LIVE TO LOVE THE ROAD “We love because it is the only true adventure” - Nikki Giovanni The wind catches my black tent and creates a rattling noise. The rays of the sunrise warms the one side of tent tarp that my face is against. In the distance, the goats, chicken and a white camel Ayer start moving in the household of my Nomad neighbours. A new day begins. My heart simply sings and I strap my boots on.

I lean gently towards a palm tree by the small well. I let it hold me as the sun rises over the land. Grounding. Peace.

Life rushes through me so strongly and I connect to the earth as simply as the yoga poses greeting the sun.

We pack our bags and strap the saddle and satchel on Ayer. We trek up the mountain as the levante wind picks up and pushes me up the moon landscape.

I decide to walk in front of the caravan.

The wind within so strong and my heart so eager to go forward. One step at a time up a rocky almost invisible track,

hidden for the world to see if you do not know where to look. My heart knows the way even if I would have been blindfolded. For each step my heart starts pounding faster and faster. The wind fills my lungs with fresh air and energy to walk on. The sun now high on the sky and temperatures rising.

At our first peak, we rest in the shade of the Acacia tree. She whispers to me, almost there, rest now and find the strength to continue on the route of your heart. This whole time, I have only heard the men chat silently amongst them behind me. I look at them and know that they are on a different journey than mine.

After a rest, we turn off to the left. My heart beats hard. I open my eyes and turn around to Erg Chegaga dunes a far with the mountains behind me. All around me Sahara, my love, my one true love. Here at home there are no doors, simply love and peace.

You probably know that as well as Christmas Day, Spain has two other bank holidays in December: the 6th and 8th and often they form a ‘Puente’ or ‘bridge’ to make a long weekend. This year they fall on a Thursday and Saturday, so some schools in the Axarquía will have the Friday as a holiday too, whereas others won’t. This all depends on a complicated system related to the distribution of local and national holidays throughout the year which I won’t go into here!

The first of the two holidays, on 6th December, is Constitution Day (Día de la Constitución) and marks the 6th December 1978 when Spanish people were asked to vote in a referendum to accept, or not, the new constitution as the country passed from a dictatorship under Franco, who died on 20th November 1975, to a democratic state.

Just under 67% of the electorate voted and those who did turn out overwhelmingly supported the new constitution (just under 92%). While many of Spain’s bank holidays are religious, this one is secular. Other secular days of note are Andalucía Day on 28th February and Labour Day on 1st May. The second, on 8th December, is clearly religious as it is Day of the Immaculate Conception (Día de la Inmaculada Concepción) and celebrates the day when Mary, mother of Jesus, was conceived. Catholics believe that from the day she was conceived by her mother, Saint Anne, Mary was free of sin. Many people mistake the name of the day, thinking that it refers to Mary herself becoming pregnant with Jesus, but it is in fact her mother who is believed to have conceived Mary by natural means with her husband, Joachim, on this day.

CHRISTMAS DECORATIONS FOR YOUR FESTIVE TABLE Believe it or not, Christmas is upon us again! The festive season is all about food and drink so now is your chance to create a magical Christmas table to really impress your friends and family.

But don’t panic. You don’t have to be an arts and crafts expert to have a beautiful table; these festive looks are quick, simple and fun to create.

Totally traditional

A centre-piece on a large table is a must for many traditionalists, especially when it’s rich with pine cones, mistletoe, fir fronds, red berries and ribbons. To save time, you could spruce up a ready-made one with your favourite decorations or even small fir cones and berries you can find when out walking.

Source a centre piece at your nearest florists or Chinese shop. If you’re making one, you might even find some holly with berries, a rarity in this part of the world. Great substitutes for holly are southern Spain’s red-berried mistletoe, olive and juniper berries. Add a little gold, silver or white spray for festive pizazz.

