22nd Annual

The "Polk’s Beloved Bartender" feature story was a Christmas present to our readers right from the start, launching with the very first edition of the magazine in July 2004. Its popularity decked the halls with enthusiasm, and the voting aspect became a cherished tradition a few years later. Over the years, we’ve photographed more than 225 Polk County Bartenders and collected over 50,000 votes, a true stocking full of appreciation for the men and women who provide superior customer service with holiday cheer every single day.

Typically, this popular issue was always delivered in July like a mid-summer gift. Fast forward 16 years to March 2020: a global pandemic arrived like an unexpected Grinch, shutting down the hospitality industry mid-day on St. Patrick’s Day, a holiday usually as packed as Santa’s workshop.

The industry was devastated, and this crisis coincided with the start of our usual voting season. With uncertainty looming like a winter storm, we kept the voting open as we navigated our "new normal"

and transitioned the magazine to an online format. We needed a way to honor the industry during that chaotic time. Deciding to hold off on our July issue and release a special "Halloween Edition" in October was a miracle on our street! We enjoyed putting that ghoulish, spooky twist on our celebration for the next few years.

2025 marks our 21st Anniversary as Polk County’s premiere dining and entertainment online magazine, and it has been our pleasure to bring so many amazing stories and destinations to our virtual pages. Over the years, our writers have watched new businesses thrive and shared their unique perspectives on this beautiful community where we live, work, and play. We are proud to weave entertainment, dining, and events into a vibrant, local fabric that’s as cozy as a Christmas quilt.

For this December, we are ringing the sleigh bells with a brand new twist: the Polk’s Beloved Bartenders Holiday Edition! Consider this our "present" to you! We hope this issue inspires our readers to get out, explore the local hospitality scene and get your "holiday spirits" on and unwrap some great experiences. Go say hello to our winners— they’ve certainly made the "nice" list!

heartfelt gratitude to our advertisers, readers, and supporters for 21 years of success that truly "jingle all the way." As the beating heart of Polk County, Today & Tonight Magazine is dedicated to bringing Central Florida the best festive cheer and local entertainment this holiday season.

Cue the Christmas carols, because Today & Tonight Magazine presents the 22nd Annual Polk’s Top Ten Beloved Bartenders...we'll be looking for you under the mistletoe! Ho, Ho, Ho!

What is the secret to your success as a bartender?

I love my job! I love talking to people and making my customers feel comfortable enough to have a great time while visiting our bar.

What’s your favorite Christmas/ Holiday movie?

National Lampoon’s Christmas Vacation

Where is the one place in the world you’d love to spend the Christmas/ Holiday?

London! Pictures look so pretty during Christmas time.

SignatureDrink

you were an Elf on the Shelf, what would your elf name be?

Uhhhh, “TwinkleBell”? I don’t know I’m not that creative, lol.

If you weren’t a bartender, what would your profession be?

Honestly, I would probably be behind a desk somewhere staring at a computer all day.

What’s a must have on your Christmas/Holiday dinner table?

Mashed potatoes are always my favorite. Besides the turkey!

Pecan Pie or Pumpkin Pie? Or another fav?

Pecan Pie

What was your favorite Christmas gift as a child?

My pink electric Barbie car that I could drive myself. I felt so cool driving it in the front yard and driveway when I was little!

If you were one of Santa’s reindeer, which one would you be and why?

I’ll go with Comet…just because he’s not normally one that stands out when people think of Santa’s reindeer. He’s right in the middle of the pack, lol.

healthy. I’ve been told I’m difficult to shop for because if there’s anything I want throughout the year, I normally just buy it for myself. That normally makes it hard for me to tell anyone that I want anything around the holidays.

What holiday traditions from your childhood do you continue as an adult?

Opening one present the night of Christmas Eve while watching some sort of holiday movie.

What’s your favorite Holiday inspired cocktail? And, what’s your signature cocktail?

Probably a Gingerbread Cookie Shot is my favorite holiday inspired cocktail. My signature cocktail is the Red Devil.

Best cookie to leave out for Santa? I’ve always been just a regular sugar cookie fan!

With the magic of the season, what’s your wish for the New Year?

Like my other answer I just want my friends and family to be happy and healthy. That would make me the happiest.

Is there anything you would like to add? We’d love to know more about you!

What is the secret to your success as a bartender?

I’m a master of illusion. I use my great personality to entertain people and mask the fact that I have no idea what I’m doing. I’m still really good at opening beers too!

What’s your favorite Christmas/ Holiday movie?

