A message from the Chair...

As I reflect on this past semester, I am struck by the professionalism of our students, faculty, staff, alumni, and leadership. My sincere appreciation goes out to all of our students and faculty who pivoted to online delivery of courses in two days and worked diligently to make this semester a success. Several students have reached out to me this semester to praise the faculty in our department. Our faculty and staff were calm and gracious as they navigated this challenging situation. Our students know how much our faculty care about their academic, professional, and personal success. I am blessed to work with a great Administrative Assistant, Ms. Tara Francis. She quickly facilitated working remotely so there was no gap in our office processes that keep the department running smoothly. We did not get to hold our Scholarship Reception and Alumni Luncheon in person, but thanks to the generosity of our alumni and sponsor Witsell Evans Rasco (WER Architects/Planners), we were still able to award scholarships and recognize four amazing alumni. Finally, I am grateful for the leadership of our Dean, Dr. Jimmy Ishee. He has kept us informed and provided strong leadership and humor throughout this trying time. As we look to the future, we are excited to share two important updates. First, the faculty in the Department of Family and Consumer Sciences after much deliberation, are considering a name change for the department. Faculty are considering changing the name of the department to the Department of Nutrition and Family Sciences. They feel this more accurately reflects our curriculum, mission, and vision as well as our research and teaching expertise. Second, we are remodeling a room in McAlister Hall into a Research Lab space for students and faculty. This space will support our efforts to focus on research and community involvement with an emphasis on interprofessional education and service learning. This move formalizes the work we are already doing in the department, champions student research, and supports faculty’s efforts for tenure and promotion. As you can see, we are not just surviving, but thriving. Our students are progressing to graduation. Our faculty are teaching, conducting research, and serving their communities. Our alumni are improving the lives of individuals, families, and communities in their work settings. I encourage you all to continue to stay safe and look out for each other. Please enjoy just a brief snapshot of our 2019-2020 academic year.

A message from the Dean... The UCA Interior Design program leading to the Bachelor of Science and Bachelor of Arts in Interior Design was awarded continued full accreditation for a term of six years from the Council for Interior Design Accreditation in 2019. As a part of the accreditation process and with input from faculty, it was determined that this robust degree program would be better aligned within the Department of Art in the newly created College of Arts, Humanities, and Social Sciences (formerly the College of Liberal Arts and the College of Fine Arts & Communication). This is a great opportunity to develop an Art and Design enterprise that will be supported by student and faculty collaborations, resources, and opportunities. In fact, the Department of Art, has formally proposed a name change to the Department of Art and Design. Our best wishes to our colleagues. The change will officially take place on July 1, 2020.

NATIONAL CREDENTIAL Dr. Kathryn Carroll earned her Certified Personal and Family Finance Educator (CPFFE) credential during 2019. This credential is endorsed by the American Association of Family and Consumer Sciences (AAFCS) to respond to the growing emphasis being placed on financial literacy. Dr. Carroll teaches Personal and Family Finance and developed a new course offering this year called Advanced Personal and Family Finance that takes a more in depth look at finances across the lifespan, while incorporating a servicelearning component.

NEW DEGREES 3 total degrees offered in Nutrition Students will now have an option when exploring the Nutrition degrees offered in Family and Consumer Sciences. The Bachelor of Science in Community Nutrition and Bachelor of Science in Nutrition Science were added during the 2019-2020 school year in addition to the Bachelor of Science in Dietetics. 2020 CAREER CHAMPION MONICA LIEBLONG A CAREER CHAMPION is someone who has empowered students to find their purpose, identify and reach their career goals, solidify future plans, or gain employment/prepare for professional life. Mrs. Monica Lieblong, was honored on Tuesday, March 10, by Career Services as the Career Champion for 2020. Mrs. Lieblong was nominated by students for this honor based on her dedication to helping students bridge knowledge and skills from school to workplace. Her students nominated her by sharing this about her: “Mrs. Libelong opened my eyes to possible career opportunities within the community and the difference that a career in Family and Consumer Science can make on an individual level. Because of her, I am now volunteering in the community and making a difference! She taught me how to dress for an interview and how to construct a professional email. She gave me information that I can not only use now but in the future….” Other Family & Consumer Sciences Career Champion nominees included: Ms. Laura Meek was nominated by students for a Career Champion Award. We had a special visitor on campus during this last year. Danielle Dreilinger is the author of the book -in-progress The Secret History of Home Economics. During her time, she visited Dr. Alicia Landry’s Experimental Foods Class. The senior students were showcasing their projects they worked on the entire semester at their food expo. Each semester students are given a challenge such as incorporate local ingredients, change the nutritional value. Attendees come in and try the products while providing a rating based on factors such as taste and aroma. Dreilinger shared, “The food science students weren't actually required to create cute displays, but holy moly does the UCA family and consumer sciences department beat all for Pinterest-ready visuals.”

