CONTENT LETTER FROM THE EDITOR It's September! While many people are saddened to say goodbye to the hot nights of Summer, I couldn't be more excited to welcome Fall. It's my favorite time of year. I love the crisp air, the leaves changing color, and yes, the pumpkin spice latte's. For the last 9 years I have participated in the Annual Ruff House Event, a benefit for the rescue work of the Utah Animal Advocacy Foundation. One of my many passions is dogs. In 2013, Operation Underground Railroad (O.U.R.) was founded to curb the increasingly prevalent business of human trafficking by not only exposing the $150 billion industry but deploying missions of highly trained Jump Teams – comprised of former CIA, Navy SEALS, and Special Ops operatives – to rescue those enslaved. The 501c3 non-profit charity’s founder and CEO, Tim Ballard, serves as O.U.R.’s Jump Team Commander for the missions in conjunction with law enforcement and government officials throughout the world. Once the victims are rescued, they are under the jurisdiction of the country where they are rescued and are rehabilitated. Sadly, most victims are children. Children are

If family is located, they are screened to ensure they were not complicit, surrendered or sold their children into slavery before being reunited. O.U.R. is extremely mindful of the “aftercare” and coordinating resources for these children to recover from the emotional, mental and oft times physical scars of trauma inflicted from human trafficking. Though O.U.R. does not make arrests or exercise any undo power, the charity does help identify perpetrators that leads to arrests, trials and sentences. O.U.R. adheres to the judicial process of countries involved, and works closely with government authorities to assist and share expertise that will ensure offenders never kidnap or harm children or adults again.

7 Ways to Promote Cool-Weather Skin Care

hen temperatures plummet, a seasonal wardrobe change helps protect most of your body from the elements. However, your face and hands are likely still exposed and even areas protected by clothing can be affected by a harsh climate. A fall skin-care regimen can help ensure your delicate features fare well even as blustery winds blow. Sunscreen smarts. Most people know that slathering on the sunscreen is a must when heading to the pool or beach, but your skin can actually take a hit from the sun’s damaging rays year-around. Apply a sunscreen lotion or moisturizer containing SPF daily to reduce the risk and minimize your chances of sun spots and wrinkles. Healthy hydration. When it’s hot, you’re more likely to feel thirsty and drink more, but staying well hydrated is important in colder weather, too. Proper hydration affects numerous body functions, such as ensuring your muscles and joints are well lubricated and helping your body to regulate its temperature. Water is the solution most experts recommend, but non-sugary options like tea can also help. Food factors. Also skip the temptation to warm up in a hot shower, which can dry your skin even further. Manage moisture. Even oilier skin types may need extra moisture when dry, cold conditions prevail. Oil-free options let you add moisture without over-stimulating oil glands, while natural oils such as coconut or jojoba are ideal for dryer skin. Apply lotion after every shower to trap in moisture and as needed throughout the day to prevent chapping and cracking, and give special attention to areas that are prone to damage, such as your lips and hands. PUTTING THE SUPER IN SUPERMAN Farr is a hero to many, and a friend to all. By Jennifer Weaver A boy with a dream, grew up to be a man with a vision, who today is nationally known as the producer and founder of one of most highly attended comic book conventions worldwide - Salt Lake Comic Con. Dan Farr, a Utah native and acclaimed business owner, didn’t become successful by chance but through dedicating himself to making his goals a reality. While his family is what he says is his greatest achievement, close behind is Dan Farr Productions that is now celebrating its fifth annual showing of Salt Lake Comic Con, Sept. 21-23, and fourth biannual Salt Lake Comic Con FanXperience. “From the earliest time I can remember, I’ve always wanted to do something fun and exciting,”said Farr.“I had the idea of making movies or doing something to entertain people. I had the feeling I wanted to do my own business but I didn’t know what that was.” Farr had plenty of time to think about what type of business he would own when he reached adulthood while recovering from open heart surgery as a child. At the young age of 5, Farr had corrective surgery from a congenital birth defect called coarctation of the aorta (CoA), also called aorta narrowing.

