling into the center of a large puff pastry square. Fold over one side to the other and pinch the 3 open ends closed with a fork. Place on the prepared baking sheet and brush with egg wash. Top with sesame seeds.

8. Bake for 20-22 minutes until crisp and golden brown. Serve warm.
