To blister the tomatoes – heat a stainless steel or cast-iron pan on medium to high heat. Lightly oil the tomatoes and season with salt & pepper. Add them to the hot pan and let sit undisturbed for 2-3 minutes or until they start to get a little char on them, then give the pan a light swirl or shake to get the tomatoes to char on the other sides. Remove from heat and let cool.

For the Puff Pastry tart shell – line a flute tart shell pan with the puff pastry and trim excess but leave a little over-hanging the edge (this can be pressed off after cooking). Blind bake to inhibit the dough from rising to create a
