Owner, The Pizza Joint The Pizza Joint … One Slice at a Time Born and raised in El Paso, Melissa truly has a love for her city. As a 2007 graduate of UTEP, she desired to offer pizza by the slice in the local area.

After being laid off from MillerCoors in 2009, that desire became a reality when she opened the doors to the first Pizza Joint in 2011 and her second location in late 2014. Here she shares some of her most valuable lessons she’s learned along the way.

The biggest risk I’ve taken: Being in business … you never feel 100% secure. I still feel

somewhat uneasy at times. When I first started, I didn’t know anything about the business at all, I was simply an avid lover of pizza. I didn’t come from an entrepreneurial background nor had I worked in a pizza joint. I just loved pizza and wanted to bring pizza by the slice to El Paso.

Life lessons to remember: The importance of time management, you have to practice selfdiscipline. I would rather get lost in the kitchen than in paperwork. Hiring the right people is key. It was very hard that first year because I didn’t have much experience in the hiring process. Lastly, you have to pay yourself first. You’re the face of the business and without you, there won’t be a business.

You’ll never regret: Following my own path. It was a risky and scary decision, but I am glad I followed my gut and I’m grateful that The Pizza Joint has become a favorite place for so many.

I’m glad that I’ve never: Thrown in the towel. You have to have faith in yourself and your community to support your business. There were times when I felt exhausted, but I believed in The Pizza Joint and what it could be.

The moment I knew I made it: In 2013, after paying off my first loan, I was able to open up the second location in the expanding downtown area. (The initial startup funding was a combination of money from my parents and former business partner.)

Chelsea Handler even talked about Payan during the opening monologue to one of her shows, thanking him and demanding her audience to “go buy one” of his dresses. “I have been a fan of Chelsea Handler since her show started,” Masai said. “I have all of her books and for her to mention me on her show was honestly the most surreal moment of my life. She is such a wonderful human and has such a big heart. For her to wear my dress to the Oscars was the highlight of my year.” Though we can’t all be Chelsea Handler, Payan says he designs for the same girl with every collection.

“She is a strong confident woman that appreciates the value of hard work.”

And that is not all. Payan was also the creative director for Metal Noir, a fine jewelry brand. Earlier this year in February, the brand had Payan design a ready to wear collection that was showcased during Mercedes Benz Fashion Week Fall/Winter show. For many designers, being able to have a runway show is a hard thing to achieve. “My experience with Metal Noir was very positive. I was able to achieve my dream to be creative director for a brand and for the first time, I was able to create garments that reflected another brand. We got to show in New York Fashion week and the response was very positive. The clothes were also worn by Giuliana Rancic on E news.” As I interviewed Payan, he was getting ready for another week of fashion – this one in LA. “The most stressful thing about fashion week would probably be the deadlines. No matter what, everything has to be done by the deadline. But for the most part, fashion week is a lot of fun. You get to organize what your vision is for an audience.”

Fortunately for Payan, he is still able to break away for a little bit and visit El Paso. As he grows more and more successful in the world of fashion, making sketches come to life on the runway or the red carpet, there are still things that he misses about his hometown. “What I miss the most is my family.

I always get such a sense of belonging when I go back home.” And even with In-N-Out burgers in mass supply in California, Payan added, “And of course the food is so amazing. Whataburger!”

drian Correa laughs when I ask him how he got his start in

was in the nursing program at UTEP,” he begins, during a recent phone call from Los Angeles. Knowing that he just earned his BFA in fashion design from one of the most highly regarded programs in the country, OTIS College of Art & Design, and a coveted paid internship with the clothing brand Hurley, this wasn’t the answer I expected. But Correa’s journey goes to show that, like many careers, the path to being a successful fashion designer doesn’t have to be a straight line.

A Socorro High School graduate, Correa realized about two years into the nursing program at the University of Texas at El Paso that the career wasn’t for him. Transferring to El Paso Community College, he soon became interested in designer clothing, like Pharrell’s “Billionaire Boys Club” line, which consists of graphic t-shirts and other streetwear.

“I loved what Pharrell was doing, but I wasn’t going to spend $80 on a t-shirt,” he explains, “So I bought a screen-printing machine.

After a while, I wanted to know how to make the actual shirts I was printing on.”

Those influences are helping him to “start learning what really identifies me as a designer” he explains, recounting a design project he worked on for Hurley where, “They told me they could make a whole collection out of the designs I made. Now they’re giving me more projects here and there.”

Correa’s work this summer led Hurley to extend his internship into a temporary position through November. Whether this turns into a full-time position or not, Correa is excited for his future, the ultimate goal to start his own label one day.

