Celebrating Excellence: The Vista Chamber of Commerce's Rising Star Student of the Month Program
For over a decade, the Vista Chamber of Commerce has proudly celebrated the achievements of exceptional high school students through the Rising Star Student of the Month program. This initiative not only recognizes academic excellence but also applauds leadership qualities, community involvement, personal development, and the ability to overcome challenging life circumstances. It stands as a testament to the Chamber’s commitment to fostering future leaders and supporting the educational aspirations of our youth.
Since its inception, the Rising Star program has awarded over $125,000 in scholarships to deserving students from various high schools in the Vista area. Each month during the school year, the Chamber honors one outstanding student from each participating high school at a special breakfast event. These students are selected for their dedication to their studies, their involvement in extracurricular activities, and their unwavering commitment to making a positive impact in their communities. Many have overcome unbelievable challenges in their lives.
At the end of the school year, the monthly award winners are invited to apply for scholarships. The scholarship funds have been instrumental in helping these bright young minds pursue higher education and achieve their dreams. Many past recipients have gone on to attend prestigious universities, embark on successful careers, and become influential leaders in their respective fields. The Rising Star program not only provides financial support but also instills a sense of pride and accomplishment in these students, motivating them to strive for greatness.

Burgeon Beer has opened a new taproom in Vista at the Paseo Artist Village. This location, known as The Grove, offers award winning craft beer options in a space that supports local artists. The Paseo Artist Village provides affordable housing with a preference to artists, Veterans, and current Vista residents.

urgeon Beer began operations in 2016, created by three friends and San Diego natives: Anthony Tallman, Matthew Zirpolo, and Derek van Leeuwan. This project was a collaboration of friends looking to create quality craft beer through innovation. Vista has long been a city the company was interested in opening a taproom. With the opportunity at the Paseo Artists Village, it was the right time to enter the Vista market.
The Vista Chamber of Commerce was a partner early on with Burgeon’s relationship with Vista. The City of Vista was a great help, and the synergy with the Vista Chamber of Commerce just naturally led to the next step. Matthew Zirpolo, co-founder & President, said “Vista has been on our radar since the early stages of planning the brewery, and we were close to opening there originally but the location fell through. Since then Burgeon has expanded to 4 locations across San Diego County and we have watched downtown Vista evolve into a vibrant shopping, dining, and entertainment district that we can't wait to be part of. We're excited to grow in this unique community and we look forward to attracting new consumers to the area with excellent customer service and high-quality craft beer."

In addition to their focus on community partnership they have made the environment a priority. In February, Burgeon Beer became the first brewery to achieve three environmentally friendly certifications. The One Percent for the Planet, the Climate Neutral, and the Ocean Positive certifications are Burgeons way of showing growth can be sustainable while helping to improve the climate. When these certifications were achieved, Burgeon released “Nature Calls”, now this fall it will be re-released to their tasting rooms in October.
Burgeon’s brewing productions take place in Carlsbad. Located nearby is their private event space, The Greenhouse. The Greenhouse has quickly become popular for end of the year events and special occasions.

Velocity Summer Intern Program Ends on a High Note

This year, more than 75 rising seniors from our local high schools participated in Vista’s Velocity Summer Internship Program that wrapped up August 9. Established in 2021, the program is just another example of the successful partnership between Vista Unified School District (VUSD) and the Chamber of Commerce.
“VUSD has initiatives and goals to assist students with career readiness and job exploration,” says Rachel Beld, CEO of the Vista Chamber. “We know that many of our Chamber members are looking for talent and our role is to help connect everyone,” she says. The Chamber handles all the administrative aspects of the program including required paperwork, student payroll and helping match students with businesses.
“Now in its third year, the word is spreading and an increasing number of businesses are seeing the advantage and the opportunity the program is having to create a win-win for everyone,” she says. “People rave about how talented, smart, and creative the students are. This program really highlights their capabilities and willingness to grow and learn, and dive right in!” she says. “Everyone just loves this program and every year we are seeing it grow in popularity.”
Beld explains that students are paid for 100 hours of work over a 9-week period. The bulk of the students’ work has to be substantial so they are tasked with things that help them learn about a trade or what is required to do the job long-term. “We want them to leave the internship knowing what that organization does, who they serve and what types of roles or career pathways are available,” Beld adds. “Typically, students will work on a special project, do data entry, social media marketing and other hands-on duties so they can see where they could fit in at an entry level job in the future. Businesses are not allowed to use students for labor focused jobs such as cleaning out a closet or work unrelated to the business’s purpose.
Kyle Adams, General Manager at Prohibition Brewing Company decided to participate for the first time this year and now has three interns working as food runners. “Our interns are very attentive and eager to learn,” he says. “We are glad to help students learn new skills, earn money for the summer and gain some experience,” he says. “As a small business, it’s also great having the extra help during our busy summer months knowing the interns are still getting paid.”
Allegra Martin, a rising senior at Mission Vista High School has enjoyed her internship at A Differ ent Day Radio under the direction of Podcast Producer Zeke Corley. Martin is interested in pursuing a career in journalism. “I see the internship as a way to examine communications, marketing, and business in the real world.”

