story by MELISSA MCGAVOCK

Ballet is an art form and often tells a story through emotive and interpretative dance. Just like other forms of art such as painting and sculpture, architecture and fashion, ballet has evolved since its beginnings. As society changes, and likes and dislikes adapt, so does fine art.
What we know as Ballet today has its origins in 15th and 16th centuries’ Italian Courts. In this context, the “Court,” refers to a group of wealthy people, noblemen, and merchants, that were an extension of the King’s social circle. During the reign of political monarchy, western societies each had their own

version. Furthermore, marriages between Courts would unite countries, tying them together politically. Those Royals would bring their own country’s customs and traditions to their new kingdom’s Court. For Ballet, that person was Catherine de’ Medici of Italy, who brought the art of dance to the French Court, specifically Versailles. Known for his lavish lifestyle and love for all things elite, King Louis XIV adopted “ballet de cour,” and instated the The Académie Royale de Danse founded in 1661. The five standard positions of Ballet, as we know them, were established at this time during the 17th century.
Since then, ballet has played an important role not only for entertainment, but for study and discipline. Its popularity spread quickly and the public’s adoration of it adapts with the spirit of the times. Eventually, ballet moved outside the King’s Court and into public theaters making it more available to the audiences everywhere.
Ballet was one of the firstmost art forms that transitioned to a female dominance. Ballerinas were (and still are) idolized by students, supporters, and spectators. By the 19th century, companies of ballerinas traveled Europe and so came the re-creation of some of the most popular ballet performances ever choreographed, Swan Lake and the Nutcracker. Professional ballerinas were somewhat seen as celebrities, household names even; many rubbing elbows with famous diplomats and artists like Picasso and Matisse.
Ballet has continued to evolve over the last century, focusing at times less on narrative and more on emotion and athleticism. As it transforms and expands, so do its ballerinas. It will be interesting to see where Ballet takes us in the 21st century and what it means for young ballerinas, even our children that gather each week, right here at Infinity Dance Center in Godley, Texas with Stephanie Fairbanks as their coach and mentor.
Stephanie started dancing when she was three years old. She was the first to take dance classes in the family and she loved it from the beginning. She began
with ballet and tap and by high school she was the Captain of the dance team at Midlothian High School. As a child, she had a lot of fun in dance class. As she got older, dance began to serve as a healthy stress relief for Stephanie. In addition to the dance team, she was a student of DanceWorks in Waxahachie. During college, Stephanie joined the Dance Arts Society at Texas A&M. There, she and a team of dancers took classes together, choreographed together and performed Fall and Spring shows for their peers.
She explains, “...Ballet is training for your body and your mind.” Through training, you gain self confidence and discipline. She adds, “Even my little ones (in class), the ones that barely talk or look up, by the end of the year, they’re holding their head high, they’re making eye contact, and they’re making friends. To me that’s the most important part of dance, to build those life skills and to build confidence.” Stephanie wants to build a community of
11 | small talk feature
dancers, who are able to give back to Godley, through performances or service projects. “The goal is to educate a dancer and they come out as a developed leader with a solid understanding of teamwork, they see the fruits of hard work, and my hope is that they are kind and they are confident.”
Let’s talk about confidence. It’s no secret that as teenagers get older, they begin to worry more about body image. And the idea of “perfection,” becomes a point of contention. This is also true, historically, for professional dancers and for ballerinas. As Ballet and dance practices continue to adapt, there has been a major mind shift in the world of dance, that is toward progress. Stephanie says, “...you’re looking for progress, not perfection. You’ll always find something to critique, to improve, instead aim for the best version of yourself.”
Instructors all over the country advocate for healthy eating practices and body image. Stephanie explains,
“If you’re performing a piece and telling a story, it doesn’t really matter how high your leg is in an extension.”
Each year, Stephanie attends the TATD (Texas Association Teachers of Dancing) “recognized as one of the nation’s leading dance teacher organizations.” This organization offers new methods in teaching. At the top is how to balance classical training with poise. This is relevant and Stephanie adds, “they’re working hard to pour out dancers that have a healthy body image.”
Ballet and dance continue to take new forms as trends change and society moves forward. For example, dancers of color have made the scene and young choreographers are always pushing the limits, even the definition of this time honored art form. Stephanie talked about a newly recognized dance style. It’s called “hiplet” and combines the classical positions of ballet to the sounds of hip hop. Hiplet started in Chicago with Artistic Director Homer
Bryant and evolved from rap ballet in the 1990s. It gained popularity on the world stage with 1000s of views on Instagram. Definitely check it out if you get a chance, it’s pretty amazing.
The future of dance and ballet is bright and interesting. It poses a place for self expression, and maybe more importantly, self affirmation. It encourages healthy self esteem and confidence. Successful people are often admired for these types of qualities. How exciting that there’s a place for dance classes in our small town with Stephanie Fairbanks at center stage.
Resources:
Stephanie offered some valuable resources for those that are interested in learning more. These include Winners All Dancewear in Fort Worth, a store for dancers’ clothing, shoes and gear. There’s also The Dance Shop of Fort Worth with barres and mirrors to try out your gear before buying.
For professional companies, there’s The Texas Ballet Theater Fort Worth, an internationally recognized organization for choreographers and pre-professional dancers that present world-class ballet. It is the resident company for Bass Performance Hall in Fort Worth and the Winspear Opera House on the AT&T Performing Arts Center Campus in Dallas.
To stay up to date on all things dance, check out Dance Spirit Magazine. This national publication is available online and in print and is a platform where teachers, choreographers, and dancers collaborate and inspire one another.
Last she suggested the Dance Anatomy & Nutrition Workshop Presented by Erin Horne (thehealthydancerworkshop.com and @danceanatomynutritionworkshop on Instagram). This group educates dancers on the care and use of their bodies.

