The most anticipated dining experience in Asia, Gordon Ramsay Bar & Grill in Sunway City Kuala Lumpur is opening its doors at Sunway Resort this month – becoming the iconic chef’s inaugural restaurant in Malaysia, and the first Gordon Ramsay Bar & Grill outside the UK. A Performance in Three Acts With 50 dishes - A LC H E M I S T -

Written by - Urban Nilmander Photos - Carin Tegner/Soren Gammelmark/ Claes Bech Poulsen/Kim Holtermand A meal can last for seven hours where guests are surrounded by violinists, dreamlike visual projections, and challenged by provocations like chicken in a cage. 50 dishes are served and today 50,000 guests are waiting to enter the stage.

Rasmus Munk has always been fascinated by theater, by the strong visual experiences that a scene provides. Experiences are touched by what happens when you are served a beautiful, incomprehensible, or challenging dish.

It is fantastic that guests who do not normally go to this type of restaurant but like to go and experience culture come to us. He says it is a crossover, a melting pot that feels extra fun.

We meet at the big international food fair Madrid Fusion where he spoke about his restaurant

Alchemist in the middle of Copenhagen to thousands of chefs, food producers, and journalists.

His thoughts on a new way of relating to food were met with cheers but also by some chefs shaking their heads.

I hope I can influence young chefs to think in new directions. And it can happen on a much smaller scale than my 22,000 square meters. The important thing is to dare to challenge both yourself and the guests, says Rasmus Munk.

A visit to Alchemist is a journey into yourself but also provocations that sometimes lead to guests leaving the room. The visual and tasteful journey goes through different rooms and can last for seven hours.

A dish can be a foam that is frozen to -90 degrees called “greed”; no matter how fast you try to eat the foam, it has time to melt before it reaches your mouth.

Another is a big eye called 1984 and is about the surveillance society, a third is a lung from a lamb that wants to tell about smoking and a fourth dish is an ice cream made of blood and blueberries served in the form of a drop and a QR- code that tells you how important it is to donate blood.

I have a naive dream of being able to change the world for the better. As a chef, today you have an enormous impact that I think we should use. But of course, the food should also taste fantastic, we want to give the guest something they have not experienced before, says Rasmus Munk.

Today he has a team of 102 people where a large part consists of scenographers, musicians, visual artists, graphic designers, and industrial designers.

In part of the performance, the guests are taken to a large disco room in bright pink where you can dance to music by Barry White, or through an all-black room to the large planetarium.

My part in the concept is to ensure that the guests get food that tastes good and is exciting, I always taste everything every day before it goes out to the guests, but I am also very involved in the cultural, visual experience and how everything interacts, he says.

He designed the restaurant in a large hangar-like building on Refshaleøen, a room that was previously used for the stage construction for the Royal Ballet.

For the inauguration, he had invited his great idol Ferran Adria, the man behind El Bulli, the restaurant that changed the culinary world and still stands as a model for many chefs around the world.

Ferran Adria said after the evening on Alchemist; There are only five or six places in the world that can do what Rasmus does here. This has been one of the most exciting meals I have eaten in the last ten years. Rasmus has a lot of hard work ahead of him, but if you continue like this, he will be a reference for others for the next 20 years. “ Of course, he is right. It feels like we are only at the beginning of what this can develop into, says Rasmus Munk.

So, there is this thing with provoking the guest.

Chicken cage with a foot from a chicken sticking out, the big eye, the lung from a lamb, or the tongue. Or plastic-like food to draw attention to the growing plastic problems in our oceans.

It has probably happened a couple of times that some have been upset and left. But it’s not about upsetting the guests - it’s about getting them to think about how

we treat animals but also that it’s important to donate blood to save people. It is very common for guests to come to me afterward and tell me that they will never forget the experience they had at Alchemist and then we have succeeded, says Rasmus Munk.

He also says that they dared to touch the hottest potato you can in Denmark - the pig.

Denmark has a large production of pigs that are sold all over the world. But they have also received a lot of criticism for their handling of the pig.

We served a dish where we took the part of the pig that is removed and is at the neck of the pig. Some are removed because this is where antibiotics are injected.

We served it with a small dish of liquid that we said was an antibiotic. Some guests were very upset, it was like touching the soul of the Danish people, he says.

Again, he emphasizes that it is what the total experience Alchemist is about, the provocation is only a part.