Pretty place settings If you don’t want to go over-the-top with table decorations, individual cutlery and napkin decorations bring Christmas to the table without taking up too much space. Wrap them with string or ribbon, or pop them in a bag, adding your favourite colours and decorations into the mix. For a touch more organisation, you could thread in name tags so everyone knows where to sit.

Ready-assembled cutlery sets also add organisation and a touch of festive flair at buffet feasts over the Christmas season.

Match them up with placemats, Christmas crackers and candle holders, then stack patterned plates with contrasting colours for accent and interest.

table. Feel free to add an extra colour if you can’t go with such simplicity. Adding your best, shined up glassware and silver cutlery plus decorations in different textures and sizes creates interest and pulls everything together.

Go for glamour Mix metallic finishes and soft velvet in midnight jewel tones for an effortless deluxe feel to your Christmas table setting.

Inky indigo tableware contrasts perfectly with white, grey or silver. Choose a cutlery set with a smart design to really show off the beauty of burnished metal or wood and place them upon a table runner or full tablecloth.

Creative cookies Edible or not, old-fashioned, iced gingerbread style cookies bring an informal festive flavour, whether scattered around your table decorations or strung with ribbon festooning a vintage-style metal centre piece stand – a mug tree or jewellery stand could serve just as well if you can’t pick one up in the shops. Cover the “branches” with foliage or ribbon and load them with cookies, then wreath the base in fresh foliage, adding a touch of sparkle with decorations or spray paint.

CHRISTMAS IN THE AXARQUIA From a cake shop in Caleta producing avocado and mango turrón, to villages with award-winning live nativities, Christmas in the Axarquía is truly special.

From the end of November and beginning of December when towns and villages across the Axarquía illuminate their lights, the magic of Christmas is really in the air.

Queues begin to form at the popular Ramos pastelería in Cáleta de Vélez for their divine twists on that most traditional of Spanish Christmas treat; turrón. Recent creations have been avocado, mango and torta de Algarrobo. Turrón isn’t the only sugar-rush that Spanish people enjoy at this time of year. There’s a whole range of delights that supermarkets either sell by the kilo (a granel) or in festive boxes and the most popular are Roscos de vino, Borrachuelos, Polvorones and Mantecados.

Spanish families often have large trays of them in their houses and guests will be offered one (or more!) when they visit. They also tend to make an appearance after meals with coffee and liqueurs, instead of Christmas cake.

Poinsettias or ‘flor de pascua’ are traditional gifts to friends and neighbours at Christmas and most houses will have at least one or two.

The big Christmas meal is usually eaten on the evening of 24th December and it’s usually a buffetstyle affair with lots of different plates, including hams and other cold meats, cheeses, seafood, salads and normally something hot too, like a hearty soup and roast chicken, turkey or pork.

If families give presents from Father Christmas (Papa Noel) then they will do it on the evening of 24th. Some do and some don’t. Traditionally in Spain presents are exchanged on 6th January, on Kings’ Day (Día de los Reyes Magos). But as children go back to school the following day, there is an argument that if presents are given at Christmas then the children have the whole holiday to play with their toys.

Some have presents on both days. It really depends on the beliefs of each family!

Migas On the last Sunday before Christmas, Torrox pueblo holds its annual Día de las Migas. The one-day event celebrates the agricultural traditions of the village and people flock to the town to share the free migas which are served up with a traditional ‘ensalada cateta’; a salad containing salted cod, oranges, tomatoes and onions and a glass of sweet Malaga wine. Migas are breadcrumbs, or sometimes semolina, fried in olive oil and cooked with garlic and normally chorizo. The filling dish would have been given to people working in the fields as a hearty meal before they went off for a hard day’s work.

Now it is a popular, warming dish at this time of year and even when made at home, migas are traditionally served with the ensalada cateta and sweet wine.

