French Onion Soup

Pair with 2019 Cabernet Franc

Serves: 5 | Prep Time: 30 minute

Cook Time: 4 hours

Ingredients

• 4 red onions, peeled and thinly sliced

• 2 Vidalia onions, peeled and thinly sliced

• 2 yellow onions, peeled and thinly sliced

• 4 shallots, peeled and thinly sliced

• 9 tablespoons unsalted butter

• 4 tablespoons extra-virgin olive oil

• 1 1/4 cups Worcestershire sauce

• 3 cups red wine

• 3 large carrots, halved and cut into half circles

Instructions

• 4 celery stalks, thinly sliced

• 1 tablespoon beef bouillon base

• 3 quarts beef stock

• 1/2 French baguette

• 4 cups Gruyère cheese, grated

• 4 cups Emmental cheese, grated

• Ground black pepper, to taste

• Kosher salt, to taste

• 1 bunch fresh chives, thinly sliced, for garnish

1. In a large Dutch oven over medium heat, melt 6 tablespoons of butter with 2 tablespoons of olive oil. Once the butter is melted, add the sliced shallots, Vidalia onions, yellow onions, and 2 of the red onions. Season with about 1/2 tablespoon each of salt and pepper. Allow the onions to cook undisturbed for a few minutes so they begin to steam and soften. Stir occasionally, continuing to cook until the onions are fully softened, about 15 minutes.

2. Once the onions are translucent, reduce the heat to the lowest setting. Continue caramelizing for 2 to 3 hours, stirring every 5 to 7 minutes to prevent burning. When the onions take on color and a fond begins to form on the bottom of the pan, deglaze with 1/4 cup Worcestershire sauce and 1 cup red wine. Continue cooking until the onions are a deep brown and richly caramelized.

3. In a large saucepan over medium-low heat, melt the remaining 3 tablespoons of butter with 2 tablespoons of olive oil. Stir in the carrots, celery, remaining 2 sliced red onions, beef bouillon base, and 1 tablespoon salt. Sweat the vegetables, stirring occasionally, for about 25 minutes. Add 1 cup Worcestershire sauce and 2 cups red wine to deglaze, stirring frequently, and cook until the wine has completely reduced. Add the beef stock and reduce by 30 percent. Strain the liquid and add it to the Dutch oven with the caramelized onions. Let the mixture reduce by another 10 percent, adjusting the Worcestershire sauce, bouillon base, salt, and pepper as needed.

4. Preheat the oven to 350°F. Cut the baguette into crostini-size slices, brush with olive oil, and bake until golden brown and crisp, about 20 minutes.

5. Ladle the soup into 5 oven-safe bowls. Add a large handful of the cheese blend on top, followed by 2 crostini slices and another handful of cheese. Place the bowls on a sheet pan and broil until the cheese is golden brown and bubbling, about 2 minutes.

6. Garnish with sliced chives and serve hot.
