Shaina held her breath tiptoed into the kitchen.

No suspicious rustling noises yet.

She opened the faucet to rinse the baby bottle she held in one hand, her other hand holding her patiently-waiting baby.

The bottle was just about ready when she saw it from the corner of her eye.

"AAAAGH!" she shrieked, jumping up in alarm and shooting back to her bedroom, the scream startling her baby and making him start howling along.

Her husband Motty rubbed the sleep from his eyes at the ruckus.

He snuck a look first at the glowing numbers on his alarm clock, then at his barely-breathing shell-shocked wife.

"It's two o'clock in the morning," he said fuzzily. "What's going on?"

Shaina was panting, too horrified to talk. "Go-to the kitchen," she choked out. "In the corner. On the mousetrap!"

Motty sighed and stuck his feet into his crocs. Apparently, he was WeeklyLink.com

on mouse duty tonight. Again.

While Shaina tried to shush her baby and still her racing heart, she listened out for sounds of the mouse battle, cowering in fright all the while.

••• "Hey, Shaina," Miriam beckoned her over to the circle of chairs starting to form in the middle of the field. The "yenta centa," as it was known in the bungalow colony, was just opening for business at 11:30 in the morning.

Shaina smiled and pulled up her own chair, holding her baby over her shoulder and patting him in an effort to get him to burp.

"You cannot imagine how scary it was!" Brachi Goldhirsch shuddered visibly. There was a slightly wild look in her eyes, and bags underneath them. She turned to Shaina. "Did you hear what happened last night?"

Shaina shook her head. "What happened?" she asked, wideeyed.

again. "Last night," she began dramatically, "I was up late last night in my bungalow. I was sitting at my kitchen table, just drinking my tea, and then I looked out the window, and I nearly fainted!"

The ladies in the circle had already heard the story, but they all listened raptly as Brachi repeated it for Shaina's sake.

"There was a bear outside my window!" she continued in a hushed whisper. "I was paralyzed, I couldn't move, couldn't talk, I couldn't even breathe! And then," She paused.

"Then I heard a huge crash!" There were a couple of gasps around the circle. "The bear knocked over the picnic table right in front of my bungalow! Then it turned around, and went back into the forest. I hardly slept last night!

And when I woke up this morning, I saw the picnic table still on its side. You can all go see it if you like. Oh, it was so scary, you cannot imagine!" Brachi finished off her story.

"That's a crazy story," Shaina said, shaking her head. "I don't know how you handled it!"

Brachi inclined her head, acknowledging Shaina's words.

"I hope it won't be too much of a bear season," Pessy said in her high-pitched voice. "It's only a week into the summer, and there were already two bears in the bungalow colony this year."

"Yeah, having bears around makes it stressful instead of relaxing," Kaila said, languidly waving her fly swatter.

"Not half as scary as the bear," Shaina spoke up, "but I also had an intruder last night."

Miriam spoke up for the first time. "Look, it is what it is," she said, her deep voice lending her words authority. "You come to the country, you know you're going to find spiders and snakes. No?"

And she described her mouse story in all its gory detail to the eager ears of her audience.

"No, eeek!"

Mindy said emphatically. "Gross! My husband comes up early to bring up our stuff and pest-treat our bungalow every year."

"That's just gross, Shaina," Mindy said, pulling up a chair and taking out her crocheting project. "I wouldn't handle it if my bungalow was infested with mice." She shivered, despite the hot sun.

"And anyway, just ‘cuz animals are part of the country, doesn’t mean it's a fun part of it," Brachi said. "It's nice to be up here, but the animals are for sure not enjoyable."

"It's like, I love the country," Shaina expostulated, "but I just can't handle certain parts. Like the animals."

The ladies around the circle nodded in solemn agreement. All those in the animal kingdom were not welcome to their summer vacation.

"Yeah!" The unanimous.

"I go crazy from these gnats," Kaila confessed, indicating her fly swatter. "Especially when it's muddy, like this year, there are just swarms of them all over. ••• But almost as if in protest of their pronouncement, the members of the animal world kept on showing up, with alarming frequency.

It seemed like every morning the discussion in the cozy circle revolved around another alarming story-this one with a snake spotting, that one had a bumblebee in her house that bit her allergic son, and yet another got an annoying cricket lodged somewhere on her porch, slowly driving them all insane.

"Look, you know, we're the real invaders," Miriam tried to philosophize again. Her daughter had been the victim of a skunk spraying the night before, so no one could accuse her of a lack of

"Are you seriously talking about these animals like they have feelings?!" Pessy asked, stridency making her voice come out more high-pitched than ever.