“All of this is baby steps towards that. I’d like to do a label that’s a fusion of streetwear with what’s called ‘ready to wear,’ and another affordable label underneath those high-end, art pieces,” he explains.

Correa’s come a long way since his humble beginnings, learning that the business truly requires a leap of faith, but he also urges aspiring designers to be unafraid. “Research everything about fashion – designers, history, etc. Find the type of designer you want to be and then find how you’re different. Just go for it, whatever you want to do.”

o survive cancer means many different things for different people and statistically, almost every single one of us has been touched by the disease. Most of us know at least one person who has been affected by it either directly or indirectly, often tragically, and sometimes

even miraculously. That said, we are almost all subject to dealing with the emotional effects that cancer has on us personally, whether we suffer directly from the disease or know someone close to us that does, and often it includes friends of friends, distant relatives, co-workers and their families, and even those acting as caregivers.

The majority of us fall into one of these categories and in some way, shape, or form, it implies a very real and lasting emotional event.

Enter the Rio Grande Cancer Foundation (RGCF) and its undying commitment since its inception in 1996, to making a difference in the lives of those affected by this pervasive disease. As we often hear, cancer is in no way discriminating in its selection of individuals to affect, which bodily organs, how young or old, or how successful the individual or not. The same unbiased criteria applies in how the organization chooses to spread its mission to offer enduring support to those who struggle with all types of cancer.

It means passing on this valuable information, so that those in need will benefit. It’s a simple action that could make a world of a difference in one’s ability to cope with the hurdles and stresses of the disease. As we see, the Rio Grande Cancer Foundation and all of those behind the organization go over and above their mission of providing support on all levels to those afflicted with cancer.

Thousands of people will lace up their shoes for the 7th annual Making Strides El Paso race this October. The 5K-run/walk put on by the American Cancer Society raises money for breast cancer research, but carries a much bigger meaning. “The race is to remember the ones we lost, support those in the fight and celebrate those out,” said American Cancer Society community event specialist Erica Salas.

Making Strides El Paso is one of the two race events the American Cancer Society organizes every year. It outgrew its previous Ascarate Park location; in 2015 2,200 people participated. This year, the race will make its way through parts of West El Paso starting at Las Palmas Life Care Center heading towards the Sun Bowl and through the Kern area before finishing up at the center again. Attendance is expected to spike to 3,000 participants.

Gesuina Legaspy, who started her fashion journey as a buyer for local store Tres Mariposas, runs another blog that has gotten a lot of attention. “They taught me everything I know, and without their knowledge I wouldn’t be where I am now. I wouldn’t have a blog or have the ability to express my vision.” Legaspy runs the blog Tres Gal, which she describes as edgy, clean and stylish. She decided to start her blog in February of this year, but it quickly became one of the most polished blogs in the borderland. She had access to designer clothes, fashion expertise and to free hair and makeup, so starting a blog came naturally. Legaspy wants people not only to see in detail her personal style, but also to get to know her as a person. “I want my blog to be approachable, I want people to get to

October, 2015 know me, not just what I wear,” Legaspy continues, “Fashion is everything I want to do for the rest of my life, I feel very humble when people recognize me or tell me that they read my blog, it’s a nice feeling.” Elyse Walker is also a big inspiration for her – Legaspy wants to follow her footsteps and open her own boutique early next year.

Both girls feel the pressure of having their readers interested in what they post, and having constant fresh ideas is one of the main components of having a successful blog. Legaspy and Aranas follow a calendar and plan their photoshoots with local photographers as well. “It’s cool that your friend’s work also gets recognized on social media, it’s definitely a collaboration and I wouldn’t be able to do it all by myself,” Aranas says. Legaspy often works with our own The City magazine photographer Dav Anmed. Legaspy is ready for El Paso to take more fashion chances and she and Arenas hope that they’re helping girls through their blogs to express themselves. “As a community we are growing and it’s time for El Paso’s fashion community to grow and take more risks,” Legaspy adds. On September 19th a proud daughter of the Sun City was announced as El Paso’s first World Boxing Champion, one of the greatest fighters in the entire world. The Don Haskins Center housed the world title boxing match headlined by Jennifer Han. It was an opportunity that Han was glad to seize. Prior to the fight Han said, “I am fighting against Helen Joseph from Nigeria for the IBF world featherweight title … she’s a powerful fighter since she has quite a few knock outs for our weight class. She has a similar background to me in that she started out doing martial arts, kickboxing, amateur boxing and now professional boxing.