It’s between Jim Carrey’s “Grinch” and “The Polar Express”. That Josh Groban song will always be a holiday banger.

SignatureDrink

Where is the one place in the world you’d love to spend the Christmas/ Holiday?

I wouldn’t mind spending a Christmas somewhere snowy. I’ve never experienced a “white Christmas” so that would be pretty cool.

If you were an Elf on the Shelf, what would your elf name be?

My name would be “Daddy Sprinkles”, and I will not go any further into this. Next question.

If you weren’t a bartender, what would your profession be?

I feel like being one of Santa’s reindeer would be a good field to get into. Those things work one day a year and have everything they want.

What’s a must have on your Christmas/Holiday dinner table?

If the candied sweet potatoes aren’t at the table, neither am I. I’ll see you guys at whatever food place is open on Christmas.

Pecan Pie or Pumpkin Pie? Or another fav?

I’m more of a that-berry-medley-pie-mystep-mother-makes-ever-so-often kind of guy.

What was your favorite Christmas gift as a child?

It was always cool getting new video games. I’ll pass out cards with my Steam Wishlist this year so you guys know which ones to get me.

If you were one of Santa’s reindeer, which one would you be and why?

I feel like with my answer to the profession question, my dream is about to come true. I’d be a new and improved Rudolph so I could lead the way and possibly stage a Christmas mutiny with the elves back home after all the gifts were delivered.

Naughty or Nice? What list are you on and why?

I’m on the nice list for sure. Ask anybody who knows me and they’ll tell you “That Rowdy sure is great and would never lie on any of those Top Ten Bartender questions.”

What’s on your Christmas List this year?

Wait, is Santa reading this? Hey, Big Red, if you see this, I would really like a pair of light-up Heelys and some new knees so I could enjoy being the coolest guy at every function.

What holiday traditions from your childhood do you continue as an adult?

Opening gifts on Christmas eve, dad’s biscuits and gravy on Christmas morning followed by more gift opening when the family gets together before dinner.

What’s your favorite Holiday inspired cocktail? And, what’s your signature cocktail?

I love me some good Coquito. The White Christmas cocktail at Lucille’s is also one of my favorites (this is not a shameless plug, it’s actually delicious!) My drink is the “Honey, I’m Home”. You’ll know what’s in it when you try it.

Best cookie to leave out for Santa?

I was told he likes those super iced and sugary cookies you only see at birthday parties held at public parks.

With the magic of the season, what’s your wish for the New Year?

For my friends and family to get rich so they can all pitch in and buy me a used F1 car.

Is there anything you would like to add? We’d love to know more about you!

I hope everybody has a happy holiday season and if you come see me because of this, your first water will be on me. (I know. What a guy, right?)

Well since I’ve thought about this extensively, of course I already know my elf name is “Tinsel-Tatas”.

If you weren’t a bartender, what would your profession be?

What’s a must have on your Christmas/Holiday dinner table?

Everything is a must have! This is serious business if there is a missing dish we have all royally f’d up.

Pecan Pie or Pumpkin Pie? Or another fav?

I would ditch both of those for a classic apple pie.

What was your favorite Christmas gift as a child?

What is the secret to your success as a bartender?

I feel the secret of my success is not being a robot. Every guest, every client and every event is completely different. You must be able to adapt to every different situation with my business; I go into warehouses, I go into office spaces, and I go into multimillion dollar homes. I feel that the relationships I have built along with the relationships I’ve maintained have allowed me to continue my success.

What’s your favorite Christmas/ Holiday movie?

Anywhere with my friends and family!!

If you were an Elf on the Shelf, what would your elf name be? “Franklin”

If you weren’t a bartender, what would your profession be?

What’s a must have on your Christmas/Holiday dinner table?

Cranberry sauce!!! It’s just my absolute childhood favorite.

Pecan Pie or Pumpkin Pie? Or another fav?

Man! I wish I had a great answer for this. When I was in the Navy, for my last three deployments, I was the baker for the entire ship so now I can’t stand sweets, pastries, cakes, pies, cinnamon rolls or donuts. I just can’t do it.

What was your favorite Christmas gift as a child?

My favorite gift as a child was my first BMX trick bike.

If you were one of Santa’s reindeer, which one would you be and why? Rudolph, of course!! Just like with my business I’m always the leader of the pack.

Naughty or Nice? What list are you on and why?

One thing definitely on my Christmas list this year is just making sure I get through the holiday season without any hiccups!!

What holiday traditions from your childhood do you continue as an adult?