For me, it is an interesting balance to work with fine dining and still tell the guests something. And that’s where the whole concept of having culture and strong visual experiences at the restaurant comes in.

And he has plans to be outside the fine dining restaurant and cook where it makes a difference. He has worked with something called Wish Christmas (Önske Jul) where he serves food to children and young people who are having a hard time.

Of course, it is “ordinary” food I make then, but seeing the children’s faces means a lot to me. And I intend to continue with that in new forms, he says.

Alchemist already has two Michelin stars, and many reviewers believe he should have three.

It is of course nice to get grades for what I do and that so many want to visit us. But the most fun is that

we have succeeded with the ambition to use food to discuss the important things in life, says Rasmus Munk.

The menu and everything that happens visually must also be constantly changed when new issues arise that require attention. At the time of writing, the war in Ukraine has been commented on.

Munk is also building an open library with educational material on gastronomy, sustainability, and science, which he calls Tastelab.

And the waiting list to visit Alchemist is only growing and growing. 50,000 guests are waiting to get one of the 48 seats at what is today Denmark’s most expensive restaurant.

Three of his favorite dishes 1. The perfect omelet A distant cousin to Albert Adria’s legendary olive liquid. Munk’s exploding omelet is a shiny, fluttering little creature no bigger than a strawberry. The omelet is held together by a thin membrane that opens and gives a heavenly taste when it reaches the mouth.

2. 1984 A wink to George Orwell’s 1984 as a commentary on our new digital surveillance society is served in the form of an eye with a pupil filled with asparagus cream, pistachio, and raw Japanese fish. The pupil has a coating of caviar and fisheye jelly 3. Double trouble Jellyfish are considered an invasive species in Nordic waters but are often on the menu in Chinese kitchens. At Alchemist, this science-fiction-like creation is served raw along with green cream and other accessories.

Whittlebury Park unveils new menu at award-winning Murrays restaurant - M U R R AYS R E S TAU R A N T -

Whittlebury Park, a four-star hotel in the rolling Northamptonshire countryside, has unveiled a new food and beverage menu at its award-winning Murrays restaurant. With summer approaching, the menu is designed to introduce guests to seasonal variations within its dishes and give them the opportunity to experience the latest blends of new and inspiring flavours.

The menu is available from June and includes both a six-course tasting menu and an à la carte menu. It offers guests delicious dishes such as Lerwick line caught haddock with Evesham peas, Warwickshire dill and nine-year-aged balsamic, as well as White Lakes ricotta ravioli with Leamington Spa sorrel, Staffordshire courgette and pine nut.

Starters include delicacies such as wild shot wood pigeon with Bedfordshire allium and hazelnut, and Cornish sardine fillet with Peterborough tomato and brioche. Delights including strawberry and cream souffle with Oxfordshire strawberry and Wells Farm cream or passion fruit meringue pie are available for dessert.

Guests making the most of the tasting menu can also enjoy a selection of wine carefully chosen to complement each dish. This includes Kiwi Sauvignon Blanc, 2020, from Marlborough, New Zealand, The Crusher Pinot Noir, 2018, from Clarksburg, California, and Altadonna Chianti Classico DOCG, 2019, from Toscana, Italy.

The menu was curated by Head Chef, Harvey Lockwood, who trained under Michelin-starred chefs Daniel Galmiche and John Campbell and who led Murrays to its third AA Rosette in October 2020 – one of only two restaurants in Northamptonshire to hold the accolade which recognises food quality excellence across the UK.

The tasting menu is priced at £75 per person, with wine flights available for an additional £42 per person, while the à la carte menu is priced at £60 per person for three courses.

As well as Murrays, Whittlebury Park is also home to the luxurious Whittlebury Spa, which was recently named as a finalist in the Good Spa Guide Awards 2022, and a 36-hole championship golf course.

The Folio Kitchen combines the contemporary and classic within a fresh and inviting colour palette.

Walls and columns are clad in whitewashed brick and the accent colour is Cambridge Blue with punches of ochre orange in the leather upholstery. A Calacatta marble sharing table together with marble topped dining tables are elegant and sophisticated.

