IT

IS THE HOLIDAYS THAT BRING THE SPIRIT of love, tradition and sentiment. When I was growing up, Christmas Eve always meant the Feast of the Seven Fishes and of course, family. Most of my relatives lived in Brooklyn, but my family moved to Long Island when I was young. That meant our family would be taking those trips into Brooklyn to be with everyone for the holidays. I remember what fun it was, everyone getting together and all the cooking being done. There'd be cousins and aunts, family friends and relatives everywhere. Everyone would be in different spots of the house - the living room, the dining room, and at small tables that were set up in the house just for the traditional Italian feast. Many years have gone by since then. My cousins and I grew up and raised our own families. Some of our relatives passed on or moved away. Telephone conversations replaced being together. Although, the traditions and good memories will always remain, we now have new traditions and memories being made. With that being said, our holiday issue is filled with fabulous tidbits to hold on to. We gathered some fabulous Holiday cookie swapping recipes for you to try and of course, my favorite traditional cold seafood salad recipe I make every Christmas Eve. Some of our short articles are informative and others touch upon some emotions of the holiday, as the joy of giving and an enlightening article by Dr. Mary O’Shaughnessy, about how you can help someone struggling with grief, during a time when everyone should be merry and gay. an Attitude of Gratitude by Patricia Thomas

The season of giving is upon us, but really, why can’t it be all year round? A few years ago, I was bringing some things to my local food pantry. I got out of my car and with a grocery bag in each hand, was immediately “accosted” by a man, (possibly in need of a pair of glasses), booming out, “Rosie O’Donnell, I can’t believe you’re here to help us!” I didn’t know what to say, so I modestly replied, “I do what I can, sir.” I am definitely not Rosie O’Donnell, but like I said, I do what I can. As everyone should do what they can, not only around the holidays, but all year long. Helping others, your community, your school, your local food pantry, gives us all a sense of belonging to something bigger than ourselves. Times being what they are, it could one day be us in need as well. Locally, I know we live in the best area on Long Island because I’ve seen our communities reach out to help one another in times of hurricanes, floods and loss of family members. The outpouring of assistance emotionally, physically and financially is amazing. Last Christmas, my children who were 18 and 21 years old, asked me if they could adopt a family in need. At first I was taken aback that they were actually asking me to do this! I told them if we adopted a family, I could not afford to buy them any Christmas presents. I was shocked, but also proud

because they both decided they didn’t want for anything and would rather help another family. We went to the nearby mall where there is a “giving tree” around the holidays and you get to “pick a family” from the tree (not the actually family as it were, but the pertinent information about the family). We chose a family that consisted of a dad, mom and 4 young children. It is humbling to buy gifts for a family that really need shoes and winter coats. We also purchased some toys and games the family requested. My children not only made that family’s holiday so much more special and meaningful, but ours even more so. Not every necessity needs you to give money or presents. Sometimes it could be an hour of your time donating blood or driving a friend to a doctor’s appointment. Maybe you’re great at repairing things around the house; that elderly neighbor down the block could really use your talent. It’s not always the material things that are important. Encouraging one another, giving a smile, reaching out to people, those are the “things” that are precious and we can do that any time of the year! Personally, I feel giving to others is a gift to myself. It brings me that attitude of gratitude. I am grateful for my beautiful family and I am blessed to bless others. I wish you all a beautiful holiday season of joy, happiness and giving and a very Happy New Year!

Sooner or later with the right amount of encouragement and assistance, your son or daughter will look at you and say, “I want to go away to school!”

This could either be met with excitement for your child immersing themselves in a new environment, or a feeling of dismay. If you’re anything like my mom, you will meet this subject with comments such as “Are you sure you wanna go away?” “Positive?” “Are you really really sure?” As it is real nice to know that your parent really cares for your presence around the house, it can lead to feelings of guilt in regards to leaving the nest. What’s important to realize in letting your little bird fly away is that we are actually more capable of handling life than you may realize. For many of us, high school wasn’t exactly characterized as effortless. It was a time where we were forced to find ourselves in a sea of other confused, hormonal teenagers. The workload became dense and teachers actually expected us to get our work done in a timely matter. Crazy, right? The progression from elementary school to middle school to high school may be presented to us as new chapters of life, but in reality they are all stepping stones preparing us to climb up the same mountain peak that is college. Therefore, if the desire to go away to school is even lightly mentioned, let yourself

have a sigh of relief, because this entails that there is a sense being exhibited. As the holidays approach, and most of us college kids prepare to return home for winter break and back under parental watch, know that the alleviation of our homecoming applies to us as well. Finals will be over, and being back home in the cold weather will surely spark gratefulness in us. Grateful of taking showers without flip flops and eating home cooked meals applies here, but really when you are away from your family, functioning on your own for the length of a semester, the togetherness feel of the holidays becomes more apparent than ever in our lives. This feeling resides in us, whether admitted or not. So when you are trepidatious or nervous about your son or daughter going away to school, remember that the reason we are able to survive out on our own is because of our solid upbringing. Price or Protection?