Growing up, my mother collected Santa Claus figures, and they have been passed down to me for my kids and now every November through January my house looks like a Santa Claus figurine store.

What’s your favorite Holiday inspired cocktail? And, what’s your signature cocktail?

My favorite holiday inspired cocktail would either be a Frosted Peppermint Martini or a Clear Cosmo with a floating garnish.

Best cookie to leave out for Santa? Sugar cookies, I guess.

With the magic of the season, what’s your wish for the New Year?

With everything that’s going on in my life and the past year, I just hope this holiday season brings me love, peace and forgiveness.

Is there anything you would like to add? We’d love to know more about you!

If there’s anything I can tell young bartenders, servers or anybody in this industry, always maintain relationships. These relationships will get you new jobs. They put you in rooms. They allow you to make money no matter how that relationship seems to be. I’ve always maintained relationships when others have left. Relationships have benefitted my personal life, my business and my family.

The secret to my success as a bartender is my ability to connect with people in a natural, playful way while still staying focused on my job. I really enjoy bantering back and forth with regulars and creating a fun, comfortable atmosphere, but I also know when to mind my business and keep the bar running smoothly.

My favorite holiday movie is Home Alone, which I watch often. I love the

humor, the chaos, and that warm, festive feeling it brings every time.

Where is the one place in the world you’d love to spend the Christmas/ Holiday?

I’d love to spend the holidays in a cozy mountain cabin in Branson, Missouri.

If you were an Elf on the Shelf, what would your elf name be?

My elf name would be “Miss Merry Mads”. It feels cute, Christmasy, and still personal to me.

If you weren’t a bartender, what would your profession be?

What’s a must have on your Christmas/Holiday dinner table?

A must-have on my holiday dinner table is mac and cheese. It’s the one dish everyone looks forward to, and it just feels like comfort in a bowl. It’s also one of the few things my child will eat, haha.

Neither—my favorite is Oreo pie! It’s sweet, chocolatey, and the perfect holiday treat.

This year my Christmas list is pretty simple—more cozy blankets (because you can never have too many, right?) and, most importantly, making memories with my son. Everything else is just a bonus.

What holiday traditions from your childhood do you continue as an adult?

On Christmas Eve, we would open one small gift. I now continue that tradition with my son.

We Will Make It Through, Somehow

Pooh: I’m just so scared, so anxious, because I don’t feel like things are getting any better. If anything, I feel like they might be getting worse.

Piglet: I can’t change the world right now. And I’m not going to patronize you with platitudes about how everything will be okay, because I don’t know that...I can’t make those anxious feelings go away, not really, but I can promise you that all the time I have breath left in my body, you won’t ever need to feel those anxious feelings alone.

- “When Winne The Pooh Was Scared,” Unknown (Awakin.org)

“So, this is Christmas, and what have you done? Another year over, and a new one just begun.”

It felt appropriate to open this column with those song lyrics from John Lennon. Because it’s the perfect one-line audit of this holiday season, if not this entire year.

ise we’ll all make it through, I can’t honestly do that either. I don’t know what comes after—or if there will even be an “after.” Ten years, five years, next week: I’m that uncertain about the fate of America, the world, and humanity in general.

As a kid, I heard plenty about the End Times and Jesus coming back soon, but I never took it seriously. I grew up in the 1990s—a stretch of relative peace and prosperity (at least here in America)—so the world didn’t look like it was about to fold in on itself anytime soon. But now? You can’t convince me we’re not living through the End Times. Ever since the Towers fell, we’ve weathered repeated recessions, rising authoritarianism, and literal wars in the Middle East. The last five years alone have delivered war (in Ukraine and Israel), plague (with COVID-19), famine (with impending climate disaster), and death—plenty of death!

1. FOOD & DRINK: What does the acronym “IPA” stand for in a beer?

2. LITERATURE: Who is the author of “The Hunger Games” series?

3. U.S. STATES: Which state has the most lighthouses?

4. GEOGRAPHY: What is the capital of New Zealand?

5. GAMES: What is a perfect score in bowling?

6. SCIENCE: What does an auxanometer measure?

7. ANIMAL KINGDOM: What is a female donkey called?

8. MOVIES: Which holiday is celebrated at the end of “When Harry Met Sally”?

9. TELEVISION: Which entertainer has hosted “Saturday Night Live” the most?

10. ANATOMY: What is the anatomical name for the kneecap?

And what a crazy year it was! In fact, calling it “crazy” would be an understatement: corrupt politicians, shocking assassinations, government shutdowns, chaos in the streets, military takeovers of American cities, and endless overseas conflicts.

