THIS YEAR, MAKE IT EXTRA SPECIAL BY ADDING SOME KOSHER L’PESACH HOME-MADE NATURAL COLORING! WORKS GREAT FOR PESACH AND MAKES A HEALTHY ALTERNATIVE FOR THE REST OF THE YEAR AS WELL.

YOU’LL NEED: • Egg whites • Sugar • Beets • Carrots • Romaine Lettuce

FOR THOSE MAKING MERINGUES FOR THE FIRST TIME, HERE’S A CRASH COURSE: To calculate the recipe, always use a ratio of 1 cup sugar for every 4 egg whites (or ¼ cup sugar for every one egg white.). In a clean, dry bowl, whisk the egg whites until soft peaks form. Add the sugar a bit at a time, beating continuously until the mixture is smooth and stiff. Place the mixture into a bag with a star tip, or simply use a plastic bag and snip the corner. Line a baking sheet with parchment paper and pipe the mixture by squeezing, stopping, and then lifting the bag up and away. You can pipe them close together as they won’t spread. For chewy meringues, bake at 275 for 20 minutes. For dry, crunchy meringues, bake at 200 for about 1 ½ hours. To add exciting natural color, make use of some wonderful veggies. Add a small amount of beet juice to mixture before piping to get your desired shade of pink. A bit of carrot juice will result in a pretty orange hue. Add only a bit at a time as a small amount goes a long way. For green meringues, boil dark pieces of Romaine lettuce in a pot with just enough water to cover. Blend mixture thoroughly, and strain. Add the green water to create a greenish tinge to your meringues. (Spinach leaves are another great option and will produce a deeper shade of green.) Don’t worry about the vegetable taste; you won’t feel any of it in the meringues!

MERINGUE TIPS: (FOR THE EXPERIENCED BAKER, TOO!) • Always use egg whites at room temperature, with not a single spec of egg yolk in it. • Old eggs make beautiful meringues. • Whisk your egg whites to a soft peak before adding any sugar. If you add the sugar too early, the mixture won’t get stiff enough. • For a real professional texture, beat the egg whites and sugar together over a bowl of simmering water (double boiler style). Continue beating until all sugar is dissolved and mixture is warm. Remove from heat and whip an additional 6-10 minutes until meringue is glossy and stiff. • For crispy meringues, leave the cookie sheet in the oven with the door slightly ajar after turning it off. It will turn dry slowly as the oven cools off.
