PRESIDENT'S LETTER Welcome to the Spring issue of The Collection. With the chill of the winter months almost behind us, we were looking forward to enjoying the weather and reconnecting with our magnificent city. But, we’re operating in a different environment now, hopefully for the short-term. We would encourage everyone to check online to see what’s open before making plans, and to follow the advice of city officials and the medical community to ensure that we’re all adhering to best practices. Of course, with much of the city’s programming and entertainment on pause, it’s a good time to catch up on our reading, and we hope you find some inspiration within these pages. Beginning with real estate, the housing market in the GTA has been rolling for a year now. With buyers and sellers attuned to the mortgage “stress tests,” lower lending rates, a vibrant regional economy, and a growing population, the demand for home ownership is strong. At the time of writing, March sales figures were not available, but the first quarter of 2020 picked up where 2019 left off. With roughly 11,800 sales at an average price of $882,000, we are well ahead of where we were this time last year. Sales volume increased by 31%, with average prices up 15%. Annual inflation, as measured by the MLS Home Price Index Composite Benchmark, was up over 10% in February. One notable difference from 2019 is the shift from condo apartments to ground level housing, as inflation has eroded the condo price advantage. So far this year, detached homes account for 47% of all sales, and condos

account for roughly 27%. A year ago, those were closer to 43% and 31%, respectively. Inventory is at its lowest since April 2017, inflation is an issue, and with condos leading the price charge, expect continued demand for low-rise housing. Rest assured, we are closely monitoring the effects of COVID-19 on the market, and our sales team will be adhering to best practices related to client meetings, home showings, open houses, offer presentations, negotiations, and more. This is not business as usual, but business does go on, and we will continue to make the safety and needs of our clients, sales force, and administrative team our highest priority. Turning to our featured stories, we’re joined by Canada’s most renowned landscape architect, Ron Holbrook. Ron has completed a five-year labour of love in Italy, transforming the grounds of Castello Carbonana, and we’re delighted to share his work. On the heels of International Women’s Day, we’ve interviewed Maye Musk, the world’s oldest CoverGirl. Ms. Musk has changed the way we view the modelling industry and has just released a new book. The Gardens at Castello Carbonana By Ron Holbrook, Landscape Architect

In my 30-year career as a landscape architect, I’ve been privileged to have worked around the world on many high-profile projects. Though I’ve enjoyed many highs, to my dying day, I will always remember a moment towards the end of a five-year project to turn the grounds of a crumbling 12th century Italian castle into a showcase for contemporary horticultural design. As I walked to the top of a steep hill overlooking the grounds of Castello Carbonana, I took in what my team and I had accomplished, and found myself, to my surprise, suddenly and quite spontaneously weeping (tears of joy). In retrospect, I must have been inadvertently channeling Linda Richman, the legendary Mike Myers character on Saturday Night Live. I’d become what my Jewish friends might call ‘verklempt.’ 6 | the COLLECTION


hat moment on the hill expresses the enormous sense of pride and accomplishment that I felt for what we had achieved. Simply put, this project was the most unique experience in my professional career as a landscape architect. In 2011, I hadn’t fully appreciated the enormity of the task I would be undertaking when former clients approached me about designing the grounds of their newly acquired historic Umbrian castle in central Italy. Intrigued, I immediately said yes, having not comprehended the monumental scope and scale of the task that lay ahead. But I agreed without hesitation for one simple reason: my deep admiration and respect for the Castello Carbonana’s new owners. A few years earlier, we had successfully collaborated on the restoration and renovation of another heritage property. Their status as ‘dream clients’ had already been established. For me, rule number one in taking on any big project is an innate sense that I can count on “total client engagement” over the course of the project, and with the clients in question, that was a given. Sometime later, my clients and I made our first visit to Italy to inspect their property. En route, we made a pitstop at a garden just north of Rome, called Ninfa, conceived in the mid-1920s by a onetime mayor of Rome and his aristocratic English mother. Unlike formal Italian gardens, it was viewed as being more in the English pastoral style, and I hoped that it might inspire my clients about what we could achieve at Carbonana. And it did…initially. Highly ornamental Italian gardens are at odds with nature; the English pastoral garden mimics it. But though Ninfa was exquisite, secretly I suspected its overly pastoral style wouldn’t work at Carbonana. My intuition was confirmed hours later when we arrived at the castello. It

struck me almost immediately that the challenge was to design a garden that would seamlessly and dramatically respond to the powerful and commanding Umbrian landscape which surrounds and envelops the castello. A formal garden of parterres certainly wouldn’t cut it at Carbonana, but neither would the familiar pastoral. Only something deeper and more profound would resonate with the castle’s somber old soul. From the get-go, my clients’ project had two dimensions: the first being restoration of a run-down medieval castle whose existence was first recorded in 1192, but was likely constructed centuries earlier. For me, of course, there was no garden to restore because one had never existed. The castello was built in the early Middle Ages as a hilltop fortification to protect the surrounding countryside. When it became a private residence over the ensuing centuries, the property’s fields were used to grow edibles and not cultivate vistas to admire. So, I was more or less gifted a clean canvas. Before and after shots are the staple of any aesthetic makeover, and with Carbonana, the before pics are especially desultory because prior to our arrival, Carbonana’s 50 hilltop acres were, simply put, just a jumble of tumbledown farm fields cheek-by-jowl with olive orchards that had been neglected for years. On first inspection, the site was more or less a complete 180 degrees of the plan I’d outlined to my client — to wit, “to create a visually inspiring private garden with unexpected whimsical, almost lyrical qualities never before experienced along, with functional outdoor spaces conducive to entertaining and relaxation.” With the Carbonana garden now complete, I hope we’ve delivered on that promise. Fulfilling that mandate meant overcoming many challenges. Some of them, natural disasters, others, bureaucratic hassles. Before work on the

garden could begin in earnest, re-engineering the castle’s foundations to withstand earthquakes had to be completed. For nearly two years, the entire castle was shrouded in scaffolding, and my team and I cooled our heels as the thousand-year-old structure’s foundation was stabilized, its stonewalls repointed, and many of its stones replaced. That reconstruction was proceeding quickly until a fateful calamity occurred. Driving back to the castello with my clients after an alfresco lunch in a nearby village, we noticed smoke rising in the distance, and as we got closer, it became clear that the property was ablaze, except mercifully the castle, whose fireproof limestone façade spared the structure. The destruction on the property was, in a word, apocalyptic with half of its mature cypress and oak trees gone, and much of its terrain now literally scorched earth. My ever-stoic clients were undeterred: “We’ll just replant.” And that’s exactly what we did, replacing approximately 300 trees over the following months. Still, to this day, the property remains somewhat bare, but as my clients say, “We’ve planted for the coming generations.” The bureaucratic hiccups arguably proved to be even more bothersome. Over the course of its centuries, Castello Carbonana had been owned by only two or three aristocratic dynasties until the last descendent of the final family sold it in the late 1940s to a Toronto physician named Dr. Ludvik Staub, who subsequently sold it in 2008. By the time my client bought Carbonana, three years later, this “gentle soul” of a building was in a truly beleaguered state. But despite its forlorn condition, Castello Carbonana remains one of Umbria’s most treasured historical landmarks, and the region’s citizens jealously guard its fate. When my clients and I initially approached the local council with our plans to transform the property into a private home, complete with a 8 | the COLLECTION

