Aria Melanie on the Lake MODERN MEDITERRANEAN CUISINE By Su-Jit Lin-DeSimone In today’s hyperbolic world, it’s easy to call a meal lifechanging. What’s unusual is when it’s actually true. This was what happened when Fred Mandato, owner of new restaurant Aria Melanie on the Lake, met his talented, Italian-born chef Fabrizio Perinelli. As a frequent patron of the restaurant Perinelli had been working at, Mandato had already been a long-time fan of this exceptional chef. When they finally met face to face during Perinelli's nightly rounds through the dining room, the connection was immediate. Over the course of time, this serendipitous meeting blossomed into kinship and informal dinners that showcased the breadth of Perinelli's talent and experience. Perinelli's passion for Sicilian cuisine was fueled during his apprenticeship in NY City under an acclaimed chef from Catania. Mandato soon found himself inspired to chase a dream he'd always cherished. He was finally ready to become a restaurateur, offering phenomenal food in an elegant setting at great value. “After 40 years in the financial arena, it was time to follow my heart.” Mandato confided, gazing at the perfectly framed view of a picturesque lake, a view that made even Canadian geese look poetic as they slid into the water before us. “With Fabrizio, I knew I finally could. When this location (formerly occupied by The LakeHouse) became available, I immediately knew this space would be perfect." With all signs converging, he knew this was it. From there, it wasn’t long before the building underwent renovations creating a setting worthy of the romantic vista. Muted, serene tones were incorporated into the elegant décor for multiple, intimate dining areas. Dove grey decking and an updated all-season canopy that allows for air-conditioning, heating, or open breezes makes lakefront dining available all year long. Comfortable, upscale furnishings overlook the protected lagoon visible only from private bridges and properties. “With a view like that, the food needs to deliver!” Mandato laughed. “But I wasn’t worried.” Looking at his creative partner fondly, he said, “I already knew Fabrizio was a fabulous chef.” Now, it’s time for the rest of the world to know. With a menu that showcases Perinelli’s classical training, indepth experience with authentic Sicilian cuisine, and the vibrant flavors of the southern Mediterranean, it’s evident that this is not your average Italian restaurant. In his kitchen, fresh pasta is made daily. Saffron-infused pappardelle and hand-stuffed ravioli are always on the menu, along with gnocchi, a throwback to his childhood in central Italy. “I had to make gnocchi with my mom every Sunday; it was routine,” the chef chuckled, his lilting Roman accent rippling through his words like the breeze over the lake. Naturally, I had to ask about Sunday gravy, a Long Island Italian tradition. “I made some a few weeks ago...and it went fast!” he answered. After hearing how it was made, it was no surprise that the large pot

was empty in no time. Pulled brisket and Sicilian meatballs make all the difference, the latter a mixture of ground veal, pork, and beef which give it incredible flavor. In that mix, a minimal amount of breadcrumbs, a unique pairing of thyme and capers, and oven-roasted tomatoes that Perinelli prepares in-house. Another Sicilian specialty given a twist is the arancini, a delicious departure from the meat-and-peas-stuffed traditional version. Perinelli’s features porcini mushrooms and risotto, Gruyere instead of Parmigiano-Reggiano, and is served with a smoked Gruyere fondue seasoned with thyme, truffle salt, and shaved truffles. This premium ingredient is also prominent in the imported burrata cheese, a juicy, buttery, and creamy exercise in decadence. The focus on quality ingredients is just as important here as technique. The duo prides themselves on their sourcing, because “we don’t [do] shortcuts,” Perinelli stated bluntly. “I only use chicken stock for the base of chicken dishes, and when I make carbonara, I do it the old-fashioned way, with guanciale and egg yolk—not cream and fillers. The duck confit we marinate for three days with anise, fennel, and salt, then braise it in its own fat slowly over low heat. We get a lot of our vegetables from a farm in Stony Brook, including the eggplant for our caponata, which has become very popular.” (“It’s out of this world!” raved Mandato) “Our steaks are from a local butcher who gives me these beautifully marbled cuts. You should see them!” As the chef hurried to the kitchen to retrieve one of these prized pieces, Mandato added, “Our seafood suppliers are all local, too, and we offer only sushigrade tuna and the very best calamari. In fact, we refuse lower-grade seafood and offer chateaubriand cuts of beef despite smaller margins, because we really just want to offer the very best quality and