Belén Viviente (Live Nativity) The villages of Comares and Almayate act out the story of the Nativity every Christmas. While dates for this year hadn’t been announced at the time of writing, normally Comares performs its version just before Christmas in the streets around the village, while the Juan Paniagua primary school hosts Almayate’s play for two nights in the week between Christmas and New Year. Both events have been recognised by provincial government, Diputación de Málaga, as important tourist attractions.

As well as the plays, most towns and villages also have their own nativity displays, which are often on show in public buildings. Torre del Mar, for example, uses the Azucarera for its elaborate recreation, which includes the blue and white lighthouse, traditional produce of the area, and the importance of the fishing industry in Caleta, as well as scenes depicting the traditional Christmas story.

Christmas time and most churches hold carol services.

Musically in Malaga, there is nothing that says Christmas like the Zambomba!

This simple instrument is made traditionally using a large flower pot or similar recipient, with animal skin covering the top and a hole made in the skin in which a stick is inserted and moved up and down to make the sound. The stick must be soaked (some people say this is best done in wine!) for it to make its distinctive sound. The zambomba and the pandereta (tambourine) provide traditional accompaniment to traditional villancicos.

New Year’s Eve Families traditionally gather again to eat on New Year’s Eve. It is often a repeat of the Christmas Eve meal and then just before midnight, 12 ‘uvas de la suerte’ (lucky grapes) are eaten, one by one, to the 12 chimes of the bell which bring in the New Year. Younger generations then go out with their friends to party with their friends until the early hours. However, more and more towns are organising fireworks displays and other celebrations, so people take their grapes with them and join the public activities. For example, in Nerja hundreds of people pack to the iconic Balcón de Europa for music and to listen to the church bells leading up to midnight, after which there’s a fantastic fireworks display over the Balcón.

For those who want to go a bit further afield, Malaga puts on a great party too; crowds head to Calle Larios and Plaza de la Constitución to see in the New Year with fireworks and the usual warm, fun Malagueño style!

In any case, don’t forget to go to Malaga to see the Christmas lights at some point, which have turned into a real tourist attraction in recent years.

So if you are planning to stay here for the festive season, there is plenty to see and do in the Axarquía and Malaga and whatever you do we wish you a Merry Christmas and a very happy New Year!

Most Christmas light photos look basically the same. There’s the house (probably too far away) with its teeny lights against a pitchblack background. It sorts of makes sense to wait until nightfall. You don’t want the sun hogging all the light and, after all, won’t lights look the best in the dark? Turns out: no. When it’s pitch black outside, your camera can either properly expose for the lights, or the lights’ surroundings. If the camera exposes for the lights, they’ll look like they’re floating in nothingness. If it exposes for the surroundings, the lights will be completely washed out, almost colourless.

Photograph around twilight/dusk. For a few minutes, the atmospheric light will perfectly complement the continuous artificial lights.

You’ll pick up the beautiful ambient colours of the sky and surroundings and get much more photographic texture than the flat blackness. Expose for the lights, not the sky.

That way, the sky’s ambient light will come in to complement the lights, which can remain your focus.

Act fast. We’re serious about that few minutes part. Between sunset and nightfall, each minute will bring slightly different lighting conditions. This means that you have plenty of opportunity to capture a variety of scenes, but not a lot of actual time.

Use a tripod. Without it, you’ll probably end up sacrificing a lot of image quality (we’ll explain why in the settings section). So, unless you’ve got superhuman steadiness, bust out the tripod. It’s the only way to guarantee a crisp shot for your long exposures.

Forget flash. You’re trying to capture the 44

colour of the lights, and even if they aren’t multi-coloured, your flash could interfere with the lights’ colour profile. And that’s if your flash even shows up. Unless you have an incredibly powerful flash or are very close to your subject, the flash isn’t likely to contribute much to the exposure anyway.

Bottom line: keep the flash off.

