HOME IMPROVEMENTS an you believe that we are in the middle of summer already? The theme of this issue is making our amazing island a “Destination Staycation.”

One of the luxuries of living on Long island is that summer becomes a tropical paradise. Surrounded by water with four coastlines, the Fire Island Ferries are right around the corner to take us to various parts of Fire Island. We also have our famous Hamptons, the beautiful east end and the energy of the city. We have so much right here to explore. However, with our busy lives, summer can slip away very quickly if you let it. Use our mid- summer issue of The LIst Magazine to put more sizzle in your summer and as a useful tool to find the best places to eat, shop and get away. We highlight a few of Long Island’s best kept secrets, such as Strip Steak in Great River and The Lake House in Bay Shore. These two restaurants, among many others on our island, are just a small part of what Long Island has to offer. Keep our magazine handy and never have a dull week or mediocre meal! Also, for those of you who love golf and want to get out of the heat, we want to introduce you to Eagle Golf. It just opened in Bay Shore. 1. HEAT UP THE GRILL: Keep the hood closed

to hold in the heat for at least 10 minutes prior to cooking. The temperature under the grill should reach 500 degrees Fahrenheit.

Before grilling, scrub the hot grate w/ a wire brush or try a raw onion half than rub it with a tight folded paper towel dipped in oil and scrub again after cooking.

3. OIL IT UP: Oiling the grate before cooking will help food from sticking to it- A long handled brush is a must have for comfort and safety.

4. GRILL YOUR VEGGIES: To intensify a vegetable’s natural sweetness, grill them over coals. Grill dense veggies using indirect heat.

5. SEASON: No, we don’t mean herbs and spices, just good old salt and pepper on quality steaks. Sprinkle a generous amount on steaks just before putting them on grill. For great baby back ribs, a Kosher salt rub is awesome, done an hour prior.

6. LINE IT UP: Align your foods on the grill in perfect precision! Not only does it look professional but it’ll help you keep track of which to flip first!

7. FLIP JUST ONCE:

For killer grill marks, rotate the steak 90 degrees after a couple minutes of grilling instead of every ten seconds!

8. GRIP, DON’T STAB:

Tongs are the answer when moving meat around the grill to be sure not to lose those precious juices.

9. KNOWING WHEN IT’S DONE: For steaks, chops and chicken poke the meat with your finger. Depending on the feel of the meat, you can tell if it’s done or not. Squishy means it’s rare! For large cuts of meat, use a meat thermometer, without touching the bone.

10. LET IT REST: Let the meat’s muscle fibers

Rip currents or “tides” as they are more mistakenly called are the most dangerous beach conditions a swimmer can tackle. The danger with rip currents is not that you're getting pulled away from shore, but how you react. Getting out of a rip current is easier than you think. To successfully swim out of a rip current swim parallel to shore in other words do not swim toward shore but swim with the shore either to the right or left side of your body Because rip currents are pretty narrow in width you’ll be out of the “rip” in no time. What is a rip current? A rip current is a narrow stream of water traveling swiftly away from shore. Rip currents occur when water builds up on the beach instead of flowing sideways away from breaking waves as it normally should. Eventually, so much water builds up that the pressure cuts a narrow path through the waves back out sea. The resulting current can be 30 to 100 feet wide and can move at speeds up to 5 miles per hour. Rip currents are often around piers and jetties so it is wise to avoid swimming near these things. Look for rip currents before entering the water. A rip current looks like a small river on the water’s surface flowing away from the beach. They are sometimes brownish and foamy and can flatten incoming waves making the sea look calm. Once past the breakers the current will disperse frequently forming a mushroom shape.

It is Mr. Barbara’s intention to enter back into the brokerage boat sales as well and as he explores new boat lines to accomplish his entry back into a market he was very successful at. We wish him all the best.

Sweet Transitions

Kids are off to college. So now what? The redirection of your time and energy previously focused on your children can now be on yourself and each other and that is a very good thing. Kudos to Joanne and Hank Harvey from Brightwaters. Their three girls (triplets) left for college two years ago and it made them both take stock of personal interests and assets revealing to them areas of lifestyle that could now be attended to. Joanne always enjoyed keeping fit but took it to the next level once the kids left for school. She enjoys training hard, sets herself goals and now runs marathons including multi sport events. Hank who realized that his wife wasn’t staying home…quit and joined in. You read it right, He was a heavy smoker but decided it was time for him to get fit and do something for himself. Hank quit smoking, bought himself a long distance bike and rides. He lost more than fifty pounds and his family is happy because in essence it is the best thing for all of them.

TREAT YOUR WHITES RIGHT White is not a color. White fabrics are bleached during manufacturing and then treated with optical brightness or fluorescent dyes. These treatments create the optical illusion of whiteness by enhancing the fabric’s absorption of light. That is why it is important to store your white garments away from the light. Exposure to light can break down fluorescent dyes, causing areas to discolor and stain. Don’t let a stain on a white item set, or allow a garment to get very dirty, it becomes very difficult to restore it to its original state. Because of the delicacy of the white dyes, it is important to bring your untouched, stained whites to a professional dry cleaner as soon as possible to handle your items with the proper care. Store your white items separately. When light garments are stored closely to dark garments, the sublimation of dyes occurs. This is when nitrogen gas causes dark dyes to redeposit on light garments, creating stains. Take the plastic off all of your garments and especially whites before storing them in your closet.
