CELEBRATE CELEBRATING ALL THINGS FCS In the 2018-2019 school year, celebrations were had by students, faculty, staff, organizations, and alumni. A few of the celebrations are highlighted in this newsletter for the Family and Consumer Sciences (FACS) department at the University of Central Arkansas (UCA) during the 2018-2019 year. If you are an alumni of UCA and have a story to celebrate, don’t be shy to share it with us. We’d love to celebrate your accomplishments! As you look through this newsletter, consider the many moments that are being celebrated. The moments include just a small snapshot of research, collaboration, national conference presentations, scholarship, projects, and growth for the FACS Department. Tia Curtis, a gr aduate of the UCA Interior Design Program was honored in the September-October Issue of Aviation for Women Magazine. Currently, Tia is a Principle Designer for Gulfstream. She was honored at the 2017 Alumni and Student Recognition Luncheon as the Young Achiever. Tia has a lot to celebrate in her career! You can view the article at this link on pages 25-29.

MONEY MAGIC ON THE MOVE Dr. Mary Ann Campbell kicked off the Facing the FACS: A Speaker Series during the Fall 2018 term. The speaker series is devoted to providing financial literacy to all UCA students. As faculty said, “we know that our students get the information, but what about the rest of the campus...let’s provide something that we offer to everyDr. Kathryn Carroll, Rebekah one!” The speaker series will continue Luong, Dr. Campbell, Monica to share financial education on imLieblong portant topics for young students. Below is a recap from Dr. Campbell about her recent invitation to Las Vegas with David Copperfield. “During the 80s and 90s, I directed David Copperfield's Project Magic in Arkansas. We taught therapy magic to patients at hospitals, working with physical and occupational therapists. We also taught children with various medical disabilities in the summer Med Camps at Aldersgate in Little Rock. Elson Bihm used it as a psychologist with his students and peers.” Dr. Campbell said, “I'm excited and grateful to be called on to participate and look forward to the group discussion to develop a plan to assist people with disabilities to live more independently.” David Copperfield invited some of the original leaders to present in Las Vegas at his select conference at the MGM Grand Hotel. This was an invitation only event with a total of 15 magicians representing seven countries (Austria, Belgium, Mexico, Argentina, Croatia, Australia, and USA) par- Dr. Mary Ann Campbell with Elson Bihm ticipating. The focus was on the successes of the programs and how the David Copperfield Project Magic activities might provide ways and means for people with disabilities to live more independently in a more inclusive world. The Project Magic Conference began on Monday, April 15th with meet and greet dinner at Wolfgang Puck's. David invited the magicians to his guided tour of his International Museum and Library of the Conjuring Arts later that evening. On Tuesday, April 16th, the group made their presentations in the David Copperfield Theatre. They were allotted 15 minutes each. LEADING THE WAY IN AAFCS Dr. Kathryn Carroll, CFCS was selected to be a participant in the 2019 American Association of Family and Consumers Sciences (AAFCS) Leadership Academy. She was one of only 13 selected nationwide. This is a multiyear program that was held a the National AAFCS Conference in St. Louis, MO in June 2019.

Ms. Danielle Barron, Clinical Instructor of Interior Design recently passed the NCIDQ (National Council for Interior Design Qualification) exam and graduated from John Brown University with an MFA in Collaborative Design. NCIDQ Certification is the industry's recognized indicator of proficiency in interior design principles and a designer's commitment to the profession. Professional interior designers who possess the NCIDQ Certification have distinguished themselves by demonstrating a specific set of core competencies, supported by verified work experience and a college degree. They have proven their expertise in understanding and applying current codes established to protect public health, safety and welfare. They are passionate about their profession and dedicated to its recognition and integrity. Two big accomplishments to celebrate! 4

STATE CONFERENCE ARAFCS HOSTED AT UCA Monica Lieblong, CFCS and adjunct instr uctor ser ved as the Arkansas Affiliate President-Elect during the 2018-2019 year. During her term as President-Elect, she was responsible for planning and executing the State Affiliate Conference. Monica and her team of dedicated FCS Professionals have much to celebrate! The event was held on the UCA Campus in Brewer-Hegeman on Thursday, April 4th and Friday, April 5th. During the two-day conference, over 50 Arkansas FCS Professionals attended workshops highlighting education, advocacy, and community partnerships. On Thursday, attendees had the opportunity to participate in a pre-conference workshop hosted by NextGen Personal Finance. Educators raved about the training they received at this event. Carrying on the Facing the FACS: A Speaker Series, Eric King from Centennial Bank spoke in the speaker series in conjunction with the state conference. He shared his passion for financial literacy relating to budgeting, credit scores, and many other practical advice. Conference attendees had an opportunity to network that evening in a professionals reception hosted by Centennial Bank. Overall the conference was an outstanding success with networking, community connections, and partnerships that will help professionals, students, and community members around the state of Arkansas. WELLNESS AMBASSADORS

