Miso Dashi Au Jus
Pair with 2019 Très Bien
Serves: 6 - 8 | Prep Time: 10 - 15 minutes | Cook Time: 45 minutes
INGREDIENTS
• 1 1/2 cups fennel
• 3/4 cup turmeric root
• 3/4 cup ginger root
• 3/4 cup leeks
• 6 stalks of lemongrass
• 1 1/2 cups miso
• 1 cup fish sauce
• 1/2 cup soy
INSTRUCTIONS
• 1 cup sake
• 1/4 cup brown sugar
• 3 quarts water
• 1/2 ounce wakame
• 2 tablespoons Szechuan peppercorns
• 1 tablespoon yuzu kosho
• 2 1/4 Shiitake mushrooms
1. Rough chop the fennel, turmeric, ginger, leeks, and lemongrass.
2. Combine, in a large mixing bowl, the miso, fish sauce, soy, sake, brown sugar, water, wakame, peppercorns, yuzu kosho, and shiitake.
3. Sauté the ingredients from step one in a large pot. Then deglaze with the ingredients from the second step. Simmer together for 45 minutes.
4. Using a colander, strain liquid into a separate pot or container.
5. Serve over sliced prime rib and holiday sides of your choosing.
