Hold Your Horses! We are galloping into May and so excited about all the fun we have planned, including the Kentucky Derby Party. The Kentucky Derby is the longest continuously held sporting event in America and one of the most prestigious horse races in the world! It was started by Meriwether Lewis Clark Jr., grandson of explorer William Clark, of the Lewis and Clark Expedition. Clark, who was inspired by horse races he’d seen in Europe, raised the money to build Churchill Downs on land donated by his uncles. Join us on May 3rd @ 5pm. Bring a Derby themed appetizer, wear Derby attire, and place your bet before 5:45pm. $5/Bet. Make as many Bets as you want. Winning Horse Betters will split ½ of the pool ~ 2nd Place Horse Betters will split ⅓ of the pool ~ 3rd Place Horse Betters will split ⅙ of the pool. Prize for BEST Derby Hat.
May also brings Mother’s Day. The relationship between mother and child is a special one. Moms don’t get days off, nor do they receive handsome salaries or generous pensions. Instead, they’re rewards come in the form of sticky kisses, elbow macaroni necklaces, and the satisfaction of seeing their children grow up to be happy, healthy, and prosperous adults. The beautiful love and appreciation for our resident mothers will be honored and celebrated on Mother’s Day with a brunch coordinated by Harry a few other fellas.
Let’s get physical with Chair Aerobics. Join Lu each Monday and Wednesday morning at 10am to get moving, increase your strength, and improve your balance. Stay tuned for an update of when our Water Aerobics and Water Volleyball will start.
Mark your calendars for Memorial Day. We start at 11am with a solemn ceremony to pay tribute to our fallen Veterans and will be followed by a fun day at the pool. We will provide hamburgers and hotdogs and ask everyone to bring a side dish to share & BYOB. DJ Brett will be playing your favorite tunes and the Kona Ice truck will pop by between 1-1:30pm for an icy treat.
I am so thankful for each and every one of you and I am honored to continue to manage your amazing community. Your support, engagement, and enthusiasm make Oceanside Landing a truly special place. It not just about events; it’s about the connections we’ve built and the shared experiences we have gone through together. I am continually inspired by your contributions, creativity, or simply your presence. Each of you brings something unique to the table. I am committed to ensuring that Ocean Landing remains vibrant and welcoming for everyone. Thank you once again for being a part of this journey as we go through our first year in our new clubhouse. I can’t wait to see where we go from here.

• 2 tablespoons olive oil, plus more if needed
• 1 pound ground beef
• 1/4 cup finely chopped onion
• 4 ounces diced green chiles
• 1 teaspoon chili powder
• 1/2 teaspoon ground cumin
• 1/4 teaspoon garlic powder
• 3/4 teaspoon kosher salt
• 10 corn tortillas
• 1 cup refried beans (optional)
• 1 cup shredded Cheddar cheese
Toppings: cilantro, sour cream, salsa, guacamole or hot sauce (optional)
1) Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with foil or parchment paper and lightly coat with 1 tablespoon olive oil.
2) Combine beef, onion, green chiles, chili powder, cumin, garlic powder, and salt in a medium bowl and mix until well incorporated.
3) Wrap tortillas in a damp paper towel and microwave just until softened, about 30 seconds.
4) Spread about 3 tablespoons beef mixture over half of a tortilla in a very thin layer that reaches to the edges Spread about 1 tablespoon beans onto the other half. Sprinkle all over with about 2 tablespoons cheese. Fold tortilla in half to make a taco; place on prepared baking sheet. Repeat with remaining tortillas, meat and cheese. Brush tops of tacos with remaining oil.
5) Bake tacos in the preheated oven, flipping halfway through, until lightly browned, toasted, and crisp around the edges, 30 to 35 minutes. Serve with desired toppings.