Godley Mobile Animal Clinic
with Dr. Mason Irvin
story and photos BY ERIN FELTMAN
Growing up, Mason’s family raised dairy cows and was active in the Future Farmers of America (FFA) from third grade on. He was the Godley school FFA President. He always knew wanted to be a veterinarian. He worked hard in school and extracurriculars for scholarships that took him Texas A&M’s School of Veterinary Medicine & Biomedical Sciences.
Now, Mason is back and is a Doctor of Veterinary Medicine. He seems very happy to be working in his home town. He is even the on-call Vet for the Godley High School Ag Barn. “I still feel connected locally and I’m invested in the community” Mason says. “Since Godley has grown I felt called to help out with the new volume. During ag season I’m there every week. Mr. Bennet was my Ag teacher and FFA advisor, he was a big part of my Ag life.”
Mason has taken a new approach to veterinary medicine by retrofitting a retired ambulance (he lovingly nicknamed the “Vet-bulance”) to provide an “in-home” service to the residents of Godley. There’s a lot of benefits. The vet-bulance is set up
for medical treatment and is a perfect solution to take veterinarian services mobile. Mason explains, “Coming to your home seems to make the animals more comfortable... which ensures a low stress situation. I also get introduced to the pets and family. I’m able to understand the environment and spend more time with the animal. ” He continued to explain, “...And I usually examine all of the animals in the home, not just the one with the appointment.”
We asked Mason, “What makes you happiest as a vet?” He answered “When clients follow my advice. For example, obesity is a really big problem with a lot of animals. I treated a potbelly pig who was extremely obese. I recommended to put him on a standard diet and reduce fat and starch intake. When I went back for his follow up he was at a healthy weight – that is very satisfying.”
Mason holds his State Veterinarian License, a Category 2 USDA Accreditation (for travel animals pets and livestock) and a preventative mindset coupled with using preventative medicine practices. With these credentials he is equipped to provide care for most animals that live in Godley, Texas. His

Dr. Mason Irvin’s Best Advice for Animal Owners in Godley, Texas
1 2 3 4
Talk to your veterinarian. See them once a year. Vets are trained to identify things that owners will overlook. Prevention alleviates a lot of the costs associated with veterinary bills.
Keep up with vaccinations. Regular vaccines are typically annual, some more and less frequent. These are for diseases that are common, but preventable.
Mind your parasite control. In this area of Texas we have a lot of rain for mosquitos. Heartworms are a big problem, however, completely preventable with medication.
Nutrition is key. Feeding an appropriate diet for the animal – typically large manufacturers have a lot of resources on proper nutrition. Avoid fad diets. Always talk to your vet about what you should be feeding your animal.