garden designed partly for recreational uses and outdoor entertaining, there was, to put it mildly, political pushback due to what they considered to be unorthodox, or at least contrary to anything they had encountered before. People in the region were unaccustomed to seeing ornamental or recreational gardens associated with historic castles: olive groves, yes, but design gestures like major regrading of the native terrain, planting trees in an interior courtyard, or adding an infinity pool to the landscape, were instinctively challenged. I also suspected that they did not like the idea of a Canadian landscape architect trying to impose a foreign footprint on their traditional landscape. It quickly became apparent to both my clients and me that a local hire was critically necessary to run interference with the local authorities. The perfect candidates turned out to be already in place: two Perugian architects, Bruno Salvatici and Daria Ripa di Meana, whom my clients had already hired to oversee the restoration of the castle. Among the invaluable assets they brought to tough and tense negotiations was a deep understanding of the region’s heritage issues, along with a deft diplomatic touch and an unwillingness to take “no” for an answer. One of my clients was also a huge asset because of his fluent Italian and passion for Italian culture, nurtured during years living in Rome as a young man. His inherent optimism also came in handy for maintaining morale. The ultimate lesson we learned was simple and straightforward: Anyone wanting to restore an historic property overseas would be well advised to cultivate patience. It’s not only a virtue, it’s a necessity, as is hiring local professionals to liaise with local officials. From my experience working in foreign countries, a minimum of a year is, more or less, required to obtain


the “official” approvals necessary prior to constructing outdoor spaces for any heritage property — even in Canada. Once permits were secured, construction of the garden commenced. For the next five years, I travelled to Italy several times a year to review and supervise the work of local artisans, contractors and trades. My office in Toronto would draft the working drawings and details, and our team in Umbria would execute them. Again, having local architects in place was indispensable. Bruno and Daria became my go-to “point people” overseeing the project when I was back home in Canada. And, of course, modern communications, like emails and texts, were the tech “grease” that made the project effortlessly proceed. When on-site in Umbria, I was amazed that with my limited command of the language, I was able to successfully communicate with my work crew. A few choice Italian words: left, right, up, down, over there, stop, and even the most classic of Italian rejoinders: “basta!” (enough!) seemed to do the trick on the jobsite and at the ever-memorable daily lunches! Looking back, it is hard not to overestimate the satisfaction I experienced creating a garden of such magnitude, complexity and scale, and I freely admit to feeling immense pride guiding friends, colleagues, and collaborators through the project, even if it’s only online. Perhaps the most important endorsement of all came from the local authorities and guest attendees who seemed immensely pleased by the garden at its launch party. So with no further ado, let me give you a brief tour.

After entering the property through a newly fabricated decorative iron gate, my clients and their guests drive up to the castello on a newly constructed hairpin one-kilometre road. Nearby is the Hillside Garden with its apple and pear orchards and olive groves, and the Kitchen Garden overflowing with my clients’ favourite fruits and vegetables — pomegranates, tomatoes, artichokes, kiwis — and, of course, the de rigueur herb garden. As you climb further up the hill, you pass the once barren farm fields that are now awash in evergreen groundcover that is quite simply the year-round foundation of the new garden. My main objective at Carbonana has always been to be very respectful of the natural Umbrian landscape, so I will be immensely pleased if users of this garden feel that this magnificent green ward works well in this regard. I believe it does, but of course, I’m biased. Personally, I take some satisfaction that the garden of Carbonana expresses my own design sensibility: at its essence, Carbonana is green, simple, and bold. One of the most memorable highlights of this project was the opportunity to forage in incredible nurseries; they are, literally, museums for plants. Several times over the course of the project, my clients and I travelled to Pistoia, near Pisa, where I discovered the most incredible weeping cypress trees. They don’t grow to the same height as traditional cypresses but my instinct to use them en masse created an incredible aura of draping 10 | the COLLECTION

green. It’s magical! Another reason for the garden’s distinctive look is the abundance of a plant native to Italy called Ginestra. We planted thousands of them, and they create a stunning visual: exquisite fields of yellow in the spring and early summer. Unquestionably, evergreen gives the garden its aesthetic structure, but I also introduced a colour palette of soft pastels — lavender, blues and purples — providing the hidden highlights. For me, the real joy of being a landscape architect on any given project, is “art directing,” the actual installation of a garden, touching and placing each and every plant as they go into the ground, not just dispatching drawings from an office and letting the trades do all the grunt work. Having this opportunity in Italy, with its incredible palette of colours and plant choices, just reaffirmed that passion. The garden at Castello Carbonana has become so deeply woven into my life — and soul — that I return once a year to revel in its unfolding beauty as it matures. Admittedly, I still occasionally get verklempt, but without those tears of joy. One final note: the big takeaway from this once-in-a-career project — well, I hope, not just once — is to never ever underestimate yourself. At the outset, if I had truly thought about the challenges that lay ahead, I might have gone into some default, deer-in-the-headlights mode. That would have been a big mistake because nothing is more satisfying in life than rising to a challenge and hopefully meeting it. he exhibition’s title, A Like Vision: The Group of Seven at 100, harkens back to the Group’s founding in 1920, when their first exhibition of more than 120 paintings resulted in only six sales. And yet, the first sentence of Lawren Harris’ introduction to the catalogue foreshadowed the Group’s legacy: “The group of seven artists, whose pictures are here exhibited, have for several years held a like vision concerning Art in Canada. They are all imbued with the idea that an Art must grow and flower in the land before the country will be a real home for its people.” According to Dejardin, the title reflects the Group’s driving purpose at the time of their founding. “They were frustrated with the reactionary nature of the art establishment of the day,” Dejardin says. “They felt that landscape painting, in particular, was too reliant on European models that did not do justice to Canada, which they felt needed a new and dynamic visual language that was uniquely Canadian.”

