Joël Robuchon International to open Le Deli Robuchon on the King’s Road, Chelsea - J O Ë L RO B U C H O N I N T E R N AT I O N A L Le Deli by Joël Robuchon International is now open on the King’s Road in Chelsea. The new site will open early until late, with breakfast, lunch and dinner available to eat in or to take-away, as well as the exceptional bread and patisserie for which Le Deli Robuchon is known for. Since the first Le Deli opened in Piccadilly in 2019, this casual yet sophisticated spot has become a staple in the area and the new location will be no different. Le Deli King’s Road will open for breakfast, offering French deli-style food all day, and then wine, cheese and charcuterie in the evenings. King’s Road locals will be the first to try the brand-new savoury iteration of Le Deli’s cube croissant, to be revealed on opening. This smart but relaxed open-plan deli invites guests to enjoy the space from morning to night, with a cream leather seating area in full view of the extensive produce shelves, bearing the very best French pantry essentials, from beautiful boxes of Valrhona

chocolates to artisanal jams. The wrap-around deli counter occupies one end of the room and will be one of the few places in London to serve French rotisserie chicken, freshly cooked and available to take away or to eat in, alongside a selection of fresh seasonal salads. Guest will be able to watch the pastry chefs adding the finishing touches to their creations in the kitchen, while those sitting at the circular marbletopped tables at the front of Le Deli will be able to watch the world go by on the bustling King’s Road. The food offering has been created by Group Executive Chef David Alves, who has brought a simple yet elevated French flair to the all-day menu at Le Deli. David was also key in the menu development at the recently relaunched L’Atelier Robuchon in Mayfair. To kick off the day, early risers can choose from a cooked breakfast, with specialities including Eggs Benedict, Ham & Cheese or Goats Cheese Croissant, Avocado Omelette with Caviar, or classic freshly baked viennoiserie. From 10am onwards the renowned cube croissant Le Deli has become famous for will be available in a variety of flavours including Pistachio, Vanilla and Chocolate. Le Deli King’s Road will be introducing new croissant flavours as well as their first ever savoury cube. For lunch, there will be a selection of salads, hot plates and daily specials, sandwiches and quiches. From mid-afternoon, Le Deli will offer a Champagne Afternoon Tea with mini sandwiches; Foie Gras Toast with Spiced Pear Compote, Cucumber Finger Sandwiches and Zucchini Aubergine Burgers, some of Le Deli’s famous pastries; Tarte au Citron and Éclair au Chocolat, alongside the classic scones with strawberry jam and Devonshire cream.

In traditional French style, evenings will offer exceptional cheeses, alongside charcuterie boards and bread baskets freshly baked in-house. For drinks, a small but perfectly formed cocktail menu includes classic spritzes, a Coffee Negroni and Chamomile Fizz, alongside a selection of hand-picked French wines, perfect for pairing with Le Deli’s boards. Le Deli Patisserie will offer some true French favourites; from Tarte aux Framboises, Gâteau à la pistache and their much-loved Chocolat et Noisette, as well as the daily changing Choux of the Day and Mille-Feuille of the Day. All deli products and gifts will be available to buy at King’s Road, from premade or build-your-own hampers. All of the above is available for delivery and takeaway via the website. Le Deli will also be offering catering options, the perfect alternative for business meetings, events and celebrations. The Upper Place food hall announces new vendors - T H E B O I L C LU B A N D PA D T H A I C A F É The Upper Place, London’s newest food hall which opened in Holloway this summer has announced two new vendors that will join this vibrant and exciting market – The Boil Club, with their signature platters of boiled seafood (opened on 20th November) and Pad Thai Café who will bring the tantalising flavours of Thailand to this North London hotspot (opened on 27th November). These new independent vendors will continue to add to the eclectic and diverse mix of options in this all-day dining space, which is the first of its kind in the immediate area. The Upper Place sits atop muchloved community cornerstone and Holloway Road stalwart; Nag’s Head Market. Gloves and bibs ready? Take a trip to the southern states of the USA with The Boil Club which specialises in jumbo seafood boil bags. Enjoy a wide selection of seafood with the Pick ’N’ Mix style bag where you can choose from their vast array of seafood and fillers from prawns, to crayfish and crab or alternatively you can go large and opt for the Kilo Boil Platters for 2 people, with the options of 1KG of Jumbo Prawns, featuring appropriately 25 – 30 delicious prawns or 1KG of Crayfish with 14-16 succulent pieces of a minimum 9cm head to tail. On the fried side, options include Crispy Calamari, Butterfly King Prawns, Crab Claws and Golden Scampi, alongside a selection of sides and dips.