Kaylee O’Hare, Dietetic Intern worked with the UCA Cup Fit Camp during the summer of 2019. The FCS Department has partnered with Cub Fit to offer many sessions over the years. These camps offer the opportunity to explore a variety of activities including health and wellness on the UCA campus to 4th and 5th grade students each summer.

Service-Learning in Action FACS 4317: Advanced Personal & Family Finance, gives students an opportunity further their financial education once they have taken FACS 3372. The class is also designated as a servicelearning (S-L) course, enabling students to engage with the local community. The course was offered for the first time during Fall 2019, and the 12 students enrolled conducted a 3-hour financial education workshop for the public as their SL project. Students partnered with nonprofit, Arkansas Asset Builders (AAB), to create and present a single-session outreach program. The workshop was designed to increase financial confidence and knowledge among low and moderate income households. A total of 25 community members from Faulkner County attended, and local restaurant The Whole Hog CafĂŠ generously provided meals for the attendees. The workshop also gave students an opportunity to develop their financial outreach skills!

Every semester due to the gracious financial support of Arkansas Geriatric Education Collaboration, Mrs. Lydia Sartain’s Nutrition Service Administration course, demonstrates their skills by preparing a meal for the Seniors at the Faulkner County Senior Center. The students spend the entire semester preparing the menu, as well as designing a theme to provide a special evening. The students always bring their best foot forward in this Service Learning project!

RD A Y Registered Dietitian Nutritionists and future RDNs met with Governor Asa Hutchinson at the Arkansas State Capitol On March 11, 2020 in honor of Registered Dietitian Nutritionist Day. Governor Hutchinson signed a proclamation commemorating the event and spoke to the Arkansas Affiliate of the Academy of Nutrition and Dietetics about the important role dietitians play in the health and well-being of Arkansans.

This was a big year for Rachel Schichtl as she successfully defended her dissertation entitled “Examining the Presence of Empathy in College Students as it Relates to Food Insecurity�. Dr. Schichtl was also inducted as a Fellow of the Academy of Nutrition and Dietetics (FAND) and is recognized for her commitment to the field of nutrition and dietetics, her professional accomplishments and her pursuit of life-long learning.

AAFCS AMERICAN ASSOCIATION OF FAMILY AND CONSUMER SCIENCES The UCA Student Unit has been busy this academic year! The students ran membership drives to increase awareness of the benefits of AAFCS in the early fall and finished the semester by sponsoring 259 stockings for CASA (Court Appointed Special Advocates) for the 4th year in a row. The student unit had a great turn out and packed the stockings very efficiently. During the spring semester, plans were underway to sponsor a diaper drive and coordinate activities with the organization and the Faulkner County Senior Citizen Center but had to be postponed due to COVID-19. The members are anxious to get back together to start serving our community and campus.