The McMichael gallery, located northwest of Toronto on 100 acres of forested land along the Humber River, bills itself as the “spiritual home to the Group of Seven,” with a collection totaling more than 2000 works associated with the Group, who painted as a collective from 1920 to 1933. “That of course includes extraordinary objects, not just paintings and drawings,” noted Dejardin during his curatorial talk. “Things like Fred Varley’s old woolen toque. Believe me, you don’t want to see it. It’s truly horrible.”

Besides his deepened knowledge and appreciation for the Group of Seven, Dejardin cites the sheer size of the McMichael collection as a defining difference between A Like Vision and his previous exhibitions. “It’s an enormous well of extraordinary work that you can dip into,” he says. “Instead of actually having to look through millions of books, visit all sorts of collections, I could just do the whole thing from one collection, how wonderful is that?”

Dejardin himself has a special connection with the Group of Seven that predates his role at McMichael by at least a decade. Formerly a curator in London, England, Dejardin planned the first big Group of Seven exhibition outside of Canada in almost 100 years. Painting Canada, which included work from both the Group and Tom Thomson, who died before its official formation but was deeply influential, set record attendance for his London gallery before achieving further success in both Norway and the Netherlands. Two years later, Dejardin co-curated From the Forest to the Sea: Emily Carr in British Columbia, showcasing another artist often considered an honourary member of the Group of Seven.

The McMichael collection ultimately proved to be one of Dejardin’s greatest challenges in curating the exhibition: “I was spoilt for choice.” While he could have organized the exhibition by theme, geography or chronology, Dejardin ultimately chose to arrange the artworks by individual artist. As a result, A Like Vision, which includes more than 280 artworks spanning five galleries, will showcase masterpieces by every Group member from all periods of their careers. “This enables the visitor to gain some appreciation of each artist’s unique individuality, and of how they each developed over time,” Dejardin says. He adds, “I hope this exhibition serves as a reminder, if one was needed, of just how

extraordinary their individual achievements were. To this day, it remains difficult for Canadians, certainly, but even for me, a Brit, to look at this beautiful country and not make a mental reference to how these artists taught us to see the landscape.” The exhibition of course includes iconic works, such as A.Y. Jackson’s moody First Snow, Algoma (1919/20), Franklin Carmichael’s vivid October Gold (1922), and Lawren Harris’ stark Mount Robson (1929). But alongside these masterworks are lesser-known pieces including a series of humorous and impressionistic sketches by Arthur Lismer, many depicting his fellow artists. “The cartoons prove that, while the Group was absolutely serious about their art, they did not take themselves too seriously,” Dejardin says. “And [the cartoons] give us a glimpse into what it was like to be an artist at the centre of the creative maelstrom in those exciting times.” Interestingly, the McMichael gallery will also be offering a counterpoint to A Like Vision in the summer: Uninvited: Canadian Woman Artists in the Modern Moment. The gallery describes it as, “a major exhibition of Canadian women artists timed to coincide with, and offer SPRING 2020 | 17

commentary on, the centenary celebration of the Group of Seven.” Featuring more than 200 works by female painters, photographers, sculptors, architects and filmmakers, the exhibition will include notable artists such as the Montreal-based Beaver Hall Group of painters (including Anne Savage and Lilias Torrance Newton), Emily Carr, and Toronto sculptors Elizabeth Wyn Wood and Florence Wyle. The exhibition will also feature artists from immigrant communities in this period, such as Regina Seiden and Paraskeva Clark. According to curator Sarah Milroy, also McMichael’s chief curator, “The art made by Canadian women in this period is second to none in quality. All of us at the McMichael are delighted to shine the spotlight at long last on this overlooked cohort of creative Canadians.” 18 | the COLLECTION

Both exhibitions come at what Dejardin asserts is an important time for Canada on the world stage. “In a time of considerable political turmoil, many people across the world are looking to Canada as a beacon of sanity and fairness.” He hopes that Canadian and international audiences alike are inspired by the legacy of art that has defined Canadian history, geography and identity, adding, “It’s time for Canada’s rich heritage of art, largely unknown outside of this country, to be recognized and celebrated for the world-class achievement it is.” The exhibition, A Like Vision: The Group of Seven at 100, will be on view at the McMichael Canadian Art Collection in Kleinburg until Spring 2021. The darker, the better

Dr. James Andry, founder and medical director of the Sleep Therapy & Research Center in San Antonio, Texas, says, "Even low-level lights can shut off melatonin, a hormone that helps us prepare to fall asleep.” Create a dark sanctuary with fully closed window coverings and turn off all sources of artificial light. Avoid the blues

Daylight also regulates daily sleep patterns. Try to get outside in natural sunlight for at least 30 minutes each day. If possible, wake up with the sun or use very bright lights in the morning. Sleep experts recommend that, if you have problems falling asleep, you should get an hour of exposure to morning sunlight and turn down the lights before bedtime.

Stick to the routine

Go to bed and wake up at the same time each day, even if it’s different from your partner’s. (Try earplugs, an eye mask or a vibrating alarm clock.)

Keep it cozy

Make your bedroom neat and cozy. Get rid of anything that might distract you from sleep, such as the TV, bright lights, an uncomfortable bed, or warm temperatures. You sleep better if the temperature in the room is kept on the cool side. If you have

insomnia and tend to watch the clock, turn the clock’s face out of view so you don’t worry about the time.

s the long, cold winter months begin their transition to spring — with days getting longer and trees beginning to blossom, a very Canadian tradition emerges: tapping trees for maple sap, to be turned into maple syrup. This year, Ontarians and tourists alike can see the process up close at the Kortright Centre for Conservation’s annual Sugarbush Maple Syrup Festival.

Visitors can also enjoy pancakes with real, locally produced maple syrup. As Kortright Centre is specifically a demonstration site, the maple syrup produced there is not served or sold to the public. According to Stafford, they tap between 100 and 120 trees each year, which provides between 15 and 20 one-litre buckets of sap per tree. It takes 40 buckets of sap to make one litre of maple syrup.

Running daily through April 12, the festival is a family-friendly event with a little something for everyone. Twin festivals are held at Bruce’s Mill in Stouffville every weekend until April 12, Terra Cotta in Halton Hills (weekends to April 5) and Island Lake in Orangeville on March 28.

“The weather during February, March and April, when the sap is running, has an impact on production,” she says. “You need particular temperatures for the sap to run, and if we have a really fast spring – where it seems to go from cold to hot all of a sudden – then we have a short season where the sap runs. In some years, that’s affected syrup production in general.”