Pad Thai Café will bring the complex flavours and fragrant aromas of Thailand to this North London spot. Highlights from the menu include starters of Jumbo Vegetable, Chicken and Prawn Spring Rolls, while for mains bring a section of curries including favourites such as their Signature Pad Thai and Khao Pad (Thai fried rice). These new vendors will join a range of other food stalls, including quality barbecue from Smoketeers, freshly made, hand-crafted pasta from Pasta Mood, award-winning traditional Italian pizzas from Paneria and Pancake and Gelato Bar to satisfy your sweet tooth. Drinks wise, The Upper Place will offer a dedicated corner wine bar from Rolling Grapes, who have a vast selection carefully hand-picked natural wines from around the world, both by the glass and bottle. The main bar comes from The Italian Job who will serve Signature Brew on tap and a regularly changing selection of local and Italian craft beers, as well as a wide range of classic cocktails. The Upper Place has capacity for 130 guests and is open from 11am – 9:30pm Monday to Friday and 9am – 9:30pm at the weekends. The majority of food vendors serve between 12pm – 9pm, with the exception of Pancake and Gelato Bar which is open 11am – 9pm Monday to Friday and 9am – 9pm Saturday and Sunday.

Glarros Oldtown Hotel - L A B O R ATO RY O F A RC H I T EC T U R E Situated within the historic confines of old Tbilisi, the new hotel occupies a space of significance. This winding thorough road, recognized as the “street square,” stands as one of the city’s most ancient relics. It was a vital conduit for numerous historic merchant caravans and artisanal streets. Simultaneously, it functions as a bustling transportation artery and a communal gathering area. Within its bounds, an array of public functions coalesce, forming a tapestry of ethnic, religious, and intercultural diversity. This intricate mosaic serves as a defining feature, subtly woven into the core of the building, which itself embraces the mosaic style reminiscent of the 1970s.

The core objective guiding the design of the hotel’s architecture and interior is to introduce a new dimension to this historical tapestry, seamlessly integrating and reflecting the vibrant milieu. Taking the place of a 1980s administrative building, the new structure emerged. The rationale behind the former building’s demolition stems from the realization that transforming it into a full-fledged hotel would necessitate expansion, potentially disrupting the scale of the historic surroundings. In contrast, the new edifice perpetuates the architectural heritage of the old city. It echoes the tradition of structures that mirror the sharp corners where ancient streets intersect. From these vantage points, one can simultaneously appreciate the imposing facade facing the street and the traditionally adorned inner courtyard.

When safety meets design - TREVIRA CS Textiles that satisfy international fire standards are an absolute must in the hotel sector thus putting a special challenge to hotel designers and interior decorators. They have to respect the fire regulations and at the same time create a stylish interior that has to fulfil design guidelines and distinctive individual requirements. Trevira CS fabrics meet the important fire safety standards that have been defined worldwide and stand out for their permanently flame retardant qualities. It is the built-in safety which makes the difference. In contrast with other fibres and textiles which owe their flame retardant properties to a finish that must be replaced after washing or cleaning, Trevira CS provides permanent safety which cannot be reduced by use, cleaning or ageing. This is due to the chemical structure of the polyester fiber: the flameretardant properties are firmly anchored in the fiber and cannot be altered by external influences.

Trevira CS fabrics can come in 3 different versions. Trevira CS stands for fabrics made from 100 % virgin flame retardant Trevira® material. Trevira CS flex marks fabrics with additional functions and design elements. These can be achieved by using special flame retardant yarns, lending them sound absorbing properties or melange effects, to name just two of the broad range of variations. The fabrics may contain up to 25 % of such non-Trevira® yarns. The Trevira CS eco brand stands for flame retardant textiles with at least 50% recycled material content obtained in either pre-consumer or post-consumer

recycling processes. All flame retardant, recycled Trevira® products are GRS (Global Recycled Standard) certified. Due to their inherently flame retardant properties, Trevira CS fabrics create a safe, attractive and comfortable environment for hotels, restaurants, hospitals, offices, public buildings, railways, aircrafts and cruise ships. A wide range of Trevira CS collections with thousands of designs is available worldwide. The fabrics are used as curtains, drapes, decorative and upholstery fabrics, in interior sun protection and as wall coverings or room dividers. In all applications functionality and performance are a must. However, Trevira CS has a lot more to offer. From a sustainably furnished ambiance, to a luxurious interior or a casual outdoor area, to a cozy retreat – Trevira CS creates a high-end aesthetic, an atmosphere that inspires and appeals to our emotions – and does so with fabrics that are safe.