“My aorta was almost completely closed off so blood couldn’t flow through the rest of the body.” “I spent a relatively long time in a hospital as a child so I exercised my imagination.” Farr also experienced a severe cat bite to his finger, down to the bone that became infected, that put him in the hospital from required surgical treatment for three weeks when he was 11 years old. At the age of 13, he had open heart surgery again where a pediatric cardiologist performed a Dacron patch aortoplasty. Farr didn’t focus on the pain of recuperation from any of those incidents. Instead, he turned his thoughts toward becoming a professional athlete.

HOOP DREAMS An active, vivid imagination and keen mental focus Farr developed in his childhood served him well when he made a concerted effort to dedicate himself to playing basketball following his recoveries from surgeries. He hit a growth spurt between the fifth and sixth grade and was 5-foot, 11-inches, a height Farr began to realize would continue to increase and help him achieve his hoop dreams. “My feet and hands in sixth grade were about as big as they are now, and that’s a shoe size of 13, so I was built to play ball and I practiced every chance I could get.” Farr’s athleticism enabled him to play football, though he specifically chose to play the position of kicker saying, “I wouldn’t get hurt so I could play basketball.” Or so he thought. His junior year at Skyline High School, in a game against Judge Memorial High School, the 6-foot, 3-inch Farr went to kick a field goal and the timing was off.


I made the kick, and after my leg came back down, a guy was diving and he dove pass the ball and landed on my leg and popped my knee out. “It blew out the medial collateral ligament on the inside of my right knee.” The injury resulted in surgery that threatened Farr’s aspirations to play basketball with the orthopedic surgeon telling him it was a six-month recovery. But Farr was unmoved in his determination to play as a shooting guard for the home of the Eagles. With physical therapy and other exercises, Farr restored 90 percent strength to his right leg, which resulted in a doctor-approved return to the game he loved.

ENTREPRENEUR The only interruption on his journey to the NBA was a two-year mission to New York for The Church of Jesus Christ of Latter-day Saints. Upon return from his mission, Farr played basketball for Salt Lake Community College, averaging 30 points a game. Sadly, a lay-up went wrong and he twisted his knee – the same knee he had injured in high school. The injury to his anterior cruciate ligament (ACL) was substantial enough with accompanying cartilage damage to end his plight for a career on the basketball court. “With basketball being over, it was tough for me to swallow because it was something I really wanted to do, and I was really starting to come into my game and I was feeling good,” Farr said. “But the doctor said, if I really wanted to pursue a professional basketball career, I should plan on walking with a cane by the time I hit age 30 to 35 because my knee would be so bad, otherwise he advised that I should move on. So, I decided to move on.”

ENTREPRENEUR VISIONARY That decision at the age of 22 redirected Farr’s focus of graduating from Salt Lake Community College and subsequently the University of Utah with a bachelor of science degree in business management. His first job as a college graduate was with Viewpoint that specialized in 3D technology. As company partners split off, Farr said he joined a few of them who had formed a start-up company called Zygote, whereupon he soon became one of five partners. He’s the first to tell you that it wasn’t an easy decision or the most opportune time. “I was probably 26 at that time, and I didn’t have a lot of work experience behind me, but it was during that time I was deciding whether to leave the steady job (at Viewpoint) and join a start-up company,” Farr said. “It was really a crazy time because I was young, newly married and an expectant father, and I didn’t have money saved or the situation where I was going into a good place of being an entrepreneur, but that path has made all the difference for me.”

R & VISIONARY Approximately three years, after jointly forming Zygote, Farr and partner Chris Creek started their own business called DAZ 3D. The company developed and published 3D digital content and software for creative professionals and hobbyists. Two of the products Farr helped create while at DAZ were DAZ Studio and Genesis Platform. In 2005, he went on to help a team at DAZ create an illustrated Christmas book entitled, Mr. Finnegan’s Giving Chest, using the company’s products and featuring actor Dick Van Dyke. “I realized that one element of my last business that I loved was the way our product was actually entertaining our customers,” Farr said. “People would buy the digital models of software and they would create art so it was a creative tool that people could use in movies, videos games, and ultimately we became a supplier of digital assets that brought joy and entertainment to many.”

ltimately, the success of DAZ 3D permitted mergers and investors that diminished his ownership but gave him CEO experience and exposed him to conventions where he was a vendor selling the company’s products. It was attendance at the various conventions, including the San Diego Comic Con and Wizard World Comic Con, where Farr said he captured the passion, energy and excitement those types of events generate with celebrity guests and interactive booths.

