MASON JAR

This mason jar meal is a fun and portable take on the traditional pad thai. It is perfect for meal prep and on the go lunches. This recipe is packed with vibrant veggies, noodles, and a deliciously creamy peanut sauce Our layered mason jar method will keep your ingredients fresh until you are ready to shake and enjoy!

Ingredients

Stir-Fry:

3 oz soba noodles

1 5 tsp vegetable oil

1 medium shallot, minced

1 garlic clove, minced

1 carrot, julienned

1 cucumber, julienned

1 bell pepper, julienned

1 cup Spinach

Peanut Sauce

1.5 tbs peanut butter

2 tsp sodium-reduced soy sauce

2 tsp toasted sesame oil

2 tsp hoisin sauce

2 tsp lime juice

Optional garnish fresh cilantro toasted sesame seeds honey roasted peanuts

MASON JAR PAD THAI

Instructions

1. Cook noodles according to package instructions

2 Add oil to large pan on medium-high heat When hot, add shallots and garlic Cook for around 2 minutes or until lightly golden

3.Then, add cut carrots, bell peppers, and cucumber. Cook until tender, around 2 minutes.

4.Lastly, add spinach and let wilt.

5.Meanwhile, add all sauce ingredients together and mix. Add to bottom of 2 mason jar.

6 When noodles are cooked Drain and rinse with cold water Split into two portions and add each to a jar

7.Separate the vegetables into two portions and add each to a jar.

8.Top with optional garnish.

9.Store in fridge for up to 4 days.

Base

1 carrot, julienned

1 cucumber, julienned

1 bell pepper, julienned

1 cup Spinach

1 cup Romaine

Peanut Sauce

1.5 tbs peanut butter

2 tsp sodium-reduced soy sauce

2 tsp toasted sesame oil

2 tsp hoisin sauce

2 tsp lime juice

Optional Garnish: Green onion Sesame seeds

Instructions

1.Cut your carrots, bell pepper, and cucumber into matchsticks.

2.Add all sauce ingredients together and mix. Add to bottom of 2 mason jar.

3.Separate your carrot, bell pepper, and cucumber into two portions and add to two jars.

4 Layer your romaine and spinach to the top of your jars

5 Top with optional garnish

6 Store in fridge for up to 4 days