experience.” That dedication to their diners is why prices are intentionally kept exceptionally reasonable, with entrées starting at $16. You can enjoy a 22-ounce cowboy steak or 12-ounce filet with house-made truffle butter for only $40. It’s why you’ll find Mandato personally answering phones and greeting customers every night. It's why Perinelli gladly takes special requests in advance, such as gluten-free pasta (look for handmade chickpea pasta in the future!) or off-menu dishes like a brilliant fra diavolo and a branzino that reminds him of home. Aria Melanie on the Lake, named after Mandato's granddaughters, is rooted in bringing dreams to life, from simple ones like a nostalgic dish for customers, or a lifelong one like that of Mandato and Perinelli. It may be the beautiful lake view that initially attracts, but it will be the exceptional Mediterranean cuisine that will keep you coming back. Congratulations Fred and Fabrizio on a dream well done!

The title of his article written for The List Magazine is “The Most Beautiful Place on Long Island”, where he is referring to our Great South Bay. For those of you who have grown up on the bay, as kids you may remember when it was filled with an abundance of sea life which has dissipated through the years. Save the Great South Bay is a not–for-profit advocate for getting the bay clean again. How wonderful to think we could return the sea life to the way it once was. • 1 cup fresh or canned pumpkin puree

• ¼ cup plain yogurt

• 1 tbsp. honey

• 2 tbsp. coconut oil

Cleanse your face so it is free of all make-up. Wisk ingredients together until smooth. Splash warm water on your face then blot dry with clean towel. Apply mask all over face and neck being careful to avoid eye and lip area. Leave on for 15 minutes then remove by rinsing with lukewarm water. It is best to avoid using make-up immediately after. Discard any leftovers.

Whisk all ingredients together and apply generously to damp hair. Cover with a shower cap (or saran wrap) and leave on for 15-20 minutes. Shampoo and condition as usual. Leftovers can be frozen for future use.

The Most Beautiful Place on Long Island BY MARSHALL HOWARD

For those who have not made the 1.25 mile trek from Smith Point west, or better, via boat with a cautious, law abiding, and experienced captain, THE BREACH (or as people are calling it today, Bellport Inlet) is now arguably the most beautiful place on Long Island.

This inlet has been called Sandy’s One Gift. It was also a kind of miracle. Even as the winds of Sandy were dying down, I got a cell phone call from a marine scientist, ecstatic that there’d been a breach, and precisely where The Army Corps of Engineers could not immediately fill in, and precisely where it needed to be to flush Bellport Bay, which was in the process of dying. And it also happened right in The Otis Pike High Dunes Wilderness Area, which is part of Fire Island National Seashore. Another set of rules for The Army Corps pertained to when a breach happened on National Park Service land. According to The Breach Contingency Plan, there had to be a 60 day observation period during which the breach would be monitored for stability and flooding potential. It was high drama. At the time, virtually every public official from the federal to the local level were calling for the breach’s immediate closure. It was the people, though, arms joined with the scientific community, who held firm. Save The Great South Bay, the environmental non-profit I Co-Founded with a high school classmate, Howard Ryan, at our 35th High School Reunion some ten weeks earlier, ballooned quickly to 650 members (we are currently over 10,000). We were witnesses to what this new inlet had brought the bay: bait fish, sea birds, then seals, turtles, swooping ospreys and bay bottom like no one had seen in decades. A rebirth. What the bay was and could be again and all because for once nature was allowed to flourish. Charlie, in this long effort to keep this breach open, despite enormous political pressure and with all the fear there was that the breach was causing further flooding, is a hero in all this. Daily monitoring of the breach and of locations up and down the eastern seaboard proved definitively that this new inlet was not a measurable factor in

