The 2021 Wheelhouse Zinfandel is as sleek and flavorful as ever, with strawberry, raspberry, and cranberry fruit up front. It features pomegranate, ripe figs, anise, and vanilla on the nose. RHÔNE FOR THE HOLIDAYS 2019 Founder’s Collection Caverio 2019 Founder’s Collection Passage If you can’t take a trip to France this holiday season, don’t worry. We’ve got you covered with wines made from the top Rhone varietals: grenache, syrah, and mourvèdre. Caverio is our grenache-based GSM blend with 83% grenache, 10% syrah, and 7% mourvèdre. Red plum, strawberry, cinnamon and nutmeg open up in the glass, followed by notes of fresh potting soil and red clay. Passage is our syrah-based blend with 66% syrah, 27% grenache, and 5% mourvèdre. A TWIST ON TRADITION 2019 X-Series Marselan 2019 X-Series Caladoc 2022 X-Series Verdejo X-Series holds true to the spirit of extraordinary in these rare Old-World and hybrid varietals that go beyond the traditional. Marselan is a hybrid of cabernet sauvignon genes which lend dark, earthy, tannic character, and grenache genes that send dark cherry and ripe cranberry exploding on the mid-palate. Caladoc, a hybrid of grenache and malbec, beginning with aromas of rhubarb pie and blue fruits, smoothly followed by dark berry flavors along with hints of creamy white chocolate and banana cream pie filling. Our Verdejo, with notes of pear and green apple and hints of wet stone and dried jasmine, brings the tradition of a refreshing, tapas-ready wine from Spain’s Rueda wine region home to Paso Robles.

The 2020 Octant Bordeaux Blend was hand selected from the best barrels comprised of 61% cabernet sauvignon, 23% petit verdot, and 16% malbec. The 2016 El Pomar Cabernet Sauvignon is a true expression of what winemaking in the vineyard can produce. Ripe boysenberry, cherry, and candied licorice scents pick up woodsmoke, vanilla and floral nuances as the wine opens. LEMON BRUSSELS SPROUTS WITH BACON AND BREADCRUMBS Pair with 2019 Founder’s Collection Passage Ingredients • 2½ pounds Brussels sprouts, trimmed • 4 ounces slab bacon or pancetta (Italian bacon), coarsely chopped • 3 tablespoons olive oil, divided, plus more for serving • 1 cup coarse fresh breadcrumbs • 1 small Fresno chili, seeds removed, finely chopped • 1 tablespoon thyme leaves • 1 teaspoon finely grated lemon zest • Kosher salt • 2 tablespoons fresh lemon juice, divided Instructions Remove outer leaves from Brussels sprouts; set aside.

Halve sprouts; set aside. Pulse bacon in a food processor until finely ground. Heat 1 Tbsp. oil in a large skillet over medium-low. Cook bacon, stirring often, until browned around edges and fat is rendered, about 4 minutes. Add breadcrumbs and cook, stirring often, until brown and crisp, about 5 minutes. Transfer breadcrumb mixture to paper towels and let cool slightly. Toss in a medium bowl with chili, thyme, and lemon zest; set aside.

Increase heat to medium-high and heat 2 Tbsp. oil in same skillet. Add reserved halved Brussels sprouts; season with salt. Cook, tossing occasionally, until deeply browned all over, 5–8 minutes. Reduce heat to low, cover skillet, and cook until tender, about 5 minutes.

Uncover skillet, add reserved leaves and 1 Tbsp. lemon juice, and toss to combine. Cover skillet and cook, tossing occasionally, until leaves are bright green and just wilted, 4–5 minutes. Uncover; add remaining 1 Tbsp. lemon juice and season with salt.

Transfer Brussels sprouts to a platter, drizzle with more oil, and top with reserved breadcrumb mixture (reheat breadcrumb mixture if needed in a small skillet or in microwave) and serve.

BAKED BRIE WITH CRANBERRY-PECAN-BACON CRUMBLE Pair with 2021 Pinot Noir, Santa Lucia Highlands Ingredients • • • • • • • • •

4 strips bacon 2 tablespoons candied pecans or walnuts, finely chopped 2 tablespoons dried cranberries, finely chopped 6 dried apricots, finely chopped 1 tablespoon fresh rosemary leaves, finely chopped 2 teaspoons red wine vinegar Kosher salt and freshly ground black pepper One 7- to 8-ounce round high-quality Brie Sliced baguette, crackers and apple and/or pear slices, for serving

Instructions Preheat the oven to 325°F. Lay the bacon in a large skillet, then cook over medium heat until golden and crisp, 4 to 5 minutes per side. Drain the bacon on paper towels, let cool, then finely chop.

Combine the bacon, pecans, cranberries, apricots, rosemary, vinegar, pinch of salt and a few grinds of pepper in a small bowl.

Remove the Brie from its packaging. Cut off the top rind of the round of Brie, leaving a 1/4-inch border around the edges (use a sharp knife and go in from above at a slight angle). Discard the rind you have removed. Put the Brie in a small baking dish. Top with some of the cranberry-pecan-bacon crumble and scatter the rest around the Brie. Cover the dish with foil, and bake until the cheese is warm and gooey, 30 to 35 minutes.

Serve with bread, crackers, and apple and/or pear slices for dipping.