Wall of Honor
Godley High School
Godley Superintendent Rich Dear has an ongoing project honoring past and present veterans just inside the front doors of Godley High School.
Teaching the students to honor Veterans is a cause Dr. Dear is passionate about, he explains, “It’s a great message for our kids... it’s the first thing they see when they walk into school every day.” The Wall of Honor started with a Veteran who graduated from Godley, Class of 1905. The project has continued to grow. “I want our kids to know their history,” Dr. Dear continues, “let’s honor these men and women and let this be part of what we need to teach our kids… to be thankful and grateful because freedom isn’t free.”

Kneaded Roots
STORY AND PHOTOS BY ERIN FELTMAN
Nestled on a few acres just south of downtown Godley, Brandon and Jennifer King Cantu’s homestead is the birthplace of Kneaded Roots. Pulling through the gate you are greeted by three mini donkeys, a field of longhorn and beef cattle, chickens pecking the ground and a vast, diverse organic garden.
Walking through the door you are immediately greeted by the mouth watering aromas of fresh home baked goods. Instantly it takes you back to your
grandmother’s kitchen around the holidays. The smell of cinnamon, pumpkin, fresh bread and muffins greet you the moment you step in. Jennifer wouldn’t have it any other way!
Forming her home baked goods company, Kneaded Roots, on the foundation of bonding in the kitchen over good food, Jennifer has managed to create magnificent culinary creations that hook you from your first taste (or smell).
24 | small talk community
Each part of the name itself is a double entendre, “kneaded” a small play on words holds double meaning for “kneading the dough” and “needing your family”. And “Roots” holds a dual meaning from the roots of her organic ingredients plucked right off her homestead from their roots to the roots her grandmother, Wanda, instilled in her as a child.
Sprinkling inspiration from Wanda in more than just her recipes, Jennifer incorporated Wanda’s style in even her branding. “Kneaded roots is based around her – the colors of my website reflect the color of the teacups on her shelves and the avocado green stove in her kitchen” Jennifer recalls fondly “… my cinnamon rolls are “Wanda’s Cinnamon Rolls” and my boules are called ‘King Boules’ because of our King last name.” Boule is a French word often used by bakers to describe a round-shaped bread.
While sitting in the kitchen with a cup of coffee, misty eyed Jennifer recalls fondly when it clicked for her “…baking done in the middle of the night is where I feel her presence. First, it started with cinnamon rolls, I wanted my son to have something special and the only time I could bake was the middle of the night after everyone went to bed,” Jennifer continues, “and that’s where I felt really connected to Grandma, it’s like she was there with me and said this is what you’re meant to do – it really all come full circle.”
Growing up on a farm in Colorado, homesteading is a lifestyle that Jennifer encompasses with her whole being. A decorated ICU & NICU nurse for over twelve years she wanted to combine her nursing knowledge and the healing powers of food together. “I’m really all about holistic, non toxic, anti-big pharma healing” states Jennifer, “… I’m very big on traditional values in a modern way – traditional as a stay at home mom, but modern in that… I love being a nurse. I tell everyone I have traditional values and a pioneer soul.”
Finding a way to combine these things has been her goal from the start. Sourcing the best organic ingredients, mostly all grown on her homestead, is something that is crucial in her baking. Like

incorporating ancient grains shipped from Central Milling out of Utah, she uses a grain that’s never been modified in her sourdough.
On the homestead she grows her own vegetables and herbs for baking and food along with an entire medicinal garden. Giving us a helpful tip by pointing to her cayenne pepper plant that sits on the sill above her kitchen sink, “...it’s an anti-coagulant – that’s why I have it, if my kid gets a cut you can apply it to help stop the bleeding.” We responded “Doesn’t that burn?” With a soft chuckle Jennifer replied, “that’s only if you eat it, it’s only spicy to your taste buds.” Who knew?
Proudly, she informed us that she can successfully feed a family of six just from her garden. She locally sources any ingredient the homestead doesn’t produce, but the rest is from hunting, gathering, or growing. The homestead produces their eggs, fresh herbs and vegetables, an organic medicinal garden and cattle. They hunt deer when in season and they fish Port Aransas three times a year to fill their freezers. Between the beef steers, chickens, canning and preserving food, and trying to use everything they have they are almost completely self sufficient. Jennifer added next, “I’m currently begging my husband for a Jersey cow so I can start milking my own.”