“I’m really lucky because Zeke is a great boss and wants the best for me and the other intern,” she says. “I helped with podcast production, guest coordination, and marketing efforts four days a week for five hours per day,” she says. “The time just flies and I’ve learned so much!”
"Another Intern, Giovanni Garcia, is a rising senior at Vista High School who has also enjoyed his internship. “I’ve been working with Star Fox Media, focusing on social media marketing,” he says. "One of the most exciting things I've done was help create and edit a promo video for a client during my internship. I've always been interested in using editing software, and this experience has allowed me to learn a lot of new skills. The employees are super helpful and supportive, teaching me so much along the way."

Well Hello Readers!
Yes, it’s me again! I’m happy to announce that I’ve been voted in as Chair for another 6 months, alongside our vote to extend our fiscal year through December 31, 2024. I welcome the opportunity to continue supporting our business community, and to support our CEO Rachel Beld.
Speaking of Rachel, I want to take the time to do what some have, and many more should do - give her the flowers she so deserves. She won’t toot her own horn, so I will - Just this year, Rachel has done so much for our business community, and gained recognition of her own as well. Fearless and front-facing, Rachel is the winner of the Community Partner Award for her work with Rising Stars & the Velocity Internship Programs. She was nominated Woman of the Year by the office of Assemblywoman Laurie Davies. She’s also graduated from the Academy at the Western Association of Chamber Executives. From hosting your local ribbon cuttings, to hosting Velocity - The Vista Chamber Podcast, Rachel is an amazing team leader that puts on your favorite events like Vista’s Strawberry Festival & Christmas Parade. And, on the side, she mentors students in the Business 300 Program at Cal State San Marcos, and sits on the Board of the Vista Boys & Girls Club. Not to mention raising two wonderful children in Lily & Colin!
As I said, there are only a few more months of my time before our next Chair takes the seat. Let me introduce you to her- not only is your next Chair fashionable enough to carry my torch lol, but Betsy Heightmann is one of the smartest people that I know. Unlike me, she does more listening than talking. Betsy is originally from Bethlehem, PA and is now a proud Vista resident of 29 years. She is the Chief Development & Government Affairs Officer for Vista Community Clinic, the company she’s worked with for 28 years! VCC is a longtime partner and supporter of our Chamber, and we are happy that they are represented on our Board. With Betsy as Chair, we should all be excited for the future of the Vista Chamber of Commerce.
Women’s Equality Day is this month, and I hope that you get to know at least two women as deserving of recognition as these two. Thanks to the Board for approving my extension. I won’t let you down. Thanks to those of you members that have participated in our Loyalty Zone survey. You’ve helped with our evolving mission. Never stop building Vista!