causing additional flooding. Instead, nature was flowing into The Great South Bay, at least on its eastern end, south of Bellport. There had been an inlet there before. That is why Bellport was at all a “port.” During the colonial era, ships sailed in and out of The Great South Bay through Smith’s Inlet or, as was on some maps ,“New Inlet”. Timber was Bellport's major export. Once again, Fire Island was breached, but that is what barrier beaches do – they breach and reform, shift and roll. Sandy pushed Fire Island 75 feet north, in effect. We build on sand, yet we try in vain to keep the sand in place. Because this new inlet formed where it did, this was allowed to happen. The fishing by the new Bellport Inlet is quite good; there is no shortage of bait fish entering the bay here, followed of course by the predator fish. The water is spectacular and teeming with life, a stark contrast to much of the bay, which is still plagued with brown tides and which remains quite sick. The water here contains mollusk beds, eel grass recovering, crabs, and clear, almost Caribbean water. But one must obey laws and customs, as it is illegal and foolhardy to enter this natural inlet. Just last week, a boat capsized in the inlet with 8 aboard; thanks in part to a 911 call from none other than Isabella Rossellini, a local environmental hero, and of course a famous actress, who now lives in Bellport, all were rescued. We can’t assume we’d be that lucky. In sum, you must visit this place, by foot, or, cautiously, by boat. Here, through a natural miracle, we can catch a glimpse of what the bay was, even before man ever set foot here, before man ever began to think he could control nature. If you just see it, you can help protect it against the arrogance that nearly prevented this resurgence of nature, for you will never forget it.

On August 4th, 2012, at a 35th Sayville High School Reunion, Save The Great South Bay was born. All we could talk about that night was what had happened to our bay, and what we could do to fix it. The next morning, we were trying to find all the scientists and environmental advocacy groups that were working on the problem. THE LASTING IMPACT OF

Good Teachers The below article was written by a student, Kayla Vdokakes, for the Barnes & Noble My Favorite Teacher Contest. Students write an essay, poem, or thank you letter sharing how a teacher has influenced their life and why they appreciate and admire them. One of the teachers that has helped me to get to where I am today is my 7th grade teacher Mr. Fava. Besides the fact that he is an incredible math teacher, he is also a wonderful person because of the way he helped me in Middle School. I have dyslexia, and this will always be a struggle for me, but because of Mr. Fava I have been able to excel in reading and math. He gave us challenging books to read independently, but when I would sit down and read them I did not understand what the book was about, due to the complex words. Once, as I was freaking out and crying, Mr. Fava

took me outside of the classroom and asked me why I was crying, and I said, "I don't understand anything in the book, and it’s very frustrating because all of my other classmates understand the book." He said to me "It’s okay. I will stay with you after school and we will break down the book." So when school was over we both sat down and broke down every chapter to its simplest form for me to understand. When we started it was 4:00 and when we were done it was 6:30, so I thank him for all of the time he has given up in an effort to help me. He suggested that I download the app, Audible, and read the hard

copy as I listen to it. This helped me tremendously because if we had homework on the book, I was able to understand it better as I was able to listen to it. To this day I still use Audible to help me read in High School. As a dyslexic, in Middle School I hated math, but that changed due to Mr. Fava’s impact on me. Mr. Fava gave us a lot of math word problems, graphs and a ton of equations to solve as practice because I’m a dyslexic person, everything reading related is harder for me than for other people, and math is especially challenging. Back in 7th grade, I would keep getting 70's on my math quizzes while other people in my class were getting 90's. Mr. Fava also stayed with me after school to work on math, and he had a tutoring club set up for 6th and 7th graders that needed help in math, and you could go to get help with math homework or clarification on a topic. This helped me enormously, and I started seeing big improvements

in my grades in math. I will never forget the first 85 I got on a math test, and I was so happy that I cried tears of joy. Thank you Mr. Fava for this because now in High School I never get a grade below 90. I recently went back to the school and told him how well I was doing and his face turned red, he had a huge grin on his face and he said "Great job. I am so proud of you. I knew you could do it." If weren't for a teacher like him I don't know where I would be today. Joseph Fava, winner of the My Favorite Teacher Award grew up on Long Island and is a teacher at Our Lady Queen of Angels School in Harlem. It was quoted by faculty that Mr. Fava shows his creativity and care for his students throughout the years. A new study finds that good teachers have a lasting positive effect on their students. Great teachers like Mr. Fava make a great difference!

Roasted Pumpkin Soup Recipe by Rich Fisher

This creamy and delicious roasted pumpkin soup recipe is the best! When the leaves turn colors, and the cool fall air comes flowing through, nothing screams fall more than this pumpkin spiced treat. This soup recipe would look lovely, and fit in perfectly, on your holiday dinner table-plus if any were to make it to the next day they would go perfectly with leftover sandwiches! RECIPE YIELDS 6 OR MORE SERVINGS.

