Chicken

Paillard: The Secret to Quick, Versatile Meals

Chicken paillard is a simple technique where you take a chicken breast and flatten it to an even, thin layer. This helps the chicken cook much faster and ensures it stays tender and juicy.

If you have a large chicken breast, start by slicing it horizontally almost all the way through, then open it like a book before placing it between two sheets of parchment or wax paper. Use a meat mallet -- or even a heavy skillet -- to gently pound the chicken to an even thickness of about 1/2 inch. It’s that simple!

Why is this technique a game-changer? Chicken breasts are affordable, especially when bought in bulk and on sale. When you flatten them into paillards, you can freeze them flat in individual bags (with or without marinade) -- they stack so neatly to save freezer space. Bonus: As they defrost, they can marinate, so your chicken is seasoned and ready to cook in no time. Perfect for serving one or a crowd, as you can pull just the right number of servings. These thin cutlets cook quickly by several methods -- saute, broil, grill or bake -- and can be coated in a seasoned crumb for extra flavor and crunch. That’s why mastering this technique is a must in any kitchen.

PARMESAN CHICKEN PAILLARDS WITH BURST CHERRY TOMATO SAUCE

Yield: 4 servings

Total Time: 50 minutes

• 4 (6 to 8 ounce) boneless skinless chicken breast halves

• 1/2 teaspoon kosher salt, divided

• 1/2 teaspoon ground black pepper, divided

• 1/2 cup Parmesan cheese, grated (the green container stuff)

• 2 tablespoons all-purpose flour

• 2-3 tablespoons olive oil, divided

• 1/2 cup thinly sliced shallot or onion

• 3 cloves garlic, thinly sliced

• 1/2 cup chicken broth

• 1 tablespoon sherry wine or balsamic vinegar

• 2 cups cherry tomatoes

• 1 tablespoon fresh basil or tarragon or 1/2 teaspoon dried herbs

Serving suggestion: thin spaghetti or rice

Place each chicken breast between two sheets of parchment, wax paper or plastic wrap. Pound gently with a meat mallet or a heavy skillet until about 1/2 inch thick. Sprinkle with salt and pepper.

In a shallow dish, combine Parmesan cheese and flour. Pat chicken dry, rub lightly with olive oil, then press Parmesan onto the surface before sauteing.

To Cook the Chicken: Heat 1 tablespoon of olive oil in a large nonstick skillet over medium heat. Add two chicken breasts, and cook about 4 minutes per side, or until golden and cooked through. Remove to keep warm. (If cooking in batches, keep finished chicken in a 175 F oven on a sheet pan.) Repeat with remaining chicken, adding more oil as needed. Discard any leftover cheese bits from the skillet before making the pan sauce to prevent burning and bitterness.

To Make the Pan Sauce: Add the remaining oil to the skillet. Saute the onion or shallot until soft, for about 2 minutes, then stir in the garlic and cook just until fragrant. Pour in the chicken broth and sherry wine vinegar and cook for 1 minute. This sauce is perfect for abundant summer cherry tomatoes. Add the cherry tomatoes, remaining salt and pepper. Cook until the tomatoes soften and release their juices. Add about half the basil or tarragon and stir.

To serve, place the chicken paillards on a bed of pasta or rice to catch all that glorious tomato sauce. Spoon the sauce over the top, then finish with a sprinkle of the reserved basil or tarragon. Add a crisp green salad and whole wheat rolls and call it good. Bon appetite!

With fall classes underway at Polk State College, it won’t be long before campus is host to one of the events of the season.

Polk State has scheduled its annual FallFest for Oct. 11 from 9 a.m. to 3 p.m. on the Winter Haven Campus, 999 Avenue H NE. The event is free and open to the public.

Founded in 1987, FallFest features more than 100 booths from local vendors, businesses and College clubs. Portions of sales from craft booths will benefit the Polk State

College Foundation, which provides approximately $1.2 million in scholarships for Polk State students each year.

“For almost four decades, FallFest has been one of those events that people look forward to every year,” said Nancy Lozell, Program Director for The Arts at Polk State. “No matter what your age or interests, there is something for everyone at FallFest.”

The event will also feature family-friendly activities such as games, haunted houses, shows and presentations from local law enforcement and EMS. Polk State College

clubs and athletics programs will participate in the event to raise money for their organizations by hosting different activities and food sales.

The Chain O’ Lakes Big Band and Polk State Jazz Ensemble headline this year’s entertainment. The event will also feature performances from local student dance teams, choirs and musicians.

For $60, vendors will be assigned a booth on campus. Limited indoor vending spots are available for $70. For business vendors looking to promote their business, the cost is $100.

“FallFest is a great way to promote your business, establish your brand and a great place to shop,” Lozell added. “Most importantly, it’s a great way to support our students.”

For the third year in a row, the event will feature the FallFest Car Show, which will raise funds for Study Abroad Scholarships for Polk State students. Car owners can enter the show with a $20 donation. People’s Choice Awards will be given for first, second and third place.