I can’t even say this feels like a dystopian movie. Those types of movies are at least entertaining. This feels like a dark satire of a dystopian movie, a mash-up of Idiocracy and 1984: absurd, grim, and utterly surreal.

Perhaps the worst part about this nonstop circus is that I don’t know what to say about it. What can I say? What hasn’t already been said? What more can I add?

I’d love to offer advice on getting through this, but nearly four decades on this Earth haven’t granted me the knowledge, wisdom, or experience to handle this particular mess humanity has gotten itself into.

And as much as I’d like to prom-

I’m not one of those TikTok prophets who kept predicting the Rapture would happen in October, but at this point I wouldn’t be surprised if a ram’s horn sounded and people started floating skyward. I used to be terrified of that idea; today, if it happened, I suspect I’d feel nothing but relief. (Take me away, Jesus!)

If I must end this column and year on a positive note, it’s that humanity has survived worse: the Great Flood, the fall of Rome, the Black Death, the Great Depression, and two World Wars. While not everyone survived those catastrophes, enough people did for humanity to continue. If we human beings are anything, it’s resilient and stubborn. One way or another, we will get through this.

TOP 12 RANDOM Christmas-Related Facts About Beer

We normally don’t associate Christmas with beer—hot cocoa, hot cider, eggnog, but not beer. However, not only is Christmas beer a beloved holiday favorite, but the combination of beer and Christmas makes for interesting (albeit random) facts. In the spirit of the holidays, here are 12 random fun facts about Christmas and beer:

#1: Closest Bar to the North Pole

If Santa had a favorite bar, it would be Barentz Pub. Located in Longyearbyen, Norway, the bar stands out as one of the world’s northernmost bars. Despite average temperatures hovering around 7 degrees (and sometimes dropping to -22), the pub offers a warm atmosphere with quality beer and a varied menu, which includes fish and chips, pizza, and even reindeer stew. Just 800 miles from the North Pole, it’s easy to imagine Old Saint Nick stopping by for a drink after his busy night of gift-giving.

#2: Brewing Beer for the Holidays—by Law!

Enjoying beer during the holidays is a tradition dating back to Viking times. For the ancient Norse, beer wasn’t just an option—it was the law! During the winter holiday of Yule, people brewed special ales to honor the gods and their ancestors. According to Norway’s Gulathing Law, every household had to make ale for Yule celebrations, or they risked heavy fines, confiscation of their property, or even exile. Talk about pressure to get your holiday brewing right! (Source: Beer and Brewing)

#3: 50 Years of New Holiday Beer Recipes

Nearly 50 years ago, a San Francisco brewery started the modern American

trend of Christmas beer. Since 1975, Anchor Brewing Company has launched a new edition of its Anchor Christmas Ale (initially named “Our Special Ale”). What makes this holiday beer so special? It’s always different. That’s right! Every year, the recipe changes. In fact, the annual release has even become a celebrated occasion among beer enthusiasts across the country. (Source: Forbes)

#4: A Summer Brew for the Holidays

Stella Artois, known for its floral scent, golden hue, and crisp, refreshing taste, is often considered a perfect summer lager. Surprisingly, this popular summertime ale originally debuted as a Christmas brew in 1926. In fact, its name “Stella” (which means “star” in Latin) refers to the Star of Bethlehem. Over time, Stella Artois gained widespread popularity and shifted from being a festive seasonal beverage to a global favorite enjoyed throughout the year. (Source: Cervez Artesana)

#5: The First Pour A Cleveland Holiday Tradition

In Cleveland, Christmas beer is such an important holiday tradition that the annual release from a local brewery has become a citywide event. Each November, hundreds gather from across the Midwest at Great Lakes Brewing Company—with some people lining up as early as 7 AM—for the highly anticipated “First Pour” of their Christmas ale. The mayor officially kicks off the season, and the taps run continuously for twelve hours, serving nearly a pint every five seconds! For many locals, this is the only beer they purchase all year, and its arrival is awaited as eagerly as the first snowfall. (Source: WKYC)

#6: Burning of the Devil

While Christmas, true to its name, is often associated with Christ, the holiday in Guatemala actually starts with the Devil. The holiday season in Guatemala starts on Dec. 7 with “La Quema del Diablo”, or “Burning of the Devil.” True to its name, the celebration includes burning effigies of the devil in city streets to cleanse homes of evil spirits and wel-

come the holiday. What follows is a raucous street party with fireworks, music, and—of course!—plenty of beer. (Source: National Geographic)