When Safety meets Color A range of 30 flame-retardant, spun-dyed, UV-stable Trevira CS filament yarns is available for the textile design of outdoor areas. Spun-dyed yarns give textiles an enduring color quality and long-lasting durability. In addition, they are easy on the environment as dyeing processes for yarns and fabrics are no longer necessary, thus saving energy, water and chemicals. The yarns can also be used for making trimmings providing fresh yarns for an old craft.

When Safety meets Sustainability Trevira CS takes multiple approaches to enhance its sustainability performance. One approach is to take care of fabrics that are no longer needed. For some years already, Trevira CS has had a take-back program in place. Used Trevira CS fabrics (post-consumer) or unsold Trevira CS residual materials (pre-consumer) can be recycled as part of the Trevira CS return program. The returned fabrics are mechanically recycled and shredded into torn fibers, which are further processed into nonwovens with various specifications, if necessary, by adding new and/or low-melt fibers. These can be used in a variety of ways, like for thermal and acoustic insulation and as soundproofing panels. Nonwovens for acoustic panels are particularly interesting, becoming soundabsorbing wall coverings, free-standing partitions, ceiling suspensions or decorative objects, to name a few. The long-term goal in developing sustainable products is undoubtedly to enter a circular economy. For this new path, an innovative Trevira CS product development was launched, producing flame retardant fibers and filament yarns from chemically recycled raw material. By recycling valuable materials such as packaging material, waste can be avoided. The raw material obtained from this recycling process is comparable to the original material and can be used again in high-quality products. The greatest advantage, however, lies in the potential that this approach opens up for the future. If we use raw materials obtained by chemical recycling of PET packaging / bottles today, we could potentially recycle textile waste in a similar fashion in the future.

Situated a short drive from Ibiza Town on the way to Saint Josep, this Patio.Bar-Finca, designed by PINTO, serves a blend of Mediterranean and Aegean cuisine. The venue offers a total of 120 covers, thoughtfully arranged across a harmonious fusion of indoor and outdoor spaces. Cœur Tagesbar - M A RT I N O H U T Z A RC H I T EC T U R E The design for Cœur Tagesbar was based on a simple brief from the clients: to bring out the best in a small, complex, and cramped space. We have found our answer through a biological phenomenon, differential growth. As per the principle: a limited area is optimally used through a special cell division. Concept. How to maximize the use of limited space? Both conceptually and visually, differential growth is used as a key element in the restaurant. The growth pattern follows a clear mathematical system, even when it appears to be random. This system is based on an algorithm modeled after natural occurrences and simulated using parametric software. The mathematical understanding of growth evolution was used not only for the light installation as the centerpiece but also for smaller artifacts located on both floors. A similar idea is applied to the interior cladding around the counter. Random patterns or streaks in vivid color variations are created through the chromatization of steel panels, making the contours of the space disappear.

Architecture. The ground floor public area is divided into three zones: a covered outdoor terrace, a dining area by the façade that opens to the outside, and a sociable open bar. Since there is little daylight at the back of the bar, a clear spatial separation was created between the two interior zones. The “room within a room” replaces the missing natural qualities with a unique ambiance. The chromated steel panels have gradients and colors that result from the manufacturing process and add to the uniqueness of the material. The wall cladding turns the back room into a place with numerous spatial experiences through an explosion of colors as the only non-monochromatic element of the project.

The counter is placed longitudinally to the space, abolishing the boundary between guests and staff. Two custom-made, 3D-printed pendant lights carry on the language of both the sphere and the growth pattern. Walking up the steps to the vestibule, guests come across another half-circular growth pattern, complemented by the mirrored wall cladding to create a full circle. The atmosphere created in the day bar has a pronounced impact on its immediate surroundings: a welcoming and relaxed atmosphere during the day, and a mysterious and intimate ambiance at night.