When it comes to insurance; “what is more important to you, price or protection?” Each year we review our insurance coverage and look to save money. However, at times, people don’t realize that they cut costs by cutting coverage. Ask yourself these questions to protect your family and assets: “What if my child gets into a car accident?” “What if a pipe bursts in my home?” “What if I get in a boating accident?” “What if we get another big storm?”

• More than 1 in 100 homes suffers serious damage each year – mostly caused by fire and weather events averaging more than $65,000 in damage. • There are over 2 million burglaries in the United States every year, with an annual loss of over $4 billion dollars. • About 1 in 55 insured homes have a property damage claim caused by water damage or freezing each year. • In New York, over 55% of all car accidents resulted in property damage.

What can I do to lower my insurance costs? There are still ways to save on your insurance without sacrificing protection. For example, higher deductibles will reduce premiums. With some auto policies, age, mileage and driving record can be used to lower premiums, while certain homeowners’ policy providers will take account of security systems you’ve installed when considering a lower premium. Sometimes, you may also earn discounts by having more than one policy with the same insurer. You should always keep your insurance coverage under review. Tis the Season to be Jolly... I’m Dreaming of a White Christmas… It’s the Most Wonderful Time of the Year… Joy to the World! I can hear the music and feel the emotions of these songs even though I am not singing out loud! Throughout the month of December, we begin to abandon our everyday routines and join in the seemingly endless gatherings with family, friends and co-workers. As a community we decorate our towns and villages with lights, wreaths and signs of welcome and good cheer. We invite our neighbors into our homes and raise our glasses to better days and years ahead. It is impossible to escape the continuous promptings of joy and the anticipation of wonderful things to come. Somehow we are transformed both physically and spiritually during this season of gifts and gatherings. We don our holiday garb reflecting traditional Christmas colors that somehow say, “I belong to this time of celebration”. Spiritually we

may even think about helping others, “less fortunate than ourselves”. Whatever emotion is most prominent in our lives during this glistening season is heightened and magnified in strength. Joy over the anticipation of the birth of your first child will fill each gathering with conversations of hope, excitement and wonder. A newly engaged couple will be the focus of family festivities and the sensation of new love will reverberate throughout all of the celebrations that accompany this joy filled season. So too, individuals and families who are experiencing sadness over the loss of a job, health, relationship, or the death of a loved one will feel heightened sorrow. At a time when the whole world seems to be rejoicing, a person who is grieving may feel isolated and anticipate the holidays with feelings of fear and dread. Questions may emerge; for example, how can everyone be so happy when I am trying to survive each day? How can I avoid the sights, smells and sounds of the season

that bombard me with constant reminders of my loss? This is a normal and universal experience for those who are coping with loss throughout the holidays. Anyone who has ever loved will at sometime have to endure the pain of traveling through the journey of grief, which is evermore heightened during the Holiday Season.

As a community how can we be supportive of friends and families who may be struggling to survive the holidays? HERE ARE A FEW SUGGESTIONS: 1. Acknowledge that you are aware of the fact that this is a

Almost everyone has been hurt by the words or actions of another. The longer the situation goes unreconciled, the deeper the wounds become from these lasting feelings of anger and resentment. When you let yourself dwell on these emotions, a grudge can easily take root, making you enslaved to the person that hurt you. Sadly, you are the one that becomes the victim. It has taken me a lifetime to realize that the people you never thought could hurt you, sometimes do. From these experiences, I have learned that if we change our perception, we have the ability to forgive. By doing this we prevent the bitterness from taking over, and release ourselves from the hold that person has over

us. It is not an easy thing to do and it is a process that may take some time and inner strength, but researchers are now finding a powerful connection between forgiving others and our own well-being. For those who may need help letting go, there are many books written about learning how to forgive, or it may even be worth talking to a counselor or therapist. Forgiveness does not minimize, justify or excuse the wrong that was done to you. However, when we forgive, it is the healing gift we give ourselves. Inner peace and true freedom are attainable once we choose to forgive and let go. JL