However, even though she has a similar background, she does not have a similar style of boxing that I do.”

Of course the journey to this point began long ago when she began training under her father, Master Han. The idea of a lifelong dream becoming a reality was something that only recently struck Han, “I started seeing myself at championship caliber last year when I fought for the IFBA world title in Korea against Woo Ji Hye and at the time it was one of my best performances yet. I did not get the decision, but I felt that I had dominated and I belonged up there with the best in the world.”

The missed opportunity in Korea only fueled this great competitor’s fire as she prepared for the opportunity. “Training camp had been great, I got in some great sparring with the guys, (including her brother Abie and local fighter Austin Trout). [My Trainer] really drilled our game plan against Joseph, and we worked a lot on my footwork.”

Like all great champions, Han has been forged by adversity.

“The most difficult point in my career was in the beginning when I didn’t get many opportunities to fight. I thought I was done because it wasn’t like people were knocking down my door to be on their fight cards and I wasn’t able to compete unless they were calling me at the last minute to fight in other people’s hometowns,” Han confesses. But the circumstances for this fight have certainly changed, “Nothing beats fighting in your hometown. All my family, friends, students, and fans were there cheering for me and giving me their positive energy to win. I have fought all over the world and have enjoyed it, but it’s not the same when you have the people cheering for you rather than against you.”

Each time I photograph his shows I’m always impressed and this year was no different because the details he put together were out of this world. His collection included Italian leather, python, lavender suede, white pebble leather, sheepskin, etc. This year his final look was a gold-leafed python cut into feathers and sewn onto leather wings on the flap of a white-pebbled leather handmade backpack.”

n the East side of El Paso, a monster of a sandwich

has quickly become a famed neighborhood favorite. It’s not just any sandwich, but the sandwich of your dreams – two

donuts, with a scoop of ice cream in the middle and a topping of

your choice, nicknamed “The Leche Monster.”

You can find it at the Tasty Donut Café, a small shop with some big local fans, located at the corner of Montwood and Saul Kleinfeld. Owners Adrian Kheing and Lu Lin saw the business opportunity while visiting Lin’s family in El Paso last summer, noticing that the East side’s donut shop offerings were minimal.

“Economically, it was very valuable for me to open up on this side of town,” Kheing says, explaining that he saw a demand for something different amidst the national donut chains in the area. “Franchises and big companies may have tons of money, but product wise, I think you just can’t beat handmade donuts,” he says.

Not only are their donuts handmade every day, but so are their sauces, icings, and glaze. Because of this, “None of my donuts are oily, even on the inside. The glaze is going to be a lot lighter than places like Krispy Kreme and Dunkin Donuts,” Kheing explains.

Originally from Southern California, itself a mecca of “mom and pop” donut offerings, Kheing learned how to make donuts from a friend at Super Donuts, a shop that has expanded to multiple stores throughout the south of the United States. You can see the influence this has had in the variety of items he sells - from cake donuts with cereal for toppings, to Louisiana-style “tacos” (El Paso translation: breakfast burritos), maple-bacon glazed donuts, smoothies and slushies, and even an East Texas favorite called kolaches.

“The dough used for a kolache is different than the donuts, and inside is sausage and cheese,” Kheing says, “They’re really popular in Houston and Austin, so people who know what they are come here to buy dozens. From what I’ve heard, this is the only place you can find them in the city.”

With a commitment to “creating items that aren’t in El Paso yet that are hip, creative, and get people excited,” the shop also offers customized orders for special occasions, spelling out anything you’d like with your choice of donuts. Kheing has done everything from birthday and congratulatory messages to dating proposals.

But these unique offerings aren’t the only things drawing customers to his shop. At the café, you can find comfortable seating, an always-friendly staff, and even free wifi, so people “can simply hangout, eat, have a coffee, and relax,” Kheing says.

“Having a successful business is all about how you advertise and market yourself, and it’s 2015, so social media is very important.

Social media posting actually helped us out more than paying a lot of money to place advertisements in different places,” Kheing says.

It helps that the shop finds it important to form partnerships in the community, delivering regularly to Sierra Providence’s cafeteria and churches like Abundant Living Faith Center and Cielo Vista Church. Always looking for event opportunities, Kheing says, “We recently hosted a car show, and we’re trying to get involved with animal shelters and to host school fundraisers.”

Since its opening last October, the shop now sees a steady stream of regular customers, from the students at neighboring schools to donut-seekers from as far as New Mexico and Juarez.