In addition, the bistro plays with space, views, and reflections. Mirrored surfaces and artifacts are installed to expand the compact footprint visually. Different angles, reflections, and counter-reflections create endless variations of views, experiences, and interactions. The combination of the stainless-steel counter and the light installation above, which is surrounded by chromate steel panels, is the centerpiece of the design. The hemispherical light installation is placed above the “open bar” and its reflection appears as a sphere. Guests recognize a whole sphere and so the illusion of a room with double height works seamlessly. The sphere is created from a 28-meter-long, specially cut fabric, which is mounted along a plan also following a differential growth pattern. Three integrated light sources create individual lighting moods.

ETS is committed to driving sustainable practices throughout the industry. It is also looking to increase sustainability across the supply chain – from water and energy through to transport and recovery. Tissue paper production ensures that every part of the raw material – trees – is put to good use. It uses mainly bark and twigs from the lumber industry which are made into pulp that is the basis of tissue paper.

Tissue paper producers are active supporters of the EU Circular Economy Action Plan – a key building block of the European Green Deal, which has a number of sustainability targets including transforming the EU into a modern and competitive economy. The goal of the Action Plan is sustainable growth and it lays special focus on resource efficiency with more waste prevention, reuse and recycling and the phasing out of wasteful practices like landfill. This goal of enabling sustainable consumption and production is also reflected in the United Nations Sustainable Development Goal 12: Responsible consumption and production. Tissue products have an important role to play here. They are essential for people’s health and hygiene. While paper is the most recycled material in Europe, with recycling rates of over 70%, tissue paper, because of its applications in toilet paper, tissues etc, is usually a single-use product which typically goes to waste after use. Tissue products nevertheless fit neatly into existing waste management schemes and can in many cases provide a benefit such as incineration with energy recovery or composting.

SUPPORTING CERTIFICATION SCHEMES Third-party certification is one of the best ways to ensure that suppliers meet recognised standards. It lends credibility to the sector and offers reassurance to both customers and consumers. Most tissue producers support the different international and national forest certification schemes and over 80% of the forests owned by paper and lumber companies in Europe are certified. Some tissue producers have chosen to carry labels on their products in order to show their high environmental credentials – such as the EU Ecolabel, the FSC and PEFC labels and regional labels including Nordic Swan and Blue Angel. The paper sector is also signatory to the Legal Logging Code of Conduct which condemns illegal logging. The EU timber regulation furthermore upholds industry standards and ensures that only products from legally sourced wood are sold within the EU. Some 11% of timber felled in the world is used to make paper, and 83% of Europe’s paper mills are certified by an environmental management system.

DRIVING CIRCULARITY UP AND DOWN THE VALUE CHAIN Many tissue paper producers are supporting the development of new, circular business models using innovation to create closed-loop products and processes. This will serve to increase product recovery and minimise waste. There is a focus on reducing greenhouse gas

emissions, transferring to renewable energy and decreasing water use. Some 58% of Europe’s pulp and paper industry’s energy consumption already comes from renewable biomass, and it is proud to be the largest single user and producer of bio-energy in Europe. The sector also continues to work on reducing its impact on water consumption and is an active partner in the development of water stewardship. Paper making machines have reduced water consumption by 30% over the past 10 years as a result of more efficient water circulation, and the amount of water needed to produce one ton of pulp has fallen five-fold since 1970. Many individual producers are promoting zero waste to landfill, eliminating waste, reducing packaging weight and fostering recyclable packaging and the use of recycled content. They are also exploring innovation in product design and development. In the area of ‘reduce’, the industry is seeing the emergence of new products that use less material for the same functionality. It is also witnessing new sustainable products that use fresh, wood-based fibre, recycled fibres and alternative fibres. It is important to promote circularity in this regard in order to increase the availability of paper for recycling as a secondary raw material. Recycling plays an important role in the sustainability of the paper cycle. Tissue paper producers are working together with their packaging suppliers to turn waste into a resource through collection, sorting and recycling.

Modernist elegance meets panoramic views at Montreal’s new culinary destination - S I D L E E A RC H I T EC T U R E Sid Lee Architecture unveils the interior design of Hiatus, a project born from a collaboration with A5 Hospitality and local artisans, for Ivanhoé Cambridge, aiming to breathe new life into the city’s business district. The ambitious makeover sees the complete transformation of the iconic 1 PVM skyscraper’s 45th and 46th floors. With the introduction of Hiatus, the architecture firm upholds its desire to reinvent Montreal’s downtown core through the lens of creativity.