Ingredients • 1/2 small Vidalia onion, chopped finely • 8 fresh Sage leaves, finely chopped • 1 cup Apple Cider • 4 pounds of Pumpkin, cleaned & cut • 1 1/2 teaspoons Sea Salt • 1/3 cup of Heavy Cream • 3 tablespoons Unsalted Butter • 1/2 teaspoon ground Cinnamon

• 2 1/2 cups low-sodium chicken broth • 11 oz. fresh Baby Spinach, chopped • 1 1/2 cups water • 1 Green Apple; cored, peeled & diced • 1 tablespoon Sugar in the Raw (Turbinado sugar) • 1/4 teaspoon ground White Pepper • 1/8 teaspoon each of ground Allspice & Nutmeg • Garnish - see notes below

Optional: Garnish it with toasted pumpkin seeds, apple slices, dollops of goat cheese (I prefer honeyed goat cheese for this)

Directions 1. Heat oven to 425 degrees and arrange rack in middle; then clean the interior of the pumpkin and cut it into quarters... 2. Line a baking sheet with foil and fill with the cut Pumpkin. I find the smaller, meatier Sugar Pumpkin to be better for this soup. Then melt 2 tablespoons of butter and brush it over the insides of the pumpkin pieces and then sprinkle with sugar... 3. Season with sea salt and pepper, turn the insides facing downward and then roast till knife tender-about 45 minutes to 1 hour approximately... 4. Peel, core and cut the apple into a medium dice. Follow by cutting the onion half into a medium dice as well. Melt remaining butter on medium heat in a deep pot, or Dutch oven, large enough to hold several quarts of soup. 5. Add the apple, onion, and sage to the pot and season with salt and pepper-then cook, stirring occasionally, until softened. About 7 minutes. 6. Remove the pan from heat and set aside till pumpkin is done in the oven. 7. When the pumpkin is done, peel the skin away or scrape the flesh from the insides and add it to the pot with the sautéed apples and onions; then add the broth, cider, cinnamon, spices and water to the pot. Bring it to a boil over medium high heat... 8. Reduce the heat to medium low, cover and simmer for about 20 minutes. Stir occasionally and adjust heat if necessary... 9. Remove the pot from heat and stir in the heavy cream; now with an immersion blender, puree the soup inside of the pot. (You could also use a regular blender and puree in batches but I find the immersion blender saves on time and clean up) 10. Taste and season with salt, pepper or cinnamon as needed to achieve the desired taste...

Turkey Soup Recipe by Teri Turner from No Crumbs Left

MUST KNOW

What better way to use those Thanksgiving leftovers, as December weather gets ready to roll in, than taking all of that yummy and delicious food to create a hearty & healthy soup to warm you in the winter months especially if you freeze portions of it to help stretch it out throughout the cold days & nights ahead.

Directions SOUP BASE: 1. Pick clean 1 leftover turkey carcass and save any of the desirable meat for later - as well as the turkey legs.

2. Chop your carrots, celery and onion-then throw it all into a large stock pot with a 1/2 cup of cilantro and 1 tablespoon of salt. Add just enough water to cover and allow it to slowly simmer for about 3 hours… 3. Near the last 1/2 hour add the chicken breast on the bone and allow it to poach for approximately 20 minutes. Then remove, cool and shred the meat from the bone…

Ingredients SOUP STOCK BASE: • 1 leftover turkey carcass; picked clean, saving any desirable meat for the soup and all of the turkey legs • 1 chicken breast (on the bone) • 4 carrots, chopped • 4 celery stalks, chopped • 1 onion, chopped • 1/2 cup loosely packed fresh cilantro • 1 tablespoon kosher salt • Water

SOUP: • 1 (14oz.) can crushed tomatoes • 1/2 cup white rice • 1/2 teaspoon maple syrup • Juice of 1 Lemon • 1 tablespoon fresh Cilantro, chopped • 1 teaspoon Kosher or Sea Salt • Water per rice directions

4. When the stock is done; strain all of the liquid out into a separate bowl, pot or container for later use-saving the vegetables, etc. for later. SOUP 1. Begin by taking a large pot and cooking a 1/2 cup of rice per package instructions. Then while it is simmering, add in your carrots and onion along with 1 teaspoon of salt, lemon juice and fresh chopped cilantro…

2. When the rice is almost finished add 1 (14oz.) can crushed tomatoes and the maple syrup; followed by any reserved turkey or chicken meat that came off the bone… 3. When the rice is finished add the desired amount of saved turkey broth along with any additional turkey or chicken meat you saved. Top with some fresh chopped parsley when serving, and enjoy!

