steakhouse.” A perfect example of a dish that merges both concepts is his Steak Fiorentina, an exquisite Tuscan-style T-bone steak capturing the essence of the region with carefully selected ingredients and flavors. Bono wasn’t alone in bringing this new vision to life. It was truly a collaborative effort. He kept most of his team on staff for the duration of the renovation and everyone took part, undergoing a rigorous “Ritz Carlton–style” training. The kitchen was entirely rebuilt with efficiency in mind, allowing them to serve large private events and á la cart diners in the restaurant and bar areas simultaneously and without compromise. “The service and dining experience have never been better,” Bono says. Beginning in the new year, they will be offering off-premise catering, and they have plans to host Sunday brunches and wine dinners weekly, as well as jazz nights and live music once or twice a week.

A NEW CHAPTER OF EXCELLENCE Frank Bono, the proprietor of the acclaimed Primi Italian Steakhouse in West Islip, was raised in an Italian household in Bay Shore. During his formative years, he developed a deep appreciation for the traditional, multi-course, leisurely dining experience that his grandmother, Serena, who is now 84 years old, was renowned for. With more than 30 years’ experience as a restaurant owner, she advised him against a career in the industry. But Bono, with his independent spirit, defied her counsel and never looked back. Inspired by her memorable dinners, he felt a strong desire to introduce that authentic Italian dining culture, characterized by an unhurried pace and mouthwatering cuisine, to the community that nurtured him. “With the undeterred faith of investor and business partner Michael Weber, a longtime Brightwaters resident, Bono realized his vision 9 years ago at age 25, opening Primi and marrying the concept of relaxed Italian dining with the experience of a fine steakhouse. One of the few examples of this concept in the nation, Primi was a success. The restaurant quickly became a destination for events and occasions of all kinds, eventually allowing him the means to bring his vision to the next level. “We were able to purchase the building in 2022, and it was finally time to make it my own,” he says. After a 3-month-long renovation, Primi quietly reopened to the public this past October. With the help of local interior designer Susan Tamberino, her co-designer Judy

Myrto, and the fine craftmanship of Thomas Brophy of Brophy Interiors, the dining experience has been elevated to match the exceptional quality of the cuisine. It’s moodier and more dramatic, with subtle lighting and a gentleman’s haberdashery feel: suit-fabric patterns, rich velvets, dark colors, an array of textures, and fine millwork and detailing throughout. “Susan did a great job of taking my personality and vision and refining it. The space is something you want to experience in person,” Bono says. In response to feedback from his dedicated clientele, the menu at Primi has evolved, too, offering uniquely conceived, classic Italian dishes alongside the highest quality steaks. Chef Maximillian Manthos, who joined the Primi team in 2021, “singlehandedly transformed our kitchen,” Bono says. Coming from a French- and Mediterranean-cuisine background, and having worked and traveled extensively, “He has a true passion for food and an intense curiosity, redefining what it means to be an Italian

Among the members of Bono’s team that have been essential to its success is General Manager Mandi Loiacono, who started as a bartender back when they first opened and was made an equity partner in 2021. “She has a passion for hospitality and is the backbone of the restaurant,” he says. Banquet Manager Amanda Roach, an integral member of the team since 2020, has overseen and is expanding their private event division. Lifelong friend, Zachary Colon, is the Assistant Manager, and you can usually find him on premise doing what he does best: engaging patrons and ensuring guest satisfaction. “I am extremely proud of our team and how far we’ve come since the early years,” Bono says. As for the source of his inspiration, Serena is back in Italy, living in the small Sicilian town where she was born, just outside of Palermo. He and his family visit her annually, and he often incorporates what he discovers there into the menu at Primi. But it’s Long Island that remains foremost in his heart. “I’ve always had a fond attraction for this community. It’s given me so much over the years.”