“We have face painting, horse-drawn wagon rides, buskers, there’s food available, different shows (and) animals,” says Heather Stafford, the Kortright Centre’s education coordinator. “The maple syrup festival is one of our keystone festivals. It happens every year and draws tons of people from throughout the province, as well as tourists from all over the world who come to see maple syrup production.” The festival has run for 52 years, even before the Kortright Centre opened its doors in 1979. This year’s attendees will get to see how maple syrup was made in three different periods of time. “We go through sort of a timeline of maple syrup making,” Stafford explains. “You can learn how Indigenous people in this area would have used maple sap in the past, and then we also have an early European settler demonstration, which will show how early European settlers boiled maple sap to make maple syrup and maple sugar. Then we have a more modern evaporator, where you can see how more modern farmers harvest sap as well. You can see all three methods of using maple sap from trees.”

For a unique look at the maple syrup production process, Kortright hosts a Maple Syrup by Lamplight evening on March 28 starting at 7 p.m. Tickets for the experience, which includes a tour of the centre’s maple sugar bush, a stop at the sugar shack and a few tasty treats, can be bought online or by phone. Bruce’s Mill in Stouffville has maple syrup demonstrations and pancakes and syrup, as well. Visitors can also try their hand at axe throwing, watch wood carving demonstrations and visit the petting zoo. Terra Cotta Conservation Area in Halton Hills will take guests on a more behind-the-scenes journey, with a guided sugarbush tour (including a pancake buffet breakfast) and a chance to learn how to make maple syrup on March 27. Tickets for both experiences must be bought ahead of time. Meanwhile, Orangeville’s Island Lake Conservation Area will also be serving pancakes and maple syrup. There are wagon rides, scavenger hunts, sugarbush tours and a chainsaw carving demonstration for

everyone to enjoy. Adults can even buy tickets for a moonlit maple sugarbush tour on April 3 and 4. When people think of tapping trees for sap, Stafford says what most often comes to mind is the method European settlers used — a tap with a metal bucket hanging off the tree. While Kortright staff does collect some of the sap this way, they’ve also modernized the process with a series of tubes. “Modern farmers have various methods of getting the sap to their evaporators, but basically they use a plastic tubing system,” says Stafford. “So you tap the tree, drill a hole in…attached to the tap is a tube, which runs down to a larger tube, which then runs to an even larger tube which goes to the evaporator.” (Evaporators are what turn the maple sap into syrup). “All of that then leads to a large tank behind the sugar shack, which is the building that holds our evaporator,” continues Stafford. “Because we’re on a hill, we can use gravity to pull all the sap towards our building, which is in a ‘bowl’ amongst all the trees. It’s very beautiful. As you’re standing at the sugar shack, you can look all around and see the hill with all the maple trees and all the tubing leading down to our evaporator.” Now mainly associated with pancake breakfasts, in the early days, maple syrup and other products made from sap served multiple purposes. “For early European settlers, maple sugar was actually their main source of sugar. A long time ago, sugar production was mostly happening in the south,” says Stafford. “It needed to be shipped up to Canada and that was expensive. Sugar production often used slave labour, which not all Canadians agreed with at the time. Maple syrup and maple sugar — which is mostly what the settlers would have made — was something that you could make yourself. “They also didn't have refrigerators, so sugar was a way to preserve meat, as well as to make preserves, jam and jellies. Sugar was very important, and this was a free, albeit labour intensive way of getting it.” Even nowadays, tapping trees for sap is quite environmentally friendly. As Stafford explains, “It’s a very sustainable practice, doesn’t harm the trees, and a great way of producing a sugar with less environmental impact than your white or brown sugar production with sugar cane.” To learn more about this year’s Maple Syrup Festival, visit www.maplesyrupfest.com.

Spring is in the air, and as we slowly shed our winterwear to slip into something a little more comfortable, many will turn to the runway in anticipation of the latest fashion trends that will define the coming season. Fortunately, there’s no need to travel to New York or Paris. Toronto has its own vibrant arts and fashion event that has been slowly reinventing the local fashion industry for 15 years. Fashion Art Toronto (FAT) is a five-day festival with a boundarybreaking, norm-smashing podium that’s all about forward-looking fashion, experimentation, and art. “I wanted to create this multimedia event where we not only explore fashion through runway and performance, [but through] visual arts, music, stories and storytelling,” says Vanja Vasic, the festival’s founder and working executive director. “We’re a space that encourages designers to think outside the box, to create more provocative and avant-garde collections.” 28 | the COLLECTION

THIS APRIL, WHEN A VISITOR ENTERS FAT at Daniels Spectrum in Toronto’s Regent Park neighbourhood, they will be immersed in a mosaic of designed creations – a provocative, imagined world brought to life through art installations, photography, fashion curated films, runway shows and performance art. Each evening will culminate in a runway show – or spectacle – displaying the work of up to three designers that will remind fashion enthusiasts of the late Alexander McQueen. For 2020, FAT is starting what Vasic describes as an “art village” to highlight art and provide a place where the audience will be able to take part. “There will be videos and art installations, and multimedia rooms that people can go into and explore,” Vasic explains excitedly. She is expecting to exhibit the collections of 30 to 45 designers, and to welcome over 6500 guests during this season’s production. As recently as 2006, Toronto’s fashion scene was mostly conservative and uniform. Vasic created FAT to introduce a new flavour of diversity and experimentation to the scene. She says, “Toronto is such a diverse city, but looking at the people around me, we just weren’t seeing that in fashion anywhere.” FAT became the first festival of its kind to represent Toronto’s diversity “not only in the models that are shown on the runway, but also in the types of collections we showcase.” This vision has captured the attention of the wider fashion community, as FAT features the work of both international and local designers. “We’ve grown into a big, world class event,” she says passionately. “The caliber of our designers is really strong and stands out on a world stage.” Even the event’s acronym, FAT, demonstrates the team’s commitment to the avant-garde and unconventional. “Fat” rebels against the restrictive “thin” standard of beauty that continues to hamper the world of fashion, even today. To Vasic, FAT represents inclusion, body positivity, and an openness that stands in opposition to many traditional fashion weeks. She adds, “FAT also stands for substance, you know, [something that’s] full of life and energy.” Now in its 15th year, FAT is focusing on a new theme: We’re All In This Together. Vasic explains, “Being in the scene at Fashion Art Toronto every year, we hear these phrases thrown around: ‘I’m going to go see my FAT family,’ ‘I’m excited to be a part of the FAT family this year.’ That’s from the models, designers and even the public – the people that come and attend every year. So, for me that was really interesting and endearing, that the people involved in the event had this real sense of belonging to something. I wanted to explore that idea.” She adds, “As an event, we’ve tried to create a space where we’re open and diverse, and where you feel included, even if you’re different and have something different to say. I really wanted to explore that notion of family togetherness, how to create support, and how to create a community.” Among the anticipated highlights of the 2020 production, burlesquestyle lingerie line Maison Chardon will be returning to FAT, fresh off their recent showcase, Pins and Cream. Strawberry Cherie is the mastermind behind Maison Chardon’s fashion experiences, and is known for wild performances inspired by the label’s French and South Korean roots. The African designer Gervacy will also be rejoining the FAT family, with a runway show that will mix dance and visual imagery with a contemporary take on African prints and cuts. Ali Haider, an OCAD graduate who creates high-fashion evening wear with a fantastical flair, is also excited to return to the event.