9 TRICKS TO HELP YOU SHED THOSE EXTRA POUNDS IN TIME FOR THE HOLIDAYS! BY MICHAELA CONNORS

If you’ve gained weight over the summer months you are not alone. With vacation time, get-togethers, and BBQ’s it’s easy to over-indulge and difficult to maintain a regular workout routine. Summer’s over and the holidays will be here before you know it. Commit to losing the weight. Here are a few tricks that may help out...

1. Try on your favorite pants or cocktail dress now for motivation. If the zipper won’t close and allow you to breathe at the same time, best to know now. Not fitting in to clothing you love to wear can be very motivating to lose excess weight.

2. Do not skip your workout; be consistent…no more excuses. It

can be very hard getting back into a routine; the more consistent you are the easier it is to maintain.

3. In addition to your regular workout, increase your activity as

much as possible. Bring your sneakers to work and walk around the parking lot during your lunch hour. If you are home then walk (or jog) around your block a few times after the kids get on the school bus. Try a new fitness class or go for a bike ride.

4. Every day make at least one meal completely free of all bad

carbohydrates. This means no cereal, pasta, rice, or baked goods of any kind. Low-sugar fruits and vegetables are ok. This can be difficult when planning dinner, especially if you have kids, so aim to make breakfast and lunch free of bad carbs. Try eggs, fruit and yogurt for breakfast. Tuna or chicken over salad greens are good options for lunch.

5.

Cut out the cocktails. Alcohol is nothing but lots of empty calories. Those frozen drinks can wreak havoc on your figure. Avoid beer bloat and stick with water as much as possible.

6. Don’t make poor beverage choices. High calorie beverages can

seriously impair losing weight. Specialty coffee drinks are a huge no-no… some have over 400 calories and 50 grams of sugar! Instead, order a flavored coffee black so you control the amount of cream and sugar. You can still enjoy a Pumpkin Spice Latte this fall…request skim milk and sugar-free syrup if available.

7. Ditch dessert. If a sweet treat is something you can’t live without

then have it after lunch, not after dinner. Brush your teeth immediately after dinner; it may help fight off the temptation for a treat.

8. Don’t buy family-sized bags of Halloween candy too early.

Instead, buy candy a few days (as opposed to a few weeks) prior to Halloween, and select candy you do not like. Skip the chocolate bars and choose lollipops instead. The “I’ll just have one piece…” mindset is a dangerous one. Eating candy makes your body crave more sugar…1 piece becomes 6 in no time. An unopened bag of candy is an uneaten bag of candy.

9. Remember the tricks for the treats! Summer and holidays are best spent indulging and enjoying good times and good food. The trick is to do your best to eat clean before and after these seasons and maintain consistency in your workouts. A Quick Peak into a Local Yoga Studio Written by Andrew Tartaglia

What is there to love about yoga and its micro community? To begin with… everything. When I first walked into my local yoga studio a few months ago I can tell you with the clarity of 20:20 hindsight that I felt a type of energy. I almost feel now that I was drawn in by that energy but that’s a bit grand and cosmic… and I’m still just a beginner after all!

WHAT IS YOGA? It’s important to know that yoga is non-denominational; it is philosophic, not religious. It has been practiced in many forms for thousands of years and it has a lot to do with balance. The balance of every aspect during the physical practice also translates to a balance in life. The insight, clarity, peace, and self-awareness that can be gained from the physical practice directly applies to life out in the world. A 75 minute class starts with settling in and clearing the mind. Breathing and connecting breath to body and mind. The “Ohm” that we are all familiar with is chanted to switch the mind from thinking to feeling, and as a harmonious tuning fork to those around you. The physical practice takes you through a series of specific poses selected from a seemingly infinite well of wisdom that targets every aspect of your well-being. You will learn to balance between “effort and ease”. As you continue to practice, your body (and spirit) will begin to be more open than you may have ever imagined.