I always feel nostalgic this time of year, with Christmas and New Year’s approaching, but this year is especially meaningful for me. As your lifestyle magazine, you know how much we love weddings. Well, this November my son and new daughter-inlaw got married. And this year also marks a special milestone for us as your local magazine. It’s our 12th anniversary! I founded The LIST twelve years ago with the hope of bringing the Great South Bay’s local businesses together with our readers, and you welcomed us into your homes. We hand-select the businesses featured in each issue, recommending them proudly, and we publish stories that encourage our loyal readers to love where we live. Over the years, The LIST has become more than just a magazine. It’s a reflection of the rich tapestry of our coastal communities. As we mark this special anniversary and celebrate the season, I’m thrilled to announce our premier LIST event, hosted by The Agency, taking place on December 14th in Bay Shore. Beyond the Bricks

KEEPING A LEGO® LEGACY ALIVE BY LAURIE MANFRA In a tale of love and perseverance, Bricks & Minifigs, a specialty LEGO store on Main Street in West Babylon, began with the late Larry Joffe’s lifelong fascination, dating back to his early childhood in the 1960s, with the colorful world of LEGO. After several years of planning and a big push to open, Larry’s dream of becoming a business owner and sharing his love of LEGO with the world finally became a reality last May. “He saw the store stocked and ready for opening—he did a beautiful job—in my eyes, he got to see his dream completed,” says Rachel, his widow, a longtime social worker now on a mission to realize Larry’s vision for nurturing community through creativity and play. “I was amazed that my husband could sort and organize and build LEGO for hours on end. It was relaxing, challenging, and rewarding for him,” she says of his hobby. “He loved LEGO for the product and its evolution. He knew the history, how it’s made, and its value.” Running the store without him has inspired in her a newfound appreciation for LEGO’s potential to bring people together and build connections. “I am floored by the support and outpouring of love that I have received personally from the community,” she says. By design, the store is an experience. With a wide array of merchandise old and new, including Larry’s original collectibles from the 1970s, ’80s, and ’90s, and various rare and retired sets, not to mention an ever-expanding inventory of Minifigures, enthusiasts of all ages will find something of interest. Sets range in price from $5 to a thousand dollars. In the center of the store is what Rachel calls, the “magic tables,” where a large assortment of bulk LEGO is available for playing or purchasing by the bucket. A lot of times, while sorting through the tables, customers find pieces they can’t find anywhere else. The store has become a destination for groups of all ages, ranging from local schools and scouts organizations, to events for individuals on the Autism spectrum, to gatherings held by the Alzheimer’s and dementia society. “I’d like to continue to find ways to get LEGO into everyone’s hands that could benefit regardless of their ability to afford it,” says Rachel, who hopes to merge her social work business with Bricks & Minifigs to bring the therapeutic effects of LEGO to even more people. As a form of mindfulness, playing with LEGO is helpful in stress reduction, overcoming social challenges, improving memory and cognition, as well as aiding hand-eye coordination and fostering a sense of self-esteem and accomplishment. Everyone can benefit from it. And the response from the public has been overwhelming. “Community is still alive, kindness exists, and people do still desire things other than electronics,” Rachel says. Future plans for the store include LEGO clubs for teens and adults as well as mommy and me classes. They host birthday parties and corporate team building. Newly open during special events through June and possibly longer is a colorful and secluded sensory area, where kids who feel overwhelmed by the group setting can sit quietly, alone or with a parent, and build quietly or relax. Every Sunday from 10:00 to 11:30 a.m., the store hosts a “Make and Take” creative build, where young kids can engage in open play.

“I have couches in the front for the moms that cannot get their kids to leave or for the spouses of enthusiastic collectors,” she says. As a Bricks & Minifigs LEGO franchise, the store is an official site for selling and trading new and used sets. The highest prices are paid for sets that are complete and in good condition, but they’ll take something even if it requires staff to build and hunt down missing pieces. They buy loose pieces in bulk by the bucket, which is a great way to repurpose old LEGO for use and enjoyment by the

next generation. They can authenticate highly collectible Minifigs and sets of value, certify sets as 100 percent complete, or make an offer on an entire collection. The best deals are offered in trades. Since opening last May, Rachel has hosted people from all over Long Island, the city, and throughout the country, and as a result, the store’s wideranging inventory changes all the time. “LEGO is connection, not just bricks,” she says. “I have been humbled and converted. I’m actually starting to love LEGO now too!”

Delectable Seafood Appetizers Recipes By Jenny Shea Rawn

Who would agree that festive appetizers are the best part of a holiday menu? We certainly think so! Today I am sharing a few family and crowd-pleasing favorites that we make each year—and they all feature seafood. Seafood not only is celebratory, but is also delicious, and good for you (think brain and heart health benefits, among others). I hope you enjoy these bite-sized treats and share them with your friends and family this festive season. Happy Holidays to you and yours!