“I thought, why don’t we do this in Utah,” Farr said. “Initially, I thought why don’t those guys do one of these conventions in Utah and so I approached them and I was told no, we’ve looked at the market and it’s not the right time and they just kind of said it didn’t make sense for them.”

Farr kept the lines of communication open and learned as much as he could to produce Utah’s own Comic Con. He got marketing expert, Bryan Brandenburg involved as a partner/co-founder and turned to his wife, Stephanie, to add her organization of fandom and her personal touch with offering customized care packages for celebrity guests. The OGIO backpacks she fills are personalized with traveling necessities of hand sanitizer, Kleenex, Tylenol and additional products that feature Utah. Actor Henry Winkler left a voice message on Farr’s smart phone, praising the thoughtful gift from the first event that took place in 2013, that he cherishes and pledges never to erase. “I just arrived here in Salt Lake City and opened the box. Before we even start, let me just say that is the most awesome box, in all my years in making appearances, ever. So, thank you,” Winkler said in the voice message. “What a way to start a wonderful weekend. Best to you. I look forward to seeing you. Bye.” Since the first Salt Lake Comic Con just four years ago, Dan Farr Productions has broken attendance records with more than 100,000+ people attending a single event

People will come and they’ll have a good time and they’ll go back to their regular lives until the next time it came around.” He continued, “What I didn’t foresee is there would be groups formed out of it, and friendships that span in between events. You look at the cosplay community and they’ve been able to really build around these events and grow, and a lot of times families come together and gather on common interests.” Rick Redford, a former basketball player who played with Farr and current business associate, said he recognized early on that Farr had more going for him than athletic ability. “The character of Dan Farr is one of utmost integrity. He is a visionary and he is a great friend,” Redford said. “I love that man.” Finding an avenue to turn the book, Mr. Finnegan’s Giving Chest, into a movie and continued refinements to expand Salt Lake Comic Con to a week-long festival “to make it the best it possibly can be” are future goals of Farr, he said. And though there are people who claim that he put the super in Superman when he brought the comic book hero to life with Comic Cons in Utah, Farr deflected the accolade from himself and credited ticket buyers.

The Salt Lake Comic Con in 2015 even broke the world record for the most costumed comic book cosplay characters in one location at 1,784 people. Courtesy of Simply Recipes Recipes Makes: 4 salads Salad Dressing: 3 tablespoons red wine vinegar 1/4 teaspoon salt, plus additional, to taste (optional) pinch of black pepper, plus additional, to taste (optional) 1/4 teaspoon dried oregano 1 teaspoon honey 5 tablespoons olive oil 4 pint-size canning jars with lids Salads: 1/4 medium red onion, thinly sliced 1 cup cherry tomatoes, halved 1/2 large English cucumber, sliced 1 yellow or orange bell pepper, cut into 1/2-inch pieces 3/4 cup California black ripe olives 1/2 cup (4 ounces) crumbled feta cheese 4 small handfuls fresh baby spinach or other dark, leafy greens 4 pita bread rounds, halved (optional) To prepare dressing: In small bowl, whisk together vinegar, salt, pepper, oregano and honey. Gradually whisk in oil. Taste. Add additional salt and pepper, if desired. Divide dressing between four pint jars. To assemble salads: Divide onion between four jars. Divide tomatoes, cucumbers, peppers, olives and feta cheese between jars. Pack remaining space with spinach, compressing leaves slightly. Secure lids and refrigerate up to two days. To serve: Empty salads into bowls and toss with dressing. Serve with pita bread. Note: Store and transport salads upright so dressing stays on bottom.