THINK OUTSIDE THE BOX New to FAT will be two local streetwear brands. “They’ve done some amazing stuff with streetwear,” Vasic says. Prescribed Shelter, a label based in Brampton, is defying fashion conformity through a retrofuturistic design straight from Toronto’s streets. The label, Sex for Saints, has designed rock and roll chic for the artist with bold casual wear. “These are really cool brands and I’m very excited that they’re new [to the show] this year,” says Vasic. Though mostly a dedicated platform for unconventional artists, FAT has also developed its well-earned reputation as one big party, and this year should be no different. The 2020 installment will kick off with an epic opening bash for audience and performers alike. The main event will be a hologram artist who will debut at the party and whose holograms will be featured throughout the week.

Each year, Vasic works to ensure that FAT keeps its vision to innovate at the forefront – a commitment that has paid off. She values the role that FAT has played over the years in helping to launch the careers of original, but different, new artists. Designers like Evan Biddell and Pedram Karimi were given a stage to showcase their work, while several models have found a platform to the runway that had otherwise been closed to them. Vasic reveals that before her America’s Next Top Model success, fashion model Winnie Harlow walked during FAT’s 2013 season. “She was somebody really special,” Vasic reflects. “Winnie, along with Fashion Art Toronto, is to me this idea of difference…showcasing unique beauty and celebrating diversity.”

Visitors to 2020’s FAT can expect to be awed by a multi-sensory, multimedia experience of fashion design, unmatched by other fashion events in the city. Vasic is confident that when they attend, locals and tourists alike will be impressed at the caliber of talent on display, and inspired by the different perspectives and ideas represented. The creativity bursting from each carefully selected photograph and expertly crafted runway show will unite attendees around the show’s vision to view fashion as intentioned artistic expression. rom the plains of Saskatchewan to the billboards of Times Square, CoverGirl Maye Musk has lived many lives over the course of her 71 years. Born in Regina, Canada and raised in Pretoria, South Africa, Musk’s story spans two continents, three countries, and eight cities. Although these days, she is a fashion icon, public speaker, and internet influencer with nearly 300,000 Instagram followers, life wasn’t always so charmed for the jet-setting model. Musk married at a young age to an abusive husband, and became a single mother to three at 31, before abandoning South Africa for a new life in Toronto, where she struggled in poverty to provide for her children. Over the years, she’s battled weight issues and ageism in the modeling industry, while building what would be a lifelong career as a dietician. At 59, she embraced her age, let her hair turn gray, and within two years was on the cover of New York magazine. At 67, she walked her first runway at New York Fashion Week with women a third her age. At 69, CoverGirl built a campaign around her, calling the grandmother of 10, “an affirmation of the power and importance of diversity and inclusivity in the world of beauty.” Today, she proudly holds the title of world’s oldest CoverGirl, and her children Elon (yes, that Elon), Kimbal and Tosca are all leaders in their chosen fields. She has just published her second book, A Woman Makes A Plan: Advice for a lifetime of adventure, beauty and success, where she shares experiences from her life, while conveying hard earned, practical advice on a range of subjects like family, career, and adventure. The Collection’s Jeremy Finkelstein sat down with Ms. Musk on a recent press tour to discuss her new book, surviving abuse, raising successful kids, maintaining a career late in life, and much more.

The Collection: Why did you decide to write A Woman Makes a Plan? Maye Musk: As a dietician, I had my practice for 45 years, and people would come to me to learn how to eat better. They might be diabetic, have high cholesterol, or concerned with weight loss. But often they would be eating for emotional reasons, whether that was stress, or they were depressed, or tired, or bored…things not related to food. I would have to sort out their problems and give advice on how to change their life so that I could change their eating habits. I was always giving advice. Even when I’m on a modelling job, young girls come with their problems and say, ‘You give the greatest advice. You’ve got to write a book.’ TC: You’ve broken it down into five separate sections — Beauty, Adventure, Family, Success, Health. Why did you focus on these areas? MM: I met the literary agents from Toronto, and they wanted my whole life and what advice I would give throughout. There [have been] some rough times, but my children, Elon, Kimbal and Tosca, said you have to talk about struggles. I told my publishers that I think we should take those chapters out, they’re depressing, but they said they’re not, and that they give women hope. So, we kept them in. The abuse chapter is not so long, and there are many other things that happened in my life…adventure, entrepreneurship, health, family. But this seems to resonate with

a lot of women. When it comes to abused women, they’re kind of defeated, they’ve lost their confidence, they’re scared, and it’s hard to get out of that situation. So, when they read my book, they say they’re getting hope, they’re inspired, and they’re happy to know that over time, you can do much better. TC: You married at age 22 to an abusive husband, and in the book, you write about the importance of getting out quickly. Why did it take you so long to leave? MM: I think that’s a question you can ask any abused woman. Once you make the

choice to marry someone…well, I wasn’t going to marry him at all. He told my parents that I’d agreed to marry him. Back then, we sent telegrams, we didn’t phone anyone; it was too expensive. We wrote letters which took three weeks, six if it was out of country. And suddenly I get a telegram that I’m getting married! My back was hurting, I was alone in Cape Town, I’d gained 65 pounds, it was a weak time of my life. He said he would change if we got married. So, I called him — that’s when I did spend money on a phone call — and he said he’s only aggressive because I won’t marry him. If I marry him, it will change. So, I came back two weeks before the wedding and he hadn’t changed, but now there are 800 guests coming and the gifts are there. There’s not much you can do because you didn’t go against the norm in the early ‘70s. And then you find out men hit women…or rather my husband hit me. I came back from my honeymoon pregnant, and now I’ve got to tell my family that they have to look after me and I have this aggressive husband who might beat you up? So, I stayed in it, and I didn’t tell anybody. That’s why I say in my book…tell people. But I was kept away from my family. Abusive men often control you by keeping you away from your family and friends. But it’s good that it’s out there, so women can also start sharing their stories and get out of a bad situation. TC: Being a single mother of three, there’s a lot of multi-tasking in your story. Can you give your thoughts