Warm Crab Dip TOTAL TIME: 35 MINUTES SERVES: 12

Jumbo lump crab meat, shredded cheddar, cream cheese, cottage cheese, OLD BAY seasoning, and panko crumbs are baked in a cast-iron skillet until hot and bubbly, then served with your favorite whole grain crackers or pretzels. This lightened up crab dip is the perfect appetizer for game day, or any day you’re entertaining and need a comforting, crowd-pleasing warm dip. IN GR ED IEN TS

• 8 ounces reduced-fat cream cheese • 4 ounces reduced-fat cottage cheese • 16 ounces lump crab meat • ¾ cup shredded cheddar cheese, divided • 2 teaspoons OLD BAY seasoning, plus more for topping • ½ teaspoon garlic powder • ¼ teaspoon freshly ground black pepper • 2 tablespoons panko crumbs • 1 tablespoon chives, thinly sliced

Lobster Avocado Bites TOTAL TIME: 10 MINUTES SERVES: 10–12

Whole grain tortilla scoops stuffed with lobster and avocado chunks tossed with mayo, white wine vinegar, chives and lemon—then topped with pea shoots and freshly ground black pepper. This recipe stretches a little bit of lobster a long way—great to serve for a crowd. ING RE DI E N TS

• 12 ounces cooked lobster meat, roughly chopped • 2 tablespoons mayonnaise • 2 tablespoons thinly sliced chives • 1 tablespoon white wine vinegar • Juice and zest of 1 lemon • ¼ teaspoon kosher salt • ¼ teaspoon freshly ground black pepper • 1 avocado, thinly sliced, then slices cut in half • ½ bag whole grain scoop tortilla chips • Pea shoots (optional) • Lemon wedges for serving

For Serving

• 1 lemon, cut into wedges • Crackers, baguette slices, and veggies D IR EC TIO N S

1. Preheat oven to 350°F. Grease a medium cast-iron skillet with avocado or canola oil and place it inside the oven. 2. In a large mixing bowl, combine cream cheese, cottage cheese, crab meat, ½ cup cheddar, OLD BAY seasoning, garlic powder, and black pepper. Gently mix with your hands to combine. 3. Remove skillet from oven. Careful, skillet is hot! Spoon crab mixture into skillet. Place into oven for 20 minutes. 4. Remove from oven and top with remaining ¼ cup cheddar and panko crumbs. Place back into the oven for 5–10 more minutes until cheese is melted and bubbly and panko crumbs are lightly toasted. Remove from oven. 5. Top dip with chives. Serve with lemon wedges and whole grain crackers, baguette slices, or veggies.

1. Combine lobster, mayonnaise, chives, vinegar, lemon juice, and zest, salt, and pepper. 2. Place chips on a large serving platter. Add ½ a slice of avocado to each chip, then top with lobster salad and freshly ground black pepper. Garnish with pea shoots (optional). Serve with lemon wedges.

Christmas Seafood Platter* TOTAL TIME: 10 MINUTES • SERVES: 6

This seafood tree’s shape is created with sprigs of fresh rosemary. Then, it’s filled (starting at the bottom) with oysters on the half shell, cranberries, lemon rings (or wedges), cooked shrimp, seaweed salad, Cape bay scallops, canned smoked salmon, and cooked lobster. The tree trunk is made of tuna jerky. Capers fill in some of the holes in the tree. Alongside this seafood board is melted butter (for the lobster), cocktail sauce (for the shrimp), and flaky sea salt. ING RE DI E N TS

• 12 oysters, shucked • 8 ounces cooked lobster meat • 8 ounces cooked shrimp, any size • 8 ounces Cape bay scallops • 3.5-ounce can smoked salmon • ½ cup seaweed salad (we prefer Atlantic Sea Farms Seaweed Salad) • 1 stick tuna jerky (we love Pescavore™) • ¼ cup capers For Serving

• 1 lemon, cut into rings or wedges • 2 tablespoons salted butter, melted • ¼ cup cocktail sauce • Sea salt • Cranberries (décor) • Rosemary sprigs (décor)

DIRECTIONS

1. Using rosemary sprigs, create a tree shape on a large platter or baking sheet. Place tuna jerky at the base and layer the other ingredients up the tree. 2. Place butter and cocktail sauce on the platter outside the tree. 3. Add serving utensils and serve immediately. Recipe Notes

Shuck the oysters, being careful to inspect for any damaged shells or off smells. Replenish ice cold oysters as needed (they all may not fit at the bottom of your tree). Adjust amounts of seafood depending on your guest number and replenish platter as needed.

