Hello Fellow Residents, Happy August! I hope everyone is enjoying they’re summer! Our Independence Day party was a huge success! We had a great turnout, and a lot of fun was had! I want to start out by truly thanking our volunteer residents who always help out with these events! They’ve done such an amazing job and without them we wouldn’t be able to host these fabulous parties for our community! With that said, we are really in need of more volunteers to help out with future events! Please don’t be shy!
Thank you to our residents who have brought in copies of your updated insurance policies! It’s important that we keep these on file and current. Please make sure you have $300,000 liability and that Oceanside Landing is listed as an additional interest. Anytime you receive a renewal in the mail, please bring us in a copy or email it to us at: ocladmin@cobblestoneassets.com.
We all need to keep our yards & homes looking neat! Meaning bushes trimmed, yards mowed, spraying driveways & flowerbeds with weed killer, power washing our homes etc. It benefits everyone in the community when we all do our part! Some Inspection letters have already gone out to some residents. We will continue to monitor all homes. A big shout out to those who always keep they’re yards and homes nice & tidy!
We have some great events coming up this month so make sure you take advantage and sign up for them at the office! We have Paint Night, The Pelicans Game, Jukebox Bingo, Tupperware Party and Hot Dogs every Wednesday by the pool grill! REMINDER: Absolutely No guests are allowed in the pool without the resident present!!!
Sincerely, Kat

CHICKEN THIGHS
• 1 ½ Pounds Boneless, Skinless Chicken Thighs
• Kosher Salt And Pepper
• 1 Teaspoon Smoked Paprika
• 1 Teaspoon Garlic Powder
• 3 Tablespoons Apple Cider Vinegar
• 2 Tablespoons Hot Honey, Or Regular Honey
• 2 Tablespoons Bbq Sauce
• Sesame Seeds, For Garnish
CITRUS SLAW
• 1 small green cabbage, thinly sliced
• 2 carrots, shaved with a vegetable peeler
• 1 red onion, thinly sliced
• ⅓ cup chopped cilantro
• ¼ cup sliced almonds
• 1 to 2 oranges, segmented and chopped
• 2 tablespoons freshly squeezed lime juice
• 1 tablespoon honey
• 1 garlic clove, minced
• big pinch of kosher salt and pepper
• ¼ cup avocado oil
1. Preheat the broiler in your oven to high. Make sure there is an oven rack directly beneath it.
2. Place the chicken thighs on a baking sheet. Season the chicken all over liberally with salt and pepper. Season all over with the smoked paprika and garlic powder.
3. Place under the broiler and broil for 6 minutes. Remove and flip the chicken over. Broil for 6 minutes more. While the chicken is broiling, whisk together the hot honey, BBQ sauce and vinegar.
4. Remove the chicken again and brush it with the honey mixture. Return to the oven and broil for 1 minute. Remove and flip the chicken thighs, brushing the other side with the honey mixture. Broil again for 1 minute. Repeat once or twice more until you get the desired charred topping.
1. In a large bowl, combine the cabbage, carrots, cilantro, red onion, almonds and oranges. In a small bowl, whisk together the lime juice, honey, garlic, salt and pepper. Whisk in the oil until emulsified.
2. Pour the dressing over the slaw and toss well so everything is coated. Once the slaw is ready, slice the chicken thighs and place them on top of the slaw. Sprinkle with sesame seeds and serve!