on the importance of working, while raising a family? MM: When I was married, I was working then, too. I was doing my husband’s accounting, paying his staff, typing, and running a small practice, which started building up. So, I did work when I was married, and I realized I could actually earn a living if I got divorced. I moved to another town, started my practice and started modelling. Funny enough, they wanted models who were 31, which was unheard of. TC: Elon obviously gets the attention, but all three of your children are leaders in their fields. What’s the key to raising successful kids? MM: I would say it’s the same as what my parents did. We were completely independent, we made our own choices with school subjects and universities, and we were responsible for whatever we decided to take on. And I did the same with my children. I worked from home, so they had to behave…they knew they had to be polite and considerate. And, I encouraged them with whatever topics or subjects they wanted to study. Whatever after hours things they wanted to do…any pursuits they liked, I encouraged them. TC: Often parents work to remove impediments to a child’s success, but you go on at length about the importance of rejection. MM: If you’re aiming to do something, you have to get out there and you’re going to get a lot of nos before you get a yes. When Elon and Kimbal were looking for venture capitalists, they received a lot of nos. I couldn’t believe it when they got their first investment. And then Tosca too, with Passionflix. [They produce] romance movies with strong women, who are successful and confident. We supported her, but she had to get more investments, and she got out there, had lots of meetings until she eventually found an investor for the next 12 movies. TC: As a Registered Dietician Nutritionist, what do you think about fad diets? MM: They drive me crazy. There’s such a lot of nonsense going on. Often, a nutritionist without any studies in nutrition

or following any science, has this theory and they manage to write bestsellers. Many times, they’re selling you stuff. Besides a book, they might be selling you some kind of food product, juice or pills. TC: Why do we have such a hard time sticking to diets? MM: Because there’s temptation everywhere, and we love temptations. This morning at a TV interview, they had muffins. When I first moved to Toronto in 1989, I saw people eating muffins for breakfast, and I thought, they’re eating cake for breakfast? That’s amazing! So, I thought I can eat cake for breakfast, and then of course I gained weight. So, you can’t eat cake for breakfast. Even a bran muffin…it’s cake. TC: What does it mean to be the world’s oldest CoverGirl? MM: I’m happy to be the oldest anything, and so happy to be a CoverGirl. Every model wants to have a beauty campaign, and although I had smaller ones, usually in groups or with younger girls, I never had this kind

of campaign like with CoverGirl. And the message they give out is so wonderful…I can’t believe what age that is. Which means, when do we stop caring about what we look like? Well, we shouldn’t stop at all. And young girls are loving it too. It gives them hope that they don’t have to slow down as they get older. TC: That industry has really changed. Today we’re celebrating our older models, our plus-sized models, our ethnicity... MM: There’s a lot of diversity now because there’s a big demand. Not everyone’s 5’11” and a size zero, which is a typical model. I’m 5’8” and a size six. People think I’m skinny, but I’m not...I’m a healthy weight. I think it’s great that we’re seeing diversity and selling to real people. TC: You also have over 275,000 followers on Instagram and 76,000 on twitter. How has social medial changed your life? MM: It’s changed it completely. It’s free advertising. In the past, I would write to SPRING 2020 | 37

I don’t do auditions anymore, I don’t do castings, I don’t have to look for speaking engagements because they come to me. TC: You are also involved in a couple charities, Dress for Success and Big Green. Can you tell us a little bit about them?

TC: And Big Green?

MM: Dress for Success has 150 chapters in 25 countries. When I moved from Johannesburg to Toronto in 1989, we didn’t know much about winters, and my funds were blocked in South Africa. We had one winter coat each, which we wore for a couple of years. I had a pair of boots that my older sister had worn 20 years before. Our coats were looking pretty miserable and they weren’t warm enough…it would have been nice to have had help. As I moved up in life, my stylist told me that her friend founded a Dress for Success chapter in Houston, and suggested that we send extra clothes to them that are still in good condition. Then, I went to meet the CEO. They don’t only dress women, they give them dresses, shoes, bags, hats…they teach them how to prepare their resumes, they find out what they’re good at, they help them with interview skills, they help with their hair and makeup. It’s a whole makeover. Originally it was geared to women coming out of prison, but now it’s more geared to single mothers or whomever needs help.

MM: Even though we had to eat peanut butter sandwiches for dinner, we always had fruits and vegetables in season. When Kimbal opened his first restaurant in Colorado, he realized how fortunate he was to have fruits and vegetables as a kid. At some schools, not only do the kids not have vegetables, they don’t even know where a vegetable comes from. So, he started Big Green. The staff will put [gardens] in containers that last for 30 years. They show children how to take the dirt in wheelbarrows and put them into the container. They teach the children how to plant the seeds and how to water them. Then they come back every week to help, and the children see them growing, and the joy is when you see them pulling vegetables out. They can’t believe that they helped make this miracle happen. And then they are taught how to clean them, and how to prepare them, and eat them and they take them home. He’s done 650 already and we’re aiming for 1,000.

TC: We often hear of people looking to retire in their 60s, but you’re showing no signs of slowing down. How important is a long career to maintaining good health and wellness? MM: If you have a career and you’re loving it, that’s very anti-ageing because you have something to look forward to every day. But if you want to retire and you want to play golf, and you want to get out for dinners, and that gives you joy, then you’re also doing fine. But we have to watch our health more as we get older, that’s why I’m very careful with my eating habits. TC: What’s next for you? MM: I guess I’ll be travelling internationally. TURNING VACANT SPACES INTO GROWING PLACES USING MOBILE URBAN FARMS TO BUILD COMMUNITY BY RACHEL KIMEL

Have you ever wondered if there’s a productive use for vacant land in Toronto while it waits for development? After years of driving by the same empty lot in downtown Toronto, my partner Deena DelZotto and myself were imagining the same thing. We said, “Let’s find out who owns it and grow food there!” As certified organic gardeners, with active volunteer experience at The Stop Community Food Centre’s Green Barn and Evergreen Brickworks Urban Agriculture Program, we decided to create our own niche in urban agriculture in Toronto. Our organization, Bowery Project, was formed in 2013 after many months of figuring out the best way to create a “mobile urban farm.” Mobility allows for an easy change of location when the land must be claimed for its subsequent use — such as development, remediation or sale. As such, all produce is grown in containers that sit above the ground. Today, Bowery Project is a not-for-profit organization working to create opportunities for urban agriculture through the temporary use of vacant lots. Our three-fold mission is to transform underutilized spaces into biodiverse and productive growing places, to engage and educate the community through urban farming experiences, and to support the thriving Farm-to-Table movement by providing hyper-local food to restaurants, residents and community groups. Our container farms have popped up at a number of festivals and expos and are embedded in some of the most high-need underserved communities. We also grant interactive educational green space at schools and create edible landscapes in otherwise barren locations. These are just some of the benefits of urban agriculture.