Jennifer offers a variety of ready-to-eat sourdough products on her menu. Freezer pancakes are one of the easiest! Similar to store-bought frozen waffles, you just pop them in the toaster and you’re ready to eat! Her menu includes a few variations of sourdough boules like traditional king boule and pumpkin boule. Also included are sourdough discard creations like everyday blueberry muffins, oatmeal chocolate chip cookies, chocolate cake, Wanda’s cinnamon rolls and sandwich bread.
You cannot go wrong choosing anything off of Jennifer’s menu. Every item is carefully made from scratch and incredibly delicious. Check out kneadedroots.com.

The Texas Tradition of The Mum
Homecoming Mums, an enormous corsage tradition, are popular in Texas and not really anywhere else. Native Texans are so accustomed to the pageantry that surrounds Homecoming, they don’t even realize that this isn’t a tradition the rest of the country has adopted.
“Mum,” short for the flower chrysanthemum, is the flower of choice in Texas as its peak is during the Fall season and most schools’ Homecomings are in October. Homecoming itself is a tradition where graduates come home for a weekend to their high school. The entire occasion is centered around the Friday night football game. With alumni welcomed back for this weekend, the “Homecoming Game” is a very big deal. It’s Friday Night Lights in Texas and everyone is watching.
Friday night’s game is usually followed by a Saturday night Homecoming dance for the high school students. However, the Mum is traditionally worn to the game, not to the dance. As a corsage is usually worn to a dance, it’s easy for non-natives to confuse this part.
It depends on who you ask, but it seems that the Mum
corsage tradition started sometime in the 1950s. A boy would ask a girl to the football game and dance by gifting her with a chrysanthemum. If she said yes, the girl would wear the Mum to the Friday night football game.
Over the years, the Mum has evolved from a simple corsage to a giant display of ribbons and trinkets, most several feet long and secured with a neck strap. These days, it’s popular to take it one step further. If a boy really likes the girl, he takes the time to find out what she likes. For example, if she runs track and plays the trumpet, her mum might be decked out in track and field and trumpet flair. In return, the girl or her parents will put together a garter for the boy to wear on his arm that complements the girl’s Mum.
Mums are popular all over the state of Texas, but it seems like they’re a bigger deal in small towns than big cities. In small town Texas, there typically isn’t much else going on Friday night. Everyone is at the football game. Maybe that’s why the fanfare is on a larger scale, as pretty much the whole town gets involved. In addition to this, it’s not uncommon to see students as young as kindergarten wearing Mums during Homecoming week.
33 | small talk tradition
Godley is no stranger to this time-honored tradition and we’re lucky enough to have a couple local Mum experts. Jenny Flores, owner of J Flo’s is known for her events and custom gift baskets. She’s also a very talented Mum maker. Victoria Hernandez, originally from Monahans in West Texas, is also an experienced artisan. Following in the footsteps of her Aunt, who handmade custom Mums in West Texas, Victoria loves all things arts and crafts. Ladies like this do it because they love it. They do it because it brings them joy to create joy for others.
If the idea of the Texas Mum tradition overwhelms you, know that we have a lot of resources here. Each year, mothers in our community come together and help each other out. You can usually find Facebook posts on local pages about Mums, how to make them
and where to find them, leading up to Homecoming Week. Some start as early as August. Maybe more than any other time of year, it’s during Homecoming that the whole town comes together. There is so much anticipation and excitement surrounding it and, of course, a whole lot of ribbon.

In a nutshell...
1. The term “Mum” is short for the chrysanthemum flower.
2. Traditionally, boys gift the girl they ask to Homecoming with a “Mum.” She makes a matching arm garter for him.
3. Today’s Mums are often personalized with hobbies, milestones, and favorite things.
4. Mums are usually worn to the Friday night football game.
5. Expect to spend upwards of $250 for a custom Mum.

The Godley Beautification Council is a newly registered 501(c)3 in Godley, Texas. The mission is to promote community pride and involvement through beautification projects funded by annual fundraising events and cooperative partnerships with individual volunteers, schools, civic organizations, businesses and City Administration.
“For our ever-changing and growing community, it is our hope that the efforts of the Council help to fund public yearly beautification projects. These could be improvements such as lighting, public benches, and community clean-ups. Projects could also include efforts such as tree planting down Main Street or a community mural.”
The goal is to work together to preserve, protect, and celebrate our history and to also bring us together as a community. Look forward to the next event, “Family Earth Day at the Park,” coming up Spring 2023.