In a stockpot, combine 3 quarts of water, the wine, bay leaves, and crushed garlic. Slice the lemons in half and squeeze the juice into the mixture. Drop the lemons into the pot, then bring the mixture first to a boil, then reduce the heat to medium low. First cook the shrimp. Cook for 2 minutes and remove from the pot. Note: cook shrimp with shells on and then peel and devein. Cook the calamari 1 ½ minutes and remove from the pot. Cook scallops in the same manner for 2 minutes. With each seafood you cook immediately plunge into ice-water bath to stop the cooking. Mix the seafood together and set aside. If you are cooking octopus, add it to the pot, and cook it for about an hour or until it is tender. Remove it from the pot and let it cool.

Remove the skin and suckers, and cut it into bite sized pieces. Rinse the scungilli for any possible sand. Cut the scungilli into bite size pieces, this does not need to be cooked it is ready to eat. Mix the octopus and scungilli with the other ingredients. Place the seafood in a bowl and add the chopped celery, olives Add the dressing ingredients and mix well. Cover and let marinade a minimum of 12- 24 hours in the refrigerator. Just before serving, adjust the seasonings and Serve at room temperature.

Irish Coffee The trees are bare, t he car windows have frozen morning dew on t hem, t he TV is buzzing wit h foot ball, and t here’s a slight chill in air. Yes, t here’s no doubt, winter is on its way. Winter is special as it allows us to really enjoy what the season has to offer. The back drop of a roaring fireplace, special cooked dinners and gatherings with family and friends, make the cold weather more pleasant. During those cold nights a good warm cocktail makes everything cozier. There are only a few highly celebrated “warming” cocktails that are considered classics all over the world. You can have a whiskey based Hot Toddy or add a little dark rum or bourbon to your hot chocolate, but the king of all cocktails to warm you up on a cold winter’s night is an Irish Coffee. Irish coffee has been around for what seems like forever, but the proper execution of the drink has fallen by the wayside. This is partly because of the lack of training on how to make this delicious classic but also because

of the standards of what ingredients to use. Using cheap whiskey, cheap coffee and whipped cream from an aerosol can which is then covered with artificially green colored mint flavored liqueur can make anyone say, “I’ll just take a check.” But a proper Irish coffee can be enjoyed anytime of the day and will leave its drinker craving another, and maybe another. The most important rule for all cocktails is “you only get out, what you put in” so you want to use great products. Choose some really great Irish whiskey, and then instead of adding white sugar from a packet, make a Demerara sugar syrup. Use a great brand of coffee that you enjoy and finally, whip up some fresh cream. Watch how quickly this classic “warming” cocktail will become a favorite. Cheers!!!!!

INGREDIENTS

1.5 oz Irish Whiskey

• 1 pkg. of graham crackers crushed • 1 tbsp melted butter Mix and press into 9” or 10” springform pan

(3) 8 oz pkgs. Cream Cheese 1 ¼ cups of sugar 1 ½ teaspoons of vanilla extract 4 eggs 1 pint of sour cream 1 cup heavy cream

¼ oz Demerara Syrup* 4 oz Coffee Top with Fresh Whipped Cream** *In a pot, add 1 cup of Demerara sugar and 1/2 cup of water to make a simple syrup. Allow to simmer until all the sugar has dissolved but do not let the syrup come to a boil. Remove from heat and allow to cool. Transfer to a separate container and store in the refrigerator for up to 1 week. ** Use heavy cream and a chilled bowl. Whip until you have a creamy consistency. (Note: Do not whip so much that you get a fluffy whipped cream. You want it to be smooth and silky and blend into the coffee on every sip).

Let cream cheese stand until soft. Beat cream cheese until fluffy while adding sugar, vanilla, eggs, sour cream and heavy cream. Beat until smooth and creamy.

Note: Demerara is a light brown, partially refined sugar unlike brown sugar, which has the added molasses flavor. Demerara has a natural caramel-like flavor that lends warm caramel notes to whatever you add the sugar to. Demerara sugar is also referred to as Turbinado sugar in many markets.