THE COMMUNITY I had the opportunity to sit with local studio owner, Gina Lee, of Bearfoot Yoga & Wellness Center. We spoke about the energy I felt the first time I walked into her studio, and still continue to feel.

This energy is something she calls “Radical Acceptance”. There is no “yoga type” pertaining to people. As a community, these are the most welcoming people I have ever met. “Radical Acceptance” is something that applies to YOU! Your age, your gender, your physicality, your spirituality, philosophy and life. It starts on the mat with accepting yourself. If you are awake to it, you are aware it is a struggle for us all. As you practice and begin to gain knowledge and acceptance of yourself, you see that you are on a journey with like-minded people. In addition to Yoga, there are alternative therapies, such as reiki, massage, meditation, and acupuncture, within the network of most studios. These practices’ help expand your self-wellness based on the awareness that you can bring the “best and healthiest” version of yourself into all aspects of your life and community. It is typical to find people lingering and chatting after a yoga class. These folks frequently come together to work on one project or another. People in this community enjoy opportunities to be of service to each other and to the local community as well. They truly “Think Globally and Act Locally”. This is a time and place where you can get to know people and get involved in projects geared directly towards giving back to your local community.

AN UNFORGETTABLE EXPERIENCE this Summer Local photographer, Vicki Jauron from Babylon and Beyond Photography, tells of her magical journey to Africa through words and pictures.

When I’m asked about my trip to Africa, I never quite know where to begin. The words are difficult to find and I resort to OMG and grunts of delight, and “you can’t believe it”, and “I can’t explain it to you” and “you just have to go there”. Never has a place commanded my emotions and my soul as much as Africa. My photographer friend and I went to Africa primarily for the wildlife, and cats in particular. There were so many choices of where to go and we just couldn’t take it all in a single trip, so we decided on Tanzania for overall wildlife and the migration of wildebeest through the Serengeti along with a side trip to Rwanda to visit the mountain gorillas. From the moment we arrived to the moment we left we were in awe. There was always something stunning to see. Whether it was the breadth of the landscape that seemed to go on forever, the

colorful dress of the Maasai locals or the opportunity to glimpse nature scenes taking place in front of our eyes as it has for millions of years. There is just something visceral about this place. What probably surprised me most was that the wildlife was just so accessible. We watched lions up close as they hunted and took down wildebeest crossing the Mara River. We spent an hour sitting amongst a family of mountain gorillas as they played and ate. We saw cranes putting on an elaborate mating display, and lion cubs playing in the grass. The wildlife were often unaffected by our presence and we were able to get photos beyond our expectations. I plan to go back in 2018 and am already planning my next route. My top suggestion to anyone planning a trip is to make sure you contract with a reputable firm for a good local guide and that they understand your objectives. Our guide was highly experienced and knew how photographers think about light and knew what we wanted to photograph. That made all the difference! Plus there was just the two of us in the truck so we both had excellent viewing opportunities. Enjoy the photos here and hope you get a chance to view more on my website. Get Your Dog Ready for the Empty House Syndrome! BY VIRGINIA ANZIANI

As the kids go back to school and you go back to a normal working schedule, it can be a difficult time for pets. They have grown accustomed to people being home all summer with more activity and attention. The best strategy is to avoid any abrupt change and begin gradual separation weeks before school starts. If it’s too late, here is how you can bring your dog back to a normal schedule.

Give your dog some down time while you're at home. Send him to rest in his crate or on a bed for a short time out. This will help him learn to settle and just observe other activities.

Give him a good reason to be excited when you leave. Take a special toy (kong or marrow bone) and fill it with peanut butter or cheese. Freeze this and when you are going to leave have the dog go to his spot / crate and give him his Treat. Keep your departure unemotional and just leave. This will keep him occupied while you leave. You can also use an interactive toy where he will have to work to obtain the treats (buster cue).

When you return home, don’t make a big fuss right away. Walk in with a short greeting, then get settled, and afterwards properly greet your dog. This will help alleviate any jumping at the door.

Have your dog practice sit/stay while you eat dinner and work with children on homework. This will make him feel as if he is a part of the activity. Reward him when he stays.

Take dog out for a walk prior to leaving and upon returning home. This will help with his bladder control while alone.