International Style Hiatus both honors and builds upon PVM’s design legacy, which dates back to the early 1960s. To evoke this meeting of history and modernity, Sid Lee Architecture revisited the mid-century modern

movement with a keen eye for the “now”, updating the era’s signatures — wood paneling, reflective surfaces, and tubular metal accents — with contemporary elements, like playful iridescent finishes, graphic floral patterns, and colourful stonework. Rather than a mere fusion of the past and present, Hiatus exists beyond time or trends, occupying a space of pure sophistication. In addition to invoking PVM’s heritage, the project also pays homage to the building’s original design cues: most prominently, the infinite grid. The cross-shaped hallways, which connect the elevators and kitchen to the wider dining area, add a unique dynamism to the space, intermingling the movements of guests and staff. Reflections of PVM’s grid structure also appear in the establishment’s suspended ceiling, which lends an expansive quality to the space, as well as a graphic aspect that ties back into the international style.

Liminal Space As guests step off the main elevator into the 43rd floor service hallway, they’re greeted by an opulent wall-to-wall mirror. Circular cutouts in the vibrant patterned curtain artfully dress this large reflective surface, offering guests a self-portrait moment as they wait for the second elevator to lead them to Hiatus.

This liminal space also features the same essence of red oak displayed on the upper floors, giving guests a taste of what’s waiting for them above.

Hiatus Spanning the tower’s 45th and 46th floors, Hiatus is a single establishment that serves as a restaurant, bar, cafe, as well as a series of catered meeting spaces integrated into PVM’s business campus. Leading workers and visitors alike to the top floors of PVM, the lively space inspires new daily rituals and breathes new life into the heart of Montreal’s business district. The space offers panoramic views of Montreal, from river to mountain and beyond, including glimpses of some of the city’s most iconic landmarks, including the Molson brewery, Farine Five Roses, and Habitat 67. For visitors, Hiatus delivers a zestful dining experience, and for PVM workers, it’s a place to extend their workday, where they can host meetings with clients or unwind with a “5 à 7”.

45th floor For this project, Sid Lee Architecture transformed PVM’s 45th floor - originally constructed as a mechanical room - into a “speakeasy” experience, making use of creative ingenuity to leverage the space’s unique challenges, including a cross-shaped plan, limited floor space, and low ceilings, into an appealingly intimate atmosphere. On this floor, diners take in soaring views of Montreal through a minimal ribbon of windows that stretches 360 degrees around the space. Here, mirrored mullions, banquettes upholstered in celeste colour leather, and Lambert & Fils custom table lamps, nod to the building’s modernist heritage, while a mesmerizing floral carpet, which greets guests as they enter the establishment, lends a fresh burst of colour and pattern.

46th floor A blackened staircase leads guests from the 45th to the 46th floor, while serving as an optical palette cleanser between the two spaces. Compared to the calm and compact atmosphere of the 45th, the 46th floor astonishes guests with vaulted ceilings and full windows, which fill the space with ample sunlight by day, and glittering city light by night. Throughout, red oak tables and chairs upholstered in black leather, designed with Atelier Vaste, harken back to the building’s 1960s origins, while contemporary details, like stunning Mystic Brown and Rainforest Green marble tabletops, steer the design narrative gently towards the current moment. In the dining room, two-thirds of the walls are finished in the same wood essence as the furniture, while their lower section is adorned in flamed Pietra Royal limestone. A ribbon of strategically positioned, smokey reflective surface connects these two materials and provides seated guests with glimpses of what opposes their field of view.

Boardrooms The Eastern wall of the 46th floor hosts a series of fully catered meeting rooms, operable throughout the building’s business hours. Offering the same spectacular views as the rest of the establishment, these boardrooms provide PVM workers and visitors with an exciting and elevated space to meet with clients or colleagues outside of the usual office environment. Floor-to-ceiling soundproof glass walls connect these rooms to the rest of the restaurant, while full-length Lelièvre tweed curtains can be pulled for more privacy.

Biophilic design Hiatus revels in awe-inspiring vistas, while design elements come together to celebrate Montreal as a city surrounded by nature, seated between river and mountain. The space’s biophilic design features emphasize this analogous connection between city and nature. The establishment’s two bars also serve to highlight this duality: the solid brass and backlit Crystallo Bianco bar on the 46th floor offers a breathtaking view of the St. Lawrence River to the South, while the North-facing bar on the 45th floor has an exquisite view of Mont Royal, the city’s pièce de résistance.