Chava Rochel came over to the outside of the circle just then.

"Who's up for going brisk-walking on the road?" she asked. Her regular walking partner had gone to town for a grocery order, and she was looking for a replacement.

"I'll come," Shaina offered. "Just give me a moment to change into sneakers and strap this guy into his Yoyo."

"Sure, I'll wait," Chava Rochel said, settling into the chair that Shaina vacated. Shaina, only too glad to get away from the constant talk of pests and creatures, hurried to her bungalow. As she was used to doing by now, she tiptoed through the rooms so as not to arouse any four-legged visitors.

She was back in five minutes, thankfully spared from a pest sighting.

"Ready to go?" she called to Chava Rochel, who was by now deeply engrossed in the discussion going on in the circle debating the pros and cons of diagnosing disorders and learning disabilities in children.

"Yeah, I'm coming," Chava Rochel said, finishing up her speech and pushing her chair back.

They left the cozy circle and began walking toward the road in companionable silence.

"Do you go walking every day?" Shaina asked desultorily, maneuvering her stroller around 171

some rocks as they left the confines of the bungalow colony and headed for the mountain road.

"Yep," Chava Rochel said proudly. "It's part of what I love about the country."

The midmorning sun was bright and strong, but the trees all along the road provided shade for the two walkers.

"It's such a great way to spend the morning," Shaina agreed.

She would have to find herself her own walking partner, she decided. "What was that discussion that I missed all about?"

"You know how they're so quick to label kids these days?" Chava Rochel said, turning to her with the same passion she'd displayed before. "I think it's so detrimental to them."

Engrossed in a heated conversation of their own, (Shaina's own four-year-old had been developmentally delayed,) they nearly missed it.

At the last moment, Chava Rochel stopped short. She paused midsentence and placed a finger on her lips. Shaina automatically stopped too and followed Chava Rochel's gaze.

Just a little way down the road, in a clearing between the trees, stood a family of graceful deer.

Their deep chestnut color spotted with perfect white flecks, they seemed to come straight out of a painting.

The deer and the women stood frozen for a couple of seconds, until the biggest deer swished its tail and bounded across the road in a lightning move. The other three deer followed him and disappeared between the trees.

"That was so…picturesque," Chava Rochel sighed rapturously.

And somehow, for the rest of their walk, their talk was more sedate and calm.

That night, Shaina was sitting over a Scrabble game with Mindy and Pessy. They sat around the picnic table, baby monitors letting them know that their offspring, just a few yards away in their respective bungalows, were still deeply asleep.

"It's great that you're not too disgusted to let chicks hatch on your front porch," Brachi said.

"I remember one year someone had bunny rabbits in the bungalow colony. My kids only wanted to go to their bungalow, every single day."

Mindy was taking her merry time putting down her tiles, and Shaina yawned. As she looked up, she noticed the fireflies.

"Look at that," she nudged Pessy. It was a spectacular show, as dozens of fireflies lit up in synchrony.

"Cool," Pessy agreed. "I guess some creatures are also pretty, huh?"

That turned Shaina thoughtful.

It wasn't until the next morning, after a blissfully mouse-free night and a smooth morning routine that had all the kids finding snacks they liked in the snack drawer and getting out of the house to day camp with clean faces and clothes, that the thought settled into her more deeply.

As she pulled over her favorite canvas chair to her usual spot in the circle to join the other chatting ladies, her attention was diverted to a striking monarch butterfly flitting by. Its bold hues stood out against the bright sun's rays, capturing her attention for a full five seconds.

Then the butterfly was gone and Shaina sat down.

"It's slightly gross, but my kids love it," Kaila was saying apologetically. "And I think it teaches them so much. To see how an egg hatches into a chickit's like seeing a miracle unfold, to them. And then they love holding the little fuzz balls and

It was Miriam who pointed out the realization crystallizing in Shaina's head.

"I guess some animals in the country aren't all bad," she said wryly.

The other ladies were struck by her pronouncement.

"I so didn't think of it that way," Pessy exclaimed. "But that's so true! We enjoy some of the animals up here almost as much as we detest the other ones."

"Yeah," Shaina spoke up. "I was just thinking about that.

Remember that firefly show last night?"

"Uh huh," Pesy nodded. "It was amazing to see."

As if to confirm their words, just then, a stunningly colored bird flew over to an empty chair in the circle and perched on its arm. It cheeped twice, then fluttered its bright-green wings and flew away.

The ladies in the circle were quiet. A loaded silence, as the new truth they'd all just realized was processed.

And for the rest of that summer, there were no more bear, mouse, snake, snail or skunk stories.

