The "Polk’s Beloved Bartender" feature story was a Christmas present to our readers right from the start, launching with the very first edition of the magazine in July 2004. Its popularity decked the halls with enthusiasm, and the voting aspect became a cherished tradition a few years later. Over the years, we’ve photographed more than 225 Polk County Bartenders and collected over 50,000 votes, a true stocking full of appreciation for the men and women who provide superior customer service with holiday cheer every single day.
Typically, this popular issue was always delivered in July like a mid-summer gift. Fast forward 16 years to March 2020: a global pandemic arrived like an unexpected Grinch, shutting down the hospitality industry mid-day on St. Patrick’s Day, a holiday usually as packed as Santa’s workshop.
The industry was devastated, and this crisis coincided with the start of our usual voting season. With uncertainty looming like a winter storm, we kept the voting open as we navigated our "new normal"
and transitioned the magazine to an online format. We needed a way to honor the industry during that chaotic time. Deciding to hold off on our July issue and release a special "Halloween Edition" in October was a miracle on our street! We enjoyed putting that ghoulish, spooky twist on our celebration for the next few years.
2025 marks our 21st Anniversary as Polk County’s premiere dining and entertainment online magazine, and it has been our pleasure to bring so many amazing stories and destinations to our virtual pages. Over the years, our writers have watched new businesses thrive and shared their unique perspectives on this beautiful community where we live, work, and play. We are proud to weave entertainment, dining, and events into a vibrant, local fabric that’s as cozy as a Christmas quilt.
For this December, we are ringing the sleigh bells with a brand new twist: the Polk’s Beloved Bartenders Holiday Edition! Consider this our "present" to you! We hope this issue inspires our readers to get out, explore the local hospitality scene and get your "holiday spirits" on and unwrap some great experiences. Probably a Gingerbread Cookie Shot is my favorite holiday inspired cocktail. My signature cocktail is the Red Devil.

I feel like with my answer to the profession question, my dream is about to come true. I’d be a new and improved Rudolph so I could lead the way and possibly stage a Christmas mutiny with the elves back home after all the gifts were delivered.

I’m on the nice list for sure. Ask anybody who knows me and they’ll tell you “That Rowdy sure is great and would never lie on any of those Top Ten Bartender questions.”
What’s on your Christmas List this year?
Wait, is Santa reading this? Hey, Big Red, if you see this, I would really like a pair of light-up Heelys and some new knees so I could enjoy being the coolest guy at every function.
What holiday traditions from your childhood do you continue as an adult?
Opening gifts on Christmas eve, dad’s biscuits and gravy on Christmas morning followed by more gift opening when the family gets together before dinner.

I love me some good Coquito. The White Christmas cocktail at Lucille’s is also one of my favorites (this is not a shameless plug, it’s actually delicious!) My drink is the “Honey, I’m Home”. You’ll know what’s in it when you try it.

If there’s anything I can tell young bartenders, servers or anybody in this industry, always maintain relationships. These relationships will get you new jobs. They put you in rooms. They allow you to make money no matter how that relationship seems to be. I’ve always maintained relationships when others have left. If I weren’t bartending, I’d be pursuing my path in criminal psychology. I’m currently studying to become a criminal psychologist, but I’m not quite ready to give up bar shifts and heavy pours just yet!

A must-have on my holiday dinner table is mac and cheese. It’s the one dish everyone looks forward to, and it just feels like comfort in a bowl. It’s also one of the few things my child will eat, haha.

Bok Tower Gardens invites families, friends, and fairy-lovers of all ages to step into a sparkling world of imagination during the Winter Fairy Festival, returning December 13–14, 2025.
This two-day celebration transforms the Gardens into a whimsical wonderland filled with magical performances, creative crafts, fluttering fairy encounters, unforgettable aerial artistry, and holiday cheer.
The Winter Fairy Festival is free for members and included in general admission for non-members
Guests are encouraged to dress in their favorite fairy fashions and enjoy a weekend of interactive experiences designed to delight the young and the young at heart.
Throughout the festival, visitors can meet the enchanting Winter Fairies, create dazzling fairy crafts, and enjoy a full schedule of performances, including two signature festival highlights: aerial dancers from The Circus Arts Place and The Singing Tower’s The
Nutcracker featuring carillon arrangements by Geert D’hollander with ballet dancers from A New Point Dance Studio of Winter Haven, performed at 3 p.m. each day.