Alyssa Frisby, Nutr ition m ajor and Ashley Haney, FACS Education m ajor , were two of 15 students selected to serve as wellness ambassadors during the 20182019 school year. These two students were responsible for serving as a liaison between the Office of Student Wellness & Development and other students to promote health and well-being by designing, promoting, and participating in heath events and campaigns on campus. 5


The UCA Career Services Merit Fellows is based on an application to participate during the students graduating term. Students are expected to complete career development, attend workshops, and make meaningful connections with prospective employers. Students who complete the Merit Fellow show a dedication to being career ready for graduation. EMERGING DIETETIC LEADER Blake Metcalf, Nutr ition gr aduate w as aw ar ded the “Emerging Dietetic Leader for 2019” by the Arkansas Academy of Nutrition and Dietetics. Blake also recently had a paper published in the academic journal, Nutrition Today. RESEARCH AT ARAFCS CONFERENCE

Ashley Haney, a ju nior in FACS Education, recently presented a research poster on financial knowledge among undergraduate students at the ArAFCS State Conference. Ashley worked with classmates Jacklyn Quint and Tianna Wilson, as well as Dr. Kathryn Carroll, on this research project.

ASID STUDENT COMPETITION AWARDS The UCA IDSN program was well represented in the Student Competition Awards for ASID in Jackson, Mississippi. The students received 12 awards in categories such as Computer– Rendering, Residential, Commercial, Healthcare, Retail, Hospitality and Portfolio.

IDEC CONFERENCE Jennifer Whitehead, MS, Inter ior Design, ser ved as a Co -Chair for the Southwest Regional IDEC Conference (Interior Design Educators Council) in Little Rock, AR, October 25-26, 2018. The conference theme was Design Thinking: Illuminate, Collaborate, Evaluate, Innovate.

Maria Posada, MS, Interior Design, also assisted with the Southwest Regional IDEC Conference (Interior Design Educators Council) to secure sponsors for the event.

LEADERSHIP AND SERVICE

Monica Lieblong and Dr. Kathryn Carroll w er e selected to participate in the 2019 Service Learning Faculty Fellows program.

Dr. Kathryn Carroll w as appointed to the Board of Directors for Arkansas Asset Builders. This not-for-profit group will allow her to incorporate service-learning in the new Advanced Personal Finance course.

Taken from the Faculty Fellows site, “UCA’s Service-Learning Faculty Fellows Program is a campus-wide initiative that includes commitments from the President’s and Provost’s offices, the Center for Teaching Excellence, the Division of Outreach and Community Engagement, and the academic colleges. The Faculty Fellows Program provides faculty an in-depth professional development opportunity to learn how to successfully integrate service into their curricula and ultimately serve as advocates for service-learning at UCA.”

Dr. Nina Roofe w as elected to ser ve on the board of the Accreditation Council for Education in Nutrition and Dietetics of the Academy of Nutrition and Dietetics. This position will run from June 1, 2019 until May 31, 2023. The Accreditation Council for Education in Nutrition and Dietetics is the accrediting agency for education programs preparing students for careers as registered dietitian nutritionists or nutrition and dietetics technicians, registered.

DR. ALICIA LANDRY APPOINTED Dr. Alicia Landry w as invited to sit on a working group composed of 10 selected experts in the field from across the country for the School Nutrition Association. The group convened in Washington, D.C. to write a workforce development grant focused on training, recruiting, and retaining school nutrition professionals.


STUDENTS JUDGE RECIPE CONTEST

About 10 students from Mrs. Khandra Faulkner’s Meal Managem ent and Lifecycle Nu tr itio n classes volunteered to help judge a Faulkner County Farm Bureau/Cooperative Extension-4-H Dairy Recipe Contest. Participants ages 5-18 submitted homemade party dishes or main dishes that contained dairy ingredients.

FACS Educational Methods students prepared projects and lessons addressing timely community wellness issues.

to Dietetic Interns have a lotcelebrate! Wellness On April 2nd, the UCA Dietetic Interns and Student Dietetic Association members hosted booths at the UCA Wellness Fair. The interns covered the importance of a balanced diet using the MyPlate model as well as discussing sodium and fat content of various foods. The SDA students held a sampling of herb flavored lemonades.

Cooking Demonstrations UCA’s first BeWell Cooking Demo was hosted on January 31st. Members of the 2018-2019 Dietetic Intern class demonstrated ways to incorporate whole grains into a healthy diet. They prepared vegetable fried rice and offered samples of various whole grain snacks. Additional demo topics they covered included avocado night, taco night, salad night, and using herbs and spices.

Science of Cheese The Dietetic Interns hosted an event to educate undergraduate students preparing for a study abroad trip to Italy! During the event, students were able to make their own mozzarella cheese and learn the science of how wine, olive oil, and cheese are made.