VACANT LOTS: BLOCK 10 & STACKT We always say that each farm tells its own story, one that’s ultimately determined by the landowner, the location, and the surrounding community. Of course, growing food in an otherwise unused space has its challenges — among them: water access, sun exposure and security. In 2018, we were approached by a condo owner in a building that overlooked “Block 10” — as it was called by the developer at Cherry Street and Front Street. After years of looking at this empty space, the condo owner had the same thought we did. He started a search for “growing food in vacant spaces,” and came across Bowery Project. We quickly found out that Dream, Kilmer and Anishnawbe Health Toronto owned the land. Backed by an enthusiastic interest group living in the surrounding condos, and with the support of Dream, we installed a 500-crate farm that transformed the space. We grew herbs, greens, vegetables and flowers which were harvested and used by the local community, with the surplus donated to the Native Women’s Resource Centre. With over 40 condo residents actively engaged, the farm built a sense of community, while inspiring self-sufficiency, providing access to locally grown organic produce and beautifying the neighbourhood. We even saw a mallard duck make a nest in the sweetgrass, and one month later, walk away with seven ducklings! SPRING 2020 | 43


SOCIAL PROJECTS: ALEXANDRA PARK Our first large farm was located in a vacant space behind a YMCA homeless shelter in Alexandra Park, and was fully funded by a Trillium Grant and sponsored by the developer Tridel. This farm engaged homeless youth while providing food for the onsite kitchen. After two years at the shelter, the farm was relocated to a vacant space within the Toronto Community Housing development in Alexandra Park, and is now fully funded by Tridel. For the last three growing seasons, we have been contributing vegetables and herbs to the seniors’ meals prepared at the community centre, while providing educational programming to over 100 campers. This is just another example of how taking advantage of underutilized lands can work to address much larger issues like food security.

On the other side of the downtown core, Toronto opened its first shipping container marketplace and event venue in 2019. Stackt is an exciting temporary public space on city-owned land. With similar restrictions to Bowery Project due to their short lease (the site is slated to become a public park), Stackt found a partner in Bowery Project for part of their landscaping design. Bowery created a stacked, tetris-like designed urban farm installation that complements the modularity and mobility of Stackt, and we even installed our first pollinator garden. Built with the hands and funds from the team at Timberland Canada, we created an innovative edible landscape that inspires and engages countless visitors. Most of the produce grown on-site is sold to Ten restaurant and Highbell group, which runs the onsite container restaurant, and a portion is donated to the Homes First Residence down the street.

SCHOOLS: EDIBLE CLASSROOMS We call our small container farms at schools “Edible Classrooms.” Students are involved in every step of the process from finding the best location, choosing what to grow, physically building the farm, planting and maintaining, and the most rewarding…harvesting their produce. Educating and engaging students in the process of growing food creates respect and value for the food we eat in a whole new way. Wasting a carrot which just took two-and-a-half months to grow is all of a sudden out of the question. Gardening provides students with hands-on learning and team-work opportunities, while increasing environmental awareness and vital experience in problem-solving.

INSTALLATIONS: EDIT The 2017 EDIT DX — Expo for Design, Innovation and Technology — was our most elaborate installation to date. Bowery Project moved 1000 milk crates to the sixth-floor rooftop of the abandoned Unilever soap factory for the 10-day expo. The ‘No Lot is Vacant’ installation was produced in collaboration with landscape architect Victoria Taylor and plantsman/garden builder Ecoman Jonas. In partnership with the United Nations, this exhibition showcased sustainable innovative technology and design for the future. The simplicity of seeds, soil and containers captured a lot of attention from visitors and was an event highlight. For more information, visit boweryproject.ca

SHORT-TERM RENTALS IN TORONTO Any discussion of short-term residential rentals in the Greater Toronto Area will inevitably generate a wide range of opinions. For property owners and investors, short-term rentals provide an opportunity to earn income from an asset that may be sitting idle or income that is greater than they could obtain from long-term leases. For others, short-term rentals, and companies such as Airbnb, contribute to the GTA housing crisis by removing housing for longterm use from the market. Short-term rentals have also been criticized for creating "ghost hotels" that allow guests to host parties and act indulgently without limits. Whether you love or loathe them, shortterm rentals play a role in the market and are here to stay. The City of Toronto approved new zoning bylaw amendments for short-term rentals in late 2017 and early 2018. An appeal to the Local Planning and Appeal Tribunal (LPAT) was dismissed on November 18, 2019, and the bylaws are now in effect. With that in mind, anyone operating a short-term rental ("Operator") in Toronto should be aware of the following: SHORT-TERM RENTAL RULES • Short-term rentals are only permitted in an Operator's principal residence. Property owners are prohibited from renting investment properties short-term. • Operators can rent an entire dwelling for a maximum of 180 nights per calendar year or up to three bedrooms in a dwelling for an unlimited number of nights per calendar year. IMPLEMENTATION The City is implementing the bylaw in phases. Phase 1 is ongoing and allows individuals to report noise and zoning infractions directly to the 46 | the COLLECTION

City. Phase 2, requiring the registration of Operators, will commence this Spring. The City will begin enforcing the bylaw and collecting the Municipal Accommodation Tax ("MAT") during Phase 3, expected to commence in the Summer of 2020. LICENSING AND REGISTRATION Operators are required to pay a registration fee of $50 per year, in addition to a number of other obligations, including keeping records of short-term rental activity. MUNICIPAL ACCOMMODATION TAX Operators are required to pay a 4% MAT on all rentals that are for a duration of less than 28 consecutive days. OFFENCES AND FINES Contravention of the bylaw can result in significant fines, including a fine not to exceed $100,000. If the rental property is a unit in a condominium corporation, Operators should carefully review the corporation's declaration, bylaws and rules to ensure short-term rentals are permitted. There can be substantial financial and personal consequences if a rented property is in breach of a corporation's declaration, bylaws and rules. Osprey Valley is a one-of-a-kind destination just north of Toronto, featuring three distinctive courses designed by Ontario Golf Hall of Fame architect Doug Carrick. All three are ranked in SCOREGolf ’s Top 100 Courses in Canada, and in 2018, they became the first in the country to join the prestigious TPC Network. Of note is the Heathlands course, purported to be the first links style course built in Ontario. Although inland, the course manages to effectively emulate traditional Scottish links with its rolling dunes covered with fescue grasses and pot bunkers. Like many courses in Scotland, Heathlands is built between a road line and a rail line. The course’s tight, undulating fairways make it the most challenging track at TPC Toronto at Osprey Valley.