It felt appropriate to open this column with those song lyrics from John Lennon. Because it’s the perfect one-line audit of this holiday season, if not this entire year.
ise we’ll all make it through, I can’t honestly do that either. I don’t know what comes after—or if there will even be an “after.” Ten years, five years, next week: I’m that uncertain about the fate of America, the world, and humanity in general.
As a kid, I heard plenty about the End Times and Jesus coming back soon, but I never took it seriously. I grew up in the 1990s—a stretch of relative peace and prosperity (at least here in America)—so the world didn’t look like it was about to fold in on itself anytime soon. But now? You can’t convince me we’re not living through the End Times. Ever since the Towers fell, we’ve weathered repeated recessions, rising authoritarianism, and literal wars in the Middle East. The last five years alone have delivered war (in Ukraine and Israel), plague (with COVID-19), famine (with impending climate disaster), and death—plenty of death!

And what a crazy year it was! In fact, calling it “crazy” would be an understatement: corrupt politicians, shocking assassinations, government shutdowns, chaos in the streets, military takeovers of American cities, and endless overseas conflicts.
I can’t even say this feels like a dystopian movie. Those types of movies are at least entertaining. This feels like a dark satire of a dystopian movie, a mash-up of Idiocracy and 1984: absurd, grim, and utterly surreal.
Perhaps the worst part about this nonstop circus is that I don’t know what to say about it. What can I say? What hasn’t already been said? What more can I add?
I’d love to offer advice on getting through this, but nearly four decades on this Earth haven’t granted me the knowledge, wisdom, or experience to handle this particular mess humanity has gotten itself into.
And as much as I’d like to prom-
I’m not one of those TikTok prophets who kept predicting the Rapture would happen in October, but at this point I wouldn’t be surprised if a ram’s horn sounded and people started floating skyward. I used to be terrified of that idea; today, if it happened, I suspect I’d feel nothing but relief. (Take me away, Jesus!)
If I must end this column and year on a positive note, it’s that humanity has survived worse: the Great Flood, the fall of Rome, the Black Death, the Great Depression, and two World Wars. While not everyone survived those catastrophes, enough people did for humanity to continue. If we human beings are anything, it’s resilient and stubborn. One way or another, we will get through this.

We normally don’t associate Christmas with beer—hot cocoa, hot cider, eggnog, but not beer. However, not only is Christmas beer a beloved holiday favorite, but the combination of beer and Christmas makes for interesting (albeit random) facts. #1: Closest Bar to the North Pole
If Santa had a favorite bar, it would be Barentz Pub. Located in Longyearbyen, Norway, the bar stands out as one of the world’s northernmost bars. Despite average temperatures hovering around 7 degrees (and sometimes dropping to -22), the pub offers a warm atmosphere with quality beer and a varied menu, which includes fish and chips, pizza, and even reindeer stew. Just 800 miles from the North Pole, it’s easy to imagine Old Saint Nick stopping by for a drink after his busy night of gift-giving.

Enjoying beer during the holidays is a tradition dating back to Viking times. For the ancient Norse, beer wasn’t just an option—it was the law! In Cleveland, Christmas beer is such an important holiday tradition that the annual release from a local brewery has become a citywide event. Each November, hundreds gather from across the Midwest at Great Lakes Brewing Company—with some people lining up as early as 7 AM—for the highly anticipated “First Pour” of their Christmas ale. The mayor officially kicks off the season, and the taps run continuously for twelve hours, serving nearly a pint every five seconds! TOMMY
Tommy is a 2-month-old male tabby with a heart as warm as a cup of cocoa on a snowy day. In his previous home, he did wonderfully with other cats, and while he hasn’t been around children yet, his gentle nature suggests he’d warm up in no time— just like paws by the fireplace. This little guy is the perfect blend of calm and energetic.

Tucker can be a little shy at first, but once he warms up, he’s all tail wags and kisses. He’s done great with kids of all ages and enjoys being part of the action. He gets along well with other dogs, but cats are not his cup of tea.

When Loren Nations graduated from Winter Haven High School in 1981 his dreams of becoming an influential veterinarian in a big city would follow many paths. After graduating from UF with his veterinary degree in 1991 he completed a medical and surgical internship at the Animal Medical Center in Manhattan, NY considered the Johns Hopkins of veterinary medicine. Instead of remaining in New York City he returned home to practice “big city” medicine with his mentor Dr. John Maxwell.
Dr. Nations’ desire to help animals and commitment to practice at the highest level led to specialty board certification in canine and feline practice, one of only 425 ABVP diplomats in the country and 27 in the state. With this expertise, the practice has flourished into a seven doctor 24 hour emergency and critical care hospital, specialty referral center, and general practice. Dr. Nations has devoted his life to creating a center that will improve our pet’s lives for years to come.
The completion of a state-of-the-art 10,000 square foot veterinary center is only the beginning of the medical advancements Dr. Nations hopes to bring to Central Florida. “My life revolves around my family and animals. They are one and the same, that is who I am and why I am so passionate about being a veterinarian.”