#7: Christmas Markets—Big as Oktoberfest in Germany

Munich, Germany, is renowned for Oktoberfest, one of the world’s largest beer festivals, offering nearly 7.5 million liters to close to 7 million attendees each year. Yet, the city’s Christmas markets are equally large and well-loved. Across Germany, these markets are a cherished holiday custom. With lively beer gardens pouring robust brews, these inviting gatherings are as much about beer as they are gingerbread and Santa Claus— or Der Weihnachtsmann, as the Germans call him. (Source: Rosetta Stone)

#8: Belgian and French Christmas Beers

Belgium and France are renowned for their Christmas beers. Referred to as “bières de Noël” and “kerstbier,” these ales are generally strong, ranging from 6–10 percent ABV, dark in color, and characterized by festive flavor profiles. Brewers incorporate various spices such as cinnamon, nutmeg, clove, and ginger, as well as dried fruits including raisins, figs, and orange peel. In some instances, honey or Belgian candy sugar is added to enhance warmth and sweetness, resulting in a rich and complex ale reminiscent of traditional Christmas pudding. (Source: Brussels Times)

#9: Christmas PopUp Bars Worldwide Phenomenon

Do you love Christmas? Do you love beer? Do you love both? Then you’ll probably enjoy the newest craze: Christmas pop-up bars. Each holiday season, more than 200 such locations appear worldwide. Two main companies behind this movement are Miracle and Slippin Santa. Miracle creates a traditional yet playful holiday vibe with extravagant decorations, collectible glassware, and themed cocktails like the Christmapolitan

and Snowball Old-Fashioned. Slippin Santa, meanwhile, brings a tropical tiki flair to the festivities, serving up drinks like the Jingle Bird and Holiday on Ice— all served in Santa-on-vacation mugs! (Source: Craft Spirits)

#10: SantaCon Bar Crawls

Put on your best Santa hat, reindeer ears, or even your tackiest sweater and participate in Polk County’s SantaCon bar crawls. Winter Haven’s SantaCon invites revelers to don their best (or worst) Christmas costume and explore downtown bars on Sat. Dec. 20, from 4–10 PM, kicking off at Jessie’s Lounge. Lakeland hosts its SantaCon on Sat. Dec. 6, 2025, beginning at 5 PM at Molly McHugh’s, followed by a costume contest at 6 PM. Both events promise holiday cheer, cold drinks, and plenty of laughs.

#11: Christmas Beer Advent Calendars

Do you love counting down the days before Christmas? Wish you could do that with a different holiday ale for each day? You can with Beer Advent Calendars. Many breweries and specialty stores offer these festive boxes with 12 to 24 different beers, one for each day before Christmas. These calendars typically include a variety of exclusive brews, limited-edition winter ales, and beloved classics, making them an excellent gift for any beer enthusiast. (Source: Crowlers And More)

#12: Creative Christmas Cocktails

Bars around the world get creative with Christmas-themed beer cocktails, blending classic brews with festive flavors. Some favorites include:

• The Naughty Elf Cocktail: Peppermint schnapps, chocolate liqueur, cream, and a crushed candy cane rim.

• Christmas Beer Sangria: Apple cider, vodka, Christmas ale, cranberries, and oranges.

• Hot Ale Flip: Dark beer, rum, molasses, eggs, heated with a hot poker.

• Gingerbread Eggnog: Eggnog with rum, gingerbread syrup, whipped cream, and cookie crumbles. (Source: Dine With Drinks & Tipsy Bartender)

When Loren Nations graduated from Winter Haven High School in 1981 his dreams of becoming an influential veterinarian in a big city would follow many paths. After graduating from UF with his veterinary degree in 1991 he completed a medical and surgical internship at the Animal Medical Center in Manhattan, NY considered the Johns Hopkins of veterinary medicine. Instead of remaining in New York City he returned home to practice “big city” medicine with his mentor Dr. John Maxwell.

Dr. Nations’ desire to help animals and commitment to practice at the highest level led to specialty board certification in canine and feline practice, one of only 425 ABVP diplomats in the country and 27 in the state. With this expertise, the practice has flourished into a seven doctor 24 hour emergency and critical care hospital, specialty referral center, and general practice. Dr. Nations has devoted his life to creating a center that will improve our pet’s lives for years to come.

The completion of a state-of-the-art 10,000 square foot veterinary center is only the beginning of the medical advancements Dr. Nations hopes to bring to Central Florida. “My life revolves around my family and animals. They are one and the same, that is who I am and why I am so passionate about being a veterinarian.”
