We have a calendar sign up sheet in the Sevilla Sol book at the clubhouse. Please verify your name is in the book and we will list you in the newsletter. Don’t forget that everyone is invited to the Birthday Celebration each month for cake and ice cream!
I hope you are enjoying our new newsletter. If you have anything you would like to see added please submit it in the suggestion box along with your name and phone number so we can discuss them or text Shelley @206-384-5279. We are starting a community bulletin board that you can utilize if you have items to sell, give away, need something, or have other information to benefit the community to post. You can submit a favorite poem, joke, or quote.
BLOCK WATCH NEWS
The City of Peoria, Maricopa County & the State of Arizona still have funding available for those in need.
Contact Peoria Support at 623-773-7770. They are located at the Peoria Community Center, 8335 W Jefferson St. in downtown Peoria.
They have a variety of assistance programs, food, clothing, bill assistance, etc., available to help with rent/ Lot fees, food, etc. Perhaps you have applied before & did not qualify, I urge you to try again as the guidelines have changed.
With construction under way & summer here, Block Watch meetings will be on hiatus until September. We still need you to continue to stay vigilant watching out for your neighbors. Some have left for the summer & we need to keep a watch on those homes. If something feels off, call Peoria PD at the non- emergency 623-773-8311. Better safe than sorry!

Hi All,
Well, it looks like summer is at our door. I know we don't have our pool yet; I promise it's coming. I hope you have entered our contest to pick the date of the completion of the pool contest. You can win a special Prize.
Now that it is getting a lot warmer i want to remind everyone to please get rid of the weeds and the debris in your back yards and side yards. I was so surprised to see some of these yards. It's a huge fire danger, please clean up your yards.
Cobblestone is changing how we handle violations as people pay little to no attention to violation letters. Effective immediately, when violation letters are sent out and you will have 14 days to respond. If nothing is done a second letter will go out you will have 14 days to respond. After that you will receive the last letter and have 10 days if nothing is done you will be accessed $100.00 which will be taken from your account each month that the violation exists. That is only one of the changes that will be happening.
Soon you will have to use our new Sevilla Sol App to pay for dinners or any Cobblestone event. It really is very easy, I'm using it. Cobblestone will be charging for all Cobblestone Sponsored dinners and events anywhere from $3.00 to $5.00 depending on what the event is. You will be able to make your reservation and pay on the Sevilla Sol App. Shelley or I can show you how to use it.
Homes are selling very fast here at Sevilla Sol , remember you can earn $1000 for referring someone for a used home and $2500 for a new home. Check out our new 3bdrm home lot 104 the landscaping is done, and the house is all decked out.
I hope when you are reading this we know when our pool will be ready. Remember you can use the pool at Solara Sands or at CopperSun both Cobblestone Properties.

YARD OF THE MONTH
Congratulations to Mike and Rhonda Dore, 66A, for being selected for the June Yard of the Month! Thank you for contributing to the beautification of our community. Criteria for yard of the month is a weed free yard, wellkept landscaping, and overall exterior appearance. There are many homes in the park that qualify, so each month a drive through the community is done and lot numbers of qualifying yards are drawn randomly. Chosen homes will receive a $50 credit towards their month’s rent.

Hi my name is Praxy Robles, I am in sales department at Sevilla Sol.
I have 5 beautiful children (3 boys and 2 girls), 5 fur babies (4 huskies and 1pug) and now I work for a 55+ community! Five is my number this year!!
I am so grateful to have the opportunity to be here at Sevilla Sol. Thank you all for the warm welcome and beautiful smiles.
As we know Arizona summer can be dangerous for all of us including our fur babies.
Please allowed me to share some tips:
• 5 ways to keep you and your loved ones cool this summer and to avoid heat stoke:
• Drink plenty of water!.. Keep you and your pets hydrated.
• Check on friends and neighbors at high risk for heat-related illness.
• Find air conditioned places to cool off (shopping malls and libraries)
• NEVER leave kids or pets in a closed, parked vehicle.
• If you go outside, remember: A hat. Sunscreen (spf 15 or higher)

Meet Fritz (white) and Schatzi (black), They protect the Milstid’s in 111 from the mailman, the Amazon truck, etc… and of course, cats. They also loudly greet all passersby. Make sure you acknowledge their diligence and give them a wave!