Start with the ISO at around 400. If your photos are too dark, increase it, but know that any increase to the ISO will degrade image quality. It may not be enough of a degradation to notice, but technical degradation nonetheless. Any time you’re on a tripod, you get to go all out with the lowest ISO possible. Low ISO means higher quality, evidenced by the grain you’ll get from a super high ISO. Set your aperture for f/8. This is a good starting point if you’re following our previous suggestions. Remember: lower numbers let it more light, and higher numbers let in less.

Go for an incandescent white balance (your camera might call it Tungsten, but they’re the same thing). The lights that you’re photographing are likely incandescent bulbs, so the “Incandescent” setting will faithfully render the colour of your lights.

If you need more light, increase the exposure time (slow shutter speed) instead of increasing the ISO. This prevents the grain that would’ve been introduced by the higher ISO but does leave your photo vulnerable to blurry moving subjects (e.g. kids, pets, trees in the wind). Plus, long exposure captures the full glory of the light display.

Ella´s Delicious Mushroom Soup Recipe from Richard Fox

RECIPE

Now and again us cheffy folk see another see another cheffy folks’ recipe and decide it’s so damn good, we just make it all the time and don’t even bother thinking about messing with its fundamentals. The only etiquette is giving credit to the source when using it. Now that I’m on this transformational whole food, plantbased diet for reasons of health, the environment and animal well-being, I’m spending a lot of time looking at similarly inclined influencers’ web sites.

One of my favourites is Deliciously Ella (www.deliciouslyella.com). She’s amazing and I urge you to check her out. Anyway, now that we seem to be in the throes of an English style Spanish winter, I reckon we need as much warming comfort food as we can get, and this recipe of Ella’s absolutely hits the spot. I’ve reduced the amount of stock from the original recipe to make it even thicker and creamier, but

feel free to add more liquid if you prefer a thinner texture.

Serves 2 1 large onion, finely chopped 2 garlic cloves, crushed 800g closed cup mushrooms (chestnut or similar), roughly chopped 1 tbsp dried thyme 500ml vegetable stock 2 tbsp coconut yoghurt Handful of toasted hazelnuts and olive oil for serving.

Heat a tbsp of olive oil in a frying pan over a medium heat and cook the onion and garlic, with a little salt until soft. Add the mushrooms, thyme and black pepper, cover the pan and cook for about ten minutes until the mushrooms have softened.

Add the stock, bring to the boil and simmer for fifteen minutes.

Remove the pan from the heat, add the yoghurt and then blend in a food processor until smooth. Re-heat if required and serve with nuts and a drizzle of olive oil. foodbyfoxy

EVERYONE NEEDS A BIT OF POSITIVITY Give the greatest gift of all this Christmas...

Love it or hate it, it’s nearly time for the C word again!! I personally love this time of year but I sometimes think we have completely lost sight of the meaning of Christmas. No matter your religion or culture the concept of UNCONDITIONAL LOVE is universal and surely if Christmas sends us any message it is the philosophy of peace on earth and goodwill to all men.

All too often the focus falls on expensive material gifts, ‘keeping up’ with our friends and family and spending money we can not afford. We become stressed and frazzled by the endless ‘to do’ list and everything we feel we must buy. This turns one of the most magical times of year into a nightmare for so many and instead of enjoying the time and making memories with loved ones we feel inadequate and miserable.

A few years ago myself and my family realised we were falling into that trap and changed the rules. We were only allowed to buy gifts that were either second hand or homemade and for the first time in ages we all spent christmas eve and christmas day together. We all cooked something or contributed something to the dinner and we did not buy an excessive amount of anything. It changed Christmas! It was less stressful for everyone and because of that we all relaxed and enjoyed 54

our time together. We watched old christmas movies, we played games, we laughed and talked. It was basic and simple but it was also beautiful.

So if you are already starting to worry or stress about Christmas then take a step back. Think about what is REALLY important...think about the people you love and the people you care about… Stuff doesn’t really matter!!

Having the people we love healthy and happy matters! That’s what is important! Stuff does NOT define us!

We can’t take it with us and the things that make a life truly happy can’t be bought!