Kheing says this growing customer base has led him to look into expanding into the West side and Northeast eventually, so El Pasoans won’t have to travel far to encounter “The Leche Monster” themselves.

With the cooler weather upon us, I thought I would share a few of my nutritious recipes that are filling and cause our bodies to adapt in the

coming winter months ahead. We do this by increasing our protein consumption.

I have introduced a hearty locally raised grass fed organic beef stew. Grass fed beef is lower in saturated fat and higher in Omega-3 fatty acids, CLA (conjugated linoleic acid), and Vitamin E. In addition, eating beef with green leafy vegetables, especially cultured vegetables (fermented), helps digest the meat, making the meal more beneficial.

Some other warming vegetables are yams, carrots, winter squash, bok choy, broccoli, leeks, beets, pumpkin, barley, wild rice and whole grains. Spices such as cardamom, cinnamon, turmeric, ginger and cayenne are effective at inducing thermogenesis and help raise our core temperature, often by boosting blood circulation or removing excess water from our tissues. These are the five warming spices that you want to add to your recipes during this particular season.

I have also included one of my favorite recipes and that is my warm and creamy pumpkin soup topped with vanilla Greek yogurt, drizzled with organic pureed coconut milk. This adds a nice touch to this harvest meal.

Culminating this lovely meal, I decided to prepare my baked cinnamon, walnut apple a la mode. This brings our autumn feast to a level of pure delight and definitely a memorable epicurean experience!

Creamy Organic Pumpkin Soup with Vanilla Greek Yogurt and Pureed Coconut Milk Serves 6-8 Ingredients: 1½ onions, chopped

2 15 oz. cans of organic Pumpkin

Organic coconut milk

4 c of vegetable stock

Directions: In a large stainless steel saucepan, sauté the chopped onion and garlic in coconut oil, Ghee or Irish Butter for about three minutes or until the onions are transparent.

Add the pumpkin and sauté for another 3-5 minutes.

Combine with vegetable stock in a pot and simmer for about 15-20 minutes or until the pumpkin soup is thoroughly cooked. Puree the soup for a rich and creamy texture in your blender and serve with a dollop of Vanilla Greek Yogurt on top. www.thecitymagazineelp.com

Grass Fed Organic Beef Stew with Home Grown Root Vegetables Serves 6-8 Ingredients: 2½ lbs. grass fed beef, cut into cubes 1 c dry red table wine Himalayan sea salt, cracked pepper Light olive oil 5 cloves garlic, chopped 1 c pearl onions, trimmed and peeled 2 celery stalks, sliced 3 large size Russet potatoes, pealed, cut up 3 organic carrots, orange, yellow, purple in color, peeled, sliced, save greens from tops of carrots 4 c organic beef broth 1 tbsp. balsamic vinegar ½ tsp. dried herbs to taste (thyme, sage, rosemary) 1 bay leaf ½ lb. organic mushrooms quartered

Directions: In a deep stainless steel or cast iron pot, heat the olive oil and brown the salted beef cubes on all sides to sear in the flavor. Be mindful to turn the beef so that they are browned evenly on all sides. Cook time should be about five minutes. Remove the meat and set aside on a plate.

Add the carrots, celery, potatoes, mushrooms, onions, garlic and spices and sauté until the onions are translucent. Then add the red wine, beef broth, balsamic vinegar and meat to the pot. Stir, cover and allow to simmer at least 3-4 hours making sure that you stir every 15 minutes at first, then adjust the stirring accordingly.

This will prevent the stew from burning on the bottom.

The stew is ready when the beef and vegetables are tender.

Taste the broth and add some more Himalayan salt and cracked black pepper to taste. Flavors should be balanced. When serving the stew, garnish each bowl with carrot top greens.

Serve with Irish Soda Bread warmed in the oven.

Place a tiny bit of butter in the center of the apple and then sprinkle with

Remove from the oven when the apples are soft and lightly browned and set

“Angus” - German Shepard Owner Jason Windell says, “This is my German Shepherd, Angus. He didn’t have a very good life in the beginning, from what I’m told. You see, he was found tied to a tree in his first owners backyard and was not treated very well.

I had been looking for a GSD and checked out a few pounds, but had no luck. I wanted a male about six months old, but I kept finding older dogs.

So, one day I was looking on Facebook and saw that a lady had German Shepherd puppies for sale. They were half husky and GSD, so I told her I was looking for a pure bred, that’s when she told me about Angus! She sent me a couple of photos, and knew he was the one! I drove to Las Cruces the next day, (August 4th of this year) and adopted him. We have become inseparable ever since.”