On December 3rd, the Department of Family and Consumer Sciences celebrated the American Association of Family & Consumer Sciences’ (AAFCS) FCS Dining In Day through a grant received by Dr. Kathryn Carroll, Monica Lieblong, and Rebekah Luong. FCS Dining In Day is a National effort that encourages individuals and communities to eat healthy meals together on the first Tuesday of December. This year’s theme for Dining In Day was “Dining In with Neighbors”. Over 80 individuals from the local community joined us in the Mirror Room of McAlister Hall for lunch, and later in the day went on a campus and department tour. Those in attendance included local secondary school teachers and their students, department faculty, alumni, retirees and members of our AAFCS state affiliate (ArAFCS). While dining together, each table featured discussion prompts to highlight the FCS profession, our academic programs, and to incorporate the importance of family engagement and communication while meal sharing. Dining together gave us the opportunity to both increase awareness of the FCS profession, and showcase our amazing department and programs! To highlight food insecurity here in Central Arkansas, the UCA-AFCS student unit group also donated 20 leftover meals from the luncheon to the UCA Provost, Dr. Poulter UCA Bear Essentials Food Pantry. A big thank you to the UCA Foundaaddressing attendees tion for sponsoring this event!

Henry Awards Ceremony The Henry Awards Ceremony began at the 7th annual Arkansas Governor's Conference on Tourism in 1981. It recognizes those individuals, businesses and organizations that have distinguished themselves during the past year. Tourism is the second income producer in Arkansas, right below agriculture. Of the tourism dollars, 25% are derived from tourists visiting historic properties. Levon Helm's Boyhood Home won the "Bootstrap Award". This award is presented to an individual, organization or community that has achieved significant success within the tourism industry "on a shoestring" budget. The project began with $100 then grew with donations of time, talent and treasure. (Our students in the Dr. Ann Bryan’s Advanced Interior Design Studio class of Fall 2017 helped provide all three.) Since the grand opening of the home in the fall of 2019, more than 500 people have visited from all over the U.S., Canada and England. It was a great night for the Arkansas Delta! Dietetic Interns Take Learning Outside! Good food starts on the farm! UCA dietetic interns went on an exclusive dairy and beef farm tour experience! Big thank you to the farmers, their families, Midwest Dairy Council, and Arkansas Beef Council for a wonderful day educating our interns! Jordan Bellew and Kaylee O’Hare, Dietetic Interns helped with the garden at UACCM during their rotation in summer 2019. They also researched food insecurity in Arkansas and among college students and shared that information in an interview for the campus blog. To view the full article, click here.

The FCS Big Picture Award was initiated by Dr. Nina Roofe, Department Chair. The purpose of this traveling award is to recognize individuals (faculty, staff, or students) who see the big picture and contributions to student success. The symbol of this award is an airplane as it helps us remember to keep the 30,000 foot view in mind as individuals teach, advise, research, serve and administer programs. Recipients of the award are asked to take pictures with the award and then recognize the next recipient with purposeful recognition. The first recipient of the award was Mrs. Rebekah Luong. When presenting the award to Rebekah, Dr. Roofe shared that her big picture of assisting with schedule creation, advising, and overall maintain students in mind was the reason she selected her. Rebekah then passed the award to Mrs. Tiffanie Snyder, Nutrition and FCS Adjunct Faculty. When presenting Tiffanie the award, Rebekah stated “You always keep the big picture in mind because you’re never selfish with your knowledge. You share that with students, community members, and even now on social media with your Snyder Insider.” We look forward to many years of purposeful recognition while keeping the big picture in mind!

Mrs. Monica Lieblong and Mrs. Rebekah Luong were invited to speak on Dressing for Success by UCA Career Services. Students in attendance learned best practices for preparing for the interview, what to wear, and what to do after they obtain the position. This is the 32 annual event for all University students to attend. Mrs. Lieblong and Mrs. Luong also created a display case in McAlister to fit the theme for the event to invite students and share information during the spring semester.

Each year, Family, Career, and Community Leaders of America (FCCLA) joins the Association for Career and Technical Education (ACTE) and the entire CTE community to celebrate CTE Month! During the month of February, ACTE encourages everyone to explore and learn the amazing accomplishments, achievements and contributions of career and technical education (CTE) professionals, students and alumni with the theme "Opportunities for Career Success." - FCCLAinc.org The UCA FCS Department hosted and participated in several events during the 2020 FCCLA Week.

FCS Educator Day During FCCLA week, there is a day dedicated to the amazing professional educators of our CTE programs. This year, the Arkansas Affiliate of AAFCS honored our FCS Educators by recognizing them with a little chocolate!
