Farewell members!!

As the season comes to an end, I want to thank everyone for all the great memories we have made. Thank you for all the support for our monthly activities, we had some great turnouts. Be on the lookout for information on our farewell party. And last but not least don’t forget to book your reservation before you leave. I wish everyone safe travels and have a wonderful summer.

Your efforts help build vibrant, thriving parks, and we couldn’t do it without you!

As you wrap up your time here, the Sales Team wishes you a fond farewell and a safe journey back home. We do have active buyers looking to purchase, so if you would like to sell your park model, please give me a call to set up an appointment!!! My cell phone number is 253-426-8421.

Greetings Del Pueblo members! It has been an amazing first season as your new Activities Director. We’ve enjoyed so many new things together and you welcomed me with open arms to my first season with you, and for that I thank you! We have had a Children’s Choir come and sing, several Yuma History-type presentations, a scavenger hunt, some fun new bands and even a Hypnotist! March is our last month to enjoy all of you before you leave, and we aren’t finished with you yet! We have some more presentations planned, a “Chili Cook-off”, another fun Dance with the band, “Moondance”, and a St. Patty’s Day lunch with dance music. We will send you all off with a Farewell Party with “DJ Dave” on the Patio and plenty of food. Our Farewell party will be on Saturday, March 15th from 1-4:00pm.

On behalf of Karen Van Tassel and myself, we want to thank you for an awesome season of fun Activities and send you on your way with lots of wishes for a safe trip wherever your next stop takes you! We look forward to an even better season this fall when you return!

MAINTENANCE TEAM UPDATE

March is upon us and nearing the end of a fun filled winter season here at Del Pueblo. We have replaced the light fixtures in the library for a brighter lighting. We will also replace the rec center floors end of April. I want to thank all of the volunteers who helped with maintenance this year. We truly appreciate your help.

FROM THE PASTORS PEN

An old saying says, “ All good things must come to an end.” Our time is winding down fast for our services at Del Pueblo church.

It has been a great year with good services, good attendance and making new friends along with wonderful worship and times of laughing together.

Our last service will be Sunday March 16th and we want to thank all of the volunteer team who have worked together to make this a great time together.

There will be changes in the future but one thing we can depend on is that those who build their lives upon Jesus Christ and his Word we know we will meet again and unlike the opening saying, those good times will NEVER end.”

Please contact us during the summer if we can be of any assistance in prayer. We would love to hear from you.

Remember to live One Day at a Time, that’s all we have, and if God brings you to it, He will bring you through it.

As we wrap up the 2024-2025 season, we just want to say how much we’ve loved spending time with all of you.

From morning coffee to our breakfast & lunch specials, to all the wonderful conversations and laughs—it’s been a season to remember!

A HUGE THANK YOU to our amazing café team for their hard work and dedication.

You’ve made every meal and every event truly special, and we couldn’t have done it without you.

We can’t wait to welcome you all back for the 2025-2026 season!

Corned Beef and Cabbage Slow Cooker Recipe courtesy of Holly Nilsson, Spend With Pennies

Prep Time: 10 minutes | Cook Time: 8 hours

Total Time: 8 hours 10 minutes | Servings: 6 servings

This Slow Cooker Corned Beef and Cabbage recipe packs all of the deliciousness of corned beef into a meal that cooks itself. Talk about a stroke of good fortune on St. Patrick’s Day or any day of the year!

Ingredients

• 3 to 4 pounds corned beef brisket uncooked, with spice packet

• 1 onion

• 3 cloves garlic sliced

• 2 bay leaves

• 2 ½ to 3 cups water

• 2 pounds potatoes peeled* & quartered

• 2 large carrots chopped

• 1 small head green cabbage cut into wedges

1. Chop onion into large chunks and place in the bottom of a 6 qt slow cooker. Top with corned beef and seasoning packet.

2. Pour water into slow cooker until it just about covers the corned beef. Add garlic and bay leaves.

3. Cook on low 8-10 hours.

4. After the initial 3 hours, add potatoes and carrots to the slow cooker.

5. Two hours before serving, add cabbage wedges to the slow cooker.

6. Remove corned beef from slow cooker and let rest 15 minutes before slicing. Serve with potatoes, carrots and cabbage.

Notes

Up to 2 cups of water can be replaced with beer if desired.

If your corned beef doesn’t have a spice packet, add a couple of tablespoons of pickling spices, a few peppercorns, and a bay leaf. Bundle them up in cheesecloth and add them to the slow cooker.

If using russet or baking potatoes, they should be peeled. If using thin skinned potatoes (red, Yukon gold), peeling is optional.

Once cooked corned beef should be tender (mine usually cooks closer to the 10 hour time). Appliances can vary, if your corned beef is not tender, it likely needs to cook longer.

It is essential to cut your corned beef across the grain.

Chili Recipe by Budget Bytes

PREP: 5 minutes

Ingredients

• 2 Tbsp olive oil

• 1 yellow onion

• 2 cloves garlic

• 1 lb. ground beef

• 1 15oz. can kidney beans

Chili Seasoning

• 1 Tbsp chili powder**

• 1 tsp ground cumin

• 1/4 tsp cayenne powder

• 1/4 tsp garlic powder

• 1/2 tsp onion powder

• 1 15oz. can black beans

• 1 15oz. can diced tomatoes

• 1 6oz. can tomato paste

• 1 cup water

• 1/2 Tbsp brown sugar

• 1 tsp salt

• 1/2 tsp Freshly cracked black pepper

1. Dice the onion and mince the garlic. Add both to a large pot with the olive oil and cook over medium heat until they are soft and translucent.

2. Add the ground beef to the pot and continue to sauté until the beef is fully browned.

3. Drain the beans and add them to the pot along with the diced tomatoes, tomato paste, 1 cup water, and all of the ingredients for the chili seasoning. Stir until well combined.

4. Place a lid on the pot and allow it to simmer over a low flame for at least 30 minutes, stirring occasionally (the flavor gets better the longer it simmers).

5. Give the chili one final taste, adjust the salt or seasonings if needed, then serve hot with your favorite toppings.