in Every Bite Excellence

The inspiring story of Matthew Baker and his San Diego based catering company, Feast on This Culinary Event Production, is one of determination, courage, and success against many odds.
Being deaf since birth, Matthew’s challenges have always been significant, but never stood in his way of accomplishments and following his dreams. When he was unable to attend the universities of his choice due to the lack of interpreters, he enrolled in a culinary program at Mesa College, which led to one of his many jobs in the hospitality industry. Initially, he was looking for work that would offer him safety from the public. He explained, “Working in the kitchen was the perfect place to hide.” From the very beginning, he asked his bosses to treat him as everyone else. His request to be treated equally, in addition to his attention to detail and hard work, was soon noticed by an executive chef at the San Jose Hilton, where he was hired as a restaurant manager. His management position helped him break through his fears of interacting with people, as he quickly learned different methods to communicate.
After moving back to San Diego, Matthew encountered more obstacles while looking for a management job. Instead of starting at the bottom again, he decided to take over a bankrupt bakery shop, which he converted into a catering kitchen. “The reason I chose catering over the restaurant was because catering is more fun; a different location, different menu, and different vibe every day.” Today, 24 years later with twelve full-time employees, Feast on This is a one of a kind all-inclusive catering business with deep core values—Family, Excellence, Attitude, Sharing, and Transformation. Grateful for his amazing team, Matthew considers every employee as the backbone of his organization.
Whether it’s a family birthday party, a large corporate event, wedding, or a memorial, the employees of Feast on This work nonstop in the company’s 5k square foot space to turn their customers’ wishes into reality. They are known for customizing and developing menus with many unique flavors and themes. As Matthew explained, their job is an A to Z production focused on all the details. “We don’t just give out food, but an experience!” Imagine tomato Caprese made from heirloom tomatoes, matched and mixed with flavors using a selection of jalapeño, garlic & traditional olive oil, peach or blackberry balsamic, topped off with black lava salt or grey sea salt!
Filling his life with goals, Matthew continues to dream big! Owning a boutique hotel or starting a wine business are just a couple of his aspirations. Often volunteering, he has been a chairperson for the Deaf Community Services of San Diego, helped food banks, and currently does a cooking series on Deaf TV. His passion continues to be supporting the deaf generations to prove that people with disabilities can own their businesses and be successful executives. He said, “If I can, they can!” Matthew’s message to our community is to reach out to him and get to know him. As a company that has grown mostly by word of mouth, he is excited for new customers to try them. As we approach the end of another vibrant summer in Vista, I am delighted to share some exciting updates on our thriving community. Our downtown business core continues to flourish, showcasing the resilience and innovation of our local entrepreneurs. New businesses are opening their doors, and established ones are expanding, creating a dynamic and bustling environment that attracts visitors from near and far.
Equally impressive is the growth we have witnessed at the Vista Business Park. This hub of industry and commerce remains a cornerstone of Vista’s economy, providing numerous job opportunities and driving economic growth. The synergy between our downtown and business park is a testament to the strength and potential of Vista as a whole.
This summer has been particularly special, marked by remarkable attendance and participation in our cherished community events. The Moonlight Amphitheatre has once again proven to be a cultural gem, drawing audiences with outstanding performances under the stars. The Wave Waterpark has been a source of joy and excitement for families, offering a refreshing escape from the summer heat.
Our Annual Independence Day Celebration at Brengle Terrace Park was a spectacular success. It brought the community together in a display of patriotism and unity. The fireworks lit up the sky, reflecting the spirit of Vista and the pride we have in our city. The Movies in the Park series has also provided delightful evenings of familyfriendly entertainment, further strengthening our sense of community.
As your Mayor, I am immensely proud of these accomplishments and the vibrant spirit that defines Vista. Our city's progress is a collective effort, and I extend my heartfelt gratitude to all residents, businesses, and community partners who contribute to our ongoing success.
Thank you for your continued support and dedication to making Vista an extraordinary place to live, work, and play. I look forward to the opportunities and achievements that the future holds for our beloved city.

Local Solar Company Helps Customers Go Green and Save Money

With the cost of utilities continuing to rise, a local solar and roofing company is setting up residents and businesses to take advantage of the abundant sunshine in Vista to lower their electricity bills.
Cosmic Solar and Roofing provides solar panels, batteries, and roofing to homes and businesses across Southern California to help them transition to clean, reliable solar energy.
What sets Cosmic Solar apart from other solar and roofing companies is that it’s a local, family-owned business. Says COO Pey Shadzi, “We overwhelmingly feel the company that clients choose for roofing and solar should be a local company that helps support the community, rather than a larger, more impersonal relationship with a national solar company. So many Vista residents have chosen to go with Cosmic Solar and Roofing because we’re not only local, but have a great reputation in the community.”

It regularly participates in the Vista Strawberry Festival, and has sponsored the Valley Center Little League.

