2023 Kamal Reserve Cabernet Sauvignon 2021 Night Watch Proprietary Blend
Celebrate the spirit of Paso Robles with two of our estate’s finest expressions. The 2023 Kamal Reserve Cabernet Sauvignon showcases elegance with layers of black currants, cherries, and plums, accented by cranberries, baking spices, and thyme. The 2021 Night Watch Proprietary Blend is bold yet refined, offering fruit flavor with accents of black pepper and tobacco, framed by polished tannins and lively acidity for a seamless finish.
1. Score skin and fat of the roast, taking care not to cut down to the meat.
2. Combine rosemary, thyme, sage, fennel fronds and seeds, garlic, lemon and orange zest, salt, red pepper flakes, and black pepper in a food processor or blender. Pour in extra-virgin olive oil and pulse until it forms a paste.
3. Cover the roast with finished paste. Transfer to a large bowl and cover with plastic wrap. Refrigerate for at least 6 hours.
4. Remove pork from refrigerator 1-2 hours before cooking.
5. Heat oven to 450ºF. Transfer pork to a rimmed baking sheet and roast for 35 minutes.
6. Reduce to 325ºF and cook an additional 3-4 hours until internal temperature reads 180ºF.
7. Transfer pork to a cutting board or serving tray and rest for 15-30 minutes before serving. Serve with creamy polenta and local mushrooms.