They also provide a counterpoint to the traditional millwork of the roof lantern recess and the timber banquets as well as the geometric black and white tiling to the floor, all of which are a nod to historic Cambridge. A London-based luxury design studio for the hospitality, commercial, residential and superyacht sectors Bergman Design House has an enviable portfolio of international projects at some of the most exclusive addresses. Co-founded in 2017 by Marie Soliman and Albin Berglund, the firm is regarded internationally as leading creative movers and shakers in the industry. With over 25 years of combined experience, Marie and Albin, a dynamic husband and wife duo, have created a luxury design studio which specialises in the hotel, commercial, residential and superyacht industries.

Bergman Design House has a wide range of inspiring projects opening in 2022 and beyond. These include The Lund Collection, a new luxurious cottage in the Cotswolds for the ultimate private UK escape opening in February 2022. Marie is the mastermind behind all design aspects of the new London-based The Other House Hotel, a private members hotel which opens in South Kensington in April 2022 with another Covent Garden property in the pipeline.

Bergman Design House designed BXR, the high-end boxing gym located in London’s Marylebone along with Sweat by BXR in Doha, Qatar. Next up is BXR in Bishops Gate London, which is scheduled to launch in February 2022 and will be London’s highest gym.

The Other House is a new private residents club launching in early summer 2022 in London’s South Kensington by Naomi Heaton and designed

by Marie Soliman of Bergman Design House. A second location in Covent Garden is also underway.

The Other House will establish a new sector of Residents’ Clubs blurring the lines between hotels, serviced apartments and private rentals.

Bergman Design House is also revolutionising the bar scene in Vancouver, Canada. After successfully designing and creating Laowai, a popular speakeasy in the city’s China Town, a second location is now in the works. Specialising in floating hotels and private superyachts, Njord by Bergman Design House is a separate component of this luxury design studio with 7-star projects underway.

“Our aim was to develop something different and powerful yet comfortable and relaxing” says Soliman. The aim is to let guests feel like a resident when they are in town and give them experiences to remember. In addition to spacious and comfortable rooms, members will enjoy an all-day dining bistro, a destination bar and a glamorous spa.

It is fast-approaching East Coast Distilleries’ second birthday, and they now have two delicious gins in their main range along with a changing line up of limited-edition runs.

The distillery, based just a short walk away from the scenic backwaters of northeast Essex, launched in June 2020 at a time when most bars, restaurants, and hotels - their intended main customer base were sadly all closed due to the Covid-19 pandemic.

However, the team have been amazed by the local support, and as one loyal customer tells them - it is always gin o clock!

Simon from the team made up of two husband and wives says “It’s not been the start we imagined, but it’s been wonderful to get to know our customers locally and they made it obvious that, when it came to developing our second gin in the Tide’s Fortune range, it was important to continue to use local ingredients wherever possible. The Elder Pear Dry Gin uses traditional botanicals along with locally foraged Alexanders, dried Elderflower, local honey, and pears grown just up the road in Great Holland.

Absolutely delicious served with ice, a slice of pear and an elderflower tonic water. We are really pleased with it.”

“It’s an exciting time for us as we can now get out and about. We also have lots more people coming to see us” says Ben, one quarter of the creative team.

“We run free tours every Saturday so people can learn more about the process and the botanicals that go into our products. The visit is rounded off with a little tipple. We’ve been doing these for local bar staff and restaurateurs too, and they have loved leaving armed with even more knowledge to pass onto their customers. It’s also great to see local bars, pubs and restaurants start to bounce back and a real desire to stock local wherever possible.

Hopefully the lasting positive of the past few years is that people relish what’s on their doorstep and we have really loved getting to be part of a community of local makers. ”

BLINK Design Group, the global interior design visionaries and high priests of placemaking, have been tasked with the creation of the UAE’s latest W Hotel; W Dubai Miina Seyahi. Located in the heart of Al Mina al Seyahi - the legendary ‘Port of Travellers’ district of Jumeirah Beach, home to Dubai International Marine Club and its 300-berth marina - the modern yet bohemian hotel is inspired by traditional Dhow boats, the romance of travel and the ancient Arabic storytelling tradition of AlHalqa.

Once a thriving hub of the copper trade, where AlHalqa storytellers would weave their yarns to circles of spellbound travellers, the Port of Travellers has been BLINK’s overarching inspiration for the hotel, together with the graceful swooping shape of the traditional Dhow boats.

The 31-storey eclectic yet retro property houses 291 guest rooms and 27 opulent suites, a spectacular lobby facing the marina, an infinity pool and lavish BAR-B spa, four meeting rooms and a selection of innovative dining concepts.