If you’re thinking about visiting an amusement park, there’s no need to drive for hours or spend an exorbitant amount of cash.
Boomers Vista is a family entertainment center right here in Vista that offers a wide range of attractions and rides suitable for all ages. Key attractions include go-karts, mini-golf, bumper boats, laser tag, batting cages, and a large arcade with a variety of games. Additionally, Boomers Vista features a kiddie play area for younger children. Says Marketing & Sales Manager Leah Mizrahi, “The facility is designed to provide a fun and engaging environment for families, friends, and groups to enjoy a day of entertainment and activities.”
Typical visitors to Boomers Vista are families, groups of friends, and school and youth groups from the local area. However, the entertainment center also attracts visitors from out of town who are looking for fun activities while in the Vista area. One of the most popular attractions is the go-kart racing track. “This attraction draws both kids and adults who enjoy the thrill of racing in a safe and controlled environment,” says Mizrahi. The mini-golf courses are also a favorite, offering challenging and fun play for all skill levels.
Boomers Vista provides a variety of packages for birthdays, company social events, and group outings. Group packages typically include access to attractions, a reserved party area, food and beverages, and a dedicated party host “to ensure everything runs smoothly,” says Mizrahi. Food is available at Boomers Vista at its onsite Johnny Rockets restaurant, of-

Conveniently situated near the 78, VAS proudly serves approximately 3,000 students annually. “[VAS students] are members of the workforce hoping to get a promotion or a career change, they are parents with school age students, and 18 – 80-year olds,” says VAS Principal, Elizabeth O’Shea-West. “Our students are motivated to make a positive change in their lives and Vista Adult School is here to assist them in achieving their goals.”
Accredited by the Western Association of Schools and Colleges, VAS prides itself on a robust offering of programs that improve lives while fitting in with active adult schedules. “VAS provides a more personalized education with a strong support team that assists the students to meet their goals,” continues O’Shea-West.
Career Technical Education pathways are among the most popular at VAS. Students train to be job ready in short time, whether pursuing careers in Medical, Business, or Construction Apprenticeship fields. Well-rounded programs prepare students to begin or continue work in a variety of certified and licensed roles in some of the most in-demand employment sectors. Furthermore, VAS assists career goal achievement through useful workshops like Resume Development, or how to leverage new AI technology to supercharge job searches.
This Fall, VAS is excited to begin offering Human Resources Part A, an introduction to the foundations of Human Resources and 21st century business applications. One of the most positive outcomes of the Covid-19 Pandemic was the tremendous outpouring of compassion of those wanting to help others in need. One such person is Vista Chamber Member and Encinitas Resident Wesley Burt. In 2020, he saw a news report about the dramatic rise in food insecurity in San Diego County. When he saw how local schools were providing free lunches to students via a drive-thru system, he saw an opportunity to ensure that the students and their entire households could regularly receive fresh and healthy foods.
Burt collaborated with his father and a chef friend and soon they were providing large boxes of up to eight varieties of fruits and vegetables (12-15 lbs. equivalent to at least 10 meals) once a week to those same families in line at schools for the free lunches in Vista. Soon, they were able to expand to other communities.
“I was still working in the tech space and doing this in my spare time,” says Burt. “As schools began to reopen in 2021, we decided that we had enough
traction to establish +BOX, a 501C3 registered nonprofit. Today, +BOX serves a total of 14 schools in Carlsbad, Oceanside and Vista during the school year,” he says.
“We also have a proposal to expand into Escondido next year. During the summer, we work with other community-based organizations to deliver food, such as the Boys and Girls Club and area libraries,” he adds.
“The goal of our organization is to create a food support model that addresses food insecurity in a nutritioncentric way that drives better long-term health and wellness,” he says. “The San Diego Hunger Coalition estimates in North County alone, there are 170,000 people who regularly miss meals, which equates to three million meals short every month.”
+BOX sits in the middle of the convergence of three big challenges:
• Basic Food Insecurity
• Nutrition Inequity – About 70 percent of donated foods are processed or ultra-processed
• Food System Inadequacies – About 75 percent of farms make less than $20K a year in revenue and a lot of food gets wasted.
“A big part of our success is food recovery,” says Burt. “We put a lot of effort in identifying the source of the food we
choose for our boxes. We also purchase locally grown produce for our families that is super fresh and nutritionally dense. We are different from other organizations because we distribute foods that are going to drive better long-term health and wellness with an emphasis on locally grown and sourced fresh fruit and vegetables. These types of foods are typically the most expensive and difficult to access for low-income families,” he explains.
+BOX currently employs 3.5 employees and relies on a slew of volunteers to help with obtaining, warehousing and distributing up to 750 boxes weekly to area schools. “Our model is based on well-defined service areas that enable us to maintain our community roots, engage local volunteers, and stay nimble and responsive to specific community needs,” he says. “By partnering with the schools, families benefit from the ease of access, reliability, and consistency of the boxes that creates a healthy cadence of our program.”
The model seems to be working well. “A recent evaluation of our program provided overwhelming feedback that those who participate have higher levels of wellness and feel healthier,” says Burt. “Kids are trying new foods and doing better in school.”
Although Covid is no longer a threat, high inflation and rising food costs,
combined with the loss of the free food vouchers families used to receive continue to exacerbate the problem.
Burt says +BOX partners with many grocery chains and places like Costco. It also relies on federal grants and donations. A fundraiser is planned for Sunday, September 15th at the Olde Rancho in Carlsbad called the Farmstead Feast. Visit www.plus-box.org/ farmsteadfeast to learn more.