Maple Olive Cheesecake Bites

Heat oven to 325 F and coat 16-20-cup mini muffin tin with nonstick cooking spray. In small bowl, stir together graham Makes: 16-20 mini cheesecakes cracker crumbs, butter and 1 tablespoon Nonstick cooking spray sugar. Place equal amounts into each 1/2 cup graham cracker mini muffin cup then press firmly into crumbs bottom of each cup. Working with one 2 tablespoons butter, cup at a time, press small piece of plastic melted wrap onto surface and press crust firmly 3 tablespoons sugar, into mini muffin cups. divided In large bowl of electric mixer, 6 ounces cream cheese, beat cream cheese, maple syrup and room remaining sugar until smooth; beat in temperature flour and vanilla on low speed. Add 3 tablespoons pure maple egg and beat until just combined; stir syrup in olives. Spoon equal amounts into each cup. 2 tablespoons flour 1 teaspoon vanilla extract Bake 20-25 minutes, or until filling feels set. 1 egg Let cool completely then run small, 1/4 cup coarsely chopped thin knife around edge of each to remove California Ripe from pan. Olives

1 can (6 ounces) extralarge California Black Ripe Olives, drained and cut in wedges freshly grated Parmigiano-Reggiano Heat oven to 450 F and line large baking sheet with parchment paper. In large skillet over medium heat, heat 1 tablespoon oil. Add onion, garlic and mushrooms, and cook, stirring frequently, 10 minutes, or until onions are soft. Reserve. Roll pizza dough into thin oval on lightly floured surface. Transfer to prepared baking sheet and brush lightly with olive oil then spread evenly with Alfredo sauce. Top with mushroom mixture, cheeses, chicken and rosemary. Sprinkle olives over pizza. Bake 10-15 minutes, or until cheese is melted and lightly browned around edges. Serve with ParmigianoReggiano.

Flour Dredge: 1 1/2 cups all-purpose flour 1 1/2 tablespoons kosher salt 2 teaspoons freshly ground black pepper 1 1/2 teaspoons freshly ground white peppercorn 1 teaspoon sweet paprika 1 teaspoon onion powder 1/8 teaspoon ground dried sage 1/8 teaspoon dried thyme 1/8 teaspoon cayenne pepper Pierogies: 1 box (16 ounces) Mrs. T's Classic Cheddar Pierogies 1 cup buttermilk 2 eggs, lightly beaten 2 cups flour dredge (recipe below) canola oil large kosher pickles, cut into round slices ranch dressing To make flour dredge: In large mixing bowl, mix all flour dredge ingredients until thoroughly combined. To make pierogies: Bring large pot of water to boil. Place pierogies in boiling water until no longer frozen in center, about 2 minutes. Remove pierogies from water and cool in refrigerator 10 minutes. Place buttermilk, eggs and flour dredge in three separate bowls. One at a time, dip pierogies in buttermilk then in eggs and finally in flour dredge. Once all pierogies are dredged, fry in deep fryer at 350 F in canola oil, approximately 3 minutes until golden brown. Repeat flour dredge process with pickle slices and fry 3 minutes. To serve, place fried pierogies and pickles on serving plate. Serve with ranch.

Szechuan-Style Pierogies Recipe courtesy of Chef Jose Garces 1/2 cup, plus 2 tablespoons, vegetable oil, divided 3 Arbol chilies 1/4 cup Szechuan chili sauce 4 tablespoons, plus 2 teaspoons, fresh minced ginger, divided 2 tablespoons, plus 1 teaspoon, garlic, minced (about 5 cloves), divided 1/2 tablespoon Szechuan peppercorns, toasted and ground 1/2 cup black bean garlic sauce 2 cups chicken stock 1 tablespoon thinly sliced scallion (white parts only) 1 cup ground pork 1 teaspoon soy sauce 1 tablespoon unsalted butter 1 box (16 ounces) Mrs. T's Garlic & Parmesan Pierogies 1 tablespoon peeled edamame 2 tablespoons firm tofu, diced 1 1/2 cups bean sprouts Place 1/2 cup oil and chilies in saucepan. Cook over low heat 2 minutes, or until chilies turn brown. Remove chilies from oil and discard oil. Add Szechuan sauce to saucepan; cook 3 minutes. Add 4 tablespoons ginger, 2 tablespoons minced garlic and ground peppercorns; cook until fragrant, about 2 minutes. Add black bean sauce and cook another 2 minutes. Add chicken stock and bring to boil. Reduce heat to simmer and cook 20 minutes. Reserve. In saute pan, heat 1 tablespoon vegetable oil over medium-high heat. Add remaining ginger, remaining garlic and scallions; cook 1 minute. Add pork and cook 5 minutes, breaking up with wooden spoon. Add soy sauce and combine. Reserve. In saute pan, melt butter and remaining vegetable oil. Add pierogies and sear lightly, about 7 minutes on each side until lightly browned. Reserve. In large saute pan, combine Szechuan sauce, ground pork mixture, seared pierogies, edamame and tofu. Cook over medium-high heat until combined, about 2 minutes. Garnish with bean sprouts.