Irene G is our new library coordinator. She would like anyone who has books that they would like to donate to give her a call 602-615-6898. You can drop them off with her or she would be glad to pick them up.
Thanks to all the volunteers for the Community Cleanup last month. It was a great success, and it took no time at all to fill that dumpster! Thanks to all the bakers, helpers, and donations for the Mother’s Day Brunch! It was a nice afternoon of food and fellowship.
Father’s Day Picnic will be June 15th at 3pm. BBQ hamburgers, hotdogs, and brats plus a variety of salads and of course dessert! The cost will be $3 for residents and $5 for visitors. Come join us for some great food. We assume we will still have the clubhouse but if not, we will announce another location.
Come join us for Card Bingo. This month it’s Thursday the 13th at 1pm. We will play 8 games. Winners will choose an envelope. Seven will contain a $2 scratch ticket and one will have a $5 ticket. Come join the fun and have a chance to be a double winner!

TWICE BAKED POTATOES

Ingredients
• Potatoes: I like Yukon Gold best, but Russets also work.
• Vegetable Oil: Prevents the potato skins from burning in the oven.
• Salt + Pepper: Season the skin of the potatoes!
• Shredded Cheese: Sharp cheddar, Gruyere, Mexican blend.
• Butter: Helps the filling cook without burning. I recommend using unsalted butter, as the cheese is already salty enough!
Directions
1. Preheat oven to 400°F and adjust the oven rack to the middle position. Place a wire rack over a foillined baking sheet.
2. Lightly rub each potato with oil and sprinkle with salt and freshly ground black pepper. Place the potatoes, evenly spaced, on the rack over the prepared baking sheet.
3. 2 pounds Russet potatoes,Kosher salt and freshly ground black pepper,2 tablespoons vegetable oil
4. Bake the potatoes to an internal temperature of 209°F or until fork tender (45 minutes-1 hour).
5. Remove the potatoes from the oven, and leave the oven on.
6. Once the potatoes have cooled on the rack 10 minutes, cut the potatoes in half lengthwise. Leave a ⅛-¼-inch thickness of flesh in each shell, and carefully scoop out the potato flesh into a medium-large mixing bowl.
7. Transfer the potato shells back to the prepared baking sheet and bake at 400°F for 10 minutes
Variations
Starting with this amazing base twice baked potato recipe, jazz it up to make it your own! Here are some ideas that we have loved making at our house:
Buffalo Chicken: Add spicy buffalo chicken, ranch, and blue cheese for a fun twist on a classic.
Broccoli Cheese Twice Baked Potato: I have a whole recipe dedicated to this one. It’s so delicious!
• Scallions: A classic baked potato topping. You can use chives instead.
• Bacon: The perfect salty complement to these rich, creamy potatoes.
• Sour Cream: Makes the filling creamy and tangy. For a healthier swap, use low-fat sour cream or plain Greek yogurt instead.
• Buttermilk: Loosens up the filling so that it’s scoopable and adds great tangy flavor.
(this is so the shells can crisp a little and hold their shape after filling).
8. While the shells cook, mash together half of the cheese, butter, scallions, and lardons with all of the sour cream, buttermilk, and baked potato flesh until smooth. Season with salt and pepper and mix together.
9. 4 ounces shredded cheese,¼ cup sour cream,¼ cup buttermilk,4 tablespoons unsalted butter,2-4 scallions,4 strips bacon
10. Transfer shells from the oven and set the oven to broil. Fill the potato shells, mounding in the middle, with the mashed potato mixture and top with remaining cheese, scallions, bacon lardons, and butter.
11. Broil until the cheese has melted and the potatoes are spotty brown and little crispy on top, approximately 5-10 minutes. Watch closely.
12. Allow the potatoes to cool 10 minutes and serve topped with minced herbs, if desired.
Spicy Mexican: Add ground beef, taco seasoning, jalapeños, and more!
Caprese: Add fresh basil, tomatoes, and mozzarella.
Chili Cheese: Load on your favorite chili, shredded cheese, and sour cream.