The SR Education Group, an education research publisher founded in 2004 ranked the Master of Science in Nutrition at the University of Central Arkansas #1 in the 2019 Most Affordable Online Colleges. These rankings represent online schools across the nation that are making an effort to provide economical options for students. The SR Education Group manually researched the tuition of every college offering fully online degrees to determine and rank the most affordable choices.

As shared in a press release by Leia Smith, media contact for Hope and Justice. The University of Central Arkansas American Association of Family and Consumer Sciences (AAFCS) raised funding and items to supply Christmas stockings to the children served at the Children’s Advocacy Alliance. “I am so grateful for the students and staff of the FACS department at UCA for making this entire project possible.” said Karli Potratz, Children’s Advocacy Alliance Forensic Interviewer. The AAFCS Christmas stocking project was organized by Rebekah Luong and Shylar Crofton. The group gathered more than 200 stockings for the abused and neglected children of Central Arkansas. Watching a room full of students and dedicated staff fill over 200 stockings with gifts, toys and necessities was an incredibly moving experience, ” said Potratz. “The goal of the University of Central Arkansas Family and Consumer Science department is to help people achieve a certain quality of life. We want our students to be good citizens; our community is so important to our work as family consumer science professionals,” said Luong. “It speaks volumes about what can be accomplished when members of our community unite in order to bring light to the lives of the children we serve. Every child deserves to experience being cared for and thought of during the Holidays, and if a stuffed stocking can bring joy to just one child, I consider the project a huge success,” said Potratz.

UCA DINES IN! Dine In Day is held each December to promote dining in with family and friends. This year the highlight was to dine in tech free! The student organization encouraged others to join them by using the #dineinday social media tag. More than 500 Americans participated in FCS Day by choosing to “Dine-in” on December 3rd, which is founder Ellen Richard’s birthday. The AAFCS Student Organization shared on social media, created flyers, and shared with the food pantry about the importance of dining in with friends and family, tech free.

AMERICAN ASSOCIATION OF FAMILY & CONSUMER SCIENCES

AAFCS

The UCA Student Unit of AAFCS celebrated a huge milestone this year of being a registered student organization on campus for 100 years! To celebrate, AAFCS provided refreshments, shared the proclamation from the National AAFCS office and historical documents from the organization on FCS Educator Day during FCCLA Week. The organization was featured on social media, in the UCA newspaper and honored by the Arkansas Affiliate of AAFCS.

Phi Upsilon Omicron is an h onor society in the integrated field of family and consumer sciences. It offers an environment empowering lifelong learning, leadership building, and ethical and scholastic excellence. Recently the following students were selected for awards. Selena Garcia was awarded the Diamond Anniversary Fellowship in the amount of $1200.  Holly Cummings was awarded the Forthun/Rust Scholarship in the amount of $1750.  Avanlea Furr was awarded the Sarah Pearce Sanders Scholarship in the amount of $1550.  Nikki Lockard was awarded the Margaret Jerome Sampson Scholarship from Phi Upsilon Omicron in the amount of $5750.00. This is a major accomplishment and something to be celebrated! 

Dining With Style On Thursday March 28th, the FACS Department and UCA Career Services hosted a "Dining with Style" educational program. Faculty member, Khandra Faulkner led the w o r ksho p with the help of three nutrition students, Megan Hale, Jordan Setser, and Anna Sykes. The program discussed proper business meal etiquette. Many of the program attendees will be graduating soon and will be able to use the skills when meeting with prospective employers.

The FACS Department took a little time to celebrate at the 32nd Annual Alumni and Student Recognition Luncheon in April.

CIDA SITE VISIT During the 18-19 school year, the Interior Design program worked tirelessly to prepare and complete the Council for Interior Design Accreditation (CIDA) process and visit. The team provided a “Recommended for Accreditation” result upon leaving. You can bet the Interior Design program has a reason to celebrate this year!

The Historic Preservation class received a special invitation for a private historic tour of the Governor's Mansion. A Special Thank You to Laurie Black and the Governor and First Lady of Arkansas!

Dr. Bryan’s History of Architecture II students went on a walking tour of downtown Little Rock Historic properties for the final field trip of the semester. The lovely and historic Mount Holly Cemetery is the backdrop.

Arkansas was well-represented at the National American Association of Family and Consumer Sciences Conference in June 2019. Faculty were presenters, leadership participants, and students were serving in National Chair positions. The conference was hosted in St. Louis, MO. Many ideas and exciting skills were learned and will help the Department celebrate our story in next year’s school year.

Dr. Ann Bryan has led Interior Design students to Europe for many study abroad sessions. This summer it was a bit different as Nutrition, Family & Consumer Sciences, and Economics joined her. The course offerings for students were varied depending on their interest and needs. Courses students could take included:     