Prep time: 15 minutes Cook time: 15 minutes Servings: 4 1 cup chopped onion 1 cup chopped red bell pepper 1 tablespoon olive oil 2 cans (15 ounces each) READ German Potato Salad, chopped 1 bottle (12 ounces) light beer 3/4 cup reduced-sodium, fat free chicken broth 6 ounces (1 cup) diced ham, smoked turkey or sliced smoked sausage (optional) 1/2 teaspoon salt (optional) 1/4 teaspoon pepper 1 tablespoon chopped parsley rye croutons (optional) crumbled bacon (optional) In Dutch oven or 3-quart saucepan over medium heat, cook onion and bell pepper in oil until onion starts to brown, 5-7 minutes, stirring occasionally. Add potato salad, beer, broth and meat, if desired, and stir to combine. Bring to boil, reduce heat and simmer, uncovered, 10 minutes, stirring occasionally. Add salt, if desired, pepper and parsley. Prep time: 30 minutes Cook time: 15 minutes Servings: 6 1 jar (16 ounces) Aunt Nellie’s Whole Pickled Beets, drained 2 tablespoons olive oil 2 medium onions, coarsely chopped 2 medium carrots, coarsely chopped 1 medium sweet potato, peeled and chopped 2 large cloves garlic, minced 2 zucchinis (about 5 ounces each), coarsely chopped 2 cans (about 14 ounces each) vegetable broth 1 teaspoon seasoned salt (optional) 1 can (15 1/2 ounces) chickpeas, drained and rinsed salt, to taste pepper, to taste 2 tablespoons finely chopped fresh parsley 2 tablespoons finely chopped fresh dill Gremolata (optional) Gremolata: 1 tablespoon minced fresh parsley 1 tablespoon minced fresh dill 2 cloves garlic, minced 1 teaspoon grated lemon peel Coarsely chop beets; set aside. In large saucepan, heat oil over medium heat. Add onions; cook about 5 minutes, or until softened. Add carrots, sweet potato and garlic. Cook 3-5 minutes, or until vegetables begin to soften, stirring occasionally. Add zucchini, broth and seasoned salt, if desired. Bring to boil. Reduce heat and simmer, partially covered, about 15 minutes, or until vegetables are tender. Add chickpeas; heat through. Season, to taste, with salt and pepper. To prepare Gremolata: In small bowl, combine all ingredients. Stir in parsley and dill. Stir in beets. Serve immediately; top with Gremolata, if desired.

#FirstTimeFurMom it’s true; Summer is coming to an end, and Fall is approaching as we go into September. A season favored by many— many dogs, that is. It’s not too hot, so their fur coats don’t feel as heavy, and they can stay out adventuring longer. Plus, there is so much to enjoy in the fall season. With the sun setting earlier, getting caught outside while the sun may be setting may suddenly surprise you. It may even happen unexpectedly halfway through your walk, or out running errands. It’s funny, as one of those things I have learned in being a First Time Fur mom, and having a mixed colored dark dog, is that you really can’t see them well in the evening and if going out after 6 pm to be prepared.

It’s always a good idea to dress your dog in some reflective gear — especially if you walk your pooch by roads, in parks not lit well, or even around your neighborhood. Being the product junkie I am, I am a huge fan of LED-lit dog collars and leashes. There are also many dog collars now with lights that provide great visibility. On the weekends I tend to go out with friends to a local outdoor wine bar where dogs are allowed, and Josie is always outfitted in her LED collar and leash. Being a smaller dog, under 20 lbs this makes it more visible for people to see her, and actually helps me where I am walking too! There are so many options on the market today and I'm happy if you want to shoot me an email and I can let you know my favorites.