Pour into crust. Bake at 350° for approx 45 minutes

Cranberry Almond Biscotti Preheat oven to 350° Coat a baking sheet with nonstick spray. In a medium bowl combine: • ¾ cup whole wheat flour • ½ cup all-purpose flour • ⅓ cup sugar • 1 tsp baking powder • ¼ tsp salt Then stir in • ½ cup chopped almonds • ½ cup dried cranberries Set aside. In a small bowl, whisk together • 1 egg • 2 egg whites • 1 tsp vanilla extract Add to flour mixture and stir. On a floured surface, pat dough into a loaf about 1 inch thick and 2 ½ inches wide. Transfer loaf to baking sheet. Bake until risen and firm, about 20 to 25 minutes. Cool completely on baking sheet. Reduce oven temperature to 300° With a serrated knife, cut loaf diagonally into ¼ inch thick slices. Arrange slices in a single layer on baking sheet. Bake turn once until dried and slightly golden, 25 to 30 minutes. Cool. YIELDS 24 BISCOTTI

Pistachio Snowball Cookies Preheat oven to 350° Line a baking sheet with parchment paper Combine • ¼ cup granulated sugar • ¾ cup unsalted butter room temperature Beat on medium high in mixer until creamy, about 5 minutes. Blend in • 1 teaspoon vanilla extract Then add • 1 ½ cups all-purpose flour • 1 ½ cups finely chopped pistachios Shape tablespoons of dough into rounded balls and place on baking sheet about 1 inch apart. Bake until cookies just begin to turn golden brown, about 15 minutes. Let cookies sit on pan until cool enough to touch but still warm, then roll in powdered sugar. Let cool completely then roll in powdered sugar again.

Coconut Macaroons Preheat oven to 325° Line baking sheet with parchment paper Combine in a large bowl • 14 oz sweetened shredded coconut • 14 oz condensed milk • 1 teaspoon pure vanilla extract Set aside. Whip • 2 extra large egg whites at room temperature with • 1 ¼ teaspoon kosher salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture. Drop the batter onto baking sheet using a 1 ¾ inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown.

Italian Christmas Cookies BATTER

FROSTING

In a bowl, cream • 1 cup softened butter • 2 cups of sugar. Add • 3 eggs, one at a time beating well after each addition Beat in • 15 oz. ricotta cheese • 2 tsp of vanilla or anise extract. Set Aside. Combine • 4 cups flour • salt • baking soda Gradually add to mixture.

In a large bowl, beat • ¼ softened butter • ¾ cups confectioners’ sugar • ½ teaspoon vanilla/anise extract • to reach a spreading consistency. Frost cookies and immediately decorate with sprinkles. Store in refrigerator.

Drop by rounded teaspoonful 2 inches apart on a greased baking sheet. Bake at 350° for 10 to 12 minutes, or until lightly browned. Remove to a wire rack to cool

Anna's Chocolate Crinkle Cookie Melt • 2 (1 oz ) squares unsweetened chocolate* Set aside. Thoroughly cream • ½ cup shortening, • 1 -2/3 cups granulated sugar • 2 tsp vanilla Beat in • 2 eggs Then add the unsweetened chocolate. Stir in • 2 cups all-purpose flour • 2 tsp baking powder • ½ tsp salt Add to the chocolate mixture alternating with • 1/3 cup of milk Add • ½ cup of chopped nuts (optional) Chill 3 hours. Form into 1” balls, roll in confectioners’ sugar. Place on greased cookie sheets 2 to 3 inches apart. Bake in moderate oven 350° for 15 minutes. Cool slightly, remove from pan. *Note: You can substitute 6 tablespoons cocoa and 2 tablespoons margarine for the unsweetened chocolate. YIELDS ABOUT 48

North Shore-LIJ/Southside Hospital honored community leaders and real estate entrepreneurs, Rick and Tammy Ramsay, at its annual Gala. The Gatsby themed evening took guests back to the incomparable 1920’s when Mary Astor and Josephine Baker were Rick and Tammy Ramsay, honorees at the Gatsby lighting up the stage; T. S. Eliot, F. Scott Fitzgerald and Evening Event, with their three sons Ernest Hemingway were penning enduring works; jazz was all the rage; and, Winnie the Pooh stepped into the hearts of many. The event reflected the glamour and sophistication of the time without, of course, the inconvenience of prohibition, and celebrated the promise of Southside Hospital’s future. Rick’s great-grandfather, Frank Gulden, who, in addition to running the famed Gulden Mustard Company, served as Southside Hospital Board Chairman from 1933 to 1959, would be amazed by the Southside Hospital of today … with an ACS verified Trauma Program, more than 1,200 open heart surgeries performed, newly recruited pediatric sub-specialists, and so much more!