Illuminated by 3000 glass pieces in a jewelry-inspired Lasvit Chandelier - M A M O U N I A’ S C E N T E N N I A L Marking its 100th anniversary, the renowned La Mamounia hotel, situated opposite the Kutubiyya Mosque in Marrakesh, has revealed newly refurbished interiors this October. Lasvit, known for bespoke lighting installations, created three hand-made lighting pieces for this legendary location. Collaborating with French design studio Jouin Manku, these new installations are a tribute to Moroccan tradition with a touch of global sophistication. An impressive near-nine-meter-long chandelier dominates the lobby, while light installations reminiscent of tapestries enhance Bar Majorelle, bathing La Mamounia in a refined glow.

A Grand Berber Tribute in the Lobby The lobby of La Mamounia sets a majestic scene. The vision of Jouin Manku was brought to life with “Le Chandelier du Centenaire,” a striking lighting installation suspended less than a meter above the ground at the lobby’s heart. With its intricate design, this chandelier honors the art, traditions, and especially the Berber women of Morocco, drawing inspiration from traditional Berber necklaces. The installation resembles two intertwined necklaces and incorporates an extensive 300 meters of electrified cables braided in red strings —a color of profound significance to the Berber community. The glass elements, evoking the beads on these strands, are individually hand-blown and handshaped in Lasvit’s Czech glassworks. The installation comprises 3000 of such pieces in three sizes and eight distinct finishes. Some glass elements are braided in red to echo a traditional necklace, while others use silver to accentuate the crystal sparkle. Central to the chandelier are braided red cords adorned with authentic Berber silver pendants crafted by Moroccan artisans to underscore the cultural significance of the piece.

Bar Majorelle: A Tapestry of Light and Oriental Tribute A trail of light in the newly refurbished hotel guides guests to Bar Majorelle, named in honor of Jacques Majorelle, the renowned French painter and Marrakech enthusiast, who contributed to the hotel’s expansion in the mid-1940s. Here, Lasvit and Jouin Manku have installed two lighting features. The first acts as a distinctive wall light: hand-blown glass petals in rich gold and sage green are set between a mirrored backdrop and engraved glass, creating an effect akin to a luminous tapestry. Once lit, these installations cast a captivating

golden light, altering the bar’s atmosphere. The installation placed on the bar brings a modern edge by using prisms - triangular glass segments designed to disperse light into a spectrum. This installation offers a visual complement to a delicious selection of Mediterranean cocktails that are served here. The latest collaboration between Lasvit and Jouin Manku continues a partnership that began a while ago. Previously, they had jointly reimagined spaces within La Mamounia in 2020, including the Tea Room and the Italian restaurant. Their work has also spanned multiple renowned sites, from Alain Ducasse’s restaurant in the Morpheus building in Macau (2018) to the private Mayfair Residences in London (2017), enhancing each with a signature blend of elegance and contemporary design.

Described by the organisers as ‘the most important and influential design competition for food and beverage spaces worldwide’, and judged by a panel of 40 of the most influential personalities in design, hospitality and lifestyle globally, this annual edition attracted 1130 entries from 61 countries. This year sees winning projects from Europe, the Middle East, Africa, the Americas, Australia, the Pacific, and Asia, however Cicchetti Knightsbridge is the only UK venue to be commended.

Spotlight on tech trends in latest look at hospitality industry - R E S D I A RY Restaurant bosses and staff across the UK and Ireland are being given the opportunity to have their say on how the industry can best use technology to help it thrive. Leading international online booking and table management software provider ResDiary has launched its latest survey, Beyond the Booking: Hospitality Tech Trends, to gain insight into how the industry uses and views technology as restaurants and bars battle for custom. The survey is the latest piece of industry research from the company, whose system is used by more than 8,000 venues in the UK and Ireland. Previous reports found more than a third of restaurants were never fully booked during the festive season while 1 in 20 UK restaurant bookings in January and February of this year resulted in no-shows. ResDiary CEO Colin Winning said: “The Beyond the Booking series of reports are quickly becoming the go-to barometer for the restaurant industry to set their expectations for the season ahead. “In this Hospitality Tech Trends survey, we are looking to find out the role technology plays – and could play – in venues as they strive for success in what is an incredibly strong market. “Establishing how the people behind the success of restaurants across the UK and Ireland view the next 12 months will help companies such as ResDiary ensure those at the forefront of delivery are as equipped as they can be.