September is also NATIONAL PET MEMORIAL DAY. Each year on the second Sunday in September, people come together in observing National Pet Memorial Day. On this day, pet owners honor their pets, both past and present, and think about and share with others the important role that their beloved pets have played and continue to play in their lives. I can’t even imagine going there right now in my mind, but something so many dog owners experience. A neighbor recently just lost their fur kid, and since he loved playing in the park, she has asked us all to plant a tree, or a shrub as a living memorial in September. You can also use #NationalPetMemorialDay to post on

social media. It’s a great way to honor and share one of your favorite photos with others-your best friend. In addition, I also bought her a beautiful bracelet from https://iheartdogs.com/ which was not only affordable, but each purchase feeds shelter animals in honor of her dogs passing. They have Iheartcats.com horses etc too. It’s a great site, which I am happy to have found. Facts and Myths About Germs in School

verybody seems to have an opinion about germs -what causes them, where they’re located, how to avoid them -especially when it comes to children. Experts say that American children miss 22 million days of school annually due to colds, flu and other infections. “Avoiding germs at schools isn’t as simple as just washing your hands in the bathroom or sneezing into your sleeve,” says Charles Gerba, Ph.D., professor of microbiology and environmental sciences at the University of Arizona. “Germs are on everything kids touch in the classroom, as well as around the hallways, cafeteria and playground.” With this in mind, it is important to separate facts from myths about germs in schools.

• Fact: Desks Are Among the Most Germ-Prone Items. It’s true! Students spend most of the day at their desks -sneezes, coughs and all -- and, in some schools, they often switch classrooms and share desks with others. At the end of the day, students bring home that cocktail of germs to their families. • Myth: Any Hand Sanitizer Will Do. According to research from the University of Colorado at Boulder, people carry an average of 3,200 bacteria on their hands. While most hand sanitizers are 99.9 percent effective at killing germs, some only last for a few minutes or until the application dries on the skin. Therefore, parents should consider applying hand sanitizers for their children that last throughout the day, such as Zoono’s GermFree24, which is proven to last for 24 hours on skin and is available as both a foam and a spray.


• Fact: Germs Can Affect Kids Outside the Classroom. Germs in schools aren’t just isolated to classrooms. They are everywhere, including cafeteria trays, playground jungle gyms and sports equipment. In fact, the Clinical Journal of Sports Medicine found 63 percent of gym equipment is contaminated with rhinovirus, which causes the common cold. Reminding children to wash their hands before and after using these items (and wiping them down) will go a long way toward preventing sickness. • Myth: Sticking Things in Your Mouth is Child’s Play. Sure, curiosity might drive preschoolers to stick items in their mouths that don’t belong. However, older students who nervously chew on pen caps, especially ones they borrow from classmates, or on their own fingernails during tough tests, are susceptible to picking up the germs that are traversing through school.

• Fact: Backpacks Carry More Than Just Books. Backpacks go everywhere -- to classrooms, inside lockers, in the cafeteria, in locker rooms -- and collect various germs throughout the day. Periodically clean backpacks inside and out. And make sure lunches and other food items, as well as gym clothes, are packed in separate bags to avoid cross-contamination of germs. • Myth: Sharing is Always Caring. Just about every school supply -- from pens and pencils to headphones to sport jerseys -- can be a vehicle for harmful bacteria. Make sure children are armed with their own items, including mechanical pencils to avoid using the classroom’s pencil sharpener, and avoid sharing their supplies with classmates. When it comes to germs, separating myths from facts can help you have a happier, healthier school year.

ENSURE YOUR BODY IS GETTING ADEQUATE SUPPORT. What felt comfortable to sleep on eight years ago may not provide the support your body needs today. Your weight, pressure points, ailments, etc. can change over the course of time, so it’s important to check the mattress tag. If it’s more than 8 years old, it is time to replace it. Another way to make sure your body has the proper support and alignment is to figure out your sleep position and select the right pillows to support your body. This can help alleviate tossing and turning, and provide a more comfortable night of sleep.

AVOID NIGHTTIME SNACKING. About 24 percent of extremely stressed people indulge in a snack an hour before bed, according to the survey. There are many food and drink options that encourage a good night’s sleep more than others, such as tryptophan-rich foods like dairy, nuts and seeds, bananas, honey and eggs. Conversely, foods and medications with caffeine and foods with high-fat content should be avoided. The foods you choose are important, but also pay attention to the timing of when you eat and drink.