AVOIDING THE EASEMENT TRAP Easement investigation is an important part of any transaction By Chris Kamarianakis, CEO Protect Your Boundaries In the summer of 2019, Dave and Joanna moved into their newly purchased 1960’s bungalow in North York. Their Realtor helped them find this property, one that they wanted to build an addition onto and a pool in the backyard. A home inspector reported that everything was in order. The purchase concluded easily. Two months after moving in, Dave contacted Protect Your Boundaries. The City had rejected their permit applications for the addition and the pool. There was (and always had been) a hydro easement over the backyard that would prevent their plans from getting the green light. Their nightmare had begun.

What Are Easements? Easements are a way to legally use a piece of someone else’s property without actually owning it. Millions of properties in Ontario are affected by easements, their use ranging from shared driveways to backyard access, hydro and telco easements, to construction and conservation easements. They are not visible to the naked eye, yet many affect how one can use their land. Easements are an important item to disclose when selling property, and a “must-know” when buying.

Is there an easement on my property? If you know where to look, it’s easy to find out. Easements are on a property’s title and identified in the legal description as either ST (Subject To an easement), or TW (Together With – has an easement over another property). Further investigation into the easement instruments (legal documents on title) will provide a full description 52 | the COLLECTION

and explanation of the easement in question. Easements are also shown on survey plans, the Parcel Register, property deeds and on websites like ProtectYourBoundaries.ca.

What goes wrong? An undisclosed or misrepresented easement by a seller can result in issues before closing and after. If caught before closing, it can give a buyer the opportunity to negotiate a lower price or even back out of the deal. If discovered after closing, it may prevent the buyer from using the property the way they wanted. They may be restricted from parking in their driveway, building a fence between houses, or building that deck, addition, or pool they had planned on. This can lead to title insurance claims or even legal action. Easement investigation is an important part of any sale or purchase. Full disclosure on the listing by the seller and a thorough investigation by the buyer are essential to ensure everyone walks away from the deal feeling happy. Dave and Joanna’s example is far too common. Make sure that your Realtor understands your vision for the property and investigates easements so you don’t get caught in an easement trap! finding the right balance BY JULIAN BENTIVEGNA, TEN RESTAURANT Plant-focused diets have emerged over the last couple of years as a noticeable food movement. Some might say that this is just another trend that will soon fade away. However, I believe that this shift in our eating habits is part of the blueprint to the future of dining, and a behaviour that will be instrumental in combating climate change. The current farming practices for meat production place a significant strain on resources and the environment when compared to growing fruits and vegetables. Ontario grows some of the best produce in the world, so why not start making plant-based dishes the star of a couple of meals a week? As the vegetable-forward movement continued to gain traction, last year in Toronto, I opened Ten Restaurant, a 10-seat dining establishment with a multi-course and vegetable-focussed tasting menu. I want to clarify that I am not a vegetarian, nor does my restaurant serve only vegetables and fruit. I personally enjoy eating meat, and our restaurant typically offers one or two courses centred around a protein from small farms here in Ontario. I am, however, a firm believer of “everything in moderation,� and enjoy the challenge of cooking vegetables. At Ten, I try to showcase the hidden value that plant-based food can provide to our guests. I hope this article will shed some light on how you can create amazing meatless meals that are balanced with flavour and texture.

Vegetables are not Meat The first and biggest mistake when approaching vegetables is the effort to try and substitute them for meat. Examples of this include cauliflower and beet steaks, vegetable sushi, or those unfortunate Portobello mushroom burgers. Well grown vegetables and fruit have enough integrity to hold their own in a dish without having to masquerade as something they are not. A carrot dish should taste like a carrot, and everything you accompany it with should either highlight or contrast the characteristics of that carrot (sweet, savoury and earthy) with something it doesn’t have (salt, acid, fat, heat). Anytime you include meat, the protein on the plate will inevitably overshadow everything that accompanies it. By comparison, vegetables need balance to help them shine. salad made with cucumber and the first onions and lettuces of the season

start treating plants with as much respect as you hold for meat Texture Stop overcooking vegetables! The amount of texture present in raw forms of vegetables should be celebrated instead of shunned. When deciding to work with a vegetable, ask yourself, “How am I going to cook this?” The answer shapes the eventual meal. Every plant, if not edible raw, has a point where it becomes edible/ palatable through cooking — and the goal should be to isolate that moment. Scientists are starting to discover what chefs have known for quite some time: the more densely nutritious a vegetable is, the better it tastes. Cooking — or more specifically, overcooking — extracts some of the nutrients from vegetables, which makes them less healthy and less tasty. The worst culprit is boiling or blanching, since by the end of cooking, the water now has most of the good stuff from the plant, and if you get rid of it, there goes all the flavour. At Ten, unless we can repurpose the cooking liquid, we tend to steer away from these preparation methods. The reward for maintaining as much natural texture as possible is that you no longer need to add anything unnecessary to improve the texture later on. A good rule of thumb is that unless you are going to be making a puree out of what you are cooking, it should still have a bite to it. sunflower tart with granny smith apple

Less Is More The versatility of plants can’t be overstated. They can be roasted, braised, stewed, fried, poached…the list goes on and on. This versatility is a gift, but also a curse, as you can get bogged down by the hundreds of ways you could cook and serve them. I’ve always found that concentrating on a singular vegetable, and building around it, often results in the best meal. Less is definitely more when it comes to cooking plants. This philosophy shapes everything we do at Ten Restaurant and is crucial in refining and perfecting our plant-based meals. After coming up with an idea for a course at the restaurant, we look closely at all the individual components and ask ourselves several questions. Is this needed? Is this texture found anywhere else on the plate? Can I remove this? Is it too complicated? Does the main vegetable still shine through? By asking these questions, we can refine the dish to reach the point where everything on the plate has a purpose that uplifts the other components. parsnip with fermented turnip endive and fennel

To create truly delicious plant-based dinners, you must learn how to balance flavours, textures, and colours while not overly complicating the final product. Try to prepare items that are in season together, that have contrasting but complementing flavour profiles, and always aim to do as little as possible to the vegetable. Never overcook vegetables, and always remember how valuable their texture can be in a meal. Most importantly, start treating them with as much respect as you hold for meat, without trying to imitate the qualities of meat. In the end, it’s not about cutting out meat altogether, but rather reducing the amount on your plate and bringing vegetables to the forefront. Proper cooking of vegetables is challenging, but with the right mindset, you can enjoy delicious, simple meals that are not only good for you, but that also help reduce your carbon footprint and your grocery bill.