“We are seeing more and more evidence across the industry that diners and drinkers are looking for far more than just food and a beverage. They want an experience, and a major part of that experience derives from customer service. By gathering the input of the sector, we are better able to serve the needs of both them and the people that keep their businesses alive.” The survey, which is open to anyone in the hospitality industry, encourages respondents to share their thoughts on the current and future way they work with technology, as well as whether they feel their venue has the right equipment to operate efficiently. Colin added: “The hospitality industry is facing many significant challenges, which is something that will not come as news to those who rely on it to make a living. However, by engaging with the people at the forefront of the sector, we will hopefully be able to alleviate some of those challenges.”

New self-ordering technology for Rangers F.C. - LEVY UK + IRELAND Rangers F.C. has introduced new self-ordering technology at Ibrox Stadium, launched in collaboration with catering partner, Levy UK + Ireland, the sports and entertainment division of Compass Group UK & Ireland. The stadium, which has a capacity of over 50,000, will see new ways of ordering refreshments using digital kiosks. The first of its kind for stadiums in Scotland, the technological improvements will speed up matchday service times, with fans at the Glasgow ground being able to order their own food and drink using the interactive screens and pay using contactless technology. Visitors can purchase refreshments from 16 selforder units in the Copland Road Stand, speeding up transaction times and reducing queues. Orders can then be picked up from two collection points. James Bisgrove, Chief Executive Officer at Rangers F.C. said: “The introduction of self-order units at Ibrox Stadium is really exciting as the innovative screens maximise the fan experience and evolve ‘matchday’ across all levels.

“The new, user-friendly kiosks are in addition to traditional counter service; the technology has many benefits, including allowing supporters to enjoy quicker service times and being able to order, preorder and pay for pre-match and half-time food and drink, all in one transaction. Located within the Male Atoll 1 island, Infinite Maldives has been designed to embrace the Maldivian vernacular and champion biophilic sustainability through using natural locally sourced materials and timber. Paving the Way in Luxury Hospitality - H A B I T U S D E S I G N G RO U P It is reasonable to wonder what a new five star integrated resort in Manila that includes 600 hotel rooms, restaurants and bars, gaming, retail and leisure has in common with a supper club in Copenhagen, a French restaurant in Odense and a concept for the redevelopment of a grand residence in the UK into a hospitality destination. The red thread is Habitus Design Group. The company was founded in 2016 by Samantha Drummond who had earned her spurs orchestrating the planning and interior design of the iconic Marina Bay Sands in Singapore. “We like to set new standards for the luxury experience wherever we’re working and whatever the project,” says Samantha. “We are totally comfortable designing very large-scale resorts, but also a number of our projects are boutique gems. The all-important factor to us is that we make a difference. I was delighted when a client recently commented that our work had brought a piece of Milan to the retail scene of his North European city.” Solaire Quezon City in Manila will be opening next year. Numerous wining and dining options will include

a restaurant and sky bar on level 33 with a spectacular East meets West aesthetic as well as an enticingly serene Korean grill restaurant with a sophisticated Asian design. However, it is likely to be an artwork in the central 10-storey atrium that will come to epitomise the resort. Samantha commissioned artist Nikolas Weinstein to realise her idea of a semitransparent sculpture transitioning through the space and taking on different personalities through day and night. The result will be the tallest glass sculpture in the world, weighing in at 11.7 metric tons and the equivalent of 25 km of glass if laid end to end.

Meanwhile in the Danish city of Odense, a pedestrianised quarter is receiving a stylish makeover at the heart of which there will be a new French restaurant designed by Habitus. While the name of the French chef and many of the design details are still under wraps, Samantha says the design will clearly belong within the luxury French vernacular and will be totally unlike any other restaurant in Odense. Some 90 miles away, the new Copenhagen supper club, backed by former X Factor judge, Remee Jackman, and the Michelin Star Chef Kav, is on-site. Of course, Copenhagen is already steeped in high-end restaurants so the challenge for the designers was to create a destination distinct from the competition. Their response has been to design an all-sensory experience where scents, projections and exotic finishes together with a creative menu and specially curated music will take diners into another world.