Let’s make Christmas about LOVE and MEMORIES and CHARITY…. Give gifts that money can’t buy like...

LOVE TIME KINDNESS Make a handmade present, invite a lonely neighbour for Christmas Dinner, donate to charity, volunteer at a good cause.

There are so many ways you can give without spending money!

To me Christmas is a time to take stock, count our blessings and be grateful for all we have in our lives. It is also a time to reach out to others and show kindness and compassion….

two VIKINGS FROM NORWAY

TWO vikings from norway The mountain range covered in snow We were standing facing the sun, you could feel the heat. Good job we had suncream on. We felt we were on top of the world 3,398 meter above the sea level at Veleta peak. The Vikings from Norway were on a new adventure.

Today we were skiing in the Sierra Nevada. In many ways one of the most picturesque and best resorts for a one day ski experience in Europe.

We had walked up further past the last lift to reach the top where we stopped to look down the mountain towards the slopes. We could see the restaurant area in Borreguiles and the city of Granada 27 km further below. We turned around and enjoyed 360 degrees view of the Andalusian landscape. Facing the south, far far away, we saw the blue mediterranean sea. “Dad yesterday we were down there swimming in the sea and now here we are ready to enjoy skiing - how cool!”

Was there any wonder why we were in love with southern Spain?

Just a few hours earlier we had driven from Torrox Costa. The route was so easy on the coastal highway A7/ A44 from Malaga via Almunecar to Granada, this mountain paradise was reachable in a few hours.

We enjoyed the view for a few more minutes and then we were ready for some fun. My son had been skiing since he was four years old. It’s is often said that Norwegians are born with skis on. He set off with me following shortly after. We made small turns almost dancing down the hill. It was icy in parts under the fresh white powder snow. This was not the time for speed.

The ski conditions were excellent this early in the morning. When we

reached the less steeper areas around Borreguiles we increased the speed.

Longer turns, we were not dancing anymore. We felt the force on the outside leg and shot out of every turn with even more speed. What a fantastic feeling. Nothing felt better than when the skies, snow and you were as one.

The lifts closes around 17:00h so no time to waste the ski park was next on the agenda.

“Where shall we go now?” Tor asked.

Sitting on the chairlift we looked down at the slopes and other skiers. I noticed that almost everyone had safety helmets on which is a must, not just for protection but to they keep you warm as well!

“Can we try the Laguna?“ he asked.

The Laguna area hosted several of our favourite runs and were always less crowded.

The slopes are less crowded in the afternoon, so we decided on a long run. We started at the top and headed for the village of Pradollano.

We made the run even longer by crossing from one slope to another. The conditions were great and because there are no trees, you could ski everywhere. More than thirty minutes later we sat in the gondol heading up once again. “What an awesome run! One more time, please! “ my sons face was one big smile. My heart was beating fast, I was lucky. Yet another wonderful day was spent in sunny Spain.

Sierra Nevada is Europe’s southernmost ski resort. It has 131 runs with 110 km slopes and a vertical drop of more than 1,200 meters. You can find the perfect run for you whatever your level of expertise is. Because of its elevation the skiing season starts from early December through to May. After a few hours it was time for lunch.

Most people choose the mid section, Borreguiles where you will find some cafés and restaurants. We are not particularly keen on this area and instead made our own lunch stop at a height of 3,300 meters and rated it with our own 3 stars. We had panoramic view of paradise and I served homemade chorizo and cheese baguettes.

For the first time today I felt my age.

My son manouvered the rails, jumps at speed, I chose a slower route around them. ”Chicken! ” he laughed.

Some advice: Drive slowly up from Granada. The road might be slippery. There are numerous ski schools and ski equipment rentals in Pradollano. A bit cheaper to rent is down in Granada. White World is a company I have used and they are great.

Always use a helmet and I suggest that you don´t drink and ski. Hang on until the aprè-ski party to drink alcohol.