I am so excited and eager to welcome students, staff, and families back to school on August 15, 2024. We have made many improvements to facilities across the district this summer in preparation for a great year. We have also completed a series of summer learning opportunities for thousands of students across all grade spans so that they may get a jump start on their learning for the new year. While the year has not started yet, our teachers and support staff have already been busy preparing their classrooms and other learning spaces to welcome students back to school.
Our theme for the year is to ensure that all students have compassionate champions of Hope and Joy in classrooms, on the field of sports, on the stage, and in our community. This theme is taken from our Adult Portrait, and recognizes the power of teachers and staff building positive, empathetic relationships with students. When all students have adults on their side listening, encouraging, supporting, and challenging their learning, student achievement rises and each student develops a genuine feeling of hope, joy, belonging, and engagement.
As a district, our vision remains steadfast - Every student graduates from Vista Unified as a resilient, agile learner and creative problem solver who navigates the world with confidence and kindness and eagerly embraces local and global challenges.
We have revised the Blueprint for Educational Excellence and Innovation to include actions and services that will not only support our students to reach for our vision, but also deepen our commitment to universal design for learning. This approach ensures that we have firm goals for learning, we celebrate and support the variability of all learners, we allow for flexibility in how students demonstrate their learning, and, perhaps most important of all, we continue to remove barriers that students may encounter along the way.
In preparation for a great year, we have adopted new curriculum and instructional materials to support grade level proficiency in academic standards. We are committed to working in partnership with parents to keep attendance rates at or above 96%. We remain dedicated to support for the arts, athletics, extracurricular programs, and clubs. Finally, we take seriously our obligation to students and parents to provide positive behavior interventions and support. Students deserve a safe, accepting, and respectful learning environment inside and outside of the classroom. Vista Water Shack –Serving Up Memories

When people recall happy memories of childhood, they often talk about how much fun it was to eat ice cream cones on hot, summer nights with the whole family, or the weekly tradition of stopping for a special treat after running errands.
When people recall happy memories of childhood, they often talk about how much fun it was to eat ice cream cones on hot, summer nights with the whole family, or the weekly tradition of stopping for a special treat after running errands.
For many Vista families, that place where memories are made is at Vista Water Shack, located at 807 North Santa Fe Ave. Since 2022, it has been owned and operated by Gumaro Escarcega and his wife Fabiola Plata.
The Vista Water Shack has primarily been known for selling very high quality, alkaline and purified waters for more than a decade, hence its name. But over the years, the popular business began selling a variety of snack foods and ice cream products to encourage neighbors to hang out a little longer. Today, Escarcega has expanded the menu to include a wide variety of American favorites – hamburgers, hot dogs, chicken sandwiches, pastrami sandwiches, french fries, buffalo fries, ice cream cones, Hawaiian Shaved Ice, milk shakes, and even freshly baked cookies—all at an affordable rate to attract local families.
“We are a very family friendly business that strives to keep our prices affordable,” says Escarcega, who takes care of maintaining the water purifying equipment and other duties in the restaurant, while his wife handles payroll and all the administrative duties. “We also have a wonderful staff of eight that includes Danielle McClelland our
General Manager, shift leads and a few high school and college students who work part-time every summer,” he says. “We aren’t able to pay high wages, but our focus is on creating entry level jobs that provide young people with work experience and gives them a place to start. We also offer other incentives like a free meal when working or 50% discount for their immediate family members.”
The Water Shack is open daily from 10 a.m. to 8 p.m. and offers both indoor and outdoor seating along with plenty of off-street parking for up to 25 vehicles.
Escarcega has worked and lived in Vista with his wife and children since 2006. He is currently the CEO of MainStreet Oceanside, the Downtown Oceanside Business Association. He used to be the Executive Director of Vista’s Downtown Association, which currently serves in the Central