Almost as if in respectful acknowledgment of their shift of perspective. * 169

Mango Sorbet 3 Ingredient

4 mangoes

¼ cup honey (170g)

½ cup water (120mL)

Instructions:

1) Take your mangoes, (strawberries or kiwis can also work) and cut them into 1/2 inch cubes. Place them on a baking sheet.

2) Cover and freeze the cubes on your baking sheet for 4 hours.

3) Take your food processor or hand blender and add the frozen cubes with honey and water.

4) Mix until the ingredients are smooth.

5) Scoop into a container.

6) Freeze for an hour.

occasionally used for medicine but not consumed regularly until 1542. The plant is easy to grow and whether it's juiced, cooked, pickled or fermented, beets have a wide range of health benefits.

Although packed with nutrients, up to 8% of each beetroot is simple sugar, so people who struggle with insulin resistance should partake carefully.

In 1747, a chemist discovered how to extract the sucrose from beets, leading to the development of the beet sugar industry, which uses fewer resources than sugarcane.

Beetroot Juice May Protect Heart Health Research presented at the British Cardiovascular Society conference in Manchester showed just one glass of beetroot juice each day could help reduce the harmful inflammation found in people who have coronary heart disease.

According to the CDC, heart disease remains the leading cause of death in the U.S. and coronary heart disease is the most common type, killing 360,900 people in 2019.

Nearly 20% of deaths from coronary artery disease occur in adults who are younger than 65 years.

There's a lot to be said for this humble red root. Archaeological evidence shows that beets were a part of the diet dating back to the Third Dynasty and Greek records show beets were cultivated around 300 BC. Originally, it was the beet greens that were prized as food and not the fibrous roots.

The team engaged 114 healthy participants to test the theory that beetroot juice could help reduce inflammation in the endothelium and speed healing. They split the group in two. One group of 78 participants received a typhoid vaccine. This temporarily increased blood vessel inflammation.

The researchers triggered a localized inflammatory response on the skin in the last 36 participants.

Ancient Romans, Greeks and Italians believed that beats were an aphrodisiac. The roots were

Researchers from the Queen Mary University of London led the study.

Dr. Asad Shabbir, clinical research fellow at the University, spoke with a reporter from The Guardian about the results.

“Inflammation is vital to protect the body from injury and infection.

However, in people with coronary heart disease persistent inflammation can exacerbate the furring of the arteries, making their condition worse and increasing their risk of a heart attack. Our research suggests that a daily glass of beetroot juice could be one way to get inorganic nitrate into our diet to help to interrupt harmful inflammation.”

Watermelon is another summer delicacy that can raise nitric oxide production. However, watermelon is also high in net carbs and regularly consuming large amounts can

likely worsen insulin resistance and increase your risk of heart disease.

One study followed men in their mid-40s to mid-50s for more than 12 years and found the carotenoid antioxidant that gives watermelon its pink color — lycopene — reduced the risk of stroke in the group Watermelon has a varied concentration of l-citrulline, which is a precursor of L-arginine and a substrate for a nitric oxide synthase in the production of nitric oxide.

Another study showed that taking 2 grams of fresh garlic could increase plasma concentrations of nitric oxide. Nitric oxide has long been known as a potent vasodilator that promotes healthy blood flow for efficient oxygenation of your tissues and organs. It also helps remove waste products and carbon dioxide.

By relaxing and dilating your blood vessels, nitric oxide improves blood flow and lowers blood pressure. In conventional medicine, nitrates are used to treat angina and congestive heart failure. Research shows a daily glass of beetroot juice could lower blood pressure.

Additionally, it improves your brain neuroplasticity by participating in the expression of brain-derived neurotrophic factor (BDNF) and is required to activate BDNF receptors.

Beet juice increased tissue oxygenation, blood flow and brain neuroplasticity in a study published in The Journals of Gerontology in a group of 26 middle-aged men and women diagnosed with high blood pressure.

Beets Improve Lung Efficiency and Athletic Performance Dr. Michael Greger discusses the top 10 widely available natural sources of nitrates. He compares the number of milligrams (mg) of nitrates per 100 grams (g) of food and found beets barely made the top 10 having 110 mg per 100 g of beets. However, concentrated raw beet juice has 279 mg of nitrates. This puts it in the No. 3 position behind rhubarb with 281 and arugula with a whopping 480 milligrams of nitrates.

Past studies have shown that nitrates can help improve muscle function, potentially by optimizing the way the muscle uses calcium.

One animal study split mice into two groups. The mice were 24 months old, which is equivalent to roughly 70 years in humans.