Croquembouche for the Holidays This grand and impressive French dessert is the perfect centerpiece for your holiday table, and best of all, it’s easy to make! We’ve simplified the recipe into four parts: making and then filling the puffs, cooking the caramel, and building your croquembouche. You can make the cream puffs and the custard in advance—we recommend filling them just before assembling— and don’t worry, it doesn’t have to be perfect to look extravagant! Position it on a festive serving platter or pedestal cake dish, with rosemary sprigs and fresh cranberries for garnish. Add a dash of liqueur, like Baileys Irish Cream, to the custard for a little extra flavor. So put on your favorite music, pour yourself a glass of wine, and enjoy some time in the kitchen creating this rich classic dessert that’s sure to be a crowd-pleaser.

1. The Cream Puff Pastry MAKES APPROX. 35 PUFFS (for a 9-inch-tall croquembouche)

ING RE DI E N TS

• ¾ cup water • 5 Tbsp. butter (½ stick) • pinch of salt • 1 tsp. sugar

• ¾ cup all-purpose sifted flour • 3 eggs

D IRECT I ON S

1. Bring water, butter, salt, and sugar to boil. When mixture is bubbling, remove from heat. Quickly pour in flour and blend thoroughly. Set over moderate heat and beat with spoon for 1 to 2 minutes. 2. Make a depression in the mixture and place in eggs, one at a time, blending thoroughly between eggs. The mixture should now hold its shape and plop easily. 3. Preheat oven to 425°F. Line a large baking sheet with parchment paper. With a spoon, scoop 1-inch round blobs and place on baking sheet. Brush the tops of the puffs with an egg glaze (1 egg beaten with ½ tsp. of water). Avoid dribbling down the sides, which will prevent rising. 4. Place in oven and cook for 20 minutes or until golden brown. They should double in size. Lower oven to 350°F and bake additional 10 minutes. Let puffs cool. They can be made in advance or frozen in preparation. It is best to fill the puffs shortly before you assemble and serve the croquembouche.

2. Pastry Cream Filling ING RE DI E N TS

• ½ cup sugar • 3 egg yolks • ¼ cup flour • 1 cup milk • 1 ½ teaspoons butter (room temperature) • 2 teaspoons vanilla extract D IRECT I ON S

Using a mixer, beat sugar and eggs in a large bowl until pale yellow. Beat in flour. In a thick pot, heat milk to boiling. Add the milk to the egg mixture, beating steadily. Pour mixture back in the pot and set at medium heat. Stir with a whisk. Once it reaches a boil, lower heat and cook for 2 to 3 minutes. Remove from heat and add butter and vanilla. Refrigerate to thicken and cool. Using a pastry bag and ¼-inch tube, plunge tip into bottom or side of puff to fill.

3. Making the Caramel IN GR ED IEN TS

• 2 cups granulated sugar • 2/3 cup water • 2 tablespoons corn starch D IR EC TIO N S

In a heavy saucepan, bring sugar, water, and corn syrup to boil on high heat, swirling until completely dissolved. Cover pan. After 3 to 4 minutes, it will bubble into a thick syrup. Remove cover. Continue boiling until syrup turns amber. Remove from heat and place in a pan of simmering water to prevent hardening.

4. Assembling the Croquembouche D IR EC TIO N S

On a serving platter, build the first row, placing 8 puffs in a circle, dipping each puff in the caramel sauce and gluing them together to form the base. Be cautious, caramel is hot! Add the second row using 7 puffs. Let cool for 5 minutes to set. Build remaining rows, using one less puff per row until you reach the top. Dribble remaining caramel over entire croquembouche.

This recipe was adapted from Julia Child’s 1968 cookbook, The French Chef (Knopf).