The "Good Old Days" Weren't All That Good

If you scroll through social media, you’ve probably come across a post (usually AI-generated) pining for the “good old days” of the 1980s. High tops. Vaporwave. Mixtapes. Everything that was, like, “totally rad.”

I recently pondered the concept of nostalgia after watching two YouTube videos: Dead Domain’s “your nostalgia is not your own”, which detailed how most of our “childhood memories” were molded by advertising, and Radio Dead Air’s “AI Nostalgia is Lying to You”, which explained how, from lead pipes to smoking sections, the ‘80s weren’t all that good.

I didn’t grow up in the ‘80s. I was born in the ‘80s. (1987, specifically.) I grew up in the 1990s. Often, I’ve yearned for the “good old days” of that decade. Neo-pop. Blast processing. Saturday morning cartoons. Everything that was, like, “totally tubular.”

However, I’ve come to realize that, while a lot of things about the 90’s were “totally bodacious”, a lot of aspects were also “totally bogus.”

Here’s just a few:

1. FOOD & DRINK: The Middle Eastern dish called falafel is made mostly of what ingredient?

2. GEOGRAPHY: Which country has the most UNESCO World Heritage sites?

3. TELEVISION: What is the name of Hawkeye’s living quarters in the “M*A*S*H” sitcom?

4. ANIMAL KINGDOM: What is a male swan called?

5. LITERATURE: Which Irish author wrote his last novel in crayon?

6. MEASUREMENTS: How many square feet are in a square yard?

7. SCIENCE: What’s the main function of red blood cells?

8. MOVIES: Streaming movies became eligible for the 2021 Oscar awards for what reason?

9. ANATOMY: What type of acid is found in the human stomach?

10. U.S. CITIES: Which city was named for a British prime minister?

1. Smoking Sections. Like in the ‘80s, indoor smoking sections were common. Even in planes and hospitals. Fast-food joints even had their own signature ashtrays. Of course, it didn’t matter if smoking was confined to one area. Cigarette smoke and its stench still wafted into the non-smoking areas. Not a good time if you had allergies or asthma. Because indoor smoking wouldn’t be phased out until the 2000s.

2. VHS Tapes. Kids these days don’t know what a rewinder is. It’s a device to rewind tapes. Why? Because after you finished watching a movie, you couldn’t simply watch it again from the start. You had to pop a tape into a rewinder and wait nearly five minutes for it to roll back to the beginning. And you’d better pray the tape never got stuck in the VCR while it played. Even in the

best-case scenario, the video quality still degraded over time over multiple rewatches. Look, I wax nostalgic for the good old days of VHS. But actually watching movies on tape wasn’t all that good.

3. Music. Want to listen to a favorite song? You’d better know a good music store nearby. Because we didn’t have iTunes. Or even Napster. You know what we had? CD albums that cost $16 a pop. (Nearly $35 in today’s money!) And that was for one or two songs you wanted and a bunch of songs you didn’t. Maybe if you were lucky, you could buy a compilation album from an infomercial. Couldn’t find a store with the album you wanted? You’d better hope Columbia House had it in their mail-order catalog. Because that was the only alternative. Either that or recording the song on tape off the radio.

4. Internet. Kids these days don’t know the dilemma of deciding whether to use the phone or internet. Because you couldn’t do both. Not in the early days of the web. Back then, internet was dial-up. The phone and internet used the same line. And you had to wait a whole minute while your computer made weird noises before you connected. And it was slow as digital molasses. Want to watch a minute-long video clip? Better get used to waiting nearly an hour for it to load.

Let me conclude my column the same way Nash from Radio Dead Air concluded his video: You don’t miss the 80s or 90s. What you miss is being young and protected and lacking responsibilities. Don’t let someone sell you a past that never existed. Especially if they want to blame something—or rather, someone!—for that idyllic past no longer existing.

Bella is a black and white female American Pitbull mix. She is approximately 8 months old. She weighs about 42 lbs. Bella is a sweet and energetic girl. She loves to be around people and meet new friends. She is super playful and will play with people, other dogs, or her toys. Any toys will do but her favorites are squeaky toys.

ROMEO

Romeo is an adorable and energetic 7-month-old Pit Bull mix with a heart full of love and a tail that never stops wagging! This sweet pup is a bundle of playful energy who absolutely adores people of all ages. Whether it’s chasing toys, zooming around the yard, or cuddling up after a fun-filled day, He’s still a puppy, so play biting is part of his excitement—but with a little guidance, he’s sure to learn good manners.

PERCY

Percy is a brown and white male Domestic Shorthair mix. He is approximately 5 years old and has been neutered. He is very, very friendly to new people, very playful, and loves to watch birds and animals through windows. Percy has been around other cats but can be a bit nervous when first meeting them. He is a really sweet and cuddly boy who enjoys being pet! Percy is fully litter box trained.