One group was given drinking water with sodium nitrate for 14 days and the other group was given plain water. At the end of 14 days, the researchers measured the isometric force and peak power of the diaphragm muscles and found that both measures were significantly increased in the mice that drank nitrates. This increase in force and power translates to improved contraction of the diaphragm muscle, which can improve lung function and breathing.

This may help the elderly clear their lungs more effectively, which in turn could reduce the risk of developing infections. Nitrates have also shown to help improve oxygen uptake by dilating the blood vessels.

This improves the delivery of oxygen to muscles and other cells.

Improved oxygen delivery may be one factor in how nitrates can improve athletic performance. One literature review looked at the effects that beetroot juice supplementation has on cardiorespiratory endurance in athletes. They selected 23 studies for analysis and found the results suggested beetroot juice improved cardiorespiratory endurance by increasing efficiency, and time to exhaustion at a submaximal intensity and may improve performance at the anaerobic threshold.

The researchers hypothesize that beet juice could moderate the exercise impairment "of hypoxia on cardiorespiratory endurance in athletes" and "it is possible that the effects of supplementation with beetroot juice can be undermined by interaction with other supplements such as caffeine."

Beetroot Packs a Powerful Nutrition Punch In addition to nitrates, 100 g of beets has a mere 43 calories.

called betalains. This compound gives them the reddish-purple cuddle color and helps reduce inflammation and fight cell damage in the body. According to one study, the antioxidant capacity of red beetroot is correlated with the betalain content.

Betalains also have antiinflammatory, anticancer and antihepatitis properties, and have demonstrated the ability to improve cognitive impairment.

The phytonutrient has exhibited antimalarial and antimicrobial effects and studies have confirmed the phytonutrient can reduce glycemia without weight loss or liver impairment.

The phytonutrient responsible for the beet’s color can also add a red tinge to your bowel movements and urine. Holistic nutritionist Joy McCarthy suggests using it as a simple way to get a sense of how long it takes food to pass through your gastrointestinal system since the beets add a red hue to your bowel movements.

Beets are also high in oxalic acid.

An overconsumption of foods high in oxalic acid can lead to the development of calcium oxalate kidney stones. If you are predisposed to kidney stones or have calcium oxalate stones already, your doctor may recommend avoiding foods rich in oxalates.

These include dark green vegetables (especially spinach and Swiss chard), bran, rhubarb, beets and beet greens, chocolate, nuts (especially almonds, cashews and

peanuts) and nut butters. Increasing calcium in your diet may seem counterintuitive, seeing how calcium is the largest component of these stones.

However, the answer to this paradox is that high dietary calcium actually blocks a chemical action that causes the formation of the stones.

Cleveland Clinic explains: "Low amounts of calcium in your diet will increase your chances of forming calcium oxalate kidney stones ... [C]alcium binds oxalate in the intestines. A diet rich in calcium helps reduce the amount of oxalate being absorbed by your body, so stones are less likely to form."

More Foods With Cardioprotective Properties Cruciferous vegetables also influence your heart health. These vegetables are widely recognized for their anticancer benefits, such as broccoli, cabbage, cauliflower and Brussel sprouts. One study examined the effects vegetable intake has on carotid artery measures, which are indicative of arterial health.

They found those who consumed the most cruciferous vegetables had healthier carotid arteries than those who consumed the fewest. Narrow hard arteries restrict blood flow and can lead to a heart attack and stroke. The researchers found that on average, those who had at least three servings of cruciferous vegetables each day had thinner (healthier) carotid arterial walls than those who ate two servings or less each day.

The fiber and healthy bacteria

found in traditionally fermented and cultured foods can also benefit your heart. Probiotic-rich sauerkraut has been shown to reduce inflammation, promote good health, improve high blood pressure, reduce triglyceride levels and maintain healthy cholesterol levels. Each of these factors benefits your cardiovascular and heart health.

Magnesium is also profoundly important for heart health and many people are deficient. More than 300 enzymes rely on the magnesium for proper function, and it is needed for a host of biochemical processes. The best way to get a healthy amount of magnesium is to ensure you're eating plenty of dark green leafy vegetables.

Finally, consider including onions in your nutrition plan. They are packed with quercetin that helps combat inflammation and boost immune function. One 2016 meta-analysis found quercetin effectively lowered blood pressure at a dose of roughly 500 mg per day. Other studies have shown it helps reduce your risk of atherosclerosis.

The best way to maximize your health benefits is to eat a wide variety of vegetables daily. Make sure to include nitrate-rich leafy greens, cruciferous vegetables, onions and some homemade sauerkraut.
